Effects of Glasswort (Salicornia herbacea L.) Hydrates on Quality Characteristics of Reduced-salt, Reduced-fat Frankfurters

  • Abstract This study evaluated the effects of adding glasswort hydrate containing non-meat ingredient (GM, carboxy methyl cellulose; GC, carrageenan; GI, isolated soy protein; GS, sodium caseinate) on the quality characteristics of reduced-salt, reduced-fat frankfurters. The pH and color evaluation showed significant differences, depending on the type of glasswort hydrate added (p<0.05). In the raw batters and cooked frankfurters, the addition of glasswort hydrate decreased the redness and increased the yellowness in comparison with frankfurters without glasswort hydrate. The reduction in salt and fat content significantly increased cooking loss and decreased hardness, tenderness and juiciness (p<0.05). Glasswort hydrate containing non-meat ingredient improved cooking loss, water holding capacity, emulsion stability, hardness, and viscosity of reduced-salt, reduced-fat frankfurters. The GM treatment had the highest myofibiliar protein solubility among all treatments, which was associated with emulsion stability and viscosity. The GC treatment had higher values for all texture parameters than the control. In the sensory evaluation, the addition of glasswort hydrate with non-meat ingredient improved tenderness and juiciness of reduced-salt, reduced-fat frankfurters. GM, GC, and GI treatments improved not only the physicochemical properties but also the sensory characteristics of reduced-salt, reduced-fat frankfurters. The results indicated that the use of glasswort hydrate containing non-meat ingredient was improved the quality characteristics of reduced-salt, reduced-fat frankfurters.

Effects of Low Dose Gamma-irradiation on Alleviation of Salt Stress in Rice (Oryza sativa L.) Seedling (저선량 감마선 조사가 벼 유묘의 염 스트레스 경감에 미치는 영향)

  • To investigate alleviation effects of salt stress by low dose gamma-irradiation on seedling growth of rice (Oryza shrive L), in plants of two rice cultivars (Ilpumbyeo and Gancheokbyeo), seeds were irradiated with the different doses $(0{\sim}32\;Gy)$ of gamma-ray by irradiator ($^{60}Co$, ca.150 TBq of capacity, AECL). The salt stress caused a remarkable decrease of seedling growth, particularly for dry weight. In addition, relative growth rate was decreased over 50% by the salt stress. However, the salt stress-induced inhibition of growth was alleviated by gamma-irradiation. Especially, the relative growth rate of shoot showed the reduction effect over 30% at 4 Gy-irradiated groups as compared with that of control. Also, electrolyte leakage and relative water content were damaged, respectively 4 times and 30% by the salt stress but the damages were alleviated by the gamma-irradiation. These alleviation effects were observed similarly in both the cultivars tested. These results suggest that the low dose gamma-irradiation may have a better protection or the salt stress.

  • The ammonium salt of N-Nitrosophenylhydroxiamine, namely Cupferron, is a well-known analytical reagent which precipitates a great number of metal ions in acid medium. Various structures of electrode reduction for N-Nitrosophenylhydroxiamine have been suggested in acid and alkaline media by many researchers, but not in neutral medium. So the mechanism of electrode reaction of Cupferron was investigated by both chronopotentiometric and polarographic methods. It was estimated that the reduction of Cupferron occurs in a three-step mechanism through which a chemical step is interposed between two charge transfer, the ECE (charge transfer-chemical reaction-charge transfer) mechanism, over a range of neutral and alkaline media. The chemical reaction of the process was assumed to be acid-base catalyzed from the fact that kapp (over all rate constant) of chemical reaction is pH dependent.

Synthesis of FePt Nanoparticles by Chemical Reduction Process (화학적인 환원 공정에 의한 FePt 나노입자의 합성)

  • FePt nanoparticles for high-density magnetic recording media were synthesized by the simultaneous chemical reduction of Fe(acac) $_2$ and Pt(acac) $_2$ with 1,2-hexadecanediol as the reducing reagent. TEM images showed that the shape of as-synthesized FePt nanoparticle was spherical and average particle size was 3 nm. Also, SAD pattern showed that crystal structure was disordered FCC (face centered cubic). These FCC structured nanoparticles were transformed FCT (face centered tetragonal) structure by annealing at 55$0^{\circ}C$ for 30 min in Ar atmosphere. XRD analysis revealed that as-synthesized FePt nanoparticles were transformed from disordered FCC to ordered FCT. Finally, the coercivity of 2 kOe for FePt nanoparticles with FCT structure was obtained by VSM measurement.

Development of cobalt encased in nitrogen and sulfur co-doped carbon nanotube for non-precious metal catalyst toward oxygen reduction reaction

  • In this paper, cobalt embedded in nitrogen and sulfur co-doped carbon nanotubes (CoNSTs) were synthesized for oxygen reduction reaction (ORR) catalysts. The CoNSTs were prepared through a facile heat treatment method without any templates. Different amounts of the metal salt were employed to examine the physicochemical and electrochemical properties of the CoNSTs. The CoNSTs showed the bamboo-like tube morphology with the encased Co nanoparticles in the tubes. Through the x-ray photoelectron spectroscopy analysis, the catalysts exhibited different chemical states of the nitrogen and sulfur species. As a result, the CoNST performed high activity toward the ORR in an acidic condition with the onset potential of 0.863 V (vs. reversible hydrogen electrode). It was clearly demonstrated from the electrochemical characterizations that the quality of the nitrogen and sulfur species significantly influences the ORR activity rather than the total amount of the dopants.

Effect of sodium restriction on blood pressure of unstable or uncontrolled hypertensive patients in primary care

  • BACKGROUND/OBJECTIVES: The aims of the present study are: 1) to quantify sodium consumption of patients with unstable or uncontrolled hypertension, 2) to investigate if reduced sodium intake can lower BP in these patients, and 3), to assess the acceptability and feasibility of this approach. SUBJECTS/METHODS: This study included 25 adults (age: 50+ years) with frequently elevated BP or patients with uncontrolled, uncomplicated hypertension despite drug treatment in a general practice setting. BP and salt intake (24h urinary excretion and food records) were measured at baseline and after a sodium reduced diet. RESULTS: Mean (${\pm}SD$) systolic (SBP) over diastolic (DBP) blood pressure (mmHg) at baseline was $150.7({\pm}9.5)$/$84.149({\pm}5.6)$. Mean urinary sodium excretion was 146 mmol/24h. A reduction of 28 mmol sodium excretion decreased SBP/DBP to $135.5({\pm}13.0)$/$82.5({\pm}12.8)$ (P < 0.001). After one month of no dietary advice, only in 48%, SBP was still ${\leq}140mmHg$. CONCLUSION: Assessment of sodium intake using food records, 24h urine collections and probing questions to identify use of sodium containing supplements or drugs are essential for tailored advice targeted at sodium intake reduction. The results of the present study indicate that reduced sodium intake can lower BP after 4 weeks in unstable or uncontrolled hypertensive patients.

Study on the Improvement of Lung CT Image Quality using 2D Deep Learning Network according to Various Noise Types (폐 CT 영상에서 다양한 노이즈 타입에 따른 딥러닝 네트워크를 이용한 영상의 질 향상에 관한 연구)

  • The digital medical imaging, especially, computed tomography (CT), should necessarily be considered in terms of noise distribution caused by converting to X-ray photon to digital imaging signal. Recently, the denoising technique based on deep learning architecture is increasingly used in the medical imaging field. Here, we evaluated noise reduction effect according to various noise types based on the U-net deep learning model in the lung CT images. The input data for deep learning was generated by applying Gaussian noise, Poisson noise, salt and pepper noise and speckle noise from the ground truth (GT) image. In particular, two types of Gaussian noise input data were applied with standard deviation values of 30 and 50. There are applied hyper-parameters, which were Adam as optimizer function, 100 as epochs, and 0.0001 as learning rate, respectively. To analyze the quantitative values, the mean square error (MSE), the peak signal to noise ratio (PSNR) and coefficient of variation (COV) were calculated. According to the results, it was confirmed that the U-net model was effective for noise reduction all of the set conditions in this study. Especially, it showed the best performance in Gaussian noise.

  • The anodic oxidations of the Silver(I) / Silver(II) / Silver(III) system have been studied in aq. 2M $AgNO_3$ solution with Platinum and Carbon electrodes. It has been found that $Ag_7O_8NO_3$ can be produced at relatively higher current density. Deposited black Oxy-salt were analyzed with several methods such as oxidizing power, X-ray powder diffraction patterns, thermal analysis, and reduction curves. It decomposed to AgO upon being suspended in boiling water. AgO compound obtained from $Ag_7O_8NO_3$ were purer and denser than Alfa-product AgO.

데침과 열수 침적의 병용 열처리와 trehalose 첨가가 오이 김치의 저장중의 효소 활성의 변화와 관능 검사에 미치는 효과

  • The enzyme activity and organoleptic properties of Korean pickled cucumber were studies for their changes during fermentation. The Korean pickled cucumber were prepared by blanching and high temperature soaking in salt solution and trehalose treatment The results shelved that the effect of combined heat and trehalose treatment significantly reduced the fermentation rate and softening rate of texture while a rather rapid fermentation was for those pleserved with salt. The effect of trehalose treatment enhenced fermentation and it was significantly reduced softening rate of texture by 2% treatment. The sensory evaluation of Korean pickled cucumber was found that combined heat treatment with blanching and hot solution had a positive effect for reduction of softening of cucumber tissue, however, odor and taste were not significantly affected. This study suggested that combined heat and trehalose treatment might have potential for affording protection against softness of cucumber tissue during the fermentation time.

The Study on Effect of Collision Safety by Corrosion of Body Structure (차체구조물의 부식이 충돌안전도에 미치는 영향에 관한 연구)

  • Repair were made for front pillar, center pillar and side-step panel for lightweight vehicles with head-on and 40% off-set collision of 15 km/h in a RCAR standard. The salt dilution was sprayed and the compression tests were performed for vehicles with and without anti-corrosional treatment after repair. After 764 hours of salt-dilt sprayed test without using anti-corrosion, the mean penetration depth fur corrosion was shown to be 58% of the thickness. The resulyed decrease in bending stiffness by 10∼20% can cause reduction of the residual life and crash-absorption capability for damaged vehicles. The corrosoin safety tests showed that the anti-corrosional treatment should be made to improve the safety characteristics for a or damaged car.
