Chitosan/whey Protein (CWP) Edible Films Efficiency for Controlling Mould Growth and on Microbiological, Chemical and Sensory Properties During Storage of Göbek Kashar Cheese

  • The objective of present study was to evaluate the effects of the application of chitosan and chitosan/whey protein on the chemical, microbial and organoleptic properties of Göbek Kashar cheese during ripening time (on 3rd, 30th, 60th and 90th d). Difference in microbiological and chemical changes between samples was found to be significant (p<0.05) during ripening period. Cheese samples with edible coating had statistically lower mould counts compared to the uncoated samples. Furthermore the highest and lowest mould counts were determined in control (4.20 Log CFU/g) and other samples (<1 Log CFU/g) at 60th and 90th d of storage. All samples exhibited higher levels of water soluble nitrogen and ripening index at the end of storage process. At the end of 90 day storage period, no signicant dierences in salt and fat values were observed among the cheeses studied. The edible coatings had a beneficial effect on the sensory quality of cheese samples. In the result of sensory analysis, while cheese C and the chitosan coated cheese samples were more preferred by the panellists, the chitosan/whey protein film-coated cheese samples received the lowest scores. This study shows coating suggests could be used to improve the quality of cheese during ripening time.

Evaluation of quality indices during fruit development and ripening in 'Wonhwang' and 'Whasan' pears (동양배 '원황' 및 '화산'의 생육기간 중 품질 변화 요인 탐색)

  • In this study, we evaluated the changes of fruit quality indices during fruit development and ripening in Korean new pear cultivar 'Wonhwang' and 'Whasan' to determine appropriate harvest time and to enhance the marketability. The fruit of each cultivar harvested from 100 days after full bloom (DAFB) to 135 and 150 DAFB in 'Wonhwang' and 'Whasan', respectively. The fruit growth of both cultivars showed a typical single sigmoidal pattern. Flesh firmness of two cultivars decreased continuously with fruit development and ripening, reaching a final level of about 2.6 kgF at harvest stage. The starch content of fruit sap was much higher in the fruits of early development stage than the later stage of fruit ripening. In 'Wonhwang' pears, the starch level decreased coincide with fruit ripening (130 DAFB), while that of 'Whasan' decreased from very early stage of fruit development (120 DAFB), 30 days before full ripe. 'Whasan' pear showed much lower acidity level of about 0.13% during fruit development and ripening period compared with that of 'Wonhwang'. Therefore, the ratio of soluble solids to total acidity (TSS/acid) increased gradually with fruit development and ripening, reaching a final level of 80 and 98 in 'Wonhwang' and 'Whasan', respectively. There were no climateric rise of fruit respiration during fruit ripening periods in two oriental pear cultivar. The changes of skin color difference including hunter vale $a^*$ which means loss of green color occurred only after onset of ripening in two cultivars.

Expression of Genes Affecting Skin Coloration and Sugar Accumulation in 'Hongro' Apple Fruits at Ripening Stages in High Temperatures (고온에 의한 변색단계별 '홍로' 사과의 착색 및 당 축적 관련 유전자 발현 분석)

  • High temperature is one of the important environmental factors limiting cultivation of apple (Malus domestica Borkh). The expression of genes related with anthocyanin synthesis and sugar accumulation in response to high temperature was studied in the 'Hongro' apple fruits at different developmental stages in different temperature conditions through real-time PCR. Expression of ${\hat{a}}$-amylase (BMY) and polygalacturonase (PG) genes related with sugar synthesis was higher in late ripening stages than in initial ripening stages. Expression of four genes such as phenylalanine ammonia-lyase (PAL), chalcone synthase (CHS), flavanone 3-hydroxylase (F3H), and malate dehydrogenase (MDH), which were related with fruit skin coloration, increased gradually in apple fruits of the middle and late ripening stages. Interestingly, the expressions of all genes were highly inhibited expressed at $30-35^{\circ}C$ compared to $25^{\circ}C$ in all ripening stages. In the further work, investigation of expression levels of various genes could be conducted in the level of transcriptomics in fruits at the middle ripening stages to get meaningful information of ripening metabolism in apple in high temperatures.

Effect of Seed-gathering Time and After-ripening on Seed Emergence of Paeonia lactiflora Pall (작약종자(芍藥種子)의 채종시기(採種時期)와 후숙(後熟)이 출아(出芽)에 미치는 영향(影響))

  • This study was carried out to identify the effect of seed gathering time and after-ripening on Paeonia lactiflora Pall (PL) seed emergence, and to establish optimal seed gathering time and sowing time. We used two local cultivar of PL ; Punggi and Uisung. Seeds were gathered 6 times from 5th July to 25th August in 1992. The seeds of Punggi local cultivar were planted by the planting density of $10\;{\times}\;15cm$ after treatment of 7 ways ; without after-ripening, with after-ripening for 10, 20, 30 days without or with capsule. We investigated the change of 100 grains weight of PL seed by the passage of time and emergence rate after treatment. The seed weight of Punggi was heavier than that of Uisung and the seed weight was maximzed at 25th July both of the two, and then decreased by the passage of time. The seed emergence rate of Punggi gathered at 5th July was showed 7.8% and the seed emergence of Uisung was later 10 days than that of Punggi. The maximum emergence rate of two local cultivars was the highest in gathering the seeds on the 15th of August. In gathering the seeds without and with capsule, the emergence rate of seeds sowed with after-ripening was higher than that of seeds sowed immediately after gathering the seeds without after-ripening when the seeds gathered between 5th July and 5th August. In after-ripening with out and with capsule, the emergence rate of 10 days after-ripening seeds was less than that of 20 and 30 days after-ripening seeds after the seeds gathered on the 5th and 15th of July. Difference of the emergence rate of seeds by after-ripening time did not show when the seeds gathered after 25th July.

Effects of 2-Chloroethylphosphnic Acid on Ripening of Tobacco Leaves (2_Chloroethylphosphonic Acid가 잎담배 성숙에 미치는 영향)

  • To investigate the effects of C. E. P. A(2-chloroethyl phosphonic acid) on the ripening of tobacco leaf, the effects on the yield and quality of leaf tobacco, this experiments were carried out during the period of from 1970 to 1971 at tobacco experiment station, Sosa, Korea and 3 locations. The results are summarized as follows. 1. The higher the C. E. P. A concentration was, the more the leaf ripening was accelerated. During the period from 3 to 4 days after treatment, the differences of leaf ripening among levels were prominent. 2. Treatment with C. E. P. A only on the upper surface of the tobacco leaf, accelerated the ripening of that particular part treated, but not apparently the other parts of leaf. 3. Distinctive acceleration of leaf ripening was, obserbed in the fully develope1lower leans, however, the upper leaves were indistinctive. 4. The higher C. E. P. A concentration was, the more the effect of ripening acceleration was. But the yield was reduced over 900ppm because of the low of growth of leaves and the reduced yield was 90% at the 3, 000ppm. So the proper concentration was regarded as 900ppm. 5. In the view point of the days of C. E. P. A ripening acceleration, it was shortened one days at 100 ppm, three days at 300ppm, three days at 450ppm, four days at 900ppm, seven days at 3, 000ppm. 6. In the point of curing process, it was possible that the curing time and fuel was reduced 29% and 45% respectively in the C. E. P. A treatment than the check. 7. Therefore, if it is treated the C. E. P. A at 900ppm in the tobacco cultivation, the quality shall be increased 13.5% and the price shall be increased 12% in the 10 Are. In the point of subsidiary affect, it is possible that the C. E. P. A ripening acceleration is shortened about 7 days at 3, 00ppm and curing time is shortened about 24 hours.

Effect of the Fish Oil Fortified Chitosan Edible Film on Microbiological, Chemical Composition and Sensory Properties of Göbek Kashar Cheese during Ripening Time

  • Objective of the present study is to investigate the effect of coated edible films with chitosan solutions enriched with essential oil (EO) on the chemical, microbial and sensory properties of Kashar cheese during ripening time. Generally, no differences were found in total aerobic mesophilic bacteria, streptococci and lactoccocci counts among cheeses but these microorganism counts increased during 60 and 90 d storage especially in C1 (uncoated sample) as compared with coated samples. Antimicrobial effectiveness of the films against moulds was measured on 30, 60, and 90 d of storage. In addition of fish EO into chitosan edible films samples were showed to affect significantly decreased the moulds (p<0.05) as 1.15 Log CFU/g in C4 (with fish oil (1% w/v) fortified chitosan film) on the 90th d, while in C1 as 3.89 Log CFU/g on the 90th d of ripening. Compared to other cheese samples, C2 (coated with chitosan film) and C4 coated cheese samples revealed higher levels of water-soluble nitrogen and ripening index at the end of storage. C2 coated cheese samples were preferred more by the panellists while C4 coated cheese samples received the lowest scores.

Cholesterol Removal and Flavor Development in Cheddar Cheese

  • This study was carried out to find a cholesterol removal rate, flavor development and bitter amino acid productions in Cheddar cheese treated with $\beta$-cyclodextrin (CD): 1) Control (no homogenization, no $\beta$-CD), and 2) Milk treatment (1000 psi milk homogenization, 1% $\beta$-CD). The cholesterol removal of the cheese was 79.3%. The production of short-chain free fatty acids (FFA) increased with a ripening time in both control and milk treated cheese. The releasing quantity of short-chain FFA was higher in milk treated cheese than control at 5 and 7 mo ripening. Not much difference was found in neutral volatile compound production between samples. In bitter-tasted amino acids, milk treatment group produced much higher than control. In sensory analysis, texture score of control Cheddar cheese significantly increased with ripening time, however, that in cholesterol-reduced cheese decreased dramatically. Our results indicated that the cheese made by $\beta$-CD treated milk with low pressure homogenization showed an effective cholesterol reduction and a rapid cheese ripening, while no capture of flavor compounds by $\beta$-CD.

Influences of Squid Ink Added to Low Salt Fermented Squid on Its Changes in Lactic Acid Bacteria (저염 오징어 젓갈의 숙성 중 오징어 먹즙 첨가가 젖산균의 변화에 미치는 영향)

  • This study measured the change of lactic acid bacteria during the ripening fermentation process of low salt fermented squid with no squid ink added. All study groups showed increase of Leuconostoc and rapid growth of total plate count at the beginning stage of ripening and the maximum microbial count showed at the optimum stage of ripening which gradually reduced after the optimum stage. It is believed that Lactobacillus occupied the major part of the total plate count after the optimum stage of the squid fermentation, and it was related to the quality after the optimized ripening stage. Streptococcus and Pediococcus were gradually increased until the optimum stage of the ripening, and then decreased rapidly. Yeasts were detected in the middle stage of the fermentation and rapid increase was shown after the last stage of the fermentation which suggests that yeasts participate in putrefaction of the low salt fermented squid. The change of lactic acid bacteria observed during the ripening fermentation of low salt fermented squid with squid ink added was that the total plate count increased until ripening middle stage but showed a tendency to slightly reduce after the middle stage. The length of time to reach the maximum value was longer than the no treatment groups. Among the lactic acid bacteria, Leuconostoc, Streptococcus and Pediococcus has increased until the middle stage of the ripening while Lactobacillus constantly increased to the end part of the ripening. Yeasts had no increasing in the early ripening stage, but after middle of the ripening, it started to increase. That kind of tendency was similar to the case of no treatment groups. However, the amount of lactic acid bacteria tended to be less than no treatment groups. The tendency of decreasing number of all bacteria in low salt fermented squid with squid ink added shows squid ink restricts the growth of all bacteria.

Comparison of Meat Quality Traits in Salami Added by Nitrate-free Salts or Nitrate Pickling Salt during Ripening

  • The intent of this study was to scrutinize the consequence of salt type [sundried salt, refined salt, baked salt, or nitrate pickling salt (NP)] on the physicochemical and microbiological features of salami formulated by soaking with Aspergillus spp. before ripening. The effects of nitrate-free salts added were not significant. Nitrate pickling salt samples were significantly higher in protein level, whereas those were lower in fat level during ripening (p<0.05). The pH of salamis treated with NP was higher than that of other salt treatments, while weight losses of those was lower (p<0.05). During the ripening and drying, NP produced lower extent of volatile basic nitrogen and lipid oxidation than those with other salts (p<0.05). The total aerobic population counts of NP samples revealed lower than that of other samples over the ripening time. The addition of NP in salamis produced redder sausages. The salamis containing NP found to be better physicochemical and microbiological quality attributes than the other salt types.
