Study on Traditional Folk Wine of Korea -In the Central Region of Korea-Seoul, Kyonnggi-do, Chungchung-do- (한국의 민속주에 관한 고찰(I) -서울.경기도.강원도.충청도 지방을 중심으로-)

  • This study delves into the general characteristics of spirits brewed in the Central Region of Korea-Seoul, Kyonnggi-do, Chungchung-do-paying particular attention to their varieties and fermenting methods and also comparing similarities and differences of their features. It is found first of all that there are a wide range of variety in the kinds of liquors. Among the 21 spirits investigated, not a single one resembles any one of the remaining in terms of the raw material, and the brewing method and process. Secondly, all of them use locally produced grains and can be classifiable as belonging to the common category of yakju (clean spirit) with fragrant elements added for the purpose of enhancing health or decreasing any harmful effects after drink. Thirdly, these traditional folk wines are characterized by the addition of secondarily fermented spirits. The more secondarily fermented spirit a wine has, the more fragrant and palatable it becomes and also the less harmful. Fourthly, all the spirits of this region are fermented by using yeast kodupap (steamed rice). The brewing temperature is usually around $15{\sim}20^{\circ}C$ for $5{\sim}8$ days or $3{\sim}4$ days for the majority of the cases. Fifthly, purifying is done with the yongsoo (strainer), the sieve, traditional Korean paper, etc. As such, we can say that all the brewers endeavor to maintain Korean traditional methods of wine making.

Development of a Functional Chungkookjang (Soybean Paste Fermented for 2-4 Days) with Anti-AGS Human Gastric Cancer Cell Properties

  • To develop a functional chungkookjang; the anticancer effects of chungkookjangs prepared with different varieties of soybeans, starters, fermentation periods and seasoning additive ratios; were studied against AGS human gastric adenocarcinoma cells using the MTT assay, at different stages chungkookjang processing. The chungkookjang samples exerted different antiproliferative effects according to the variety of soybeans used. The chungkookjangs manufactured with soybean var. manrikong exhibited the highest cytotoxicity against AGS human cancer cells. The chungkookjangs fermented with rice straw and B. licheniformis strongly inhibited the growth of the AGS human cancer cells. All fermented chungkookjangs had a strong inhibitory effect on the growth of the cancer cells; however, the non-fermented soybean (chungkookjang) showed a low inhibition rate. The fermented chungkookjangs mixed with red pepper powder (RPP) and garlic exhibited strong antiproliferative effect against the cancer cells, and chungkookjang prepaved with 1.1 % RPP and 1.1 % garlic showed the highest cytotoxicity against the cancer cells. The functional chungkookjang fermented with soybean variety of manrikong and B. licheniformis for 3 days at 4$0^{\circ}C$ and then mixed with 7.9% salt, 1.l% RPP and 1.1% garlic, exhibited a higher antiproliferative effect than the chungkookjangs prepared by traditional or modified methods, according to the MTT assay. The functional chungkookjang exhibited a similar anticancer effect to the traditional doenjang. These results indicate that the fermentation period and the ratio of seasoning additives, as well as the variety of soybeans and starter cultures may affect the degree of the anticancer effect of chungkookjang.

  • Three varieties of Echinochloa crus-galli (L.) Beauv. and five collections different in gross morphology from the E. crus-galli species were obtained in a lowland rice field located in Jukjeol-Ri, Soyang-Myeon, Wanju-Kun, Jeonbug to compare the ecological and physiological characteristics. There were great variations in seed dormancy, relative growth rates, days required to panicle emergence and panicle morphology among the collections. On the basis of the cluster analysis using the different characteristics, the collections were divided into three groups; E. crus-galli var. frumentaceae and its two ecotypcs, E. crus-galli var. echinata and its two ecotypes, and E crus-galli var. crus-galli and its one ecotype. There were differential responses in percent germination and post-germination growth of the collections to butachlor (2-chloro-2', 6'-diethyl-N-butoxymethyl acetanilide).

The Effect of Mild-Acid Treated Waxy Starches on the Yield of Resistant Starch (약산 처리가 찰전분의 저항전분수율에 미치는 영향)

  • The characteristics and yield of resistnat starch (RS) in waxy starches which were treated with 0.1N HCl were investigated. Hydrolysis rate of waxy starches were 0.32-0.88%. The yields of RS in waxy maize and waxy barley starches increased with acid treatment time up to 12hr and then decreased. The yield of RS in waxy rice starches increased with acid treatment up to 8hr and then decreased. The hydrolysis and yield of RS were different depending upon the varieties of starch source. Autoclaved normal maize starch showed a gel-like structure, but autoclaved normal maize starch showed crystal particle on the surface by SEM. The shape of autoclaved resistant starch was not different from acid treated ones. X-ray diffraction patterns of native and acid treated starches were all A-types. X-ray diffraction patterns of autoclaved waxy maize starches showed amorphous structures, however, those of RS showed all completely crystalline structure.

The Characteristics of Flora and Distribution in Uiseong Traditional Irrigation System Reservoirs as National Important Agricultural Heritage System (국가중요농어업유산 의성 전통수리농업시스템 소류지의 식물상 및 분포 특성)

  • This study was conducted as a basic data for the management of the Uiseong Traditional Irrigation Agricultural System by identifying plant diversity and distribution characteristics. The total number of plant taxa was identified as 88 families, 250 genera, 368 species, 7 subspecies, 9 varieties and 384 taxa. In the case of life form, the domancy form was in the therophytes(th), the radicoid form was a R5(monophyte), the disseminule form was the gravity D4(having no special modification for dissemination), and the growth form was the erect form was high. The number of plant taxa by land use type was higher in mountainoustype reservoirs and plain type reservoirs than other land use types. The distribution of plants by land use type according to the hemeroby grade was plantation in the case of 3 grade(meso-hemeroby) forests, and the understory were mainly photophilic plants. With 4 grade(β-euhemeroby), traditional cemetery, plain type reservoirs, mountainoustype reservoirs, stream, and rice terraces are areas with relatively low intensive management and have a wide variety of flora, whereas 5 grade(α-euhemeroby) orchard were mainly distributed with ruderal plant due to high intensive management. As for the number of plant taxa by reservoirs, the Wisgol pond in the case of plain type reservoirs, Ungok pond was high in mountainous type reservoirs. The protected species were rare plants 2 classification groups of Vulnerable(VU) species, 4 classification groups of Least Concrned(LC) species, 1 classification group of Data Deficient(DD) species, 5 classification groups of Korean endemic plants, and 49 classification groups of invasive alien plants, and the total naturalization index was 12.2%.

Quality Properties of Makgeolli Brewed with Korean Sweet Potato Cultivars (Ipomoea batatas (L.) Lam) (한국 고구마 품종을 발효하여 만든 막걸리의 품질 특성)

  • This study examined the quality characteristics of Makgeolli to investigate the availability of Korean sweet potato cultivars as alcoholic beverages. The following sweet potato varieties were used: Gogunmi, Daeyumi, Shingunmi, Shinyulmi, Shincheonmi, Jinyulmi, Jinhongmi, Jeungmi and Pungwonmi; their alcohol contents ranged from 12.20% to 14.20%, with the lowest value in Makgeolli made with Jeungmi and the highest value in Makgeolli made with Jinhongmi. The DPPH radical scavenging activity was in the range of 37.51~77.02%, with the lowest value in Makgeolli made with rice (control) and the highest value in Makgeolli made with Gogunmi. As a result of analyzing the aroma component of sweet potato Makgeolli, 27 kinds of aroma components were detected, and six kinds of alcohols, 13 kinds of esters, four kinds of acids, and four kinds of other compounds were found. Regarding the number of aroma compounds, Makgeolli made with Shinyulmi showed the lowest number with 14 kinds, while Makgeolli made with Pungwonmi showed the highest number with 27 kinds.

  • A male sterile facilitated recurrent selection population was developed by the barley breeding team of Yeongnam Crop Experiment Station. To breed this population, three composite cross populations and a composite population of breeding lines in our country were used as the materials. This population was developed in order to breed early maturing, wet-soil tolerant and high yielding barley varieties, adapted for double cropping with rice in southern part of Korea. The population was named by RSPYB#l which means Recurrent Selection Population No.1. of Yeongnam Barley.

  • Potatoes were first introduced outside the Andes region four centuries ago, and have become an integral part of much of the world's food. Potatoes were first introduced into Europe in the 16th century and Korea in the early 19th century. Potatoes have a short growing season, high production per unit area, relatively strong environmental adaptability, and are cultivated in more than 130 countries around the world. It is the world's fourth-largest crop, following rice, wheat, bean and maize. In the nutritional aspects, potatoes contain abundant vitamins and minerals, as well as an assortment of phytochemicals such as carotenoids and natural phenols. Due to the high content of potato functional compounds, it has known that potatoes are effective in the prevention of various human diseases. In particular, the potato contains a large amount of polar compounds, including the saponin in the polar compounds, and the physiological activity of the saponins, such as immunity enhancement, antioxidant and anti-inflammatory is known. In this study, the antioxidative activity of polar compounds from five potatoes was examined by cell based anti-oxidation assay. The smallest amount of ROS(Reactive oxygen species) was generated when the compound was derived from 'Haryung' and 'hongyoung' and strong SOD(Superoxide dismutase) activity was observed in 'Sumi' and 'Jayoung'. The results of this study reveal the antioxidative effect of polar compounds extracted from various kind of potatoes, which will enable the acquisition of new bioactive candidates and the establishment of new profit generation models for farmers

Correlation between Quantitative Agronomical Traits of Wheat (Triticum sp.) Genetic Resources

  • Assessment of plant genetic resources is applicable when breeding improved plant caltivars. In Korea, early maturing wheat germplasm is anticipated for wheat-rice double-cropping. In this study, we assessed five agronomical traits including days of heading after sowing(HD), days of maturity after sowing(MD), culm length(CL), ear length(EL), and thousand grain weight(TW) of 500 wheat germplasms collected form 10 different countries (Mexico, the United States, Afghanistan, Ethiopia, India, Japan, China, Turkey, Pakistan and Portugal), and grown in Korea. Besides, the correlation between the agronomical traits was analyzed using XLSTAT softerware version 2019 (Addinsoft, NY, USA). The result showed wide-ranging maturity period. Among the entire population, 2 accessions (K256306/JPN/breeding line and K256328/JPN/breeding line) that matured early were identified. Furthermore, HD showed strong correlation with MD (r=0.684) and CL (r=0.610), and weak correlation with the rest two agronomical traits (EL and TW). Overall, the results of our study provides wide spectrum of prospects, and could be applicable to breed new wheat varieties with early maturity.

Research on Actual Conditions of Fertilizers Applications based on Farmers' Paddy Fields by Regions (수도재배(水稻栽培) 농가(農家)의 지역별(地域別) 시비실태(施肥實態) 조사연구(調査硏究))

  • The investigation was conducted to find out amounts and ratios of N, P and K fertilizers applied on rice in 410 farmers' fields. The application ranges of N, P and K fertilizers, respectively, were 15.4-16.3, 7.6-8.0 and 8.2-8.5kg/10a for high yielding varieties, and 13.1-13.8, 7.0-7.1 and 6.4-7.7kg/10a for ordinary varieties. N fertilizer was applied in the ratio of 56% at basal dressing, 34% at tillering, 9% at panicle formation and 1% at heading stage. The amounts of soil amendment application were 179-192kg/10a for silicate, 1,031-1,360kg/10a for compost, 420-540kg/10a for rice straw, and 17.8-25.2 ton/10a for red earth.
