Study on Rheological and Sensory Properties of Cooked Rices -I. Changes in Flavor and Appearance of Cooked Rices during Storge- (쌀 품종에 따른 쌀밥의 물리적 및 관능적 특성 연구 -I. 저장중 쌀밥의 풍미 및 겉모양의 변화-)

  • Three rice varieties of Akibare (japonica), Milyang 30 (indica) and Taebaeg (indica) were investiated for sensory and physical qualities of cooked rices during storage at the temperature range of $4^{\circ}C$ and $70^{\circ}C$ for 25 hours. The qualities studied were sensory attributes of odor, taste and appearance which were evaluated by multiple comparison method. The other properties were size of rice granule and separation Property of individual cooked rices in water. The sensory results showed that all of the descriptions except moldy odor and oily taste were scored higher values for cooked rices of Akibare than those values of Milyang 30 and Taebaeg. It was found that storage of cooked rices at various temperatures resulted a significant decrease in most of sensory qualities except moldy odor and oily taste which were rather increased. The quality change was more affected at storage at low temperature, particularly at $4^{\circ}C$, than at higher temperatures. The property of individual separation of cooked rices in water for freshly cooked rices showed that Akibare was separated 44.4% after 1 minute shaking while Milyang 30 and Taebaeg had the higher separation value of 53.1%, and 51.0%, respectively. This characteristic was noticeably reduced after 3 hours storage and then steady increased during further storage. It was also found that the separation percent was generality increased as the storage temperature increased from $4^{\circ}$ to $70^{\circ}C$.

Growth Characters and Yield of Wheat Species Depend on Soil Fertility in Paddy Field (논토양 비옥도에 따른 맥류 초종별 생육특성과 수량성)

  • Soil fertility different depend on application rate of manure and compost for many years. While each crop has different adaptability depend on soil fertility, crop and species or varieties should be chosen depending on the adaptability and productivity. These experiments were carried out to compare the five winter cereal crops for whole crop silage on growth, yield and feed value as affected by soil organic content. The rate of increase on no. of spikes at high fertile soil compared with medium fertile soil was sequently high Samhan (Oat's variety) > Cheongwoo (Wheat) > Gogu (Rye) > Youngyang (Barley) > Shinyoung (Triticale). The rate of decrease at low fertile soil compared with medium fertile soil was sequently high Youngyang > Gogu > Cheongwoo > Shinyoung > Samhan. The triticale was lower variation of no. of spikes as affected by soil organic content than that of other winter cereals. The variations of dry matter yield as affected by soil fertility was higher oat and barley and lower triticale. Forage yield of triticale was higher about 69 percent than that of barley at low fertile soil. Forage yield was the highest in triticale and the lowest in rye in all soil fertility. In high fertile soil, rate of increasing digestible dry matter (DDM) yield compared with medium fertile was high in Samhan and Youngyang. Rate of reduced DDM yield in low fertile soil compared with medium fertile was low in Shinyoung and Cheongwoo.

Decrease in Intrinsic Objectionable Odors and Change of Gastrodin Contents in Lactic acid Treated Gastrodia elate Blume (젖산 처리에 따른 천마의 불쾌취 감소 및 Gastrodin 함량 변화)

  • This study was carried out to decrease intrinsic objectionable odor, bitter and fishy taste and change the biobeneficial components (gastrodin and p-hydroxybenzyl alcohol) of Gastrodia elate Blume. First of all, Gastrodia elata Blume. was dipped in the rice-washed water and rice-bran solution fermented with Lactobacillus brevis and Lactobacillus plantarum. The objectionable odor, bitter and fishy taste were decreased considerably with the treatments. Gastrodia elata Blume. was also dipped in organic acids (10 different varieties). The result showed that the most effective treatment to reduce objectionable odor, bitter and fishy taste of Gastrodia elata Blume. was treated with 1.0% lactic acid. Eleven different kinds of volatile components such as acetaldehyde, formic acid ethyl ester, acetic acid ethyl ester, 4-methylphenol and 3-hydroxy-2-butanone were separated from Gastrodia elata Blume when treated with or without 1.0% lactic acid. 4-Methylphenol, which is an objectionable odor in Gastrodia elata Blume, decreased with the treatment of lactic acid. While the contents of gastrodin and p-hydroxybenzyl alcohol in Gastrodia elata Blume. increased by 20% when dipped in 1.0% lactic acid solution for 24 hours and steamed at $98^{\circ}C$ for 4 hours.

Development of the conventional crop composition database for new genetically engineered crop safety assessment (새로운 생명공학작물 안전성 평가를 위한 작물 성분 DB 구축)

  • The Biosafety Division of the National Academy of Agricultural Science has developed a 'Crop Composition DB' that provides analytical data on commercialized crops. It can be used as a reference in the 'Comparative Evaluation by Compositional Analysis' for the safety assessment of genetically modified (GM) crops. This database provides the composition of crops cultivated in Korea, and thus upgrades the data to check the extent of changes in the compositional content depending on the cultivated area, varieties and year. The database is a compilation of data on the antioxidant, nutrient and secondary metabolite compositions of rice and capsicum grown in two or more cultivation areas for a period of more than two years. Data analysis was conducted under the guidelines of the Association of Official Analytical Chemists or methods previously reported on papers. The data was provided as average, minimum and maximum values to assess whether the statistical differences between the GM crops and comparative non-GM crops fall within the biological differences or tolerances of the existing commercial crops. The Crop Composition DB is an open-access source and is easy to access based on the query selected by the user. Moreover, functional ingredients of colored crops, such as potatoes, sweet potatoes and cauliflowers, were provided so that food information can be used and utilized by general consumers. This paper introduces the feature and usage of 'Crop Composition DB', which is a valuable tool for characterizing the composition of conventional crops.

Biological Response of Resistant Genes to Korean Brown Planthopper, Nilaparvata lugens Stål (벼멸구 저항성 유전자에 대한 국내 벼멸구의 생물적 반응 연구)

  • Brown planthopper (BPH), Nilaparvata lugens Stål (Hemiptera: Delphacidae), is one of the most important migratory pests damaging rice in Korea. It invades annually from tropical and subtropical areas via continental air streams. It is necessary to determine the resistance levels of rice varieties in order to control efficiency. The honeydew excretion, development, and reproduction of the migratory BPH were studied by region in a laboratory at $25{\pm}2^{\circ}C$ and $65{\pm}5%\;RH$ and a 16L: 8D photoperiodism conducted on three BPH resistant genes: Bph1, Bph2, and Bph18. The information obtained was reported using the jackknife method, and we created life table statistics accordingly. The feeding amount of Bph1 resistant gene was lower than that of resistant genes. The developmental periods of immature stages ranged from $13.7{\pm}0.10d$ on Bph2 (Namhae, 2015) to $18.5{\pm}1.06d$ on Bph2 (Sacheon, 2016). Reproductive period and female longevity were longest on the non-resistant genes, Bph2 and Bph18 (except 1980s), and the highest fecundity of N. lugens was observed on the two BPH resistant genes. Highest net reproductive rates ($R_0$) were calculated on Bph2 by region. Intrinsic rates of population increase ($r_m$) showed a difference in resistant genes by region. These population parameters showed that migratory regions and biological characteristics of N. lugens vary annually.

Comparative Analysis of Callus Induction and Plant Regeneration Rates Using One-step and Two-step Cultures for Rice Anther Cultivation (벼 약배양 1단계 및 2단계 배양을 이용한 캘러스 유도 및 식물 재부화율 비교 분석)

  • Anther cultivation for crop breeding is a method of rapid production of homozygosities by greatly reducing the time required for at least six generations to develop new varieties using conventional breeding methods. This technique of producing anther culture provides an opportunity to obtain more green plants from a methodological point of view, and the techniques that save time and effort in anther culture are also important because they increase the efficiency of culture. This study compared the callus induction rate and green plant regeneration rate of a one-step and a two-step culture that differ in their culture media and culture methods. One-step culture allows callus induction and plant regeneration in one medium, whereas two-step culture requires induction and plant regeneration in two different media. In this study, we compared the callus induction and plant regeneration rates of rice anthers as one-step and two-step cultures. The callus formation rate was 13.0% for one-step cultures and 8.6% for two-step cultures, so the rate was 4.4% higher for one-step cultures than for two-step cultures. The plant regeneration rate was 1.0% in one-step cultures and 3.0% in two-step cultures, so the regeneration rate was three times higher for the two-step cultures than for one-step cultures. This suggests that the two-step cultures are more efficient than the one-step cultures for haploid production.

Development of SNP marker set for marker-assisted backcrossing (MABC) in cultivating tomato varieties

  • Marker-assisted backcrossing (MABC) is useful for selecting offspring with a highly recovered genetic background for a recurrent parent at early generation unlike rice and other field crops. Molecular marker sets applicable to practical MABC are scarce in vegetable crops including tomatoes. In this study, we used the National Center for Biotechnology Information- short read archive (NCBI-SRA) database that provided the whole genome sequences of 234 tomato accessions and selected 27,680 tag-single nucleotide polymorphisms (tag-SNPs) that can identify haplotypes in the tomato genome. From this SNP dataset, a total of 143 tag-SNPs that have a high polymorphism information content (PIC) value (> 0.3) and are physically evenly distributed on each chromosome were selected as a MABC marker set. This marker set was tested for its polymorphism in each pairwise cross combination constructed with 124 of the 234 tomato accessions, and a relatively high number of SNP markers polymorphic for the cross combination was observed. The reliability of the MABC SNP set was assessed by converting 18 SNPs into Luna probe-based high-resolution melting (HRM) markers and genotyping nine tomato accessions. The results show that the SNP information and HRM marker genotype matched in 98.6% of the experiment data points, indicating that our sequence analysis pipeline for SNP mining worked successfully. The tag-SNP set for the MABC developed in this study can be useful for not only a practical backcrossing program but also for cultivar identification and F1 seed purity test in tomatoes.

Varietal Response to Phenoxy Herbicides on Number of New Root and Tiller in Rice Plant (수종 Phenoxy 제초제에 대한 수도 품종별(品種別) 신근(新根) 및 분얼수반응)

  • The effects of propanil, MCPA; 2, 4 5-T and silvex on the numder of new root and tiller on Taichung Native 1, Caloro, PI 245717 and Bluebonnet 50 by root administration and foliar spray at 10 levels of concentration were investigated. Phenoxy herbicides changed the growth pottern in the way of increased number of tillers and new roots rather than plant height or root length. It was suggested that MCPA is only possible to increase tillering around applicable range. Silvex stimulated tillering at higher level than that required to stimulate new root formation. Varietal response on herbicides were different along with herbicide feeding part. There was trends that the higher nitrogen response varieties also have a greater response to stimulating effect of herbicide. Propanil had no effect on growth and no injury even about 20 times of higher concentration of phenoxy herbicide.

Studies on the Carbohydrate-resources among the Composition of Artificial Diet for for the Silkworm, Bombyx mori L. (누에의 人工飼料 組成分中의 炭水化物源에 關한 硏究)

  • In order to investigate a suitable carbohydrate-resources and the activities of starch decomposing enzymes in artifical diet of silkworm, the experiment was undertaken by adding eight kinds of starch in the diet of silkworm. Major characters and zymograms of amylase in body organs were studied by electrophoresis. The results obtained are as follows: 1. Starches of rice, barey and millet were comparatively good for maintaining practical characters of silkworm. 2. It is assumed that no treatments are need to increas purity of starch resources for artificial diet of silkworm. It was found that starch amounts adding to artificial diet are moeerate ranging 12 to 18 percent as dry weight. 3. Regardless of kinds of starch and varieties of silkwormr sametype of electrophoresis zymogram for amylase was resulted as three bands in hemolymph, four bands in intestine and two bands in intestine and two bands in silkgland. There was no band in the digestive juice. In case of 18 percent addition of starch and check plots, no amylose change was investigated in the hemolymph.

Prospective of Sustainable Agriculture in Korea (친환경 농업기술의 발전방향)

  • Over the last three decades, Korean farming system has been directed to maximum agricultural production and to increase farmer's income through adoption of high-yielding crop varieties and high input of agrochemicals . These farming practices have resulted in problems of water-quality deterioration, soil degradation , and food safety. At present, over 40 million tones of animal waste are bing produced annually, which amounts to disposing the waste at the annual rate of 20 tones per ha in the total area of farming land in Korea. Nearly a half of total available water resources is used as irrigation water predominantly for rice paddy field. Thus, non-point source contamination of the water resources has been linked to agriculture across the nation. However, the extent to which agriculture contributes to the water quality is not fully known. Recently, Korean government provided various institutional measures to reduce the negative impacts of agricultural practices on the environ ental quality, and the Agricultural Environment Act was also passed by the legislature in 1998 and became effective January 1999. This Act does not cover the broad spectrum of the sustainable agriculture ; thus, the limited incentives within this Act are arguably ineffective to control the non-point source pollution. Recently new bulk blending of fertilizers(BB fertilizer) are bing produced (100, 000 tones in 1998) with Government subsidies. The BB fertilizers are to balance N-P-K ratio in the soils . Although the use of the BB fertilizers are encouraged with Government subsidies, non-point source pollution is still serious and will become worse. Precision farming is regarded as a new means for sustainable agriculture. It is a new technology that modifies the existing techniques and incorporates new one such as GIS, GPS , differential applicator to produce a new set of tools for the farmer to use. Precision farming, however, has constraints for individual farming practices. For exam le , farm size or parcel unit of each farmer is too small to adopt the precision agriculture on farmhouse-hold bases and farmer's ability to adopt the new technology is limited. However, it would be appropriate to establish local or regional cooperatives to operate such a precision farming system. It is recommended that Government provide sufficient incentives to help establish local and/or regional cooperatives.
