떫은감 분말을 첨가한 설기떡의 품질특성 (Quality Characteristics of Sulgidduck prepared by Addition of Astringent Persimmon Powder)

  • 떫은 감 분말의 첨가량 (0, 5, 10, 15, 20%)을 달리하여 설기떡의 품질 특성을 조사하였다. 감설기의 수분함량은 감 분말 첨가군 무 처리구에 비해 낮게 나타났으며, 환원당, 유리당(fructose, glucose, sucrose), 무기질(Ca, K, Mg) 함량은 떫은 감 분말 함량이 증가할수록, 함량이 증가하는 경향을 보였다. 색도는 떫은 감분말의 첨가량이 증가할수록 L값은 낮아지고, a값과 b값이 증가하였고, texture 측정에서 adhesiveness, cohesiveness, gumminess, chewiness 값은 낮아지는 경향을 나타내었다. 관능검사 결과 떫은 감분말의 첨가가 무 처리구에 비해 전반적인 기호도가 높은 간을 나타났고, 15% 첨가구가 가장 높은 값을 나타내었다. 이상의 결과로 설기떡 제조시 첨가하는 설탕시럽 대용으로 여러가지 기능성물질과 단맛을 함유하고 있는 떫은 감을 식품의 소재로 이용될 수 있는 충분한 가치가 있다고 사료된다.

경기 지역 일부 중학생의 매식(買食)에 대한 인식, 태도 및 선호도 조사 (Study on Recognition, Attitudes and Preference of Meal Purchases by Middle School Students Residing in Gyeonggi-do)

  • The purpose of this study was to provide basic information on nutrition education for proper meal purchase habits by conducting a survey on the adolescents' meal purchases, which is gradually increasing nowadays. The survey was conducted on 311 middle school students living in Gyeonggi province. The largest number of students (79.1%) received an allowance under '2,000 won'. Among those students who received a daily allowance, 70.7% of students spent under '1000 won' a day on meal purchases. Most students answered 'meal purchase is necessary'. Of the reasons for thinking that meal purchases are necessary, 'for staving off hunger' took the highest ratio (67.1%). As for standards of food choice, the largest number of students answered 'taste' (57.6%). As for frequency of meal purchases, most students answered 'once or twice a week', and with regard to day of the week, 'weekdays' took the highest ratio. As for possibility of balanced nutrition by meal purchases, the answer 'surely possible' took the highest ratio. Asked whether or not one had learned nutrition education on meal purchases, 73% answered 'no'. Asked about the necessity of nutrition education on meal purchases, 'necessary once' took the highest ratio. The most preferred purchase meals were breads, snacks was ranked second, followed by frozen foods, beverages, fast-foods, rice-cakes, flour-based foods, ice-cream, and fruits. To sum up the results, most students perceived that meal purchases are necessary. However, high quality meal purchases were not achieved, as most of the students did not verify nutrition labeling, and placed emphasis on 'taste'. Further, many students wanted nutrition education on meal purchases while only a few had actually received it. Therefore, systemic, regular, and multilateral nutrition education conducted at home, school, and society will contribute to establishing proper meal purchase habits.

전통 떡살문을 활용한 패션문화상품 디자인 개발 (Design Development for Fashion-Cultural Products using Traditional Tteoksal Patterns)

  • Traditional culture could be a wonderful source of inspiration for creative design. Tteoksal, the stamps used for making decorative patterns on traditional rice-cakes, have been used and passed on to generations to show the emotions of our ancestors. Numerous traditional patterns found in Tteoksal can be used to better understand and transmit tradition in modern ways. The purpose of this study was to develop fashion cultural products with a modern sensibility by understanding the origin, types and characteristics of Tteoksal and its patterns. The method of this study was through considering the proceeding studies and the references published by a specialist and museums having some information about further knowledge on Tteoksal. In line with the aforementioned study, neckties, eco-friendly bags and pouches were developed as fashion goods. Among the Tteoksal's patterns selected were lotus, bats, 樂 letters and complex patterns. Using a computer graphic software program such as Adobe Illustrator CS5, archetypes of patterns were traced as vector graphics, and two design motives were developed in every pattern. The patterns were developed into two types: one was a basic pattern faithful to a basic motive pattern, and the other was a varied type that was changed and applied. The fashion products were developed as two styles for basic and varied patterns for neckties, eco-friendly bags and pouch items. Twelve products were made for each pattern, which totals 48 unique products. In conclusion, the study could be a critical step to better understand the traditional culture and its influence to the patterns applied to modern fashion design.

  • To examine the main party of royal family in the Man Kyong Jeon, the authors analyzed“Jin Chan Eui Gue”, which is a historical record published in 1887(King Go-Jong). The results obtained from the study were as follows, 1. The dining tables were divided into two:fixed arranging tables(131) and taking-away tables. 2. Food and flowers were distributed to the 1238 attendants. 3. According to the status or class of the attendants, the pattern or size of table settings were differentiated in the kinds of food, hights of food, flowers china ware etc. 4. The seat of the King's Grand Mother was located facing the south. 5. Red silk table cloth was used in the main party. 6. At the main party for the King's Grand Mother, dishes were arranged in the following sequence, the first line : cakes made of flour, oil and honey etc. the second : oil and honey pastry the third : fruits the fourth : rice cake etc. the fifth : cooked meat and fried fish etc. the sixth : sliced raw fish and beverage etc. the seventh : noodles, soup and soy bean sauce the eighth : spoon and chopsticks. 7. In the arrangements of tables for the King's Grand Mother, the heights of food on the dishes were as following level, a dish : 1 chok and 5 chon (1척 5촌) 27 dishes : 1 chok and 3 chon (1척 5촌) 7 dishes : 1 chok. 고령자의 식품선호도 및 고령친화식품 요구도에 관한 연구 - 서울시 노인복지관 이용자 중심으로 - (Study on Demand Elderly Foods and Food Preferences among Elderly People at Senior Welfare Centers in Seoul)

  • The purpose of this study was to investigate the need to develop foods for the elderly based on their food preferences. A one-to-one survey method was used for data collection, and the survey was conducted on 165 elderly people (male: 47, female: 118) attending senior welfare centers in Seoul. The results of this study show that the preferred cooking method was steaming rather than stir-frying. Vegetables (4.24), fruits (4.22), Kimchi (3.87), fish (3.83), tofu (3.81), rice-cakes (3.65), dairy products/eggs (3.47), meat (3.45), noodles (3.44), seafood (3.44), poultry (3.23), bread/cookies (3.10) showed high preferences in order (p<0.05). The respondent's chewing & swallowing degree were "Not uncomfortable chew" 31.5%, "Hard food, and a big food is a little difficult to intake". 37%, "Hard food, and a big food is difficult to intake" 11.5%, "Small food, and soft foods can intake" 11.5%, and "It is difficult to intake solid food" 1.2%. Foods that were difficult to chew were meat 28.3%, seafood 15.2%, vegetables 15.2%, nuts 14.1%, fruits 12.0%, Kimchi 8.7%, and other 6.5%. For respondents, the most important factors affecting choice of elderly foods were flavor (48.5%), hygiene (43.0%), and nutrition (36.4%). The elderly wanted "Ready to eat (RTE)" 53.9%, "Ready to heat (RTH)" 15.8%, "Ready to cook (RTC)" 21.2%, and 'Fresh cut product" 9.1%.

수국차 잎 가루를 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk Added with Hydrangea serrata Seringe Powder)

  • To find the optimum proportion of Hydrangea serrata Seringe(HSS) powder, rice cakes were prepared with different quantities of Hydrangea serrata Seringe powder instead of sugar. Technical and sensory examinations were then conducted. The proximate components of the HSS leaves were 3.48% crude protein, 6.45% crude lipid, 7.98% crude fiber and 9.32% crude ash. The pH values of samples which replaced 25%, 50%, 75% and 100% of sugar with the HSS powder were significantly decreased(p<0.05). The groups with HSS powder showed a lower L value(lightness) and a value(redness) than that of the control group. The B value(yellowness) of the Sulgidduk containing the HSS powder was higher than that of the control group. The hardness of HS2 and HS3 was increased by the addition of the HSS powder. The adhesiveness of Sulgidduk groups with the HSS powder was higher than that of the control group. Springiness was not changed by adding the HSS powder. The cohesiveness of the Sulgidduk was significantly reduced by adding the HSS powder(p<0.001). The groups with no sugar showed the highest gumminess and chewiness. The added HSS powder caused both a darker color and a stronger odor, but the sweetness of the Sulgidduk which replaced the sugar with the HSS powder was decreased compared to the control group. The moisture content and the hardness was not affected by the addition of the HSS powder. The preference of color and taste was not changed by adding the HSS powder. The preference of flavor of the Sulgidduk with the HSS powder showed higher than that of the control. Overall acceptability of the Sulgidduk did not show any significant differences. As a result, Sulgidduk can be replaced 25% and 50% of sugar with the Hydrangea serrata Seringe powder.

노인세대의 편의식 이용현황과 요구도 조사 (Survey on Present Use and Future Demand for the Convenience Food in the Elderly Group)

  • This study is to research the use and the demand of the elderly generation that pursue economic ability and active lifestyle. The composition of the meals were "homemade meals" 65.3%, "homemade & convenience meals" 26.7% overall. For the "never miss a meal" category, 70-74 years old was 48.3%, over 80 years old was 60.0%. The elderly under 70 years old showed a high frequency in the use of alternative meals (p < 0.05) and the elderly with higher education used the alternative meals more frequently (p < 0.01). The rice-cakes, bread, tuna cans, Korean side-dishes, beverages, meat, cup-noodles and seafood as alternative meals are in the order of most frequency. Also, 96.0%, 59.0% and 46.5% of the elderly had experience in using "Ready to eat (RTE)", "Ready to heat (RTH)" and "Ready to cook (RTC)". The oldest group surveyed, the elderly at the age of 80 years old and above showed lower preference for "completely cooked state" but showed highest results in the "half-cooked state". This shows the difference between people's perception and the behavior that showed high frequency of 96.0% in the experience with "RTE". This can be inferred that the elderly needs the development of convenience food that is moderately packaged according to the newer lifestyle where the elderly live independent from their children. Moreover, there is a higher demand in the healthy convenience food, which means that there is a need for development in the quality of the convenience food that will allow more faith in convenience food by the elderly.

초등학교 고학년생의 성별과 영양지식 수준에 따른 식습관, 식품섭취빈도, 식태도 비교 (Dietary Habits, Food Frequency and Dietary Attitudes by Gender and Nutrition Knowledge Level in Upper-grade School Children)

  • This study was carried out to examine dietary habits, food frequency and dietary attitudes by gender and nutrition knowledge level in upper-grade school children. Subjects were 223 boys and 208 girls attending 13 elementary schools (5 th and 6 th graders). A self-administered questionnaire was developed to assess nutrition knowledge, dietary habits, food frequency, and dietary attitudes. Nutrition knowledge score assessed by 19 questions was significantly higher in girls than in boys. There were significant differences between boys and girls in several items in dietary habits such as enough breakfast time, dinner regularity, number of side dishes, eating speed, type of snack after dinner, and degree of saltiness of dishes. Girls consumed staple foods such as rice, noodles or bread more frequently, and consumed less frequently ramyun, fried foods, fast foods, and Chinese foods than boys. In addition, girls had more positive dietary attitudes in trying to reduce fast foods, Chinese foods, ramyun and fried foods. Also children in the high or moderate nutrition knowledge level groups had better dietary habits in frequency of meals, frequency of breakfast, enough breakfast time, dinner regularity, activity during the meal, number of side dishes, eating speed, type of snack after dinner, and better food choices by eating staple foods and vegetable side dishes, meats and beans more frequently, and fried foods, doughnuts/cakes, Chinese foods less frequently, and had better dietary attitudes in breakfast, vegetables and fruit intake than children in the low nutrition knowledge level group. Our results showed that dietary habits, food frequency and dietary attitudes were different by gender and nutrition knowledge level. These results suggest that in developing nutrition education program for elementary school children, the differences between gender and nutrition knowledge level should be considered. Nutrition education in elementary schools may change dietary habits and dietary attitudes through increasing nutrition knowledge.

흑밀가루로 제조한 상화병의 품질특성 (Characteristics of Sanghwabyung(traditional leavened bread)made with Black-wheat Flour)

  • In order to reproduce Sanghwabyung that people in the past made and ate at Yuduil (June 6th by lunar calendar) among our traditional rice cakes, this study manufactured Sanghwabyung with black wheat flour by adding the wheat bran and Nuruk powder as leavening source, according to the old cook book "Gyuhapchongseo" and analyzed the quality characteristics. As a result of total phenol and flavonoid contents, DPPH radical scavenging activity of black wheat contents showed the gradual increase significantly (p < 0.001). The number of lactic acid bacteria was $6.72{\times}10^7$ CFU/mL just after preparation, and the number of yeast was $5.59{\times}10^7 $ CFU/mL. The number of lactic acid bacteria and yeast increased after 24 h to $8.48{\times}10^7$ CFU/mL and $5.40{\times}10^7$ CFU/mL. Hard-ness was the lowest in WF30%, compared with the C and the highest in BF100% and WF100%. The more the added portion increased in WF30% and BF30%, the more the hardness increased significantly (p < 0.001). The cohesiveness was the highest in WF30%, compared with C and BF30%, the lowest. It was shown significantly different between the C and WF and BF sample groups (p < 0.01). Springiness was the highest in WF10% and WF50%, compared with that in C and BF100%, which were the lowest. Springiness decreased significantly (p < 0.001) ad-ded portion increased between WF30% and BF30%. Gumminess was the highest in BF100% and WF100%, whereas that of WF20% was the lowest (p < 0.001). Chew-iness was the highest in BF100% and WF100% (p < 0.001).

  • 本研究的目的是对咖啡店的 "重要性"(顾客在光顾咖啡店以前的感知)和积极或消极的 "满意度"(顾客在光顾咖啡店以后的感受)之间的差距进行分类, 并分析这些差距对对购买行为的影响. 为此, 我使用重要性和满意度之间的差距作为选择咖啡店的解释变量, 并通过使用有序Probit模型(OPM)来实证分析差距对购买行为(整体满意度和愿意到再次光顾)的影响方向和大小. 先前使用IPA的研究评估了差距影响的方向和大小的象限, 但是在分析差距对顾客的影响方面却失败了. 在本研究中, 我评估了积极和消极的差距对顾客满意度和愿意去再光顾的影响. 通过使用OPM,我量化了积极和消极的差距对顾客整体满意度和愿意去再光顾的影响. 每个人的支出, 光顾的频率和购买咖啡的地方对顾客整体满意度有最积极的影响. 光顾的频率, 在每人的支出之后, 然后是购买咖啡的地方对顾客整体满意度有最积极的影响. 因此每个人的支出和光顾的频率对顾客整体满意度有最积极的影响. 这一发现意味着一个在咖啡店每次或每周花费5000韩元的顾客的实际的满意度越高(差距), 其整体满意度和愿意去再光顾就越高. 虽然经济效益对总体满意度和愿意去再光顾有显著影响, 但是大专和大学的学生仍然愿意去咖啡馆并愿意消费5000韩元, 因为他们不只是购买咖啡本身而且将咖啡店作为其他活动的场所, 例如工作, 和朋友见面或是放松的地方. 学院和大学的学生还可以在咖啡店通过个人电脑上网, 看电影, 学习, 因此, 咖啡馆应对顾客提供适当的设施和服务. 咖啡店品牌的积极差距对愿意去再光顾有积极的影响表明顾客满意度越高, 顾客越愿意去再光顾. 另一方面, 这一因素的消极差距意味着顾客满意度越低, 顾客再光顾的意愿也越低. 因此, 在本研究中, 与其他评估的因素相比, 品牌因素对满意度有较大的影响. 鉴于国内咖啡文化变得越来越高级, 大专院校的学生对这一趋势也很敏感, 所以学生有很多可选择的品牌. 在韩国最高级的咖啡店, 外墙是玻璃建造的并可以打开, 内部是充满异国情调的开放式厨房. 这些高级咖啡店作为标志的功能复合大专院校学生的品味. 韩国咖啡店已成为一个文化品牌. 从品牌因素来看, 为了让顾客觉得这些咖啡店是高级的, 高质量的设备和提供更好服务的措施应当建立起来. 韩国咖啡馆作为蓬勃发展的行业品牌竞争加剧的结果表明, 提供与竞争对手不同的额外服务是有必要的. 顾客可以免费使用扫描仪. 另一个可以用来提高品牌的战略是提供和经营为集体学习而准备的讨论会议室. 如果咖啡馆采取这些类型的策略, 学院/大学的学生将更有可能认为他们承担的费用是值得的, 随后, 他们将可能更满足这些咖啡馆的品牌, 并更愿意再次光顾. 性别和学习年数对总体满意度和再光顾的意愿有最消极的营销. 女学生比男学生更容易满足和再光顾. 三, 四年级的学生比一, 二年级的学生更容易满足和再光顾. 喝咖啡的学生, 单独在咖啡店看书, 用笔记本电脑是很容易被注意到的. 高年级学生为了有效地利用时间用于自我发展和寻找工作往往独自光顾咖啡店. 从积极的差距来看, 经济效率这一因素对总体满意度和愿意再光顾有最大的影响. 与咖啡价格一起, 学生实际满意度(差距)越高, 总体满意度和再光顾的意愿也越高. 有消极差距的经济效率队再光顾有消极营销的结果表明较小的消极差距可以让再光顾的意愿更高. 在持续恶化的市场环境中, 坐落在大专院校附近的咖啡店采取诸如积分或会员卡, 和信用卡 公司的战略联盟, 发展套餐菜单或季节菜单和免费咖啡服务这些战略来提高竞争力. 就消极差距而言产品功率也有消极的影响, 这表明较高的负差距会导致较低的再光顾的意愿. 因为还有更多的客户比前几十年, 在这十年里更喜欢咖啡, 新一代的客户, 即学院/大学的学生, 希望除了咖啡还有更重菜单项目. 因此, 咖啡店应当增加配菜项目, 如华夫饼, 糕, 蛋糕, 三明治和沙拉. 例如, 星巴克韩国正在努力加强卖草莓糕, 艾草香味, 南瓜产品, 并提供免费的咖啡或奶油. 总而言之, 咖啡馆应注重提高其经济效率, 品牌和产品功率, 以加强大专院校学生的满意度. 由于店铺毗邻学大专院校可享受地缘优势, 就经济效率, 品牌和产品功率而言提供不同的服务, 很可能会提高客户满意度和回访. 咖啡厅的品牌, 因此, 应不断创新和变化, 以满足顾客的愿望. 由于这项研究只是针对在首尔的大专院校的学生, 需要针对不同地区和年龄组的比较研究来概括本研究的结果和建议.
