Anthocyanin pigments from three pigmented rice varieties, Hongjinju, Sintoheugmi and Josaengheugchal pigmented by black color, were quantified to evaluate effects of transplanting and harvesting time during seed development. Hongjinju, a rice variety of grains pigmented by red color, contains only two kinds of anthocyanins, delphinidin and cyanidin. Meanwhile, delphinidin, cyanidin, and pelargonidin were identified in Sintoheugmi and Josaengheugchal. Anthocyanidin contents in pigmented rice variety Hongjinju under different planting times were decreased with prolonged harvesting times. The Sintoheukmi showed that cyanidin content was the highest among analyzed pigments during seed development. Two anthocyanins (cyanidin and pelargonidin) in Josaengheugchal recorded highest contents at 20 days after heading in three transplanting times. Cyanidin content was also slightly increased with prolonged transplanting time. Total anthocyanidin contents in Hongjinju were always lower than that of Sintoheukmi and Josaengheukchal. In two rice varieties, Sintoheugmi and Josaengheugchal, $a^*$ values were commonly slightly decreased by late transplanting and harvesting times. Changes of $a^*$ and $b^*$ values in waxy rice varieties, Sintoheugmi and Josaengheugchal varied more than those in Hongjinju. In Josaengheugchal, early harvesting before maturity showed lower brown rice yield and late harvesting in the each transplanting times resulted in highest brown rice yield.
It attempted to determine the effect of various thawing methods, such as pressure cooking, conventional cooking, microwave heating and thawing at room temperature, on the quality of frozen cooked rice using Nongan variety of rice. These effects were analysed at three different periods-after 10 days, 30 days and 90 days. It conducted a physico-chemical analysis(moisture content, dehydration rates, color value and texture) and sensory evaluation o the frozen-thawed cooked rice. The study showed that there were no significant differences on the frozen-thawed cooked rice. The study showed that there were no significant differences on the quality characteristics of frozen-thawed cooked rice during the storage of 90 days. However, the thawing method of pressure cooking caused high moisture content and decrease in hardness on the cooked rice, the desirability for the rice didn't diminish compared with the cooked rice just after cooking. the quality characteristics of the cooked rice after frozen-thawing by conventional cooking and microwave heating were similar with that of the cooked rice just after cooking. thawing at room temperature caused a significant decrease in quality characteristics.

Heavy metal pollution may be one of the most serious challenges confront crop production and human health. Therefore, the selection of heavy metal tolerance cultivars which adapted to the contaminated fields will introduced a suitable solution for management this critical environmental risk. The objectives of this research is to assess human health risk using geochemical analyses and exposure assessment of heavy metals in rice cultivars. Risk for inhabitants in the closed mine area was comparatively assessed for As, Cd, Cu and Pb in 10 rice varieties as a major exposure pathway. The average daily dose (ADD) of each heavy metal was estimated by analyzing the exposure pathways to rice and soil. For the non-carcinogenic risk characterization, Hazard Quotient (HQ) and Hazard Index (HI) were calculated using toxicity indices provided by US-EPA IRIS. The different rice varieties revealed a wide range of HI values from 23.6 to 34.3, indicating that all rice varieties have a high potential toxic risk. The DA rice variety showed the lowest HI value while the TB rice variety the highest. The probabilities of cancer risk for As via rice consumption were varied with rice varieties ranging from 2.0E-03 to 3.5E-03 which exceeded the regulatory acceptable risk of 1 in 10,000 set by US-EPA. The DA rice variety also showed the lowest value while the TB rice variety gave the highest value. Our results indicate that risk assessment can be contribute to screen the pollution safe rice cultivars in paddy fields affected by the mining activity.
'Hanseol' is a new very early-maturing, cold tolerant and high quality japonica rice variety developed from a cross of 'Jinbu24' and 'Jinbu25' by the rice breeding team of National Institute of Crop Science (NICS), Rural Development Administration (RDA) in 2009. The heading date of this variety is July 25, which is four days earlier than check variety, 'Jinbubyeo'. 'Hanseol' has 65 cm of culm length, 99 spikelets per panicle, 82.9% of ripened grain rate, and 21.5 g of 1,000 grain-weight of brown rice. This variety shows susceptibility to bacterial leaf blight and virus diseases, and insect pests. It is tolerant to cold stress in terms of less heading delay and high fertility in cold water irrigated cultivation. This variety shows delayed leaf senescence and considerable tolerance to viviparous germination at ripening stage. The milled rice of this variety exhibits translucent, clear non-glutinous endosperm and medium-short grain. 'Hanseol' showed low gelatinization temperature and 6.1% protein content, 19.1% amylose content and good palatability of cooked rice. The milled rice yield of this variety is about 5.43 MT/ha at ordinary culture in local adaptability test for three years. 'Hanseol' would be highly adaptable to mid-north and mid-mountainous areas, and mid-northern alpine area in Korea.

This experiment was conducted to study the effects of growth stage and variety on the quality of whole crop rice(WCR) silage at National Institute of Animal Science, RDA from 2004 to 2005. Two types of rice("Chucheong" for food and "Hamasari" for whole crop) were harvested at six different growth stages (heading, flowering, milk, dough, yellow ripen and fully ripen stage) and ensiled each harvest stages. Crude protein(CP) content of all whole crop rice silage was also decreased with progressed maturity at harvest and TDN(total digestible nutrient) content of WCR was increased. The average CP content of whole crop rice was higher than that of food rice. The contents of ADF(acid detergent fiber) and NDF(neutral detergent fiber) decreased with delayed harvest maturity. The content of TDN estimated from ADF content was increased with progressed maturity, but there was not found significant difference between rice varieties(p<0.05). The average pH value was 4.69 and it was increased with delayed harvest maturity. Acetic and butyric acid content were decreased, but lactic acid content was increased with progressed maturity. The experiments presented here show that all rice varieties may give a good quality silage. But some wrong practical method(grain loss, productivity, nutrient value, etc.) will make poor quality of rice silage. Therefore, dough stage of harvest maturity will be recommendable as proper harvest time for making high quality of whole crop rice silage in Korea.
School foodservice customers are likely to be tired of repeated cycle menus and their satisfaction for meals offered in school is inclined to be low. The menu variety is an important factor in increasing customer satisfaction. The purpose of this study was to investigate customer perspectives for applying rice based bread menus in order to add menu variety and promote using rice processed products in school foodservice. The questionnaire was distributed to 760 parent samples in elementary schools and 520 student samples in middle/high schools and a total of 665 and 387 usable data were collected, respectively. Food habits such as preference for cooking method, menu preference, food allergy and nutritional perspectives for menu and customer perception for rice based bread like quality, reliability, price, and purchasing convenience were investigated using 7 Likert scale. Also expected menu types applying rice based bread and offering frequency of rice bread menu were examined. Preference level for bread-based meals were moderate and students' preferences were slightly higher than parents. Menu types applying rice bread expected by middle/high school students were western food (49.4%), spaghetti (28.4%), set menu (13.7%), noodle (17.6%), Korean food (11.1%), Chinese food (10.9%) and porridge (4.5%). The most occupied rate was once in a week for expected offering frequency. Most respondents perceived that rice bread was more nutritive and qualitative than the wheat based one.

We found a new stay-green mutant from 'Pyeongwon' which is an early-maturing rice variety in Korea. The mutant showed green leaves after grain ripening period and it maintained higher SPAD value than wild type rice plant and original variety 'Pyeongwon'. The stay-green trait in rice, three genes have been identified up to date. The non-yellow coloring1 (NYC1) gene encodes a chloroplast-localized short-chain dehydrogenase/reductase (SDR) with three transmembrane domains. The non-yellow coloring3 (NYC3) gene encodes a plastid-localizing alpha/beta hydrolase-fold family protein with an esterase/lipase motif. The Sgr gene encodes a novel chloroplast protein and regulates the destabilization of the light-harvesting chlorophyll binding protein (LHCP) complexes of the thylakoid membranes, which is a prerequisite event for the degradation of chlorophylls and LHCPs during senescence. After sequencing the PCR products, we found a single nucleotide variation($A{\rightarrow}T$) in the NYC1 gene, which changes the amino acid lysine to methionine. The NYC1 gene encodes a short-chain dehydrogenase/reductase(SDR) protein. And we confirmed the co-segregation between SNP and stay-green trait from genotyping the progenies of the mutant.
In this study, the effect of commercial organic growth medium amended with different ratios of vermicast on the growth of rice seedlings. The amended ratios of vermicast were 0% (control), 5%, 10%, 20% and 40%, respectively. A bioassay with two rice varieties (Chucheng and Black) was conducted to assesses the amendment effect of vermicast on the seedling growth in two potting methods. In potting treatment, the Chucheng variety with late maturity showed significantly higher values on growth parameters excepted root weight (RW) up to 20% and Black variety with early maturity up to 10% amended with vermicast, respectively. In floor layering treatment, all of the growth parameters significantly increased up to 5% amended with vermicast in both rice variety. The seedling growth of rice in floor layering treatment attained the highest values at lower amended ratios of vermicast than those of potting treated only, it may correspond with increased uptake of nutrient by elongated root grown under the layering amendment of vermicast. Vermicasts can be used as soil amendments or components of plant growth medium for seeding organic agriculture.
In fact, rice cultivation technique from 1962 to 1970 was very slight, but this technique from 1970 to now was remarkably developed in Korea, it was due to development of high fretilizer responsive and lodging resistant variety, Tongil; ie. Ind. ${\times}$ Japonica remote-cross rice variety. The main factors of this development is as follow: Firstly the most farmer (more than 90%) used newly developed seedling growth method; polyethylene film covered protected nursery bed. Secondly date of transplanting (middle or late part. of May) was earlier 10-15days than before 1970. Thirdly new varieties were highly lodging resistant at high fertilizer level $(N-P_2O_5-K_2O:15-9-11 kg/l0a)$. However, this level is 50% increased one than it for Japonica varieties. At forth planting density increased up to 75-80 hills per $3.3m^2$. Added to these factors, farm labor shortage and wage increase due to economic development gave a chance for introduction of transplanting machine to farmer in 1977. It's use increased for 100, 800 ha in 1981. The most of farmers are using herbicides and weed control system dependoing on wood composition has been established and disseminated to farmer.
In the present study, it was found that the susceptible variety Khao-tah-haeng 17, at all four predisposing temperature regimes, produced more typical lesions than hypersensitive lesions when inoculated with most of the blast fungus isolates. Tetep, Carreon, IR36 and Sensho produced more hypersensitive lesions than typical lesions at all four predisposing temperature regimes. Highly significant differences among predisposing temperature regimes and rice varieties for number of hypersensitive lesions and number of typical lesions were found. Symptom occurrence on a specific variety, as measured by the number of typical lesions, was more affected by predisposition temperature or blast isolate than by temperature and isolate combined.
