쥐눈이콩(鼠目太) 첨가 냉동쿠키의 품질특성 및 최적화 (Quality Characteristic and Optimization of Iced Cookie with Addition of Jinuni bean(Rhynchosia volubilis))

  • The purposes of this study were firstly to optimize the recipe for iced cookies by cooking with five different ingredient levels of $Jinuni\;bean(X_1),\;butter(X_2)\;&\;sugar(X_3)$ and secondly to analyze the chemical and sensory test results by using RSM(Response Surface Methodology). As a result of this test, water activity decreased with increasing contents of butter or sugar, while hydrophilic browning decreased independently with increasing sugar content. There was a positive correlation(p<.001) between specific gravity and hardness, although the result was not uniform due to the interaction of each factor. There was a negative correlation(p<.001) between the spread ratio and gravity or hardness, and it tended to increase with increasing each content. Color value L and color value a had positive correlation (p<.001) and the value tended to decrease with increasing the quantity of Jinuni bean. Generally, the strength of the cookies showed a saddle point at the peak of the 3d graph. As a result of sensory evaluation, the color was sensitive to the contents of sugar and Jinuni bean, the texture was sensitive to the contents of butter and sugar, and the taste and overall quality were sensitive to all three factors. Color had a positive correlation(p<.05) with the taste, texture and overall quality. There were high positive correlations(p<.001) between the taste, texture and overall quality. The preference data showed an up-swollen, parabolic shape in the center of the 34 graph, which enabled the optimum value to be determined and the optimum mixture ratio which fulfilled all sensory items was Jinuni bean 93g, butter 188.5g and sugar 155g, indicating a substitution of flour by $44\%$.

약콩 (Rhynchosia volubilis: 서목태) 및 대두 처리에 의한 MG-63 조골세포 증식 증가에서 ER$\alpha$의 역할에 대한 연구 (Study on the Role of Estrogen Receptor-Alpha in Yak-Kong and Soybean Induced Proliferation of MG-63 Human Osteoblastie Cells)

  • Phytoestrogens, especially Yak-kong or soybean-derived isoflavones have been traditionally used as a supplement of estrogen for preventing postmenopausal osteoporosis in oriental folk medicine. In a previous study, we demonstrated that as Yak-kong and soybean increased MG-63 human osteoblastic cell proliferation, the expression of estrogen receptor $\alpha\;and\;beta\;(ER\;\alpha:\;ER\;\beta$) both were increased. However, the increased level of ER $\alpha$ is much higher than that of ER$\beta$. To determine whether the altered level of ER $\alpha$ expression affects Yak-kong or soybean induced MG-63 cell proliferation, we established cell lines stably expressing either ER $\alpha$ or antisense ER $\alpha$ RNAs. Increased expression of ER a in MG- 63 cells (ER $\alpha$-MG63) enhanced Yak-kong or soybean induced proliferation which paralleled with the enhanced expression of IGF-I. Inhibition of ER $\alpha$ expression by antisense $ER\;\alpha\;RNAs\;(As-ER\;\alpha-MG63$) caused these cells to insensitize Yak- kong or soybean induced proliferation and IGF-I expression. Furthermore, the comparable effects between Yak-kong and the combined treatment of genistein and daidzein at $0.5\;{\times}\;10^{-8}M$, which is a concentration of these two isoflavones similar to Yak-kong at 0.001 mg/ml, on cell proliferation and IGF-I expression in $ER\;\alpha-MG63\;or\;As-ER\;\alpha-MG63$ cells demonstrate that ER $\alpha$ plays an important, active role in MG-63 cell proliferation induced by phytoestrogens, especially Yak-kong or soybean derived isoflavones.

생태·경관보전지역 선정을 위한 경상남도 황석산 일대에 분포하는 식물상 연구 (Study on Flora Distributed around Mt. Hwangseok, Gyeongsangnam-do for Selecting the Ecological and Landscape Conservation Area)

  • 황석산 일대에 분포하는 식물상은 97과 295속 394종 4아종 80변종 17품종 등 총 495분류군으로 요약되었다. 분류군 구성 비율의 경우 양치식물 4.2%, 나자식물 1.2%, 쌍자엽식물 78.8%, 단자엽식물 15.8%로 나타났다. 희귀식물은 지리바꽃, 너도바람꽃, 쥐방울덩굴, 태백제비꽃 등 9분류군이었다. 한국특산식물은 은사시나무, 참개별꽃, 진범, 은꿩의다리 등 13분류군이었다. 식물구계학적 특정식물은 승마, 긴오이풀, 앉은부채, 물박달나무 등 16분류군으로 나타났다. 기후변화 적응 대상식물은 진범, 자란초, 지리대사초, 여우콩 등 11분류군이었다. 귀화식물은 나도닭의덩굴, 소리쟁이, 미국자리공, 아까시나무 등 총 20분류군으로 확인되었으며, 생태계교란야생식물은 미국쑥부쟁이 1분류군으로 나타났다. 생태적 중요종이 출현한 지역에 대한 정확한 범위를 설정하여 핵심, 완충, 전이지역 등으로 구분하는 것이 필요할 것이며, 희귀식물, 특산식물의 분포지역과 연계시켜 체계적인 지역 관리 계획이 수립되어야 할 것이다. 또한 다양한 평가기법과 정확한 자료구축을 실시하여 핵심지역 설정의 타당성을 확보하는 것도 요구된다.
