  • This study analyzed the priority of decision-making attributes considered as the customers select the family restaurant with Analytic Hierarchy Process, which is the method for quantitative analysis. The result of analysis revealed that the food factor in the first stage of evaluation attributes was the most important and in the second stage, an atmosphere factor of place, an affiliated card factor of promotion, a taste factor of food and a kind attitude factor of employee were important respectively.

중국 내 외식 소비자의 외식업체 선택 속성이 고객 만족과 고객 충성도에 미치는 영향에 관한 연구 - 한식당과 자국 식당 간의 비교 분석을 중심으로 - (A Study on the Effect of China Consumer's Restaurant Selection Attributes, Customer Satisfaction and Customer Loyalty - Focusing on Korea and China Restaurants in China -)

  • 본 연구에서는 중국에 한국 식당과 중국 사이의 레스토랑 선택 속성을 조사하고 비교하였다. 편의표본추출방법을 통하여 총 479명(중국 식당 245, 한국 식당 234)의 유용한 데이터가 수집하였다. 다중 통계 방법(요인분석, 신뢰성분석, t-테스트, 다중회귀)을 사용하여 데이터를 분석하였다. 그 결과, 첫째, 고객 만족은 식당의 선택 속성변수 요인에 의해 영향을 받는 것으로 나타났고, 한식당과 자국 식당 간에 따라 만족도의 차이가 있는 것으로 나타났다. 둘째, 고객 만족은 고객 충성도에 유의한 영향을 미치고 있는 것으로 나타났다. 그러나 더미 변수 요인은 고객 충성도에 영향을 주지 않는 것으로 나타났다. 셋째, 한식당과 중국식당 간의 만족도 및 충성도외 차이가 존재하는 것으로 나타났다.

대학생들의 피자 전문점 선택에 영향을 미치는 속성에 대한 평가 (Estimating Effects of Attributes on Pizza Restaurant Choice by University Students)

  • The purpose of this study was to measure the pizza purchasing behavioral characteristics of respondents and importances of factors affecting pizza purchase, to estimate the effects of attributes on pizza restaurant choice, and to predict probability of selecting a particular pizza restaurant The questionnaire consisted of two parts: The paired experimental profiles, purchasing behavior and importances of factors affecting pizza purchase. This study generated profiles of 16 hypothetical pizza restaurant based on the seven attributes. The profiles comprised 16 discrete sets of variables, each of which had two levels. For this study, researcher randomly selected 150 students of university as respondents. Twenty students did not complete the survey instrument, resulting in a final sample size of 129. All estimations were carried out using frequency, correlation, phreg procedure of SAS package. The results were as followed Based on the estimated model, the -2LL(B) statistic for a model with all explanatory variables was 5585.761 and the Chi-square statistic is 134.786 with 7 df (p<0.001). At p<0.001, we would reject the null hypothesis that the attributes do not influence choice. The parameter estimate for price was highest, followed by late delivery time, promised delivery time, money-back guarantee, discount, pizza variety, and pizza temperature. The result from this study suggested that there was an opportunity to increase market share and profit by improving operations so that customers receive discount and money-back guarantee simultaneously, and by reducing price, delivery time.

전통한과의 웰빙 추구, 선택 속성, 고객 만족, 고객 애호도의 구조관계에 관한 연구 (A Study on the Structural Relations among Well-being, Selection Attribute, Customer Satisfaction, Customer Loyalty for Korean Traditional Pastry)

  • 전통한과 고객의 웰빙 추구 성향, 선택 속성이 고객 만족과 고객 애호도에 어떤 영향을 주는가를 살펴보는 관계를 규명하는데 관심이 집중되고 있다. 최근 건강과 더 나은 삶을 추구하는 요구가 증대함에 따라 본 연구는 고객 만족과 고객 애호도에 웰빙 추구 성향과 선택 속성이 미치는 영향 관계를 살펴보고자 하였다. 따라서 전통한과의 웰빙 추구 성향, 선택 속성이 고객 만족과 애호도에 미치는 영향에 대한 관계를 검증한 결과를 아래와 같이 나타내었다. 첫째, 웰빙 추구 성향은 고객 만족과 고객 애호도에 유의한 영향을 미치는 것으로 나타나고 있어서 전통한과 고객의 웰빙 추구 성향이 우리나라 전통한과의 고객 만족과 애호도를 높이는 중요한 변수가 된다는 것을 알 수 있다. 둘째, 전통한과의 선택 속성은 고객 만족에는 유의한 영향을 미치고 있으나 고객 애호도에는 유의한 영향을 미치지 못하는 것으로 나타나고 있어, 이러한 문제는 고객이 전통한과를 선택하는 마음속에서 때때로 고객의 욕구와 맞거나 맞지 못하는 혼란을 초래한다는 것을 의미한다. 그러므로 본 연구에서 전통한과의 고객 만족과 애호도는 고객이 더 건강한 삶을 추구하고 선택 속성과 같이 색상과 추구하는 맛에 따라 더 나은 삶을 추구하는 고객의 요구에 따라 이루어진다는 것을 알 수 있다.

중식당의 시장세분화에 따른 세트메뉴 개발에 관한 연구 (A Study on the Development of Set Menu according to Market Segmentation of Chinese Restaurant)

  • This study aimed to develop Chinese restaurant set menu which was proper to tendency of market segmentation by using conjoint analysis. In order to examine tendency of market segmentation, this study investigated the important factors and effective values of whole market and segment market. First, the study found that whole market and segment market seemed to prefer seafood to meat except Cluster 3 (Gentle demand type). Second, regarding efficiency of attribute level, the study found that crap soup is favored over seafood in both whole market and segment market except Cluster 1 (strong demand type). Third, Cluster 1 (strong demand type) showed a high level of efficiency on menu which is mixed with meat and seafood. In Cluster 2 (middle demand type), there was a high level of efficiency in meat menu. In case of Cluster 3 (gentle demand type), seafood menu showed high level of efficiency. Forth, there was a high level of efficacy in rice and western dessert menu on the result of analysis on whole market and segment market. Therefore, this study suggests that the preference of seafood is more higher than the preference of meat. It means that current customers care their health more than they used to be. According to this study, people who want to develop Chinese restaurant menu should focus on seafood more than meat. What's more, marketers of chinese restaurants have to not only present new awareness and fresh atmosphere but also provide typical composition of set menu for target customers.

조리용 와인의 선택 속성과 인구통계학적 특성 사이의 관계에 대한 연구 (A Study on the Relationship between the Cooking Wine Attributes and Demographic Characteristics)

  • The purpose of this study was to examine the actual state of cooking wine usage, and analyze the relationship between the attributes of cooking wine and demographic characteristics. The major findings of this study are as follows. First, the origin and correct choice of cooking wine were significantly related to hotel type, restaurant type and career. Second, the importance of the taste and aroma of a cooking wine, which are intrinsic attributes in the evaluation of a wine, had significant relationships with all the demographic variables whereas the importance of purchase cost and label information of the cooking wine only exhibited a significant correlation with career (p<0.05). Third, 53.7% of the respondents used cooking wine based on recipes, while the rest used it by rule of thumb. These results between restaurant type were significantly different (p<0.05). For the results of this research to be of more use, further research should be conducted on the functional aspects of cooking wine and their effects on cooking. In addition, further systematic research should be performed on the functional and sensory effects of a variety of wine tastes and aromas on cooking.

구매빈도별 피자전문점 선택에 미치는 속성의 영향 평가 (Estimating Effects of Attributes on Choice of Pizza Restaurants by Purchase Frequency)

All estimations were carried out using frequencies, $X^2$, independent samples t-test, phreg procedure of SAS package. The results were as followed: Some purchasing behavioral characteristics and importances of factors affecting pizza purchase were significantly different by purchase frequency. Based on the estimated models developed for the two purchase frequency groups, the Chi-square statistics were significant at p<0.001. The parameter estimate for late delivery time with frequently purchase frequency group was highest, and the parameter estimate for price with frequently purchase frequency group was highest. The pizza restaurants that charged 20,000 won, offered 100% discount on eleventh pizza, promised to deliver pizza in 20 min, usually delivered the pizza as promised, offered 2 or more types of pizza crust, delivered steaming hot pizza, and did not offer a money-back guarantee which was favored by each of the two purchase frequency groups. The results from this study suggested that there was an opportunity to increase market share and profit by improving operations so that customers can receive discount and money-back guarantee simultaneously, and by reducing price, delivery time.

Effects of Self-Service Technology Quality on SST Satisfaction and SST Continuance Usage Intention

  • Purpose: According to the growth of technology in the service industry, the interaction service between customer and employee has recently been transformed into between customer and technology by Self Service Technology (SST) requiring direct interaction with customers. In this context, self service technology such as unmanned ordering system installed at the store is actively introduced at the work place to reduce labor costs by food and retail company and the research for self-service technology which is rapidly replacing existing face-to-face service is needed. As the growth speed of SST is rapid, many researchers have studied the characteristics of SST, in every sector of business worldwide. Among the characteristics, attributes, Self Service Technology Quality (SSTQUAL) to evaluate SST is important because it may cause the customer's behavior. Thus, this research focuses on the effects of SSTQUAL on SST Satisfaction and SST continuance usage intention. This research suggests the guidelines for how Restaurant Company should prepare SST and build their customer satisfaction and continuance usage that increase the sales. Research design, data and methodology: This study tests the structural relationship between SSTQUAL of unmanned ordering system, SST satisfaction and SST continuance usage. SSTQUAL divided into four sub-dimensions and two categories, cognitive service attributes (Convenience, Functionality) and affective service attributes (Enjoyment, Assurance). In order to achieve the purposes of this research, research model and hypotheses were developed based on previous researches. All constructs were measured with multiple items developed and tested in the previous studies. The data were collected from 524 customers experiencing SST and were analyzed through SPSS 25.0 and SmartPLS 3.0 statistical package program. Results: The findings of this research are as follows. First, all SSTQUAL have significant positive impacts on SST satisfaction. Second, SST satisfaction has significant positive impact on SST continuance intention. Third, cognitive service attributes and affective service attributes had wealth of explanation of service attribute more than a single dimension. Conclusions: The implications of this study are as follows. Overall, Restaurant Company should manage SSTQUAL consisting of not only cognitive service attributes (Convenience, Functionality) but also affective service attributes (Enjoyment, Assurance) to satisfy customers basically regardless of the type of restaurant.

경주지역 주민들의 약선요리 선택속성이 인지도와 고객만족도에 미치는 영향 (Effects of the Selecting Attributes of Medicinal Food on Recognition & Customer Satisfaction in Gyeongju Area)

  • 본 연구는 경주지역의 약선요리를 이용한 경험이 있는 소비자들을 대상으로 약선요리 선택속성이 인지도와 고객만족도에 미치는 영향을 분석하고자 하였다. 실증분석을 위해 총 300부의 설문지를 배부하여 부적절한 자료를 제외하고 총 256부의 자료를 본 연구의 표본자료로 사용하였다. 본 연구를 위해 자료처리는 SPSS WIN 20.0 통계패키지를 이용하여 분석하였다. 인구통계학적 특성을 살펴보기 위해 빈도분석을 실시하였고, 변수들의 신뢰성과 타당성을 분석하기 위해 신뢰도분석과 요인분석을 실시하였으며, 가설검증을 위하여 회귀분석을 실시하였다. 연구 결과 첫째, 선택속성은 인지보양과 인지전문성에 영향을 미칠 것이다의 가설검증 결과, 인지전문성에는 영향을 미치는 반면 인지보양에는 영향을 미치지 않는 것으로 나타났다. 둘째, 인지도는 고객만족도에 영향을 미칠 것이다의 가설검증 결과, 인지보양과 인지전문성이 고객만족도에 영향을 미치는 것으로 나타났다. 셋째, 선택속성은 만족에 영향을 미칠 것이다의 가설검증 결과, 서비스속성이 고객만족도에 영향을 미치는 것으로 나타났으나 영양속성과 전문성속성은 영향을 미치지 않는 것으로 나타났다. 따라서 본 연구의 결과를 토대로 다음과 같은 시사점을 도출하였다. 즉 약선요리 전문점의 고객만족도를 높이고 경쟁력을 강화하기 위해서는 약선요리 전문점들의 전문성이 강조되어야 하며 서비스와 영양적인 만족도를 충분히 제공해야할 것이다.

전주비빔밥 향토음식점의 선택속성이 고객만족과 행동의도에 미치는 영향: 전주지역을 중심으로 (The Effect of the Selection Attribute of Local Jeonju-bibimhop Restaurants on Customer Satisfaction and Behavioral Intention: Focused on Jeonju area)

  • 본 연구는 전주비빔밥 향토음식점을 방문하는 고객들에 대한 중요도와 성취도 분석을 통해 전략적 시사점을 찾아보고자 하였다. 또한 전주비빔밥 향토음식점에 대한 선택속성이 고객만족에 미치는 영향을 살펴보고, 전주비빔밥 향토음식점에 대한 선택속성이 행동의도에 미치는 영향을 살펴보고자 하였으며, 전주비빔밥 향토음식점에 대한 고객만족이 행동의도에 미치는 영향을 살펴보고자 하였다. 본 연구는 전주비빔밥 향토음식점에서 전주비빔밥을 경험해본 고객을 모집단으로 하여 전주지역의 전주비빔밥 향토음식점을 방문한 고객을 대상으로 조사를 실시하였으며, 251부의 유효한 설문지를 최종분석에 사용하였다. 분석결과 중요도-성취도 분석에서는 '실내의 청결성'과 '예약의 편리성' 속성은 빠른 시간 안에 개선할 필요가 있다고 조사되었으며, '음식(p<0.01)'과 '서비스(p<0.05)'요인이 고객만족에 유의한 영향을 미치는 것으로 나타났고, '물리적 환경(p<0.01)'과 '서비스(p<0.05)'품질 요인이 행동의도에 유의한 영향을 미치는 것으로 나타났으며, 고객만족이 행동의도에 유의한 영향을 미치는 것으로 나타났다(p<0.001).
