Comparison of Physicochemical Properties of Arrowroot Starches Harvested in Different Time (채취 시기별 칡 전분의 성질 비교)

  • Arrowroot starches, harvested in March, June, September and December, indicated that the December starch had the lower values of amylose content, ${\beta}-amylolysis$ limit and intrinsic viscosity, but the highest value of water-binding capacity. The swelling power were similar among different starches. The gelatinization by KSCN revealed that the December starch was the most resistant to alkali gelatinization. Gelatinization temperature, determined by differential scanning calorimetry, of the December sample was shifted to higher temperture by $1^{\circ}C$ compared with the others. When the December starch was heated at $98^{\circ}C$ for 8min, 93.8% of total amylose and 7.2% of total amylopectin were solubilized, which was the highest and the lowest, respectively.

In Vitro Digestibility of Rice and Barley in Forms of Raw Flour and Cooked Kernels

  • Digestion properties of 3 types of cereals, white rice, brown rice, and barley, were measured after cooking or grinding. Regardless of the processing methods, white rice showed the highest rate and the greatest extent of digestion, whereas barley showed the lowest values. During the early digestion period, cooked white rice kernels had a larger k (kinetic constant) value than uncooked white rice flour, indicating that cooking induced faster digestion than grinding. In the case of brown rice and barley, the cell wall in cooked kernels remained intact and resulted in a lower k values than those of uncooked flour. However, after 3 hr of digestion, the total digestion extent was greater for the cooked brown rice and barley than that for uncooked flours. The high content of slowly digestible starch (SDS) in cooked brown rice and barley might be due to the starch fraction which was protected by the cell wall. The resistant starch (RS) content, however, was greater for the uncooked flours than that for cooked kernels. The cooked kernels of 3 cereal samples tested showed higher glycemic index (GI) values than the uncooked flours.

  • This study was carried out to develop a new insolubilizer for water resistency enhancement and to evaluate its optimum apply method to corrugated paper. The addition of polyvinyl alcohol(PVA) backbone polymer to conventional starch glue caused a poor dispersibility, but flavonoid resin addition showed a good runnability and water resistency. The double coatings(top & under) of water-proof chemicals to corrugating liner made even better the water resistency of corrugating paper. This study suggested that water-proof chemical treatments be an effective method in water-resistant corrugating paper manufacturing for a cold chain system.

Crystalline Structure of the Extrudate of High Amylose Corn Starch (압출성형 고아밀로즈 옥수수전분의 결정 구조)

  • Crystalline structure of the extrudate of high amylose corn starch was studied by X-ray diffractometer and $^{13}C\;NMR$. The X-ray diffraction crystal ratio of the extrudates (barrel temperature $100^{\circ}C$ )of high amylose corn starch slightly increased from 6.08% to 8.37% by increasing feed moisture content from 25% to 45%. But extrudates of high amylose corn starch showed similar crystal ratio on various extrusion conditions. Extrudates of high amylose corn starch (feed moisture content 20%, barrel temp $140^{\circ}C$) showed more enlarged crystal structure than that of non-extrudates. The perpendicular distance of crystal increased by extrusion. Crystal ratio was changed from $6.3{\sim}8.3%$ to $4.5{\sim}5.8%$ during storage at $4^{\circ}C$. Starch configuration was examined with $^{13}C\;NMR$. Double helical content was measured by $^{13}C\;NMR$ method. The highest double helical content (60%) was obtained from high amylose corn starch extrudate (barrel temp.: $100^{\circ}C$, feed moisture content 45%). Double helical contents and resistant starch (RS) yield (pancreatin) were positively correlated. However, double helical content of the extrudates was not changed by the storage at $4^{\circ}C$.

Dietary corn resistant starch regulates intestinal morphology and barrier functions by activating the Notch signaling pathway of broilers

  • Objective: This study was conducted to investigate the effects of dietary corn resistant starch (RS) on the intestinal morphology and barrier functions of broilers. Methods: A total of 320 one-day-old broilers were randomly allocated to 5 dietary treatments: one normal corn-soybean (NC) diet, one corn-soybean-based diet supplementation with 20% corn starch (CS), and 3 corn-soybean-based diets supplementation with 4%, 8%, and 12% corn resistant starch (RS) (identified as 4% RS, 8% RS, and 12% RS, respectively). Each group had eight replicates with eight broilers per replicate. After 21 days feeding, one bird with a body weight (BW) close to the average BW of their replicate was selected and slaughtered. The samples of duodenum, jejunum, ileum, caecum digesta, and blood were collected. Results: Birds fed 4% RS, 8% RS and 12% RS diets showed lower feed intake, BW gain, jejunal villus height (VH), duodenal crypt depth (CD), jejunal VH/CD ratio, duodenal goblet cell density as well as mucin1 mRNA expressions compared to the NC group, but showed higher concentrations of cecal acetic acid and butyric acid, percentage of jejunal proliferating cell nuclear antigen-positive cells and delta like canonical Notch ligand 4 (Dll4), and hes family bHLH transcription factor 1 mRNA expressions. However, there were no differences on the plasma diamine oxidase activity and D-lactic acid concentration among all groups. Conclusion: These findings suggested that RS could suppress intestinal morphology and barrier functions by activating Notch pathway and inhibiting the development of goblet cells, resulting in decreased mucins and tight junction mRNA expression.

  • This study was performed to investigate the influences of resistant starch (HM: HI-MAIZE) and HM-D (HI-MAIZE DIET) fortified with D-factor (consisted of Psyliium husk, polydextrose and hydrocitric acid) on the glucose and bile acid absorption and production of short chain fatty acids (SCFA). HM-D absorbed more glucose and bile acid than did HM. The glucose transport of HM and HM-D against dialysis membrane showed 77% and 68% for 4h, respectively. After 24h, bile acid transport of HM and HM -D showed 65% and 62.3%, respectively. The HM and HM-D produced 217.8 mM and 264.0mM of SCFA, respectively. The production of butyric acid in HM-D (32.7mM) showed higher than that of HM (26.9mM). The addition of D-factor to HM increased the physiological function of dietary fiber through the glucose and bile acid absorption and production of SCFA.

Quality Characteristics of the Walnut Bread with Varied Levels of Resistant Starch (난소화성 전분의 대체수준을 달리한 호두 빵의 품질 특성 연구)

  • Physicochemical and sensory characteristics of the walnut bread with various levels of resistant starch were investigated in this study. Water contents of dough had significantly the largest value of 44.91% with 10% substituted sample group and the control group had significantly the lowest value (p<0.05). Volume of 10 and 20% substituted sample groups and control group were not significantly different. The 10 and 20% substituted groups had significantly the lower hardness compared to those of control group. Results of sensory characteristics showed significantly higher savory aroma, astringent flavor with 30% substituted sample group at p<0.05. Savory aroma was not significantly different among the walnut breads. Acceptance test of walnut bread with 10% substituted sample group showed the higher appearance, savory flavor, texture, and overall acceptability and they did not show significant differences with the 20% substituted sample groups. Quality characteristics of walnut bread with 10% and 20% substituted sample groups indicated significantly similar or higher values compared to those of control.

Analysis of Nutrient Content by Digestion Phase of Legumes using an In Vitro Digestion Model (In Vitro Digestion Model을 활용한 두류 소화 단계별 영양성분 변화 분석)

  • Changes in contents of free sugars, amino acids, and fatty acids of legumes were analyzed for each phase of in vitro digestion. In addition, contents of resistant starch in raw and digested pulses were compared. Soybeans, kidney beans, cowpeas, and chickpeas were analyzed. An in vitro digestion model was used to analyze contents of nutrients using LC-MS and GC-MS. Stachyose in kidneybean, cowpea, and chickpea increased as the digestion phase progressed. In four types of legumes, raffinose slightly decreased or showed no significant difference between the Oral phase and the BBMV phase. Content of glucose, a monosaccharide, increased during the BBMV phase. During the digestion phase, levels of free amino acids and free fatty acids also increased. Content of resistant starch was reduced compared to that in the raw material. It was 0.01g/100 g food in soybean, 1.06 g/100 g food in red kidney bean, 0.77g/ 100g food in cowpea, and 0.76 g/100 g food in chickpea. It was confirmed that nutrients in the in vitro digestion model were liberated at each digestion phase with changes in the content of resistant starch. These results are expected to be used as fundamental data for obtaining bioavailability of nutrients.

Relationship between some chemical components in the rice plants and varietal reaction to blast disease (도열병 품종저항성과 도체내 성분과의 관계)

  • An investigation was carried out to know the relationship between resistance of rice varieties to blast disease and the chemical components, especially total nitrogen and total sugars, in the rice plants. The results sic summarized as follow: 1) The nitrogen contents in the resistant variety were less than those of susceptible one, and sugar contents were reversed. Accordingly, the C/N ratio in the resistant variety was higher than that obtained by susceptible one. 2) The free amino acids contents, especially, Glutamine, Valine, Leusine and Iso-leusine, in the resistant varieties were more than those of the susceptible varieties. 3) The starch synthetic activity of rice leaves in the resistant varieties was higher than that of susceptible one in fructose and glucose solutions, but it was reversed in sucrose solution. 4) When more nitrogen was dressed, the total nitrogen content of rice leaves was increased than the ordinary dressing. The rate of increase in nitrogen content in resistant variety was lower than those of the susceptible. The total sugar content of rice plants dressed more nitrogen was decreased at early tillering stage, but increased at maximum tillering stage. It seemed that the rate of increase of total sugar in the resistant variety was higher than those of the susceptible.

Effects of heat-moisture treatment on functional properties of high amylose rice starches with different crystalline types (결정형이 다른 고아밀로스 쌀 전분의 기능적 성질에 수분열처리 효과)

  • The effects of heat-moisture treatment (HMT) on the functional properties of high amylose rice starches (HARSes) purified from Korean rice varieties (A-type Goami and Singil and B-type Dodamssal and Goami2) were investigated. HMT was accomplished with moisture contents of 18 and 27% and heated at 100℃ for 16 h. While the amylose content, swelling power and solubility decreased after HMT, the water binding capacity and resistant starch (RS) content increased with increasing moisture content after HMT. The X-ray diffraction patterns of all HARSes did not change after HMT, but a decrease in the intensity of peak at 2θ=5° was observed in B-type HMT HARSes. While the starch granules aggregated after HMT, their shape and size remained unchanged. B-type HARSes exhibited higher gelatinization temperatures and lower pasting viscosities than A-type HARSes following HMT. The results, thus, suggest that while the crystalline intensity of B-type Dodamssal and Goami2 rice starches did not change after HMT, the RS content, water binding capacity, and pasting temperatures of all HARSes increased with increasing moisture content after HMT.
