  • In this study, we monitored the raw materials in home-meal replacement (HMR) products, which have shown more than 63% growth in market size for two years. A total of 89 HMR products were purchased and the DNA barcodes of 112 raw materials in the product samples were analyzed. In order to identify the raw material species, a primer set specific for the 16S ribosomal RNA region of each raw material species was amplified. The amplicon was purified and sequenced, and then used to perform a BLAST search provided by the National Institutes of Health (NIH). The species of the raw material was determined by comparing the nucleotide sequences of the species registered in GenBank with identity and match score. Twenty-four species and three genera were identified from 112 raw materials. Three genera were identified at the genus level because a large number of species belonging to the same genus exist within 98% of the identity criteria. The results of the determination were compared with the available raw materials suggested in the Korea Food Code to determine the Korean name and availability of the foods. Six non-listed species were determined to be edible according to information provided by influential domestic and foreign organizations.

  • The objective of this study was to provide preliminary data for food industry by investigating the distribution of microorganisms in raw materials and sausage examining the effect of heating temperature on sausage quality. Total microbes in sausage ranged 2.21-3.11 Log CFU/g. Bacillus pumilus, B. licheniformis, Staphylococcus saprophyticus, and Enterococcus faecalis were detected on sausage. Total microbes in raw materials was 1.59-7.16 Log CFU/g. Different types of microorganisms were found depending on raw materials, with B. pumilus and B. subtilis were being detected in both raw materials and sausage. Total microbes in sausage after heating was in the range of 1.10-2.22 Log CFU/g, showing the trend of decrease in total microbe with increasing heating temperature, although the decrease was not significant. With increasing heating temperature, pH and hardness were also increased. The yield of sausage manufactured at $85^{\circ}C$ was 95.42% while that manufactured at $65^{\circ}C$ was 96.67%. Therefore, decreasing heating temperature during sausage production might increase yield and save energy without microbiological effect.

  • This study was performed to survey distribution of microorganisms and food-borne pathogenic bacterium in order to estimate microbiological safety in seonsik and saengsik. Total aerobic bacteria was detected over $10^5\;CFU/g$ in raw materials($4.3\%$) and products($35.7\%$) of saengsik. Coliforms were detected over $10^2\;CFU/g$ in seonsik products($27.3\%$) and in raw materials($4.3\%$) and products($35.7\%$) of saengsik. Cl. perfringens was detected in saengsik products($4.8\%$). B. cereus was detected in raw materials($12.5\%$) and products($18.2\%$) of seonsik and raw materials($13.0\%$) and products($23.8\%$) of saengsik. Concentration and detection rate of microorganisms in products were higher than raw materials. These results show some food hygiene problems but do not cause food poisoning because concentration of Clostridium perfringens and B. cereus were lower than $10^5\;CFU/g$.

  • Because food crops serve as the raw materials for biodiesel, the increasing use of biodiesel as an alternative fuel can lead to adverse effects such as food price inflation and may contribute to global starvation. To solve these problems, efforts are being made to explore various nonedible raw materials for producing biodiesel. Different raw materials impart different fuel characteristics to biodiesel. In this study, we synthesized pure fatty acid methyl ester (FAME), which is a biodiesel component, and then analyzed its fuel properties. The fuel properties of pure FAME would be useful in producing biodiesel from various new raw materials.

  • Recently demand for safer and healthier food has augmented with advancements in health conditions. Food ingredients with yet to be known safety and functionality, are being investigated for their safety or detrimental effects. The Ministry of Food and Drug Safety has introduced "health functional food" by the "Health Functional Food Act" to evaluate bio-functional and safety properties of raw materials using standard methods including in-vitro and in-vivo testing before human consumption. Despite recent growth in net worth of domestic functional food market, most of the raw materials are not from local Korean industries with own research and development, and mostly terrestrial not marine resources. Geographically, Korea has access to diverse marine bio-resources that need to be managed and utilized sustainably. Recently, diverse novel physiologically active substances have been reported from marine organisms. Hence, the development of functional foods from marine bio-resources is considered as an inevitably important task.

  • The GMO (Genetically Modified Organism) labeling system on raw materials has been in Korea since March 2001, and genetically modified organisms (GMOs)-derived foods since July 2001. Therefore, we designed a multiplex PCR method to ascertain the validity of the labeling system and to monitor the status of circulation for genetically modified maize (GM Maize). Five lines of GM Maize (GA21, TC1507, Mon810, NK603, and Bt176) were used, and specific primer pairs were designed to detect each line. Using this method, the different lines of GM Maize were monitored from raw products and processed foods in Korean market. Some of the maize processed foods and raw materials were shown to contain more than one foreign gene. This method was found to be effective for-detecting five different GM Maize in a single reaction.

  • Castor oil cake is widely used as a raw material for organic fertilizers (OF) in Korea. Compared to other fertilizer raw materials, it is highly dependent on imports. In terms of replacing raw materials, dehydrated food waste powder (FDP) and castor oil cake have similar nutritional content, and if 30% is replaced, about 20% of the raw material cost can be saved. However, few studies on the effects on crop growth and soil properties when organic fertilizer and dry food waste powder are mixed and applied to the soil have been reported. The effects of an organic fertilizer made by mixing the commercial available organic fertilizer with dehydrated food waste (OF + FDP) on soil properties and the growth of two types of leafy vegetables (lettuce and young radish) were evaluated and compared with the performance of OF. The fresh weights of lettuce and young radish were the highest with OF amendment and stood at 114.3 and 119.0 g·plant-1, respectively. These were followed by OF + FDP amendment, which produced 103.1 and 109.6 g·plant-1, respectively. Compared to the control, OF and OF + FDP increased the lettuce fresh weights by about 69% and 52%, respectively, while the fresh weights of the radish were increased by about 223% and 207%, respectively. The soil pH, EC, total carbon content, and organic matter content in OF and OF + FDP increased. The mixture of dehydrated food waste powder and organic fertilizers is expected to improve soil quality and facilitate stable production of crops and contribute to the substitution of imported organic fertilizer raw materials.

  • The growth of food industry has not increased the demand for domestically produced agricultural products as raw materials. This is because the prices of domestic agricultural products are expensive relative to the imported ones and domestic products are hard to be supplied consistently. Thus the connection between domestic agriculture and food industry must begin with the investigation of appropriate items that have potentials to be used as raw materials for food industry. There have been many policies that support regional agriculture such as the policy that fosters regional cluster for agriculture. These policies can contribute to instigate the connection between agriculture and food industry. The infra prepared by the supporting policies and the facilities that food companies are operating can be used together for both agriculture and food industry. The complementary utilizations of the infra and facilities may encourage the connection between agriculture and food industry.
