Effects of the Low Temperature and Low Salt Solution on the Quality Characteristics of Salted Chinese Cabbage (저온-저염 절임기술이 절임배추의 품질 특성에 미치는 영향)

  • The principal objective of this study was to evaluate the influence of temperature and salt concentration on the physicochemical properties of salted Chinese cabbage. Salted Chinese cabbage samples were prepared with various concentrations of salt(4, 5, 6 and 7%), and were stored for 10 days at three temperatures(8, 14, and $25^{\circ}C$). The salting ratio of Chinese cabbage evidenced a decreasing trend regardless of the salting temperature and salt concentration, and their decrement appeared relatively high as the salting temperature increased. The period required to achieve a critical salting ratio(85%) decreased with increases in the salt concentration at $25^{\circ}C$, and a similar trend was observed at lower temperatures(8 and $14^{\circ}C$). The salinity of all samples evidenced an increasing trend during the salting period, and at $25^{\circ}C$, in particular, a continuous increment was observed. At salt concentrations of 4%, the critical salinity(2.2%) was not achieved regardless of the temperature and salting period. The pH of salted Chinese cabbage achieved critical pH in 3 days at a salting temperature of $25^{\circ}C$, but the critical pH 5.5 of samples at 8 and $14^{\circ}C$ appeared after a long period of approximately 4 to 10 days. The average hardness values of salted Chinese cabbage at a salting ratio of 85% were approximately 1.49 MPa, 1.87 MPa, and 1.97 MPa, respectively, at three temperatures($25^{\circ}C$, $14^{\circ}C$, and $8^{\circ}C$). The initial reducing sugar content of cabbage juice was 11.8 mg/$m{\ell}$, and this value decreased substantially to 3 to 5 mg/$m{\ell}$ on day 1.

Study on Recognition, Attitudes and Preference of Meal Purchases by Middle School Students Residing in Gyeonggi-do (경기 지역 일부 중학생의 매식(買食)에 대한 인식, 태도 및 선호도 조사)

  • The purpose of this study was to provide basic information on nutrition education for proper meal purchase habits by conducting a survey on the adolescents' meal purchases, which is gradually increasing nowadays. The survey was conducted on 311 middle school students living in Gyeonggi province. The largest number of students (79.1%) received an allowance under '2,000 won'. Among those students who received a daily allowance, 70.7% of students spent under '1000 won' a day on meal purchases. Most students answered 'meal purchase is necessary'. Of the reasons for thinking that meal purchases are necessary, 'for staving off hunger' took the highest ratio (67.1%). As for standards of food choice, the largest number of students answered 'taste' (57.6%). As for frequency of meal purchases, most students answered 'once or twice a week', and with regard to day of the week, 'weekdays' took the highest ratio. As for possibility of balanced nutrition by meal purchases, the answer 'surely possible' took the highest ratio. Asked whether or not one had learned nutrition education on meal purchases, 73% answered 'no'. Asked about the necessity of nutrition education on meal purchases, 'necessary once' took the highest ratio. The most preferred purchase meals were breads, snacks was ranked second, followed by frozen foods, beverages, fast-foods, rice-cakes, flour-based foods, ice-cream, and fruits. To sum up the results, most students perceived that meal purchases are necessary. However, high quality meal purchases were not achieved, as most of the students did not verify nutrition labeling, and placed emphasis on 'taste'. Further, many students wanted nutrition education on meal purchases while only a few had actually received it. Therefore, systemic, regular, and multilateral nutrition education conducted at home, school, and society will contribute to establishing proper meal purchase habits.

Sensory and Mechanical Characteristics of Maneul-Sulgi by Different Ratio of Ingredient (마늘설기의 재료 배합비에 따른 관능적$\cdot$텍스쳐 특성)

  • The purpose of this study is to determine the optimal mix ratio of Maneul-Sulgi and thereby, review its availability as health cake. For this purpose, the ratios of garlic juice and powder were varied with sugar added. As a result of quantitative descriptive analysis, it was found that the more the garlic juice and powder were added to non-glutinous rice, the Garlic taste was stronger. On the other hand, the less garlic powder was added, the cake would taste softer, and the less garlic juice was added, the cake was more chewy and moist. The feeling after swallowing was best when the ratio of garlic juice was $7\%$. As a consequence of surveying the tastes of Maneul-Sulgi, it was found that the less garlic powder was added to non-glutinous rice, the cake was more preferred. It was perceived that the ratio of garlic juice should be $7\%$ for flavor and desirable taste. As a result of testing the mechanic characteristics, it was found that the less garlic juice was used, the cake was more hard, elastic, cohesive, viscose and chewy. The more garlic powder was used, the Adhesiveness was higher. The Overall acceptability of sensory examination for Garlic taste had positive correlation Hardness of sensory examination and mechanical examination for adhesiveness.

Effects of Animal Waste Addition on Food Waste Compost under Co-composting

  • Food waste has been recognized as a organic sources for composting and many research was conducted to efficiently utilize or treat. This study was to evaluate a feasibility for producing food waste compost under co-composting with mixture of food and animal waste. The mixing ratio of food and animal waste was 35% as main material, which additionally mixed 30% of sawdust for co-composting. Total days of composting experiment were 84 days and each sub samples were collected at every 7 days from starting of composting. Results showed that inner temperature in composting was rapidly increased to $70{\pm}4^{\circ}C$ within 3~5 days depending on mixing animal waste of cattle, pig, and chicken base compared to sole food waste base. Expecially, the CN ratio in the mixture of food and pig water was the highest (16.2) among compost. After finishing composting experiment, maturity was evaluated with solvita and germination test. Maturity index (MI) of the mixture of food and animal waste was ranged between 6~7, but was 3 in sole food waste. Calculated germination index (GI) was at the range of about 100 irrespectively of mixing of food and animal waste. However, NaCl content and heavy metal as Cr, Cu, Ni, Pb, and Zn contents was increased in the mixture of food and animal waste. which was the highest in compost mixed the food and pig waste. Both MI and GI showed that manufactured fertilizer was suitable for fertilizer criteria while sole food waste was not adequate for composting due to composting periods. Overall, mixing the food and animal waste can be utilized for improving compost maturity, but more research should be conducted to make high quality of food waste compost with animal waste in agricultural fields.

A comparative study of the physical and cooking characteristics of common types of rice collected from the market by quantitative statistical analysis

  • Fifteen types of rice collected from Kurdistan region-Iraq were investigated by principal component analysis (PCA) in terms of physical properties and cooking characteristics. The dimensions of evaluated grains correspond to 5.05-8.75 mm for length, 1.54-2.47 mm for width, and 1.37-1.95 for thickness. The equivalent diameter was in the range of 5.23-10.03 mm, and the area took 13.30-28.25 mm2. The sphericity analysis values varied from 0.32 to 0.56, the aspect ratio from 0.17 to 0.39, and the volume of the grain was measured in the range from 4.48 to 17.74 mm3, hectoliter weight values were 730-820 kg/m3, and true density from 0.6 to 0.96 g/cm3. The broken grain ratio was 1.5-18.3%, thousand kernel weight corresponded to 15.88 to 22.42 g. The water uptake ratios for 30 min of soaking were increased at 60℃ compared to 30 and 45℃. The PCA was used to study the correlation of the most effective factors. Results of PCA showed that the first (PC1) and second (PC2) components retained 63.4% and 34.8% of the total variance, which PC1 was mostly related to hectoliter, broken ratio, and moisture content characteristics while PC2 was mostly concerned with hardness and true density. For cooking properties, the PC1 and PC2 retained 88.5% and 9.3% of the total variance, respectively. PC1 was mostly related to viscosity, spring value, and hardness after cooking, while PC2 was mostly concerned with spring value, hardness before cooking, and hardness after cooking.

Effects of Ginseng Extract on Serum Lipid Composition in Rats Fed Lard and Alcohol (인삼추출물 포화지방산 Lard와 Alcohol을 먹인 흰쥐 혈청 지질성분에 미치는 영향)

  • The present study has been undertaken to investigate the effects of crude ginseng extract added to food on the lipid composition in serum of rats fed lard and alcohol. Thirty-five males of Sprague-Dawley strains weighed about 130 g were divided into 7 group, each group receiving a different diet for 10 weeks ; i.e. basal diet plus 15% lard, basal diet plus 5% alcohol, basal diet plus 0.5% crude ginseng extract, basal diet plus 15% lard and 0.5% crude ginseng extract. Determinations were carried out on the net weight gain, food efficiency ratio, weight of organs, triglyceride, total cholesterol, HDL-cholesterol, free cholesterol. The results obtained were as follows : 1. Rats given feed containing lard and alcohol showed significant decrease in net weight gain, but crude ginseng extract caused an increase in food efficiency ratio. 2. Lard supplementation group showed increase in the weight of liver, kidney, spleen, but another groups did not. 3. The contents ratio of triglyceride, total cholesterol in serum of lard-fed group showed significant increase compared to controls and but the simultaneous supplementation of crude ginseng extract and lard decreased significantly than those of lard-fed group. 4. The contents of free-cholesterol and ester cholesterol in serum of the simultaneous supplementation of crude ginseng extract group decreased as compared with the lard single fed group. 5. Crude ginseng extract single-fed groups. 6. The ratio of contents of VLDL, LDL-cholesterol in serum was significantly high in the only lard containing group and alcohol group, the crude ginseng extract supplemented group was showed lower tendency than only lard and alcohol group. The above results suggest that crude ginseng extract would prevent the metabolic disease by improving hyperlipoidemia.

Effects of Brown Rice and Brown Rice Powder Mixing Ratio on the Preference Analysis of the Waffles and Rice Ball (현미와 현미분말 첨가량에 따른 현미와플 및 주먹밥의 소비자 기호도 조사)

  • This study surveyed consumers' sensory liking ratings of 3 types of developed brown rice products (brown rice nut waffles, Kimchi and tuna rice ball, sweet red-bean paste rice ball) and analyzed the drivers for liking or disliking the brown rice products. Each brown rice product had a brown rice to brown rice powder ratio of either: 100:0; 80:20; or 50:50. Forty consumers evaluated the acceptance of brown rice products on a 9-point hedonic scale and gave comments regarding liking or disliking each product. The results of the preference investigation analysis showed subjectivity depending on the brown rice product and the respondents' genders and ages. For brown rice nut waffles was affected by gender, age, and brown rice powder mixing ratio (p < 0.05). The variables "liking the aroma"; "liking the delicate flavor"; "liking the chewiness"; "liking the moistness"; "liking the softness"; "liking the harmony"; "liking the aftertaste" and "overall acceptability" did not differ significantly with the Kimchi and tuna rice ball. For the sweet red-bean paste rice ball product, the rates of liking the chewiness, stickiness, moistness, and softness of the 0% brown rice powder mix were all higher (p < 0.05) than were the rates of liking those same qualities in the 50% brown rice powder mix. Among all brown rice products, there were high correlations between the overall acceptability, liking the saltiness, liking the aroma, and liking the harmony. A preference investigation analysis showed that the brown rice product fillings were key factors to the products' overall acceptability.

Microencapsulation Characteristics Depending on Mixing Ratio of Wall Materials and Squid Liver Oil (피복물질과 오징어 간유의 혼합 비율에 따른 미세캡슐화 특성)

  • This study was carried out to investigate the microencapsulation characteristics of squid liver oil according to various ratios of wall materials and squid liver oil. The emulsion stability and the water binding capacity increased with an increase in wall materials contents. The microencapsulation efficiency was found to be in the order of 7:3>4:6>3:7>5:5>6:4 by mixing ratio of wall materials and squid liver oil; also, ratio of 7:3 was found to be inappropriate because the oil content in the powder was not sufficient. Regarding the fatty acid composition, the content of polyunsaturated fatty acid was found to be over 50% in all treatment groups. The ratio of polyunsaturated to saturated fatty acid of the powder was the highest (2.13) at the mixing ratio of 4:6.

Hydrogen Production and Organic Removal according to Mixture Ratio of Food Wastewater and Swine Wastewater using Anaerobic Batch Reactor (회분식 혐기성 소화 반응기에서 음식물탈리액과 양돈폐수의 혼합비에 따른 수소 생산 및 유기물 제거)

  • This study aims to find out optimum condition for hydrogen production and organic removal when treating food and swine wastewater together. For this purpose, various batch tests were conducted by changing mixture ratio from 6:4 (food wastewater:swine wastewater) to 1:9 without pretreatment process. For hydrogen production through anaerobic fermentation, the mixture ratios of R-1 (6:4), R-2 (5:5) and R-6 (1:9) were out of pH range appropriate for hydrogen production and mixture ratios of R-3 (4:6), R-4 (3:7), and R-5(2:8) showed appropriate hydrogen production where their pH ranges were 5.1~5.5. Especially in case of R-3, it consistently maintained appropriate pH range for hydrogen production for 72hr and produced maximum hydrogen. The characteristics of hydrogen production and cumulative hydrogen production according to each mixture ratio showed that R-1, R-2 and R-6 did not produce any hydrogen, and maximum hydrogen productions of R-3, R-4 and R-5 were 593ml, 419ml and 90ml, respectively. Total cumulative hydrogen productions of R-3, R-4 and R-5 were 1690ml, 425ml and 96ml, respectively. Based on previous results, it was concluded that, the most appropriate mixture ratio of food wastewater and swine wastewate rwas 4:6 (R-3). The experiment for COD removal rate to evaluate organic removal efficiency revealed that R-3, R-4 and R-5 showed high removal efficiencies during the highest hydrogen production amount and the highest efficiency was 41% with R-3.

Comparison of Sorption Characteristics of Red Pepper Powders with Their Seeds Mixing Ratio (고추씨 혼합비율에 따른 고추가루의 흡습특성 비교)

  • The sorption characteristics of red pepper powders in terms of mixing ratio of seeds to red pepper powders were investigated at various relative humidities and temperatures as storage conditions. At lower relative humidity below 43% RH, the sorption equilibrium was easily reached regardless of mixing ratio, whereas at higher relative humidity above 75%, the powders gained moisture rapidly, resulting in the color change to brown. At extremely lower RH below 33%, decoloration occurred in red pepper powder. The moisture contents of monolayer value for red pepper powders without seeds were ranging from 5.88% to 7.35% inversely proportional to the temperature. The moisture contents of monolayer value decreased with increase of mixing ratio of seeds.
