Dietary life style of the elderly living in rural areas of Gyeongbuk Andong during the busy farming season was surveyed and a monthly meal plan for the elderly was developed using eco-friendly native crops and considering the characteristics of a busy farming season and their preferences. A week meal plan was selected and applied to those fields. The meal plan was developed for an elder's house in Gyeongbuk Andong during the busy farming season. Especially, to increase the intake of calcium and dietary fiber, bamboo sprouts, pepper leaves, dried slices of whitebait, and fried anchovies were used. Considering the busy farming season, the ginseng chicken soup and the soybean noodle soup were served to provide high quality of protein and to improve health condition. A cold soup of cucumber and brown seaweed was used to supplement liquid, vitamins, and minerals. The results are as follows: the highest score of the preference on a staple was 8.77 for the boiled barley of menu 5; the favorite soup was the ginseng chicken soup (8.73) in menu 4; for side dishes, those in menu 5 were most popular (8.69); the favorite meal was the ginseng chicken soup of menu 4 (8.69). Regarding the amount of leftover foods, the lightest was 30.14 g in Gyeongbuk Andong menu 3 which significantly indicates high preference (p<0.05). The current study was a planned meal service menu using local crops and seasonal foods, which was actually applied to the field resulting in high preference and satisfaction levels.

This study was carried out to evaluate the effect of application of cattle manure and chemical fertilizer on dry matter productivity and nutritive values of rye and hairy vetch according to two different sowing methods such as single or mixed-sowed cultivation. Dry matter and TDN yields for rye single culture, and rye and hairy vetch mixed culture were 7.2 and 4.0 ton/ha, and 8.0 and 4.4 ton/ha, respectively. They were significantly (p<0.05) higher than that (4.5 and 2.7 ton/ha) of hairy vetch single culture. Moreover, plots produced by mixed-sowing cultivation had a higher crude protein (CP) as 7.7% than that of only rye plot, and higher TDN and RFV as 55.8 and 79.4%, respectively. Within rye alone plots, completely cattle slurry application produced significantly higher annual DM and TDN yields (7.4 and 4.1 ton/ha) than those of P+K fertilization (7.2 and 3.9 ton/ha) as a chemical fertilizer and non-fertilizer (5.5 and 3.1 ton/ha). Cattle slurry application plot revealed 75.52 and 78.97% of N+P+K fertilization plot for annual DM and TDN, respectively. Within mixed-sowing cultivation with rye and hairy vetch, completely cattle slurry application produced 7.6 ton/ha DM and 4.5 ton/ha TDN, showing 79.50 and 86.77% of N+P+K fertilization plot, respectively. Furthermore, the CP content for cattle slurry plots was 8.5%, which was significantly (p<0.05) higher than those of other plots, and it was also highest in TDN (58.3%) and RFV (86). Overall, rye mixed-sowing with hairy vetch rather than rye alone sowing reduced DM yields, but leaded to enhancement of feed value and nutritive yields. And also, it would be expected that cattle slurry application in comparison with chemical fertilizers might result in reutilization of resources, improved forage quality and, extended harvest period by preventing feed value from rapidly deteriorating.

This study was to assess the effect of sowing mixed legume forage and applying cattle manure on the productivity and feed value of whole-crop barley (WCB) as a representative of winter crops and to estimate feeding capacity of Korean native cattle (Hanwoo) per unit area by defining optimal application level of cattle manure for more fertile soil and manure recycling for the purpose of reduced environmental pollution and efficient production of organic forage contributable to production of organic animal products. Sowing mixed legume forage significantly (p<0.05) increased yields of dry matter (DM), crude protein (CP) and total digestible nutrients (TDN) for WCB compared to WCB alone sowing, but there was no difference between mixed sowing treatments. The yields of DM, CP and TDN were significantly (p<0.05) highest in 100~150 kg N/hg. The CP and acid detergent fiber (ADF) contents were highest in mixed sowing with hairy vetch, followed by sowing mixed forage pea and WCB alone (p<0.05). There were no differences in CP and neutral detergent fiber (NDF) contents among cattle manure application levels. As nitrogen application level increased, ADF content increased (p<0.05), but TDN content decreased (p<0.05). Feeding capacity of organic Hanwoo (head/ha) weighing 450 kg of body weight with 400 g of daily gain significantly (p<0.05) increased due to mixed sowing with legume forage, and with increasing application levels of fermented cattle manure, feeding capacity significantly (p<0.05) increased. The results indicate that mixed-sowing of WCB and legume forage not only cut nitrogen application level of fermented cattle manure by over 50 kg per ha but also increased their feed value and productivity, and feeding capacity. This would be contributable to diversity of forage resources as well as production of organic animal product by creating low cost and high quality of forage.
Thirty one Hanwoo steers were used in a completely randomized design experiment to see the effects of concentrate feeding method (group vs. individual feeding) and age at slaughter (26 vs. 28 months of age) on growth performance, feed intake and carcass characteristics. Steers were randomly assigned to one of four groups, G26 (group feeding slaughtered at 26 months of age), G28 (group feeding slaughtered at 28 months of age), I26 (individual feeding slaughtered at 26 months of age) or I28 (individual feeding slaughtered at 28 months of age). Amount of concentrate were restricted to 1.5% of BW for the growing period and 1.8% of BW for the early fattening period in both groups. For the late fattening period, concentrate were given ad libitum for G26 and G28, but were given up to 1.7% of BW for I26 and I28. Average daily gains were higher in individual feeding groups (I26 and I28) than those in group feeding groups (G26 and G28) for the early fattening period (p<0.05). ADGs were higher in group feeding groups than those in individual feeding groups (p<0.05). Concentrate intake in individual feeding groups tended to be higher compared to that in group feeding groups for the early fattening period, but tended to be higher in group feeding groups compared to that in individual feeding groups for the late fattening period. Feeding method or slaughter age had no significant effects on carcass characteristics, yield grade and quality grade. Shear force and tenderness of longissmus muscle were higher in groups slaughtered at 28 months of age than in groups slaughtered at 26 months of age (p<0.05). Feeding method or slaughter age had no effects on cooking loss, water holding capacity, juiciness, flavor, moisture, protein and fat of longissmus muscle.

This study was conducted to determine application possibility of mulberry (Morus alba) silage as a functional feed in feeding management of Korean native cattle for high quality beef production by analysing active components and antioxidative activity. The chemical analysis of mulberry silage indicates that the content of dry matter, crude protein, ether extract, crude fiber and crude ash was $28.41{\pm}3.12%,\;12.43{\pm}0.28%,\;2.47{\pm}0.18%,\;20.29{\pm}0.75%\;and\;6.98{\pm}0.12%$, respectively. The content of 1-deoxynojirimycin (1-DNJ), which is representative active ingredient of mulberry and blood sugar descending component, was 0.568 mg/g and the content of $\gamma$-Aminobutyric acid (GABA), which is blood pressure descending component, was 5,936.22 pmol. Mulberry silage used in this study did not contain flavonoids but did contain total phenols for 21.69 ${\mu}g/mg$. 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity was increased with increasing the concentration of mulberry silage extracts and there was above 50% of scavenging activity at the concentration of 0.25 mg/ml. Hydroxyl radical scavenging activity was also increased with increasing the concentration of silage extracts. Alkyl radical scavenging activity was high at the low concentration of silage extracts, which was above 50% of scavenging activity at the concentration of 0.125 mg/ml. The result of this study indicated that there was high possibility of mulberry silage as a functional feed for beef cattle.

"Youhan" (Hordeum vulgare L.), a new whole-crop barley cultivar, was developed by the breeding team at National Institute of Crop Science, RDA in 2012. Youhan has the growth habit of III, a light green and mid-sized leaf, hooded and lax-type spikes. The cultivar showed 107 cm of culm length, 641 spikes per $m^2$. The heading date of Youhan was May 1, which is one day later than that of the check cultivar "Yuyeon" in upland, and 2 days earlier than that of Yuyeon in paddy field. The maturation time was similar to check cultivar Yuyeon on June 4 in upland and May 31 in paddy field. In terms of winter hardiness and resistance to lodging and disease, Youhan also performed better than the check cultivar. The average forage dry matter (DM) yield in the regional yield trial was approximately 12.6 ton $ha^{-1}$ and 12.0 ton $ha^{-1}$ in upland and paddy field, respectively, which were 6% and 5% higher than that of the check. The yield also showed 7.3% of crude protein, 26.8% of ADF (acid detergent fiber), 47.8% of NDF (neutral detergent fiber), 67.7% of TDN (total digestible nutrients), and a higher grade of silage quality for the whole-crop barley. Fall sowing cropping of Youhan is recommended only in those areas where the average daily minimum-mean temperatures in January are higher than $-8^{\circ}C$, and it should not be cultivated in mountainous areas of Korea.

This experiment was conducted to assess changes to the chemical properties of soil and applicability in a case of rice cultivation with organic fertilizers. The investigator applied organic fertilizers to rice cultivation for five years to examine changes to the chemical properties of soil and found that the experiment group of organic fertilizers made an ongoing increase in pH, organism content, and available phosphate content annually compared with the control group with no big differences according to the amounts of organic fertilizers used. As for the yield components, there were no statistical differences in the number of spikelets and grain filling rate between the experiment group of organic fertilizers and the control group. The experiment group recorded a higher level in 1,000 seeds weight and yield than the control group. Experiment Group 4 recorded the highest level at 29.11 kg of 1,000 seeds weight. Experiment Groups 3 and 4, which used 222 kg and 267 kg per 10 a, respectively, recorded 576 kg and 572 kg of yield, respectively, which were 4.7% and 4.1% higher than 549 kg of control group, respectively. As for the quality of brown rice, there were no statistical differences in the head rice percentage between the control and experiment group, both of which were in the range of 83.2-85.7%. As for the protein content, Experiment Groups 3 and 4, both of which used a lot of organic fertilizers, were in the range of 6.9-7.1%, which was lower than 7.5% of control group. Those findings indicate that the long-term application of organic fertilizers can improve the chemical properties of soil and increase the yield more than the conventional method of fertilizer application. The findings also suggest that it will be effective to apply 222 kg of organic fertilizers or more per 10 a.
This study was conducted to investigate the influence of feeding various Lactobacillus on production performance, nutrients digestibility, intestinal microflora, and fecal $NH_{3}$ gas emission in laying hens. Three hundred and sixty ISA Brown layers, 21 weeks of age, were randomly allotted to nine treatments, with low replicates per treatment. Nine treatments consisted of Control(no Lactobacillus), Lactobacillus crispatus avibrol(LCB: KFCC-11195), Lactobaciilus reuteri avibro2(LRB: KFCC-11196), Lactobacillus crispatus avihenl(LCH: KFCC-11197), Lactobacillus vaginalis avihen2(LVH: KFCC-11198). Each Lactobacillus was added at two levels ($10^{4}$and $10^{7}$ cfu/g diets). Egg production, and egg weight were measured daily. A metabolism trial was conducted following the 12-week feeding trial, during which egg qualities, intestinal microflora and fecal $NH_{3}$ gas emission were examined. Egg production and daily egg mass improved significantly by the addition of various Lactobacillus(P<0.05), of which effect was more notable during the latter part of the feeding trial. But, no significant differences were found among Lactobacillus strains and between two levels of supplementation. Egg weight and feed intake showed no difference among all treatments. Feed conversion ratio of birds fed lactobacillus was significantly improved compared to that of the Control(P<0.05), but not different among lactobacillus treatments. Digestibility of crude protein, ether extract and crude ash improved significantly in lactobacillus treatments(P<0.05). However, there were not statistically different by adding levels and strains. Total counts of Lactobacillus spp. in ileum of layers fed Lactobacillus were significantly higher than that of the control, but no consistent trend was found in cecum. There were no significant differences in intestinal yeast and anaerobes counts among all treatments. The Lactobaciilus supplementation did not exert my effect on the eggshell quality and Haugh unit. Fecal $NH_{3}$ gas emission decreased significantly in Lactobacillus treatments, and showed no difference between the two supplementation levels. From the result of this study, it could be concluded that dietary supplementation of Lactobacillus, regardless of their species, Improves the laying performance and decreases the fecal ammonia gas emission. The proper level of supplementation appears to be $10^{4}$ cfu/g of diet.
Total 240 of ISA Brown layers were employed in this experiment to study the effects of single or mixed feeding of Lactobacillus and yeast on the performance and intestinal microflora of laying hens. They were randomly allocated to six dietary treatments; None(Control), Pichia farinosa(PF), Lactobacillus crispatus avihen1 (LCH), Lactobacillus vaginalis avihen1(LVH), LCH+PF, and LVH+PF. Viable microflora were added to meet 3${\times}$10$\^$6/ cfu PF and 10$\^$7/ cfu Lacrobacillus per g of feed. There were four replicates per treatment, and 10 birds per replicates. Laying performance was recorded for 10 weeks, followed by a metabolism trial during which nutrient utilization, pattern of intestinal microflora and fecal NH$\sub$3/ emission were examined. Egg production and daily egg mass of birds fed either single or mixed microorganisms were significantly higher than those of the control(P<0.05). Egg weight and feed intake were not statistically different among all treatments. However, feed conversion ratio tended to improve by the supplementation of microbes. Digestibility of crude protein, ether extract and crude ash tended to improve in Lactobacillus treatments, however, there were not statistically different. With regards to the number of intestinal microbes, number of anaerobes were increased in microbes feeding group. Eggshell quality of PF layers was significantly poorer than those of the other treatments. No consistent trend was found in Haugh Unit among all treatments. Fecal NH$\sub$3/ gas emission was significantly lower in LVH, LVH+PF and LCH+PF than the other treatments(P<0.05). From the result of this experiment, it could be concluded that single or mixed feeding of Lactobacillus and yeast improves the laying performance and decreases the fecal ammonia gas emission. No synergic effect was found when both microbes were mixed and fed to the layers.
