Investigating the Impact of Storage Conditions on Dietary Fiber and Calcium Contents of Black Soybean Sunsik to Develop a Functional Labelling System (저장조건에 따른 기능성표시제도가 도입된 검은콩 선식 제품의 식이섬유 및 칼슘 함량 변화 관찰)

  • This study aimed to predict the shelf life of black soybean Sunsik to develop a functional labeling system for the product. The Arrhenius equation was used to calculate the shelf life by examining alterations in the dietary fiber and calcium levels of black soybean Sunsik stored at 25, 35, and 50℃ for 0, 6, and 12 months. Dietary fiber and calcium analyses were performed according to the experimental methods specified in the Food Code of the Ministry of Food and Drug Safety. Both black soybean Sunsik (BS) and black soybean Sunsik containing nondigestible maltodextrin and calcium lactate (BSN) exhibited an upward trend in dietary fiber content after 12 months of storage, compared to their initial levels. During storage, the phytate in Sunsik degraded, releasing cations that facilitated the formation of new cross-links between pectic acid and middle lamella, which ultimately increased dietary fiber content. Conversely, the calcium contents of both BS and BSN decreased with prolonged storage. Based on these findings, the expected shelf life of BS and BSN was calculated as 15.65 and 28.34 months, respectively.

Effects of Dehydration Methods and Storage Conditions on Germinability of Pelleted Carrot Seeds (당근 펠렛종자의 건조방법 및 저장조건이 발아성에 미치는 영향)

  • This study was conducted to identify the optimum condition for dehydration and storage for maintaining the seed vigor in pelleted carrot seeds. The water content of solid materials of un-pelleted seeds was 4.9% (F.W. basis), and that of pelleted seeds was 24%. When we dehydrated pelleted seeds for 3 hr at $25^{\circ}C$, $35^{\circ}C$, and $45^{\circ}C$, all seeds were dehydrated to 5% - the same level of water content as that before pelleting. Pelleted seeds did not show any significant difference in germination from un-pelleted seeds, and neither was there any significant time or germination difference between pelleted and un-pelleted seeds at the tested dehydration temperatures. However, the $T_{50}$ value of pelleted seeds increased about 3 days larger than that of un-pelleted seeds. Germination speed of pelleted seeds in which the dehydration period was prolonged at $45^{\circ}C$ was delayed compared to those prolonged at $25^{\circ}C$ or $35^{\circ}C$ for the same period. The optimum dehydration condition, which could be applied for large scale in the industry, was dehydration at $35^{\circ}C$ for 3 hr, and the optimum storage temperature which could maintain the seed performance was $5^{\circ}C$.

Effect of Oregano (Origanum vulgare L.) on the Survival of Escherichia coli ) O157:H7 and Staphylococcus aureus 196E during Cold Storage (저온저장중 Oregano(Origanum vulgare L.)가 Eschetichia coli O157:H7과 Staphylococcus aureus 196E의 생존에 미치는 영향)

  • The antibacterial effect of low concentrations of oregano (Origanum vulgare L.) in culture broth against Escherichia coli O157:H7 and Staphylococcus aureus 196E was tested at 35,5 and -20$^{\circ}C$. Tryptic soy broth (TSB) containing 0∼2% (w/v) of oregano was inoculated with 10$\^$6/∼10$\^$7/ CFU/$m\ell$ of E. coli or S. aureus and incubated at each temperature. The growth of E. coli was not inhibited at 0.1∼1.0% oregano and the growth occured at 2% oregano but only after a prolonged lag period. The death rate of E. coli after stationary phase was increased with increasing concentration of oregano in culture broth. The growth of S. aureus was inhibited with increasing concentration of oregano at 35$^{\circ}C$. Growth of S. aureus occured at the presence of 0.3∼0.5% oregano after a long lag period while the viability at 1.0∼2.0% was decreased during storage at 35$^{\circ}C$. During refrigerated storage at 5$^{\circ}C$, inhibition of E. coli or S. aureus was increased with the progress of time and increasing spice concentration. At the presence of 0.5∼2.0% oregano, E. coli and S. aureus were dead after 20 and 16 days of refrigerated storage, respectively. During frozen storage at -20$^{\circ}C$, the antibacterial activity of oregano against E. coli was increased with increasing storage time and spice concentration while the antibacterial activity against S. aureus was effective during the early period of storage, and no changes in the population of S. aureus occurred at different concentrations of oregano during frozen storage. Viable counts of E. coli were 1/3∼l/7 and S. aureus were 1/18∼l/46 of the control at 0.1% oregano in culture broth during frozen storage.

Influence of Rainfall During the Ripening Stage on Pre-Harvest Sprouting, Seed Quality, and Longevity of Rice (Oryza sativa L.)

  • The influence of rainfall during the ripening stage on pre-harvest sprouting, seed viability, and seed quality was investigated in two Korean rice cultivars, Shindongjin and Hopum. When the rainfall was artificially treated in a greenhouse, HP started to pre-harvest sprouting at three days of rainfall treatment (DRT), but Shindongjin did not show pre-harvest sprouting at 40 DAH treatment and just 0.3~0.8% at 50 DAH, which was much lower than 15.3~25.8% of Hopum in the same treatment. After harvest, the seed germination of Hopum decreased about 10~25% compared to non-treated seeds, but that of Shindongjin decreased much little rate than that of Hopum. The seed longevity tested by accelerated aging decreased with prolonged rainfall period in both cultivars, but the varietal difference was clear; Shindongjin could withstand longer accelerated aging than Hopum. Shindongjin maintained its germination (>50%) ability after 15 days of accelerated aging regardless of the rainfall treatment period and time, but Hopum dropped below 50% germination ability after only 5 days of accelerated aging. In conclusion, rainfall during the ripening stage induced not only pre-harvest sprouting, but also reduced seed quality and longevity during storage, which varied between two cultivars.

  • On the refutation demanded for a control of various toxic substances. PCBs(poly chlorinated biphenyl) has a fatal poisonous matter in the ecosystem and the environmental pollution as it Is a kind of stable chemical substance. Especially, the gross Product of PCBs is estimated at about one million tonnage all over the world. However it is kept on storing in untreated state, then has a deterioration by the Prolonged storage and a risk of overflowing. Therefore, this research examined the fundamental characteristics of combustion and emission for the target of using the IPA (iso-propyl alcohol) solution as a part of PCBs control. IPA was filled to three kinds of Vessel, i.e. Vessel I, II, and III, and then was investigated as follows combustion shape, flame temperature. mass burning velocity, and PM(Particulate matter). A radial thermometer and a C-A thermocouple measured the flame temperature, and the optical extinction method by using He-Ne laser and the filter weight method used in the PM measurement. As a result, with an increasing of L/S ratio, the flame length become shorter and the burning velocity is more rapid, but the particulate matters is higher. It is supposed that the air flow rate is high on Vessel. and then the combustion is Promoted in the surface area of the upstream zone. The future works plan to investigate the characteristics with an using of the mixing of IPA and PCBs

Cellular Contributors to Hypothalamic Inflammation in Obesity

  • The hypothalamus is a crucial organ for the maintenance of appropriate body fat storage. Neurons in the hypothalamic arcuate nucleus (ARH) detect energy shortage or surplus via the circulating concentrations of metabolic hormones and nutrients, and then coordinate energy intake and expenditure to maintain energy homeostasis. Malfunction or loss of hypothalamic ARH neurons results in obesity. Accumulated evidence suggests that hypothalamic inflammation is a key pathological mechanism that links chronic overconsumption of a high-fat diet (HFD) with the development of obesity and related metabolic complications. Interestingly, overnutrition-induced hypothalamic inflammation occurs specifically in the ARH, where microglia initiate an inflammatory response by releasing proinflammatory cytokines and chemokines in response to excessive fatty acid flux. Upon more prolonged HFD consumption, astrocytes and perivascular macrophages become involved and sustain hypothalamic inflammation. ARH neurons are victims of hypothalamic inflammation, but they may actively participate in hypothalamic inflammation by sending quiescence or stress signals to surrounding glia. In this mini-review, we describe the current state of knowledge regarding the contributions of neurons and glia, and their interactions, to HFD-induced hypothalamic inflammation.

Antimicrobal Activity of Sutellaria baicalensis·Coptidis rhizoma Extract on the Preservation of Makgeolli (황금·황련 추출물의 항균활성이 막걸리 저장성에 미치는 영향)

  • This research was carried out to find herbal preservatives for Makgeolli, as Makgeolli loses its commercial value due to overproduced acidic materials. When Makgeolli was kept at $25^{\circ}C$ to find the changes in acidity, total microbial cell number, yeast cell number, and bacterial species variety, a sudden increase of acidity as well as the disappearance of yeast cells occurred at day 6, and Makgeolli was changed to complete off-flavor. Acetobacter pasteurianus is the main acidifier in Makgeolli and shows a synergy effect in acid formation when cultured in combination with Lactobacillus casei. Among 12 herbs, the ethanol extract of Sutellaria baicalensis showed antimicrobial activity against A. pasteurianus, whereas the ethanol extract of Coptidis rhizoma showed antimicrobial activity against L. casei. Makgeolli added with Sutellaria baicalensis extracts demonstrated a lower acidity than that with Coptidis rhizoma extracts, which indicates that the inhibition of an acetic acid former is more important than that of a lactic acid former in Makgeolli preservation. Sutellaria baicalensis extracts prolonged the shelf life of Makgeolli by 1~2 weeks at a minimal inhibitory concentration ($0.63mg/m{\ell}$) during storage at $10^{\circ}C$.

  • Retrogradation characteristics of 1% dilute rice starch dispersion were analyzed. The retrogradation was increased with prolonged storage, however, the trend in increase was more conspicuous during the initial phase of retrogradation period. The Avrami exponent, rate constant, and time constant of 1% dilute Chuchong starch dispersion were 0.96, 0.21 $days^{-1}$, and 4.77 days, respectively As the Avrami exponent approaches unity (n=1), it is confirmed that the dilute rice starch dispersion retrogrades following the formation of a rod-like growth of crystals from instantaneous nuclei. When the retrogradation process of dilute rice starch dispersion was traced, the three-dimensional structure of crystals which had different contour from native stach was formed.

  • Energy storage devices have received a keen interest throughout the world due to high power consumption. A large number of research activities are being conducted on electrochemical double layer capacitors (EDLCs) because of their high power density and higher energy density. In the present study, an EDLC was fabricated using natural graphite based electrodes and ionic liquid (IL) based gel polymer electrolyte (GPE). The IL based GPE was prepared using the IL, 1-ethyl-3-methylimidazolium trifluoromethanesulfonate (1E3MITF) with the polymer poly(vinyl chloride) (PVC) and the salt magnesium trifluoromethanesulfonate (Mg(CF3SO3)2 - MgTF). GPE was characterized by electrochemical impedance spectroscopy (EIS), DC polarization test, linear sweep voltammetry (LSV) test and cyclic voltammetry (CV) test. The maximum room temperature conductivity of the sample was 1.64 × 10-4 Scm-1. The electrolyte was purely an ionic conductor and the anionic contribution was prominent. Fabricated EDLC was characterized by EIS, CV and galvanostatic charge discharge (GCD) tests. CV test of the EDLC exhibits a single electrode specific capacitance of 1.44 Fg-1 initially and GCD test gives 0.83 Fg-1 as initial single electrode specific discharge capacitance. Moreover, a good stability was observed for prolonged cycling and the device can be used for applications with further modifications.

Effects of Packaging Methods on the Meat Quality of ${\alpha}$-Tocopherol Supplemented Broiler Chicks during Refrigerated Storage

  • This study examined the effects of vacuum packaging and modified atmosphere packaging (MAP) on the meat quality of ${\alpha}$-tocopherol supplemented broiler chicks after prolonged refrigeration. The supplemented ${\alpha}$-tocopherol levels had no effect on the body weight and feed efficiency. The dietary treatments and packaging methods had no significant effects on the level of microbial growth, lightness, and the metmyoglobin content. The vacuum packaging showed the highest level of purge loss. The broilers supplemented with either 200 or 400 IU of ${\alpha}$-tocopherol had a lower level of malondialdehyde than the control group. The vacuum packaged meats from chicks fed the control diet showed the highest levels of lipid oxidation. The lipid oxidative stability was most improved in modified atmosphere (20% $CO_2$ + 80% $N_2$) packaged breast meat from the broilers supplemented with either 200 or 400 IU of ${\alpha}$-tocopheryl acetate.
