  • Tannins are complex polyphenolic substances present in plants. They may be classified as either hydrolysable or condensed tannins, and extracts of the latter type have displayed carcinogenic properties in animal studies (Hausen, 1981). The International Agency for Research on Cancer has determined that exposure to airborne wood dust, especially hardwood dust during furniture manufacture, is a cause of sino-nasal cancer, notably nasal adenocarcinoma. Components and Characteristics of Black Tea Colorants (홍차색소의 성분과 특성)

  • Colored components in black tea were extracted, freeze-dried, and analysed to investigate the possibility using as a natural dye. Fractionation of the colored components was carried out by gel permeation chromatography. The colored components in black tea were elected into seven fractions. Each fraction was analyzed by UV spectrophotometer. The early fluted fractions 1-4 did not show any absorption peaks in 320-700 nm and showed the increase in absorption as it approaches to short wavelength and are considered as highly polymerized colored substances. Fractions 5-6 showed tar at 350 m and are considered as thearubigins. Fraction 7 showed absorption peaks at 376 nm and 456 nm and is considered as theaflavin. IR spectra of each fraction show: Strong C=0 stretching band at 1650 cm-1 appears in fractions 1-4, but not in fractions 5-7. Strong C=0 stretching band at 1700 cm-L appears in fraction 3-7. C=0 stretching band at 1610 cm-1 appears as a shoulder in fraction 4 and progressively changes into strong peak in fraction 5-7. From these results, it is assumed that colored components in black tea consist of polyphenolic substances having different molecular weight which were formed during tea manufacturing process. The colorants from black tea infusion were applied to silk, wool, cotton and nylon fabrics. Black tea colorants showed high affinity to wool, silk and nylon, but very low affinity to cotton fabrics.

Polyphenolic Compound Content and Antioxidative Activities by Extracts from Seed, Sprout and Flower of Safflower( Carthamus tinctorius L.) (홍화(Carthamus tinctorius L.) 씨, 순 및 꽃잎 추출물의 폴리페놀 화합물 함량과 항상화 활성)

  • 홍화(Carthamus tinctorius L.)의 씨. 순 및 꽃잎의 수용성 및 메탄올 추출물에 대하여 in vitro 실험계에서 항산화 활성을 비교 검토하였다. 성장기 흰쥐의 뇌 micro-some을 이용한 생테막 지질 과산화 억제정도는 꽃잎 수용성 추출물(97.19%)>순 메탄올 추출물(81.38%)>꽃잎 메탄올 추출물(64.99%)>씨 메탄올 추출물(64.95%) 순으로 나타났다. Limoleic acid 산화 실험계에서는 홍화씨 메탄올 추출물과 홍화씨 수용성 추출물에서 비교적 높은 항산화 활성을 보였다. DPPH 에 의한 수소공여능은 특히 순의 0.1% 메탄올 추출물에서 매우 높은 수소공여작용이 나타나 대조구인 BHT와 거의 비슷한 수준의 항산화 활성을 보였다. 이들 추출물의 폴리페놀 화합물 함량은 홍화 꽃잎 수용성 및 MeOH 추출물은 12.70% 및 8.05% 홍화씨 수용성 및 메탄올 추출물은 6.96% 및 12.34%, 홍화순 수용성 메탄올 추출물 및 메탄올 추출물이 8.75% 및 5.10%로 나타났다.

Quantitative Changes of Polyphenolic Compounds in Mulberry (Morus alba L.) Leaves in Relation to Varieties, Harvest Period, and Heat Processing

  • Six polyphenolic compounds, such as chlorogenic acid (CA), rutin (RT), isoquercitrin (IQT), quercetin-3-O-(6-O-malonyl)-${\beta}$-D-glucoside (QMG), astragalin (AG), kaempferol-3-O-(6-O-malonyl)-${\beta}$-D-glucoside (KMG), were isolated from mulberry leaves by a series of isolation procedures, such as Diaion HP-20, silica-gel, Sephadex LH-20, and ODS-A column chromatographies. The chemical structures of the phenolic compounds were identified by UV and NMR spectral analyses. Levels of polyphenols in mulberry leaves from six different mulberry cultivars ranged from 1,042.16 to 1,871.97 mg% per dry weight; Guksang cultivar showed the highest levels of polyphenols, whereas Gaeryangdaehwa contained the least polyphenol contents. Generally, levels of polyphenols in mulberry leaves decreased with increasing harvest time, except for Yoolmok, but increased with heat processing time, except QMG and KMG. These results suggest that the heat processed mulberry leaves of Guksang cultivar harvested in early May can be potentially useful sources for production of high quality mulberry leaf teas.

Mass Fragmentation Patterns as Fingerprints for Positive Identification of Polyphenolic Compounds in a Crude Extract

  • Sixteen compounds of Neobalanocarpus heimii were successfully identified directly from their plant extract using a triple quadrupole LC-MS/MS system. In order to fulfil the objectives of this work, a series of stilbene oligomers of various degrees of condensation were isolated and their structure are characterized. Out of these, four are resveratrol dimers, three trimers, and nine tetramers. The isolation process was done on a fully automated semi-preparative HPLC system. Their structures were elucidated on the basis of 1D- and 2D-NMR as well as MS data. The mass fragmentation patterns of the compounds were recorded and a retrievable in-house library was built to keep the data. In order to demonstrate the potential of this approach, the polyphenolic crude extract was analysed with the LC-MS/MS system and the MS/MS spectra extracted for each chromatographic peak of interest. The fragmentation patterns were compared with those of anticipated pure compounds that were previously recorded. All compounds were successfully identified. It is therefore believed that the LC-MS/MS potential for dereplication of structurally similar compounds in a crude mixture was thus firmly established.

Changes in the Contents of Non-Volatile Organic Acids, Fatty Acids and Poly phenolic Compounds during Air-Curing in Burley Tobacco (버어리엽 건조과정에서 비휘발성 유기산, 지방산 및 폴리페놀화합물의 함량변화)

  • This study was carried out to investigate the changes in composition of the non-volatile organic acid, fatty acid and polyphenolic compounds during air-curing in burley tobacco leaves, and the effect of curing methods on the contents in air-cured leaves. The air-cured variety, (Nicotiana tabacum cv KB108) was normally grown at the Chonju tobacco experiment station in 1998. Plants designated for the each curing methods were harvested on the same date, and the ripe leaves for primed curing were harvested at the tenth leaf position from the top on the stalk. The major compounds of non-volatile organic acid and fatty acid were malic, citric, oxalic, palmitic, and linolenic acid. The concentrations of malic acid, unsaturated fatty acids, chlorogenic acid and rutin in cured leaves were remarkably decreased during curing, while citric acid was increased. The changes of these compounds showed the similar pattern during both primed and stalk curing. In connection with curing methods, the contents of malic, linoleic and linolenic acid were higher in excessive cured leaves than those in primed cured or stalk cured leaves, while the content of citric acid was lower in excessive cured leaves than that in primed cured or stalk cured leaves.

The Comparison of Antioxidative Activities of Sprouts Extract (발아 채소 추출물의 항산화 활성 비교)

  • This study was carried to develop the new material of functional food which antioxidant of natural substances of sprouts. We compared antioxdiative activity and antioxidant substances exist in sprouts. Antioxidaive activities of sprouts were measured by total polyphenolic acid contents, electron donating activity(EDA), SOD-liked activity and hydroxyl radical scavenging ability. Total polyphenolic acid content was very higher in Rape sprouts extract(Rap) than other sprout extracts. Also Rape extract was showed the most excellent antioxdiative activity in SOD liked activity at 86.94%. The EDA was ordered Rape sprouts extract(Rap)>Tatsoi sprouts extract(Tat)>Broccoli sprouts extract(Bro)>Alfalfa sprout extract(Alf). Hydroxy radical scavenging ability was the most effective in Rape sprouts extract(Rap). Therefore we could be certain that Rape sprouts extract(Rap) was the most effective in antioxidative activity from sprouts.
