한국산 느타리 버섯류 (Pleurotus sp.)의 휘발성 향기성분 (Volatile Components of Oyster Mushrooms (Pleurotus sp.) Cultivated in Korea)

  • Simultaneous distillation-extration method에 의해 4종의 국내에서 인공재배되고 있는 느타리 버섯류 (Pleurotus sp)로부터 휘발성 향기성분을 분리한 다음 GC-MS 및 GC에 의한 표준품과의 머무름 시간 비교에 의해 성분을 확인 하였다. 확인된 54종의 휘발성 화합물중 저온성 느타리 (Pleurotus ostreatus ASI 201)에서는 1-octen-3-ol, 3-octanone, 3-octanol등이, 원형 느타리 (Pleurotus florida--ostreatus-ostreatus)에서는 1-octen-3-ol, n-hexanol, 3-octanone, 3-octanol, phenol등이, 애느타리 (Pleurotus ostreatus)에서는 1-octen-3-ol, n-pentanal, n-hexanol, n-pentanol, 3-octanone, 3-octanol, 1,5-octadien-3-one등이었다. 특히 확인된 성분중에는 탄소수가 8개인 alcohol 및 carbonyl화합물이 많았으며 전체 향기성분에 대한 $C_8$화합물의 비율은 각각 56.60%, 72.46%, 54.84%, 35.85%이었다.

새송이버섯 분말 첨가 양갱의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activities of Yanggaeng added with Pleurotus eryngii Powder)

  • This study investigated the quality characteristics and antioxidant activities of Yanggaeng prepared with different ratios of Pleurotus eryngii powder: 0, 3, 6, and 9%. According to the results, the moisture content and pH increased with the addition of Pleurotus eryngii powder, but the Brix decreased. As the amount of Pleurotus eryngii powder increased, the lightness (L) increased, while the redness (a) and yellowness (b) decreased. The hardness of the control groups was lower than the Pleurotus eryngii powder groups. The total polyphenol content was influenced by the addition of Pleurotus eryngii powder. As the amount of Pleurotus eryngii powder increased, DPPH, reducing power, and metal chelating effect increased significantly. The results of a consumer acceptance test showed no significant differences in color between the controls and two groups (3% and 6%), and no significant differences in smell, taste, and overall acceptability between the controls and groups with 3% Pleurotus eryngii powder. Therefore, up to 3% Pleurotus eryngii powder can be incorporated into Yanggaeng to improve the quality and antioxidant potential.

  • Pleurotus species are commercially essential mushrooms and widely cultivated throughout the world. The production of Pleurotus mushrooms alone accounts for around 25% of that total cultivated mushrooms globally. In America and Europe, Pleurotus species are considered specialty mushrooms, whereas, in Korea, their cultivation is economically profitable, and it is one of the highly consumed species. Pleurotus species are predominantly found in tropical forests and often grow on fallen branches, dead and decaying tree stumps, and wet logs. Biographical studies have shown that the Pleurotus genus is among the more conspicuous fungi that induce wood decay in terrestrial ecosystems worldwide due to its formidable lignin-modifying enzymes, including laccase and versatile peroxidases. Pleurotus species can be grown easily due to their fast colonization nature on diversified agro-substrates and their biological efficiency 100%. Pleurotus mushrooms are rich in proteins, dietary fiber, essential amino acids, carbohydrates, water-soluble vitamins, and minerals. These mushrooms are abundant in functional bioactive molecules, though to influence health. Pleurotus mushrooms are finding unique applications as flavoring, aroma, and excellent preservation quality. Apart from its unique applications, Pleurotus mushrooms have a unique status delicacy with high nutritional and medicinal values. The present review provides an insight into the cultivation of Pleurotus spp. using different agro-waste as growth substances paying attention to their effects on the growth and chemical composition.

한국산 느타리버섯(Pleurotus spp.)의 전기영동 Isozyme Band Pattern 비교 -I. Homogeneous Gel- (Comparison of Electrophoretic Isozyme Band Pattern of Pleurotus spp. in Korea -I. Homogeneous Gel-)

  • 한국산 느타리버섯 균주의 균사, Primordia, 갓, 줄기의 전피영동 isozyme 패턴을 비교한 결과 자실체중 Primordia, 갓, 줄기의 패턴은 모두 아주 유사하였으나 균사의 패턴은 자실체의 것과 많은 차이가 있었다. 자생지역이 다른 한국산 Pleurotus ostreatus의 전기영동 isozyme 패턴중 Malate Dehydrogenase, Acid phosphatase는 유사하였으나 Esterase, Peroxidase, Leucine amino peptidase, Superoxide Dismutase의 패턴은 차이가 있었다. Pleurotus osteatus, P. cornucopiac, P. florida의 종간 Esterase 밴드 패턴은 많은 차이가 있어 전기영동에 의한 느타리버섯 종의 가능하였다.

Physiological Characteristics of Green Mold(Trichoderma spp.) Isolated from Oyster Mushroom(Pleurotus spp.)

  • This study was conducted to investigate physiological characteristics of Trichoderma spp. isolated from Pleurotus spp. Damage tests of Pleurotus spp. and mycotoxins tests of Trichoderma spp. were also done. The optimal growth temperature of Trichoderma spp. was $27{\sim}30^{\circ}C$. Although, T. longibrachiatum was able to grow at $37^{\circ}C$ and grew $30{\sim}40$ times faster than Pleurotus. The colony colour on PDA medium of T. cf. virens was yellowish green, T. longibrachiatum was yellow, and T. harzianum was turning to bright green. In damage tests of Pleurotus by Trichoderma, T. cf. virens caused the most severe damage to Pleurotus. T. longibrachiatum and T. harzianum caused less damage on Pleurotus but were able to cause greater damage to P. eryngii. One of the mushroom cultivars, P. ostreatus 8 was the most resistant to all Trichoderma spp.. Chitinolytic mycotoxin released by Trichoderma spp. caused 52.7% damage to Pleurotus. Mycotoxins released by T. longibrachiatum caused the greatest damaged(78.6%) on P. eryngii.

느타리버섯속균과 교잡종에 대한 단백질 밴드에 의한 분류 (Comparisons of Soluble Protein Bands for Pleurotus Species and Interspecific Crosses of Pleurotus Species)

  • 느타리버섯 균주(Pleurotus isolates)와 이들 균주들을 교잡하여 얻어진 균사에서 추출한 단백질을 전기영동하여 균주간의 유전적 유연관계를 밝힌 결과, P. ostreatus 201은 자가교잡 균주 혹은 타가교잡 균주들과 낮은 유연관계를 나타냈다. P. ostreatus 2042도 역시 동일한 결과를 나타냈다. 그러나, P. ostreatus $2042{\times}P$. ostreatus 202, P. ostreatus $2042{\times}P$. sajor-caju, 그리고 ostreatus $2042{\times}P$ ostreatus 900은 높은 상관관계를 나타냈다. P. ostreatus 202와 P. ostreatus 900은 자가교잡 균주 혹은 타가 교잡된 균주들과 낮은 상관관계를 나타내었다. 그러나 자가 교잡된 P. ostreatus와 P. $ostreatus{\times}P$. florida, 그리고 P. florida와 자가교잡된 P. florida는 각각 서로 높은 상관관계를 나타냈다.

아위버섯(Pleurotus ferules) 추출물의 생리활성 탐색 (Studies on the Biological Activity of Pleurotus ferulea)

  • 본 연구에서는 아위버섯의 생리활성 기능규명을 목적으로 하였다 사람의 뇌세포에서의 아세틸콜린분해효소 억제효과는25∼35%의 경향을 보여 치매 예방 및 개선제로서의 가능성을 보였다. 유해산소 제거 기능은 35∼36%로 높아 항암, 노화, 심장병 등에 좋은 효과를 나타낼 수 있을 것으로 생각되어진다. 간섬유화(collagen type-I) 억 제는 3∼12%의 저해효과를 보였다. 그러나 아위버섯은 3∼8%의 포도당 흡수억제를 나타내어 당뇨와 비만억 제에 큰 효과를 보이지 않았으며, 위암과 대장암에 대한 항암효과도 거의 나타나지 않았다. 따라서 향후 아위버섯 추출물 특히, K8종에서 나타난 다양한 생리활성효과를 이용하여 고부가가치의 다양한 기능성제품이 가능할 것으로 판단된다

버섯 피클(Fickle) 제조 및 저장 중의 품질변화 (The Preparation of Mushroom Pieties and Change in Quality during Storage)

  • The mushroom pickles were prepared as a processed mushroom product. The changes in pH, total acidity, brix. color and texture of the mushroom pickles (Lentinus edodes, Pleurotus ostreatus, Agaricus bisporus and Pleurotus eryngii) were measured during storage at 4$^{\circ}C$. In addition, sensory evaluations on the mushroom pickles were performed. While the pH of Lentinus edodes and Pleurotus ostreatus pickles declined slowly, the pH of Agaricus bisporus and Pleurotus eryngii pickles declined rapidly during storage. The total acidity of Lentinus edodes pickles rose slowly, while the acidity Pleurotus ostreatus, Agaricus bisporus and Pleurotus eryngii pickles rose rapidly. As for the color of mushroom pickles, "L" , "a" and "b" values changed slightly. The changes in texture were determined by a rheometer Hardness, cohesiveness, springiness, gumminess and brittleness of Lentinus edodes pickles were lower than those of the other mushroom pickles. In the sensory evaluation of mushroom pickles, Lentinus edodes showed higher acceptability ratings than the other mushrooms in taste, color, clearness, texture and overall acceptability. This study showed that among the mushrooms tested, Lentinus edodes was the most acceptable mushroom pickle for storage.

  • 노랑느타리버섯 균사생장에 대한 영양원에 대한 연구의 결과는 다음과 같다. 1) 노랑느타리버섯의 균사생장에 적합한 탄소원은 maltose로 균사생장량은 357mg/25ml/15일이다. 2) 노랑느타리버섯의 균사생장에 적합한 질소원은 peptone으로 균사생장량은 374mg/25ml/15일이다. 3) 노랑느타리버섯의 균사생장에 적합한 유기산은 glutamic acid로 균사생장량은 389mg이다. 4) 노랑느타리버섯의 균사생장에 적합한 비타민은 biotin으로 균사생장량은 399mg/15일이다. 5) 노랑느타리버섯의 균사생장에 적합한 C/N율은 40이다.

친환경 버섯배지에 녹차 잔류물의 처리가 새송이버섯의 생장 및 Catechin류 함량에 미치는 영향 (Effects of Green Tea Residue Treatment in Eco-Friendly Medium on Growth and Catechin Content of Pleurotus eryngii)

  • The present study was conducted to investigate the translocation of polyphenols, especially catechin derivatives, from mushroom medium mixed with green tea residues into fruiting body of Pleurotus eryngii. Pleurotus eryngii was grown on the media incorporated by mixing or surface-treated with dry materials including leaf petioles and young stems or leaves of green tea. The dry materials treated in medium did not affect plant height and fresh weight of Pleurotus eryngii body. From the samples of Pleurotus eryngii, the eight main catechin derivatives (-)-gallocatechin(GC), (+)-catechin (C), (-)-epicatechin (EC), (-)-epigallocatechin (EGC), (-)-epigallocatechin gallate (EGCG), (-)-gallocatechin gallate (GCG), (-)-epicatechin gallate (ECG), and (-)-catechin gallate (EGCG), and caffeine were analyzed quantitatively by HPLC. The results showed that EGC in Pleurotus eryngii was 45% more detected, when incorporated with the dry materials, than untreated control. Especially, content of EGCG was increased in surface-treated Pleurotus eryngii up to 3.2 ppm, while it was not detected or reduced in control and other treatments. Caffeine content was greatly increased regardless of treatment method, compared with control (0.1ppm), showing 44 fold-amount in Pleurotus eryngii at early growth stage when incorporated with the dry materials into medium. The results indicates that functional catechin derivatives of green tea would be partly translocated into Pleurotus eryngii throught incorporation and surface treatment with residues of green tea plants.
