The phenolic compounds contained in milled barley grains were seperated and identified by gas liquid chromatography and the effects of phenolic compounds extracted from milled barley grains and each authentic phenolic compound on the growth of Saccharomyces cerevisiae were studied. Severn phenolic acids, namely cinnamic, protocatechuic, ferulic, sinapid, vanillic, syringic, gallic acids, were identified in milled barley grains by gas liquid chromatography. The contents of sinapic, ferulic, cinnamic, protocatechuic acids were larger than those of vanillic and gallic acids. Phenolic compounds, extracted from milled barley grains and supplemented in culture broth, were inhibitory to the growth of Saccharomyces cerevisiae at levels above 100ppm to 24 hours but not inhibitory at all levels after 48 hours. Cinnamic, ferulic, vanillic acids at all levels were inhibitory to the growth of Saccharomyces cerevisiae, among them cinnamic acid was most inhibitory. Syringic acid was inhibitory to the growth of the yeast at the initial stage of culture. But sinapic and protocatechuic acids were slightly stimulatory to the growth of the yeast and gallic acid was ineffective to the growth of the yeast.

In this paper, we have isolated six phenolic compounds, such as (+)-catechin (1), taxifolin (2), taxifolin-3-O-${\beta}$-D-(+)-xylose (3), quercetin (4), quercetin-3-O-${\alpha}$-L(+)-rhamnose (quercitrin) (5), apigenin-8-C-rhamnosyl-(1'''${\rightarrow}$2'')-glucoside (2''-O-rhamnosylvitexin) (6) from the EtOAc(Ethyl Acetate) and $H_2O$ soluble fractions of Japanese anise(Illicium anisatum L) leaves and twigs. Also, we have evaluated antioxidative and antiviral activity for each isolated compound. The antioxidative test was DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity. According to the experimental results, all of the isolated compounds indicated the increased radical scavenging activities as the concentration increases and most of the isolated compounds indicated generally good antioxidative values compare to the controls, ascorbic acid and ${\alpha}$-tocopherol. In the antiviral activities, all of the isolated compounds had no potentials in rhinovirus 1B (HRV 1B). But in enterovirus 71 (EV 71) and Influenza virus A/PR/8 (Influenza PR8), only quercetin (4) indicated the good antiviral activity compare to the control. Based on the above results, we found that the phenolic compounds of Japanese anise may be applied for one of the natural biomass sources that can be used as an antioxidant and an antiviral substance.
This study was carried out to evaluate the effect of aeration on removal of phenolic compounds in soils. Phenol, 2,4-dichlorophenol, and pentachlorophenol as phenolic compounds were chosen in this study. Texture of soil used was sandy loam. Temperature and moisture content of the soils in lab-scale reactors were maintained at $25^{\circ}C$ and at 15%, respectively. Phenolic compounds vaporized from reactors were trapped by methylene chloride solution. Phenolic compounds were applied to the soils as individual compound Aeration improved the phenol degradation rate in soil, while it did not in case of 2,4-dichlorophenol and pentachlorophenol. The amount of phenol vaporized by aeration was only 0.3of of that of initial phenol compound added to the soil. First order kinetics described the degradation rates of phenolic compounds better than zero order kinetics.

The antioxidant properties of twelve phenolic compounds, including matairesinol 4'-O-$\beta$-D-glucoside, 8'-hydroxyarctigenin 4'-O-$\beta$-D-glucoside, matairesinol, 8'-hydroxyarctigenin, N-feruloylserotonin 5-O-$\beta$-D-glucoside, N-(p-coumaroyl)-serotonin-5-O-$\beta$-D-glucoside, N-feruloylserotonin, N-(p-coumaroyl)serotonin, luteolin 7-O-$\beta$-D-glucoside, luteolin, acacetin 7-O-$\beta$-glucuronide, and acacetin, isolated from defatted safflower (Carthamus tinctorius L.) seeds were evaluated with regard to the DPPH, superoxide and hydroxyl radicals. Additionally, levels of phenolic compounds were determined by HPLC in two cultivars of safflower seeds. Among them, four serotonin derivatives showed potent DPPH ($IC_{50}=10.83-21.75\;{\mu}M$) and hydroxyl ($IC_{50}=75.93-374.63\;{\mu}M$) radical scavenging activities, and their activities were significantly stronger than that of ${\alpha}-tocopherol$. Four flavonoids ($IC_{50}=170.65-275.83\;{\mu}M$) and four lignans ($IC_{50}=114.22-406.10\;{\mu}M$) exhibited significant superoxide and hydroxyl radical scavenging activities, respectively, whereas these compounds contained less activity toward the DPPH and hydroxyl radicals than serotonin derivatives. The levels of serotonin derivatives, lignans and flavonoids in safflower seeds of two cultivars ranged from 49.30 to 260.40, 3.72 to 158.90, and 11.72 to 214.97 mg% (dry base), respectively. Of the two cultivars, 'Cheongsu' had somewthat higher concentrations of phenolic compounds than 'Uisan'. These results suggest that phenolic compounds in safflower seeds may playa role as protective phytochemical antioxidants against reactive oxygen-mediated pathological diseases.

The Folin-Denis assay using the Folin-Ciocalteu (F-C) reagent has been commonly used for analyzing the total phenolic compound content in various food products. In the present study, the effects of proteins on the reactivity of the F-C reagent with different phenolic compounds were investigated. Bovine serum albumin (BSA) or skim milk proteins showed a concentration-dependent increase in color response in the Folin-Denis assay; these proteins decreased the color response of most phenolic compounds tested. The reactivity of phenolic compounds was significantly less pronounced in the presence of BSA and this interference was greater at higher concentrations of phenolic compounds. The reactivity of phenolic compounds with the F-C reagent was reduced significantly by their oxidation; the reaction of the oxidized products with the F-C reagent was more severely affected by BSA. The interfering effects in the Folin-Denis assay might be attributable to binding interactions of phenolic compounds with proteins.

Among the phenolic compounds that is generally present in strawberry fruits, five simple phenolics, three flavonoids, and a stilbene were tested for their antimicrobial activity against seven fungi and one oomycete. trans-Cinnamic acid showed strong antimicrobial activity, and the antimicrobial effect of the simple phenolics decreased with an increase in the number of hydroxyl groups. Phytophthora capsici was the most susceptible to the phenolic compounds tested in this study. trans-Cinnamic acid, p-hydroxybenzoic acid, and kaempferol were mainly detected in 'Seolhyang' strawberry fruits, and the total phenolic contents of the fruits decreased during their development. Extracts of the green (1-10% red color) and red (above 90% red color) strawberry fruits reduced the mycelial growth and zoospore germination rate of P. capsici, and the extract of red strawberry fruit showed strong antimicrobial activity against the zoospore germination of P. capsici. These results indicate that strawberry fruits contain antimicrobial phenolic compounds and that strawberry fruit extract can be used as a natural fungistat.
Background: We investigated the optimal aqueous extraction conditions for recovery of high yields of total phenolic compounds from roots of Arctium lappa L. (burdock, Asteraceae), and we compared their antioxidant capacity. Methods and Results: The antioxidant activity of the extracts was tested using 2,2-diphenyl-1-picrylhydrazyl, 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)-diammonium salt, and oxygen radical absorbance capacity assays. In addition, the major phenolic compounds present in the extracts were determined by high performance liquid chromatography analysis. Our results suggest that the roasted burdock $100^{\circ}C$, 15 min extract exhibited the strongest radical scavenging activity and possessed the highest concentration of phenolic compounds. The polyphenol content of both dried burdock and roasted burdock significantly increased with increase in the extraction temperature and time. Conclusions: These results indicated a relationship between phenolic compound levels in burdock and their free radical scavenging activities. This suggests that phenolic compounds significantly increase the antioxidant potential of burdock extracts.
Contents of phenolic compounds in peel, flesh, and core of three Asian pear cultivars, Hosui, Niitaka, and Chuwhangbae, were determined at different stages of maturity. Antioxidant properties of methanol extracts of peels at various fruit maturity stages were also evaluated. Total phenolic content decreased with maturity. Arbutin, chlorogenic acid, and epicatechin were major phenolic compounds in young fruits. Catechin, 4-hydroxymethyl benzoic acid, and caffeic acid were detected in peel and core of immature and mature pears. 2, 2-diphenyl-1-picrylhydrazyl (DPPH) radical-scavenging activities of methanol extracts were 16.30 and $15.73\;{\mu}g$ in peel of immature Hosui and Chuwhangbae pears, respectively, and $11.59\;{\mu}g$ in mature Niitaka pears, which was significantly higher than those of other maturity stage in the same cultivar. Inhibitory activities on lipid oxidation of methanol extracts of three cultivars at all maturity stages were similar to that of ${\alpha}$-tocopherol.
The bioremediation of water system contaminated with phenolic compounds having endocrine-disrupting activity, i.e. 2,4-dichlorophenol, 2,4-dichlorophenoxy acetic acid (2,4-D), and 2,4,5-trichlorophenoxy acetic acid (2,4,5-T), was investigated by using ozone oxidation and activated sludge treatment. Ozone oxidation (ozonation time: 30 min) followed by activated sludge treatment (incubation time: 5 days) was an efficient treatment method for the conversion of phenolic compounds in water into carbon dioxide and decreased the value of total organic carbon (TOC) up to about 10% of initial value. Furthermore, 2,4-D was dissolved in water containing salt, i.e. artificial seawater (ASW), and this water was used as model coastal water contaminated with phenolic compounds. The activated sludge treatment (incubation time: 5 days) could consume significantly organic acids produced from 2,4-D in the model costal water by the ozone oxidation (ozonation time: 30min) and decrease the value of TOC up to about 35% of initial value.
To find out the temporal and spatial variations in contents of sugar, phenolic compounds and mineral, the sap of Acer mono MAX. were harvested from several regions and periods, and those contents were determined by solvent fractionation, TLC, HPLC and atomic absorption spectrophotometer. Most of all the free sugar contained in the sap of Acer mono MAX. was sucrose, with range of 1.35 to 3.41%. The content of total phenolic compound in the sap of Acer mono MAX. was distributed from 0.034 to 0.151 mg/100m1, and most of phenolic acid was phloroglucinol. The contents of Na, K, Ca and Mg were ranged from 24.11 to 33.15, from 13.75 to 22.10, from 47.19 to 88.00 and from 2.48 to 6.31 ppm, respectively. Contents of sugar, phenolic compounds and mineral decreased sharply at the later harvest. Comparing two different methods of the sap harvest, bore method and groove method, the contents of compounds in the study were determined higher with groove method.
