Aroma Characteristics of Raw and Cooked Tenebrio molitor Larvae (Mealworms)

  • This study compared aroma compositions and sensory aroma attributes of raw and cooked Tenebrio molitor larvae (mealworms). Main sensory aroma attributes of raw mealworms were strong wet-soil-like, and less-intense oily, shrimp-like and sweet-corn-like. Quantitatively, the major aroma components of raw mealworms were hydrocarbons and aldehydes. As cooking proceeded, sweet-corn-like, roasted, and fried-oil-like sensory attributes were increasingly perceived with steaming, roasting, and frying, respectively. Some pyrazines, pyrrolidines, and carbonyls increased or appeared in roasted and fried mealworms. Partial least squares regression also showed differences in raw and cooked mealworms based on aroma components and their sensory attributes. Unlike raw mealworms, steamed mealworms had a relatively strong sweet-corn-like aroma attribute, which was related to 2,4,6-trimethyl-heptane, 2,4-dimethyl-dodecane, and 3,5-dihydroxy-6-methyl-2,3-dihydropyran-4-one. In comparison, roasted and fried mealworms exhibited roasted, shrimp-like, and fried-oil-like aroma attributes, which were associated with intermediates of the Maillard reaction and lipid oxidation, such as pyrazines, alcohols, and aldehydes. This result during thermal reactions was very similar to those of meat and/or seafood. The use of mealworms as a savory-type flavor enhancer can be expected.

Exploratory Study on Effects of Restaurant Attributes on Perception of Price and Brand Reputation - Comparison Between Locals and Tourists -

  • This study examines the effects of restaurant attributes on customers' perceptions of price and brand reputation. Four restaurant attributes were used to represent restaurant quality. Multiple regression was conducted to measure the relationships between the four restaurant attributes and price and brand reputation. Further, an independent T-test was used to compare differences between perceptions of locals and tourists with regard to restaurant quality under two categories (price and brand reputation) after they selected a restaurant. Results of this study revealed that residency did not have a significant impact on customers' perceptions of price or brand reputation, whereas restaurant attributes did have an impact. Taste was a predictor of perceived price, whereas service and atmosphere were predictors of brand reputation. In addition, comparison of restaurant attributes between locals and tourists showed that sanitation and service were significantly different in accordance with price and atmosphere, whereas taste and service were significantly different in accordance with brand reputation. Locals showed higher means for each restaurant attribute compared to tourists.

Effects of Shopping Mall Attributes and Shopping Values on Online Purchase Intentions (온라인 패션 쇼핑몰에서 쇼핑몰 속성과 쇼핑가치가 구매의도에 미치는 영향)

  • The purposes of this study were 1) to examine the dimension of fashion shopping mall attributes and shopping value related to online shopping, and 2) to investigate the effects of fashion shopping mall attributes and shopping value on purchase intention in online shopping. Data were obtained from 423 online fashion shopping mall consumers who have experiences of buying products or visiting to online fashion shopping mall in Busan, and were analyzed using by factor analysis, Cronbach's alpha, path analysis of LISREL 8.53. The results showed online fashion shopping mall attributes were composed of Visual information, Loading speed Space composition, Product assortment, Checkout service, and Help desk. Shopping value perceived by online fashion shopping mall consumers were consisted two factors: Hedonic value and Utility value. Hedonic value and Utility value Perceive by online consumers were influenced by Product assortment, Visual information, Help desk, and Space composition of shopping mall. Additionally, hedonic and utility shopping values perceive by online consumers impacted online purchase intention. Findings suggest that fashion shopping mall attributes mediated by shopping values are important in predicting purchase intention of online shopping mall. Implications are drawn for the information useful to consumer behavior researchers and retailers of online fashion shopping mall.

  • The purpose of this study is to develop the measures of the perceived risks involved in e-commerce. To do this, we first review the literature and examine the sub-constructs of the perceived risks. The risks classified are economic risk, product performance risk, social risk, technology/time loss risk, and privacy risk. Based on these findings, we identify the appropriate items for assessing these various risks. Then, we evaluate, basically using a structural equation model, the important several attributes of the measurs such as various validities and reliability. This study finally provides the rigorously tested measuring instruments of the construct of the perceived risks.

Understanding the Perceptions and Service Quality of Korean Foods : A Comparative Cross-cultural Study of International Tourists Visiting Korea (한국음식에 대한 인식과 서비스품질의 차이 : 방한 외국인 관광객 비교문화연구)

  • This study examines international tourists 'perceived images and service quality of Korean foods. A survey was conducted to international tourists(Chinese, Japanese, American) visiting Korea. The results of study show that there is a significant difference in several attributes of Korean traditional foods as perceived by international tourists along their nationality. Particularly, American tourists tend to highly evaluate Korean foods as ones good for health. The perceived attractiveness of Korean foods in terms of color and shape is higher for Chinese and Americans than Japanese. A distinct difference is also found in the importance and performance attributes of perceived quality of Korean foods by the nationality of tourists. The results of IPA for the perceived quality of Korean traditional foods show that the restaurant facility and atmosphere are identified as the ones that need to be improved across all the tourists.

  • A Widget platform is acknowledged to be a next generation intelligent platform that is well suited to Web 2.0 and mobile convergence environments. With prospects of growth, examining users' perceptions of current widgets can be a valuable source of information in setting directions for Widget's future development. This study identifies user interface factors that affect widget usability and investigates a strategic approach to promoting the use of widgets by analyzing user's "intention to use" in connection with the identified interface factors. The experimental results show the consistency, intuition, minimal action, and personalization have a positive(+) effect on perceived ease of use and that personalization and design have a causal effect on perceived enjoyment. Inaddition, perceived ease of use has an influence on perceived enjoyment that, inturn, has a direct influence on intention to use. On the other hand, the hypothesis that perceived ease of use has a direct effect on intention to use was rejected.

Customers' Satisfaction and Loyalty with Motivations to Dine Out and Selected Attributes in Korean Traditional Restaurant

  • Purpose - This research analyzes the impact of motivations to dine out and selected attributes of customers on customer satisfaction and loyalty. Based on collected data, this study aims to suggest effective marketing strategies to help manage traditional Korean food restaurants. Research design, data, and methodology - The data were collected from the customers who visited traditional Korean food restaurants in Jeon-Ju for two months from December, 2015. The available data were 402 from collected 450 customers' data and they were analyzed by using SPSS 19.0. Result - These are the results of data analysis. First, environmental, personal and perceived factors influence on the motivations to dine out at Korean food restaurants which affect customer satisfaction. Next, selected attributes from Korean food restaurants have impacts on customer satisfaction. Third, motivations to dine out Korean food restaurants affect customer loyalty. Moreover, physical environments, curiosity and need satisfactions, which are the selected attributes, have impacts on customer loyalty. Lastly, it has been identified that customer satisfaction in Korean food restaurants influences customer loyalty. Conclusions - Satisfaction and good brand image of Jeon-Ju will increase customers' intention to revisit. This study has found that high customer satisfaction leads to re-visitation.

The Influence of Salespersons Attributes on Relationship Commitment between College Students and Salespersons and Their Performance (판매원 속성이 남녀 대학생과 판매원간 관계몰입과 성과에 미치는 영향)

  • This study is a survey of college students who have been exposed to a variety of clothing consumption environments such as online transactions through the Internet, with the purpose of examining the influence of salespersons attributes on college students' relationship commitment and perception of salespersons performance. The study conducted a questionnaire survey on 464 male and female students and used SPSS 12.0 for statistical data analyses such as mean, standard deviation, frequency analysis, reliability analysis, factor analysis, and multiple regression analysis. The results of this study can be summarized as follows: First, salespersons attributes such as appearance, expertise, customer orientation, and customer management fumed out as the factors that influence the satisfaction under relationship commitment at statistically significant levels. Likeability, customer orientation, and customer management were found to have statistically significant influence on perceived reliability of salespersons. Second, with respect to the influence of relationship commitment on customer performance, statistically significant factors included satisfaction and reliability. Customer orientation is considered most important by both male and female students among the salespersons attributes, followed in order by expertise, customer management, appearance, ethic and similarity. Likeability was found to be the least important attribute.

A Study on the Effect of On-line Store Attributes on Consumers' Purchase Intention of Internet Fashion Product Shopping (온라인상의 패션제품 구매의도에 영향을 미치는 온라인 점포 속성에 관한 연구)

  • The purpose of this study was to develop fashion On-line store attributes for fashion On-line shopping mall and to identify significant On-line store attributes, influencing consumers'purchase intention of interned fashion product shopping. A questionnaire was administered to 456 adults who had purchasing experience at fashion On-line shopping mall. SPSS 9.0 package was used for data analysis. Factor analysis, $X^2-test$, t-test, frequency, percentage, one-way ANOVA, multiple regression analysis were utilized. The results were as follows; 1. The On-line store attribute dimensions of fashion On-line shopping mall were tangibility, variety, marketing promotion, responsiveness, reputation, price and convenience. 2. The purchase experienced consumers showed higher purchase intention of Internet fashion product shopping and highly perceived about all sub-factors, except reputation. in On-line store attributes that have significantly positive influence on fashion On-line shopping attitudes. The purchase experienced consumers showed more favorable attitudes toward Fashion On-line shopping than non purchase experienced consumers. Attitudes toward Fashion On-line shopping have directly impact on purchase intention of Internet fashion product shopping.

The Impact of Investment Information Technology-based Fund Attributes on Trust, Satisfaction, Emotional Immersion, and Reinvestment Intentions

  • The purpose of this study was to investigate the impact of investment fund attributes such as fund product characteristics, returns on fund investment (ROI), internal controls, and after service on fund investor behavior based on investment information technology. In addition, we also examined how customers reinvest through emotional immersion, company trust and company satisfaction of investment firms in the context of fund investment. First, empirical results show that fund product characteristics, returns on fund investment, and financial firms' internal controls and after service act as signals to fund investors to shape their reinvestment intentions. Second, while investors are generally perceived to be interested only in investment returns, this study also shows that they consider both fund product characteristics and fund investment returns, which are core attributes of funds, as well as financial firms' internal control and after service, which are non-core attributes. Third, we find that company trust is an important factor in investors' reinvestment intentions, showing that investors are more likely to reinvest in a fund if they perceive the financial firm to be trustworthy and reliable. Finally, these findings emphasize that investors consider not only tangible aspects of fund products, such as fund product characteristics and returns on fund investment, but also intangible factors, such as financial firms' internal control and after service, and trustworthiness. Taken together, another implication is that the more advanced the investment information technology of financial firms, the more trust, satisfaction, immersion, and reinvestment intentions of investors will increase.
