Spices Mycobiota and Mycotoxins Available in Saudi Arabia and Their Abilities to Inhibit Growth of Some Toxigenic Fungi

  • The prevalence and population density of the mycobiota of 50 samples belonging to 10 kinds of spices (anise, black pepper, red pepper, black cumin, peppermint, cardamom, clove, cumin, ginger and marjoram) which collected from different places in Jeddah Governorate were studied. The natural occurrence of mycotoxins in those samples was also investigated. Fifteen genera and thirty-one species of fungi in addition to one species variety were isolated and identified during this study. The most common genera were Aspergillus, Penicillium and Fusarium. Aflatoxins ($12{\sim}40\;{\mu}g/kg$) were detected in the extract of 5 samples of each of anise seeds and black pepper fruits; three samples of black cumin seeds and on sample only of each of peppermint and marjoram leaves out of 5 samples tested of each. Sterigmatocystin ($15{\sim}20\;{\mu}g/kg$) was detected in some samples of red pepper, cumin and marjoram. The inhibitory effects of 10 kinds of powdered spices were tested against 3 toxigenic isolates of fungi (Aspergillus flavus, A. versicolor and Penicillium citrinum). Clove proved to be antimycotic compounds. It inhibited the growth of the tested toxigenic fungi. Black pepper, peppermint, cardamom, cumin and marjoram completely inhibited aflatoxins production, while black pepper and cardamom also completely inhibited sterigmatocystin production.

Organoleptic Profiles of Kefir and Yogurt Supplemented with Various Concentrations of Mentha piperita's (Peppermint) Oil: A Preliminary Study

  • The objective of this study was to evaluate the organoleptic profiles of Kefir and yogurt supplemented with Mentha piperita's (peppermint) oil. The organoleptic profiles of Kefir and yogurt were evaluated by 15 trained panelists between 20 to 50 years of age. The products of Kefir and yogurt were prepared with Mentha piperita's oil at concentrations of 0%, 0.1%, 0.3%, 0.5%, and 1.0%. Taste, color, and overall acceptability scores were the same or lower in Kefir supplemented with 0.1%, 0.3%, 0.5%, or 1.0% Mentha piperita's oil than the control group (0%). The scores of all categories were higher for yogurt containing 0.1% Mentha piperita's oil than the control group. Taste, color, and overall acceptability decreased in proportion to the added amount of Mentha piperita's oil. Further studies are needed to evaluate the functionalities and effectiveness of Mentha piperita's oil in promoting human health.

Synergistic effects of autochthonous probiotic bacterium and Mentha piperita diets in Catla catla (Hamilton, 1822) for enhanced growth and immune response

  • Two dietary experiments were performed to evaluate the impact of the herb Mentha piperita as a dietary supplement on Catla catla. In Experiment 1, fingerlings (0.45-2.60 g) were fed on diets supplemented with M. piperita at different levels (P1, P2, P3, and P4 at 2, 4, 6, and $8g\;Kg^{-1}$ of feed) and C1 served as the control with no peppermint supplementation. In Experiment 2, fingerlings (0.40-3.15 g) were fed with diets containing autochthonous probiotic bacteria Bacillus coagulans (3000 colony forming unit $g^{-1}$) along with M. piperita (PP1-PP4 at 2, 4, 6, and $8g\;Kg^{-1}$ of feed) and feed C2 served as control containing probiotics but no peppermint. Significantly (P < 0.05) high values of growth parameters, digestive enzyme activities, low reed conservation ratio, low excretion of ammonia, and orthophosphates were observed in fingerlings fed with P3 for Experiment 1 and PP3 for Experiment 2. Hematological counts, phagocytic activity, and respiratory burst activity were also enhanced in fingerlings fed with M. piperita supplementation revealing that dietary administration of peppermint at optimum level can enhance the growth, digestibility, and immunity of C. catla fingerlings; however, incorporation of B. coagulans showed better growth and immunity revealing that synergistic effects of M. piperita and autochthonous probiotic in C. catla diets can lead to its sustainable aquaculture.

페퍼민트분말 급여가 비육기 재래흑돼지의 육질 특성 및 지방산 조성에 미치는 영향 (Effect of Feeding Peppermint (Mentha piperita L.) Powder on Meat Quality and Fatty acid Composition in Finishing Korean Native Black Pigs)

  • 본 연구는 페퍼민트 급여가 재래흑돼지의 육질특성과 근육내 지방산 조성 및 콜레스테롤 함량에 어떠한 영향을 미치는지 분석하기 위해 실시하였다. 이를 위해 페퍼민트 분말을 평균체중이 $77{\pm}5$ kg일 때부터 출하까지 0.2%(T1) 또는 0.4%(T2)를 50일간 급여하였으며, 도축 후 등심근을 채취하여 다양한 품질특성을 분석하였다. 일반성분은 처리구간에 유의적인 차이가 나타나지 않았으나, T2처리구에서 조지방 함량이 대조구보다 감소하는 경향이었다. 사후 45분 pH는 처리구간에 유의적인 차이가 없었지만, 24시 pH에서 대조구보다 유의적으로 T2처리구가 높게 나타났다(p<0.05). 육색에 있어서 명도와 황색도는 T2가 대조구보다 유의적으로 낮게 나타났다(p<0.05). 연도와 보수력 역시 처리구간에 차이가 없는 것으로 나타났다. 페퍼민트 첨가는 지방산 조성과 콜레스테롤 함량에 영향을 미치지 못하였으나, T1은 대조구보다 포화지방산이 감소하고 불포화지방산이 증가하는 경향이었다. 또한 콜레스테롤 감소지수는 T1이 대조구보다 유의적으로 높게 나타났다(p<0.05). 이상의 결과를 종합하면 페퍼민트 첨가 사료는 돈육질에 큰 영향을 미치지는 않지만, 지방산 및 콜레스테롤의 건강기능적인 측면에서 긍정적인 영향을 미칠 것으로 판단되며, 보다 심도 있는 추가 연구가 필요한 것으로 사료된다.

육가공 모델 시스템에서 아질산염의 역할에 미치는 향신료 환원성분의 영향 (Effect of reducing components in spice oils on the nitrite role in model meat systems)

  • 향신료의 첨가가 육제품에서 아질산염의 효과에 미치는 역할을 구명하기 위하여, 마쇄한 돈육에 8가지 향신료, ascorbic acid, nitrite를 첨가한 다음, 가열하지 않거나, $70^{\circ}C$ 30분 또는 $121^{\circ}C$ 15분 가열처리한 모델식품을 $5.5^{\circ}C$에서 12일간 저장하면서 pH, 아질산염 잔존량, 적색도, TBA값, 항생역가 등을 측정한 결과 비 가열 시료의 PH는 $5.6{\sim}5.8$로 일정하였으나 아질산염, anise, ascorbic acid, black pepper 처리구의 경우에는 5일 후에 급상승하여 12일 후에는 $6.7{\sim}7.8$로 상승하였다. 한편 $70^{\circ}C$$121^{\circ}C$로 가열구는 $5.9{\sim}6.1$로 거의 변화가 없었다. 아질산염량은 첫날에 큰 감소를 보이며, 저장기일에 따른 감소효과는 ascorbic acid구가 가장 높고, clove, eugenol, thyme도 상당한 효과를 보였으나 peppermint구는 효과가 적었다. 시료의 적색도는 대조구 보다 낮은 peppermint를 제외하면 ascorbic acid, clove, eugenol, thyme, anise, blackpepper, coriander, rosemary처리구가 대조구 보다 높았으며 그중 ascorbic acid, clove, eugenol첨가구의 경우 저장 12시간 후에 $2{\sim}3$정도 높았다. TBA가는 clove, eugenol, ascorbic acid처리구가 아질산염만 처리한 구보다 $4{\sim}6.5$정도 낮아 강력한 항산화성을 나타냈다. 미생물의 생육을 저해하는 항생역가는 Penicillium에 대해 clove, eugenol, peppermint, thyme 처리구가 강력하였으며, Salmonella에서는 모든 처리구에서 다같이 어느정도의 저해 역가를 나타냈다. 따라서 eugenol, clove, thyme oil을 육제품에 첨가하면 아질산염의 첨가량을 줄일 수 있을 것이다.

Preparation and characterization of Melamine-Formaldehyde Resin Microcapsules Containing Fragrant Oil

  • In this study, melamine-formaldehyde microcapsules were prepared via in situ polymerization using peppermint oil as a core material, melamine-formaldehyde as the wall material, Tween 20 as the emulsifier, and poly (vinyl alcohol) as a protective colloid. The melamine-formaldehyde microcapsules prepared in this study were then evaluated with regard to their structures, thermal properties, particle size distributions, morphologies, and release behaviors.

Peppermint 세포 현탁배양에서 Cyclodextrin을 이용한 Menthol의 생산성 증대 (Production Enhancement of Menthol in Suspension Cultures of Peppermint Using Cyclodextrin)

  • The suspension cultures of Mentha piperita produce menthol which has very low solubility in water due to its hydrophobicity. This can be considered as a factor for its low production in the suspension suspension cultures. Cyclodextrin has the hydrophobic cavity inside the molecule in which menthol can be captured and allow to form a stable complex. The suspension culture of Mentha piperita showed 70% higher production enhancement in the medium containing 1.5%(w/v) $\beta$-cyclodextrin than the control. $\beta$-cyclodextrin had no adverse effect on the cell growth and showed the best result among $\alpha$-, $\beta$- and $\gamma$-cyclodextrins tested in terms of menthol production. We demonstrated that $\beta$-cyclodextrin can be used to enhance the production of menthol in the suspension cultures by capturing hydrophobic menthol into the cavity of cyclodextrin molecules.

허브류 식물과 정유의 복숭아혹진딧물에 대한 기피 효과 (Repellency of Herb Plants and Essential Oils Against the Green Peach Aphid, Myzus persicae)

  • Repellencies of herb plants and essential oils against alate Myzus persicae were investigated in a insect cage, a screen house, and a tobacco field. Numbers of nymphs deposited by alate or apterous Myzur persicae were lower on rosemary(Rosmarinus officinalis), silver thyme (Thymus vulgaris), and lemon balm(Melissa of fcianazis). Rosemary and silver thyme show little repellency against alate Myzus persicae on a nearby tobacco plant Rosemary oil, peppermint (Mentha piperita) oil, and ginger oil showed repellency against alate Myzus persicae, but spearmint (Mentha spicata) oil and lavender oil showed little repellency in a screen house. Rosemary oil, ginger oil, peppermint oil, lavender oil, and spearmint oil showed repellency against alate Myzus persicae in a tobacco field, but there was no significant difference among oils.

The Effects of Three Herbs as Feed Supplements on Blood Metabolites, Hormones, Antioxidant Activity, IgG Concentration, and Ruminal Fermentation in Holstein Steers

  • The aim of this study was to investigate the effects of three herb supplementations on blood metabolites, hormones, antioxidant activity, immunoglobulin (Ig) G concentration, and ruminal fermentation in steers. Four Holstein steers in a $4{\times}4$ Latin square design received four herb treatments. The treatments consisted of the steers' regular diets with addition of: 1) nothing (control), 2) peppermint, 3) clove, and 4) lemongrass at 5% of the diet (DM basis). Clove supplementation increased the plasma concentration of cholesterol by about 10% (from 79 to 87 mg/dl). Peppermint and lemongrass feeding resulted in an increase in the concentrations of plasma urea nitrogen (from 5.9 to 6.9 and 6.4 mg/dl, respectively). The three herb treatments had no effect on other metabolites and hormones. Steers receiving clove supplementation showed a higher plasma antioxidant activity. The three herb treatments caused lower concentrations of IgG in the blood. Peppermint and lemongrass feedings increased, and clove feeding decreased ruminal concentrations of ammonia. There were no significant differences in VFA concentrations among herbal treatments, except for the decrease in propionate concentration in steers receiving clove treatment. This study suggested that clove feeding changed cholesterol metabolism and increased antioxidant activity in plasma, and feeding of three herbs affected immunity system and ruminal fermentation in steers.
