Recently, two formulas of sulgidduk added to pine needle juice (PNJ) with various physiological activities were developed for metabolic syndrome patients in our lab. According to previous studies, cooking may alter antioxidant properties by initiating destruction, release or transformation of antioxidant compounds contained in food. Therefore, the aim of this study was to compare the antioxidant activities and antigenotixic effects of sulgidduk with/without PNJ and to note changes in these activities after cooking. The ingredients of sulgidduk was added on the basis of 100% rice flour as follows: conventional sulgidduk (S): 1.5% salt, 30.0% sugar; PNJ added to sulgidduk A (PS-A): 1.4% salt, 30.0% sugar, and 1.0% PNJ; PNJ added to sulgidduk B (PS-B): 1.5% salt, 21.4% sugar, and 1.4% PNJ. Ethanol and water extracts of sulgidduk were analyzed for the total phenolic content (TPC), DPPH radical scavenging activity (DPPH RSA), total radical-trapping antioxidant potential (TRAP), oxygen radical absorbance capacity (ORAC), and antigenotoxic effect by comet assay. The ethanol extracts PS-A and PS-B showed higher TPC and antioxidant activities (DPPH RSA, TRAP, and ORAC) than did the S ethanol extract before cooking. The more PNJ was added, the higher TPC and anitoxidant activities were observed in sulgidduk (PS-A$200{\mu}M$ of $H_2O_2$. Taken together, this study suggests that sulgidduk added to 1.44% of pine needle juice may be a good option antioxidant and antigenotoxic source.
Apparent digestibility coefficients (ADCs) of dry matter, crude protein, crude lipid, nitrogen-free extract, and energy in selected carbohydrate sources including wheat flour (WF), ${\alpha}-potato$ starch (PS), ${\alpha}-corn$ starch (CS), Na alginate (AL), dextrin (DEX), and carboxymethyl cellulose (CMC) were determined for olive flounder. The olive flounder averaging $150{\pm}8.0g$ were held in 300-L tanks at a density of 30 fish per tank. Chromic oxide was used as the inert marker. Feces were collected from the flounder by a fecal collector attached to a fish rearing tank. Apparent dry matter and energy digestibilities of flounder fed WF, PS, CS, and DEX diets were significantly higher than those of fish fed AL and CMC diets. Apparent crude protein digestibility coefficients of flounder fed PS and CS diets were significantly higher than those of fish fed AL, DEX, and CMC diets. Apparent crude lipid and nitrogen-free extract digestibility coefficients of flounder fed PS and DEX diets were significantly higher than those of fish fed WF, CS, AL, and CMC diets. The present findings indicate that PS and DEX could be effectively used as dietary carbohydrate energy compared to WF, CS, AL, and CMC for olive flounder.
Objective: This study was performed to evaluate the quality characteristics of pork sausage (PS) with sea tangle extract (STE) and rapid chilled pre-rigor muscle (RCPM) for the development of reduced-salt low-fat sausage. Methods: Pre- and post-rigor pork ham muscles were prepared to process PSs. Positive control (reference, REF) using post-rigor muscle were manufactured at a regular-salt level of 1.5%. Fresh and rapid-chilled pre-rigor muscle (FPM and RCPM) were used to manufacture reduced-salt sausages with 0.8% salt. Reduced-salt PSs were prepared with four treatments: FT1 (FPM alone), FT2 (FPM with 5% STE), RT1 (RCPM alone), and RT2 (RCPM with 5% STE). The physicochemical and textural properties of the sausages with reduced-salt levels and RCPM combination were measured to determine if the characteristics of RCPM were similar to those with FPM. Results: The pH values of PS with FPM and RCPM were higher than those of REF with post-rigor muscle. Color values (L*, a*, b*) were not affected by different rigor-states and salt addition level. Textural properties of reduced-salt PSs were similar to those of REF due to the improved functionalities of pre-rigor muscle. RT2 had lower expressible moisture (%) than other treatments with post-rigor muscle and RCPM except for RT1. Conclusion: The addition of STE and RCPM to reduced-salt PS increased the water-holding capacity, which was lower than those of PS with STE using RCPM but similar to those of regular-salt sausage.

Psoriasis is one of the most common inflammatory skin disorders, with a global prevalence of 2% - 3%. It is an autoimmune skin disorder characterized by excessive generation of plaques on the skin with typical long-lasting red, itchy, and scaly lesions. In this study, we aimed to elucidate the anti-psoriatic effect of the methanolic extract of Persicaria senticosa (PS), a bioactive edible plant extract used in traditional medicine, using a mouse model of imiquimod (IMQ)-induced psoriasis. The daily topical application of IMQ could induce human psoriasis-like lesion. The extract ameliorated IMQ-induced psoriasis. Furthermore, hematoxylin and eosin staining and the Psoriasis Area and Severity Index (PASI) scores indicated that topical application of PS led to an improvement in erythema, scaling, and thickness scores of the mouse dorsal skin and a considerable decrease in the epidermal thickness of the ear and dorsal skin in the IMQ-induced psoriatic mouse model. We also studied the effect of PS on the proliferation of keratinocytes using HaCaT cells. The extract inhibited cell proliferation and IL-6 and pSTAT3 expression induced by M5 cocktail (comprising interleukin [IL]-1α, IL-17A, IL-22, oncostatin M, and tumor necrosis factor-α) in HaCaT cells. Thus, PS might serve as a potential therapeutic agent for the treatment of psoriasis.

Ionizing radiation can be used to improve the color of green tea extract to brighter. As a result, the irradiated green tea extract can be applied easier and broader in food or cosmetic industry. To confirm the retention of the biological activities of the cosmetic products added with green tea polyphenols (PPs), the real cosmetic products including a skin lotion (PS) and an essence (PE) cream were manufactured. Irradiation also applied to the manufactured cosmetic products to see their improvement of color and changes of biological activity. The PP showed 72% of electron donating ability (EDA) at a 5 ppm concentration and the PS and PE containing 2% PP showed higher than 60%, which was similar inhibition activity to vitamin C. The inhibition of superoxide dismutase (SOD)-like activity of PP, PS, and PE were higher than 55% at a 500 ppm concentration and the inhibition of xanthine oxidase (XOase) were also higher than 65% at a 200 ppm concentration. The measurement of lipid oxidation by addition of $Cu^{2+}$ and $Fe^{2+}$ as prooxidants showed that PP and PS had higher metal chelating ability for $Fe^{2+}$ than that of PE and the ability increased by increase of polyphenol concentration isolated from green tea. The $Cu^{2+}$ chelating ability of PP and PS showed higher than 90% at a 200 ppm concentration. Therefore, it is concluded that addition of PP in manufacturing PS and PE retains its biological activities including EDA, inhibition of XOase and SOD-like activity, and metal chelating ability in the manufactured cosmetic products. In addition, irradiation of PS and PE improved color of the products containing PP brighter without any adverse changes in biological activity of the products.
능동 모드 잠김 8자형 레이저를 이용하여 10Gb/s RZ 신호로부터 클럭을 추출하고 이 클럭 성분의 품질을 평가하였다. 10ps의 펄스폭을 갖는 광원을 $2^{23}-1$ PRBS로 외부 변조하였으며 이를 클럭 추출회로에 인가함으로써 12ps의 펄스폭을 갖는 클럭을 얻었다. 이렇게 얻어진 펄스를 다시 같은 외부 변조기에 입력하여 BER을 측정한 결과 $10_{11}$의 BER에서 패널티가 거의 나타나지 않았다.
This study was conducted to present the fundamental data on physicochemical properties of chicken foot collagen by the comparison with those from pork skin, which is present used in the factories as evaluate the usability of chicken foot in the industries of collagen production. Moisture content of chicken foot skin (CFS) was higher than that of pork skin (PS), and crude protein content was higher in PS. Content of other compositions was not different in both samples. At the evaluation of the soaking processing, effective time lapsed for soaking the skin in acid solution (acetic acid of 0.1 M) was about 12 hr for efficient extract ion of collagen, when tested by the changes of pH of the soaking solution and the increase of the weight of skins. L-Hydroxyproline of PS was slightly higher than that of CFS. Collagens were loaded in a SDS-PAGE and compared. Separated pattern of collagen of CFS was very similar to that of PS. Major collagen of CFS might be clarified as type I collagen.
This study was carried out to investigate antibacterial activities of the green tea extract according to storage temperature as death velocity constant. The survey data were collected from seven green teas (2 Korean, 2 Japanese, 2 Chinease and 1 Vietnamese) and experimental strains were used E. coli No. 11234, Ent. aerogenes No. 11783, Ps. fiu. orescens No. 11210, S. marscens No. 11808, St. mutans No. 11823 and V. parahaernolyticus No. 11965. The experimental results obtained were as follows: 1. Antibacterial activities of the green tea extracts according to the strains were strikingly difference. That is, those of the samples appeared to be conspicuous on [St. mutans No. 11823 (Range of death velocity constant a day after, at 20$\circ$C 4.85~5.22) and V. parahaemolyticus No. 11965 (4.70~6.00) while E. coli No. 11234 (0.59~-0.30) and Ent. aerogenes No. 11783 (0.24~-0.11)] were not so. 2. To storage temperature at 5$\circ$C than that at 20$\circ$C, antibacterial activities of the green tea extract on Ps. fluorescens No. 11210, S. marscens No. 11808, E. coli No. 11234, and Ent. aerogenes No. 11783 were sensitived but St. mutans No. 11823 and V. parahaemolyticus No. 11965 were not related to those. 3. Antibacterial activities to the strains were increased within two days.
02PS15 extracts (BuOH, $H_2O$, and crude extracts) significantly inhibited IL-4 and IL-6 secretion from the phytohemagglutinin (PHA)-plus phorbol 12-myristate 13-acetate (PMA)-induced peripheral blood mononuclear cleas (P<0.05). 02PS15 extracts (BuOH and crude extracts) also significantly inhibited the histamine release from rat peritoneal mast cells (P<0.05). Significant reduced levels (P<0.05) of PMA- and A23187-induced IL-8 were observed in the human mast cell line, HMC-1, with O2PS15 extracts (BuOH and crude extracts). 02PS15 extracts (BuOH and crude extract) downregulated the expression of IL-6 and IL-8 in the activated HMC-1. These results suggest that O2PS15 has the inhibitory effect of atopic allergic reaction anil this might be useful for clinical application to treat several allergic diseases such as atopic dermatitis.
백하수오와 자소엽의 추출조건을 다르게 하여 제조한 추출물 및 추출물 혼합액의 항산화, 항당뇨 및 항비만 활성을 조사하여 기능성 식품소재로서의 이용 가능성을 검토하였다. 총페놀 함량은 백하수오가 발효주정 추출물(CW100)에서 $15.74{\pm}0.69mg/g$, 자소엽이 발효주정과 물의 등량혼합액 추출물(PS50)에서 $39.37{\pm}3.46mg/g$으로 가장 많았다. 항산화 활성은 각각의 추출물을 1 mg/mL의 농도로 처리하였을 때 DPPH 소거 활성은 CW100과 PS50에서 각각 $79.79{\pm}0.79%$와 $82.69{\pm}1.07%$, ABTS 소거 활성은 CW 100과 PS50에서 각각 $80.20{\pm}2.86%$와 $75.00{\pm}1.78%$였다. FRAP 활성은 1 mg/mL의 농도로 처리하였을 때 자소엽이 $82.055{\pm}0.17{\sim}87.660{\pm}0.52%$의 활성을 나타내었다. ${\alpha}$-Amylase 저해 활성은 백하수오가 CW50에서 $51.56{\pm}0.56{\sim}59.2{\pm}1.13%$로 가장 높았으며, 자소엽이 PS0에서 $46.70{\pm}0.32{\sim}66.17{\pm}0.55%$로 가장 높게 나타났다. 3T3-L1 전지방세포의 분화 억제 효과는 CW100에서 $29.49{\pm}2.98%$, PS50에서 $23.31{\pm}0.61%$를 나타내었으며, CW100-PS50의 전지방세포 분화 억제 효과는 $43.03{\pm}1.63%$로 각각의 생약 추출물에 대한 효과보다 상당히 높게 나타났다. 이와 같은 결과로 볼 때 백하수오와 자소엽은 항산화, 항당뇨 및 항비만 효과와 관련된 음료의 소재로 이용이 가능할 것으로 생각된다.
