  • Nitrogen and phytate solubility of perilla seed flour were influenced by the following factors: pH, centrifugal force, temperature and the presence of salt. The nitrogen solubility of perilla seed flour was minimum$(17.1{\sim}18.0%)$ at the pH range of $(4.0{\sim}5.0)$ and maximum(92.3%) at pH 11.0, while phytate solubility was the highest(48.5%) at pH 4.8 and lowest(8.3%) at pH 11.0. The phytic acid content in the extract decreased with an increase in centrifugal force. However, the nitrogen content was not affected by centrifugal force. The solubility of nitrogen and phytate gradually increased as the temperature was increased from $5^{\circ}C$ to $60^{\circ}C$ The addition of calcium$(0{\sim}50mM)$ at pH 5.0 decreased the phytate solubility, but increased nitrogen solubility. The solubility of nitrogen and phytate of perilla seed protein isolate was gradually increased as pH raised further. The protein and phytate contents of the perilla seed protein isolate were 1.1 and 89.6%, respectively, compared to 5.0 and 60.1% for perilla seed flour.

  • Functionalities of drum-dried fish muscle protein from pH shifting process have been investigated by determining solubility, emulsion activity, rehydration, fat-adsorption capacity, viscosity, and color. Solubility was higher in recovered protein at pH 7.0 than that at pH 5.5, and not dependent on ionic strength. Solubility of the dried protein recovered at pH 7.0 depended on pH of solvent, and lowest in the range of pH 3 to pH 6. The dried protein showed relatively low emulsion capacity in all the samples. Emulsion stability, foam capacity and foam stability were not observed in the samples. Viscosity was in the range of $50,200\sim39,000cP$. Rehydration and fat-binding capacities were $2.63\sim2.89g$-water/g and $2.13\sim2.17g$-oil/g, respectively, and not dependent on particle size and pH. Drum-dried fish muscle protein has a potential application as an ingredient of meat patty products.

  • Water quality constituents, and particle size distributions were characterized in urban bridge road runoff, Bridge road runoff contains significant loads of micro-particles, heavy metals and organic constituents. Bridge road runoff was monitored on four sites of four and six lanes bridge road areas along with traffic volume. A total seven storm events were monitored to characterize the bridge road runoff. The quantity of road runoff and quality constituents, including chemical oxygen demand(COD), suspended solids(SS), total nitrogen(T-N), ortho-phosphorus$(PO_4-P)$, total phosphorus(T-P), and particle size distribution were analyzed. The results indicate that the concentrations of SS, COD, T-N and T-P ranges were $35\sim2,390$ mg/L, $40\sim1,274$ mg/L, $0.03\sim21.25$ mg/L, and $0.05\sim4.58$ mg/L, respectively. And the results showed that the mean range of particle size and $D_{90}$ for bridge road runoff were $4.75\sim14.05{\mu}m$ and $17.33\sim58.15{\mu}m$, respectively.

  • The effect of storage temperature and period on the contents of tin, iron, lead and vitamin C, browning index and pH was studied for canned and bottled orange juices currently sold in Korean market, which were stored for 24 weeks at 20, 30, 40 and $50^{\circ}C$ and analyzed at 4 week intervals. The change of metal content in bottled juices was negligible but metal release in canned juices was remarkably affected by storage temperature. Tin content after 16 weeks increased by $2.7{\sim}13.1$ times, iron content after 24 weeks increased by $4.3{\sim}5.2$ times and lead content after 24 weeks increased by $1.1{\sim}2.9$ times. Retention of total ascorbic acid in canned juices after 24 weeks at $30{\sim}50^{\circ}$ decreased to $13{\sim}76%$, while that in bottled juices decreased to $4{\sim}80%$. Browning index in canned juices after 24 weeks below $40^{\circ}C$ increased slightly with serious discoloration at $50^{\circ}C$ while that in bottled juices increased a little rapid. pH change in canned and bottled juices during storage below $40^{\circ}C$ was not observed regardless of container type but a great change of pH was accompanied with swelling of container ends in the case of canned juices after 24 weeks at $50^{\circ}C$.

  • This study was conducted to evaluate water quality and pollutant loads on small agricultural watershed in Jeonbuk province. The EC level of investigated watershed ranged from 0.07 to 0.52 dS/m, BOD level ranged from 0.1 to 5.0 mg/L, and $COD_{Cr}$ level ranged from 0.6 to 17.7 mg/L. As above, contents of water quality indicators covered wide range, but each indicator was alike in mean content every other year. The contents of EC, $Ca^{2+},\;Mg^{2+},\;K^+\;and\;Na^+$ were decreased in rainy season, but the contents of BOD, $COD_{Cr},\;COD_{Mn}$, T-N and T-P were not greatly different as compared to dry season. And high content of SS showed substantial sediments near the surface flow out and influence on water system in rainy season. The pollutant loads measured in terminal of watershed were $9.6{\sim}757.9$ kg/day for BOD, $51.2{\sim}1418.5$ kg/day for T-N and $0.3{\sim}44.7$ kg/day for T-P. The pollutant loads of BOD, T-N and T-P in rainy season increased several times as compared to dry season. In rainy season, watershed with more than 30% in the proportion of paddy field to land showed relatively low discharge and pollutant loads in comparison to watershed with less than 30%. The discharge of watershed in rainy season increased 5.7times compared with the dry season in watershed with less than 30% in the proportion of paddy field to land, whereas was only 2.3times in watershed with more than 30%. The correlation coefficient($R^2$) of regression between discharge and pollutant loads of T-N were higher than those of BOD and T-P.

  • We studied on possibility of the application of photolithography technique to patterning the organic active layer poly(3-hexylthiophene) (P3HT). In the case of selective etching method, we made thin oxide film on P3HT thin film using $O_2$ treatment. We achieved the field-effect mobilities in the saturation regime ${\sim}1.2{\times}10^{-3}\;cm^2/V{\cdot}s$, $I_{on/off}$ ratios ${\sim}10^5$ in the selective etching method, ${\sim}7.4{\times}10^{-4}cm^2/V{\cdot}s$, $I_{on/off}$ ratios ${\sim}5{\times}10^3$ in the lift-off one. These values are higher than ones of the unpatterned P3HT-based OTFTs. On the basis of the above results, we demonstrate the photolithographic patterning for P3HT active layer is successfully carried out without degradation of P3HT.

  • To investigate the effects of sodium alginate, gum karaya and gum arabic on the foaming properties of sodium caseinate, surface tension, specific viscosity, turbidity, foaming ability and foam stability of the caseinate solution with added gums were examined. Surface tensions of the 5%(w/v) protein solutions containing gums at pH 7.0 and 8.0 were $43.7{\sim}44.7dyne/cm$ and $43.6{\sim}44.0 dyne/cm$, respectively. Specific viscosities of the solutions with 0.2 and 0.3% sodium alginates were 15.6 and 39.1 at pH 7.0 (control, 2.8), and 12.1 and 8.2 at pH 8.0 (control, 2.6), respectively. Turbidities were $69.5{\sim}74.0$ at pH 7.0 and $68.0{\sim}72.5$ at pH 8.0. The optimum conditions for foaming ability of the solutions were 0.1% conc. and 15 min whipping in addition of sodium alginates; 0.2% conc. and 20 min whipping in gum karaya; 0.1% conc. and 10 min whipping in gum arabic. For foam stability optimal concentrations were 0.3% in sodium alginate and gum karaya at pH 7.0 and 0.2% at pH 8.0. Addition of sodium alginates was most effective to increase foam stability of the solution, but was not effective to increase foaming ability. At same pH, surface tensions and turbidity of the solutions were related to foaming ability and specific viscosities were related to foam stability.

  • Single-minded 1 gene (SIM1) is a homolog of Drosophila SIM1 gene which plays a key role in the midline cell lineage of the central nervous system and is implicated in the regulation of feeding behavior and obesity in the human and mouse. In this study, porcine SIM1 gene was firstly mapped to chromosome 1p13 using radiation hybrid (RH) mapping and two polymorphisms were detected at position 607 (A/G) in SIM1 intron7 and position 780 (C/T) in SIM1 exon8. The last substitution was genotyped in a 364 F2 animal-population and an association analysis of these genotypes was performed with growth, carcass and meat quality traits by the statistical animal model. The results showed the significant influence of the SIM1 genotype on growth (p<0.05): live weight at birth, later period of growth and average daily gain; and effects on carcass composition (p<0.05): weight of head and buck kneed foreleg, backfat depth, loin eye area, carcass leaf fat and ham fat weights; and traits related to intramuscular fat content (p<0.05).
