양파 껍질 성분이 Press Ham의 지방산패도와 육색의 변화에 미치는 효과 (Effects of Onion Peel Components on Lipid Oxidation and the Changes of Color in Press Ham)

  • Effects of onion peel (OP) components (quercetin and rutin) in press ham on TBARS, pH, redness (a*) and flavor (panel test) were investigated during cold storage. TBARS in OP samples of high concentration was significantly (P〈0.05) lower than control during cold storage. This result suggests that OP components have an antioxidant activity in press ham. Also, redness of OP samples was significantly (P〈0.05) higher than control after three weeks of cold storage. Cured ham redness could be improved through lower pH of OP samples compared to that of control. However, flavor score of OP samples was not significantly (P〉0.05) different with control during cold storage. It could be possible that OP components plays role as an antioxidant without any negative effects on plavor of press ham. 양파 껍질을 급여한 돼지로부터 quercetin 및 rutin을 축적시킨 돈육을 원료육으로 하여 제조한 햄을 4주 동안 냉장 저장하면서 지방산패도(TBARS), pH, 육색(적색도) 및 향미의 변화를 조사하였다. TBARS의 경우 저장 3주부터 양파부산물 급여량이 높은 처리구가 유의적으로(P〈0.05) 낮은 수치를 보여 양파 껍질 성분의 항상화 효과가 인정되었다. 또한 저당 3주이후 대조구와 비교해 처리구가 유의적으로 (P〈0.05) 높은 적색도를 나타내었다. 이러한 결과는 양파 껍질 성분이 육제품의 변색을 억제할 수 있을 것으로 사료된다. 처리구의 염지 육색이 증진된 것은 처리구의 pH가 대조구에 비해 상대적으로 낮은 것으로 설명되었다. 한편, 향미의 관능검사 결과 처리구와 대조구 사이에 유의적인 차이는 인정되지 않았는데(P〉0.05), 이는 양파 껍질 성분의 항상화제로서의 역할과 향미에 미치는 영향이 다소 미미하였기 때문으로 사료된다.

보건소 내소 당뇨병 환자의 건강신념, 건강 통제위성격과 환자역할행위 이행과의 관계 (The Relationship among Patients Sick-role Behavior Compliance, Health Belief and Health Locus of Control in Patients with Diabetes Mellitus Visiting Public Health Center)

  • Purpose: This study was conducted to explore the relationship among health belief. health locus of control and patients sick-role behavior compliance of diabetic mellitus patients visiting public health center. Method: The subjects of this study were 193 of the diabetic patients who were visiting 4 Public Health Center in B city. The instrument used for measuring health belief was Park's(1985). for health locus of control was Wallston. et al's(1978) and for sick-role behavior compliance was Park's(1984). The data were collected with structured questionnaires; total 58 items contained about health belief. health locus of control and sick-role behavior compliance from 1st to 31st July. 2001. The data was analyzed by the SPSS/PC programs using t-test. Pearson's correlation coefficient. ANOVA and Scheffe-test. Result: The average score of the health belief was $57.99\pm9.45$ health locus of control was $66.83\pm9.48$ and sick-role behavior compliance was $42.81\pm7.00$. Statistically significant factors influencing the health belief among social demographic characteristics were family number(F=3.818. p=0.024), monthly income(F=5.153, p=0.002), time of diagnosis(F=3.937. p=0.002) and difficult to control disease(F=5.803. p=0.000). The significant factors influencing the health locus of control were marital status(F=4.669. p=0.010). Also significant factors influencing the sick-role behavior compliance were monthly incomes(F=5.245, p=0.000). the time of diagnosis(F=4.424. p=0.001) and admission to hospital with diabetes(F=9.031. p=0.000). There was negative mild correlation comparatively between health belief and sickrole behavior compliance(r=-0.142, p<0.05) but no correlation in sensitiveness/severity, barrier, benefit(p<0.05). There was no correlation between internal. external. chance health locus of control and sick-role behavior compliance (P>0.05). Conclusion: There was a negative weak relationship between health locus of control and patient's sick role behavior compliance. Therefore further study to investigate the relating factor of the sick role behavior compliance among above of middle aged diabetes mellitus patients is necessary.

여고생의 체중조절, 영양지식, 식태도, 식행동에 관한 연구 (A Study on Weight Control, Nutritional Knowledge, Dietary Attitudes and Eating Behaviors among High School Female Students)

  • This study was designed to examine weight control, nutritional knowledge, dietary attitudes and eating behaviors of 370 high school girls and to investigate if there were differences in these variables by weight control status. The weight control attempters (65.1%) had significantly higher body weight and BMI (p<0.001). The difference between desired and current body weight was -9.1 kg in the attempters, showing a significantly higher difference than the counterparts (p<0.001). The attempters also showed more interest toward weight control (p<0.001), but were less satisfied with their body size (p<0.001). Most of subjects (88.1%), especially in the attempters (96.7%) responded that they would try to control their weights in the future. The regular exerciser was 22.9% in the attempters while the percentage of the counterparts was 11.9% (p<0.05). The use of internet or television watching was not significantly different by weight control status. Subjects scored 15.8 out of 20 on a nutritional knowledge scale, which showed a moderate level of knowledge. The nutritional knowledge score was 15.7 for the attempters and 15.8 for the counterparts. None of the nutritional knowledge items reached statistical significance, although the percentages of correct answers regarding weight control or balanced meals were slightly lower in the attempters. The attempters showed more favorable eating attitudes than the counterparts (p<0.001), especially in the attitudes of applying nutritional knowledge to daily life (p<0.01), attitudes for modifying diets (p<0.01) and importance of having adequate meals (p<0.01). The eating behavior was moderate, with mean scores of 31.1 (possible score: 15 - 45). Subjects showed problems in eating a variety of foods, eating meals regularly, eating slowly, eating breakfast and consumption of some food groups (e.g., dairy foods, fruits). The attempters consumed seaweeds more frequently than the counterparts (p<0.05). Although there were not many significant differences by weight control status, this study suggested that nutrition education for adolescent girls should be planned to provide nutrition information regarding desirable weight control as well as modifying diets and eating behaviors.

은화사간탕(銀花瀉肝湯)과 은화사간탕가녹용(銀花瀉肝湯加鹿茸)의 항암효과(抗癌效果)와 면역반응(免疫反應)에 관(關)한 연구(硏究) (Experimental studies on antitumor effects and immune responses of Eunwhasagantang and Eunwhasagantangganokyong)

  • This study was performed to investigate the effects of Eunwhasagantang and Eunwhasagantangganokyong on the viability of tumor cells in vitro(MTT assay), on antitumor effects after Sarcoma-180 cells transplantation into the peritoneal cavity or left groin, and on decreased immune responses in mice induced by methotrexate. The extracts of its herbal medicines were orally administered for 14 or 21 days. To evaluate the effects of the Eunwhasagantang and Eunwhasagantangganokyong many items such as 50% inhibitory concentration($IC_{50}$), mean survival days, tumor and body weight for antitumor effects, and delayed type hypersensitivity, hemagglutinin titer, hemolysin titer, rosette forming cells, natural killer cell activity, lymphocyte transformation, productivity of interleukin-2 and phagocytic activity for immune responses were measured in ICR mice. The results were obtained as follows; 1. $IC_{50}$ of Eunwhasagantang treated group was 0.000204mg/ml on SNU-396 and that of Eunwhasagantangganokyong treated group was 0.000103mg/ml on SNU-1, those results indicate that the medicine has high antitumor activity. 2. Mean survival times in Eunwhasagantang and Eunwhasagantangganokyong treated groups were slightly increased with no significance, as compared with the control group. 3. Tumor weight in Eunwhasagantang and Eunwhasagantangganokyong treated group was depressed, as compared with the control group(p<0.01). 4. Body weight in Eunwhasagantang and Eunwhasagantangganokyong treated group was significantly increased, as compared with the control group(p<0.05). 5. Delayed type hypersensitivity in Eunwhasagantang and Eunwhasagantang-ganokyong treated group was slightly decreased with no significance, as compared with the control group. 6. Hemagglutinin titer in Eunwhasagantang and Eunwhasagantangganokyong treated group was slightly increased with no significance, as compared with the control group. 7. Hemolysin titer only in Eunwhasagantang treated group was significantly increased, as compared with the control group(p<0.01). 8. Rosette forming cells only in Eunwhasagantangganokyong treated group was slightly increased with no significance, as compared with the control group. 9. In the NK cell activity, the ratio of effector cells and target cells of the Eunwhasagantang treated group was significantly increased(p<0.01) in case which the ratio was 100: 1, and that of the Eunwhasagantangganokyong treated group was significantly increased(P<.01, p<0.05) in case which the ratio was 100:1, 50:1, as compared with the control group. 10. Lymphocyte trasnformation in Eunwhasagantang and Eunwhasagantangganokyong treated group was significantly increased, as compared with the control group(p<0.01). 11. Interleukin-2 in Eunwhasagantang and Eunwhasagantangganokyong treated group was significantly increased, as compared with the control group(p<0.05, p<0.01). 12. Phagocytic activity in Eunwhasagantang and Eunwhasagantangganokyong treated group was significantly increased, as compared with the control group(p<0.05). According to the above results, it could be suggested that Eunwhasagantang and Eunwhasagantangganokyong have prominent antitumor effects, and enhance both cellular and humoral immunity.

남은 음식물과 녹차 부산물이 산란계의 산란성적과 계란품질에 미치는 영향 (Effects of Dried Leftover Food and Green Tea By-Product on Performance and Egg Quality in Laying Hens)

  • 본 연구는 산란계에서 남은 음식물과 녹차 부산물이 산란계의 산란성적과 계란품질에 미치는 영향을 연구하였다. 공시동물은 50주령 Tetran Brown종 산란계 210수를 7처리 5반복 (반복당 6수)으로 임의 배치하였다. 시험설계는 대조구와 옥수수 곡류와 대두박을 대용한 건조된 남은음식물 10, 20, 30 및 40% 첨가구 (10% DLF, 20% DLF, 30% DLF 및 40% DLF)와 1.0%의 녹차 부산물 첨가구 (1.0% GTB)와 30% DLF와 1.0% GTB를 첨가한 혼합 첨가구를 두어 사양실험을 8주 동안 실시하였다. 산란율은 대조구에 비하여 10, 20 및 40% DLF 처리구에서 유의적으로 증가하였다 (P<0.05). 난중은 대조구에 비하여 10% DLF 처리구에서 유의적으로 감소하였다 (P<0.05). 사료 섭취량은 대조구보다 20% DLF 처리구와 30% DLF와 1.0% GTB의 혼합 첨가구에서 높게 나타났다 (P<0.05). 사료 요구율은 대조구에 비하여 10% DLF 처리구와 1.0% GTB 처리구에서 유의적으로 감소하였다 (P<0.05). 난황 콜레스테롤은 DLF 처리구와 대조구 사이에서 변화가 없었다 (P>0.05). 난황의 리놀렌산은 DLF 처리구와 1.0% GTB 첨가한 처리구에서 유의적으로 증가하였다.

다발성골수종 환자의 건강증진행위에 영향을 미치는 요인 (Factors Influencing Health Promoting Behavior in Patients with Multiple Myeloma)

  • Purpose: The purpose of this study was to analyzing the relationship between perceived health status, health locus of control, self-esteem, self-efficacy and HPB in patients with multiple myeloma to identify factors influencing health promoting behavior (HPB). Methods: One hundred patients were recruited into the study. The data were collected by personal interviews using questionnaires. Descriptive statistics, Pearson's correlation coefficients and stepwise multiple regression analysis were used with SPSS program to were analyze the data. Results: There were significant relationships between self-esteem (r=.787, p<.001), self-efficacy (r=.681, p<.001), internal health locus of control (r=.557, p<.001), powerful others health locus of control (r=.517, p<.001), chance health locus of control (r=-.251, p=.012), perceived health status (r=.532, p<.001) and HPB. Significant factors in explaining HPB were self-esteem, powerful others health locus of control, self-efficacy and perceived health status and together they accounted for 71% of variance. Conclusion: The study findings indicate that self-esteem, powerful others health locus of control, self-efficacy, and perceived health status were important factors in explaining HPB in patients with multiple myeloma. As self-esteem was an important variable in HPB, health promotion program designed for this population should focus on self-esteem and these other factors to enhance effective health promotion behavior.

간호대학생의 자기조절학습, 주의력조절, 양생 (Self-regulated Learning, Attention Control and Yangseng of Nursing Undergraduates)

  • Purpose: This study aimed to demonstrate correlations among self-regulated learning, attention control and Yangseng, to clarify any differences depending on general characteristics and ultimately to understand factors affecting self-regulated learning of undergraduates. Methods: Data were collected for a month from April 1st, 2011. A total of 438 undergraduate nursing students of two universities in Chungbuk and Chungnam were surveyed by using a questionnaire about self-regulated learning, attention control and Yangseng. Results: Self-regulated learning of the subjects showed statistically significant correlations with their attention control (r=.302, p=.001) and Yangseng (r=.292, p=.001). In addition, self-regulated learning could be explained by attention control (${\beta}$=3.648, p=.001), Yangseng (${\beta}$=3.645, p=.001), perceived academic achievement levels (${\beta}$=.124, p=.018), or eating breakfast (${\beta}$=.102, p=.027). In the model, the variables explained self-regulated learning by 19.0%. Conclusion: Nursing instructors should encourage undergraduate nursing students to enhance their attention control so that they can improve their self-regulated learning abilities, which will eventually develop their problem solving skills. In addition, it was shown that self-regulated learning correlates with yangseng including eating a regular breakfast. Maintaining a desirable lifestyle is also essential for students to succeed in self-regulated learning.

Reconfiguring Second-order Dynamic Systems via P-D Feedback Eigenstructure Assignment: A Parametric Method

  • The design of reconfiguring a class of second-order dynamic systems via proportional plus derivative (P-D) feedback is considered. The aim is to resynthesize a P-D feedback controller such that the eigenvalues of the reconfigured closed-loop system can completely recover those of the original close-loop system, and make the corresponding eigenvectors of the former as close to those of the latter as possible. Based on a parametric result of P-D feedback eigenstructure assignment in second-order dynamic systems, parametric expressions for all the P-D feedback gains and all the closed-loop eigenvector matrices are established and a parametric algorithm for this reconfiguration design is proposed. The parametric algorithm offers all the degrees of design freedom, which can be further utilized to satisfy some additional performances in control system designs. This algorithm involves manipulations only on the original second-order system matrices, thus it is simple and convenient to use. An illustrative example and the simulation results show the simplicity and effect of the proposed parametric method.

Effects of Holistic Healthcare Home Visit Intervention Program for Multi-cultural Couples

  • This study was to identify the effects of home visit intervention program for Holistic Healthcare of multi-culture Couples. It used a non-equivalent control group pretest-posttest design quasi-experimental research. The subjects of this study consist of 20 couples for experimental and control groups. Multi-cultural couples comprised of foreign women married to Korean men in farm and fishery areas. The research tools were used stress index by SA-3000P (Medicare co. Ltd. KOREA), Center for Epidemiologic Studies-Depression Scale (CES-D), and World Health Organization Quality of Life (WHOQOL-Bref). The experimental group of the wives had lower stress index than the control group, the experimental group of the husband showed lower stress index than the control group, (t=-3.14, p=.002). The wife (t=-3.75, p=.001) and husband (t=-4.20, p=.001) of the experimental group showed lower depression scores than the control group. Both the wife (t=3.86, p=.001) and husband (t=5.28, p=.001) showed higher scores for quality of life compared to the control group. It was found that this holistic healthcare home visit program is an effective program to make improvements on stress, depression and quality of life for multi-cultural couples. Therefore, as the intervention program developed in this study is home visits for the holistic health of multi-cultural couples, and it is judged that it can be implemented at the local social health centers or healthcare centers.

죽초액을 급여한 돼지고기의 저장 중 육질특성 변화 (Changes in Meat Quality Characteristics on Refrigerated Pork Loin Fed with Supplemental Bamboo Vinegar)

  • 본 연구는 평균체중 60.0$\pm$1.5kg인 육성비육돈 30두를 대조구, 죽초액 2% 급여구 및 죽초액 4% 급여구의 3개 처리구로 10두씩 배치하여 4개월간 사양시험을 실시한 후 도축하여 등심육을 시료로 채취하여 저장 중 육질특성 변화를 알아보고자 실시하였다. pH는 저장 3일 이후 죽초액 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 감소함을 나타냈다. 명도(L)는 저장 1일과 3일에 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 높게 나타났다. 적색도는 저장 1일과 3일에 죽초액 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 낮게 나타났다. 황색도는 저장기간 동안 죽초액 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 높게 나타났다. 가열감량은 저장 3일 이후 죽초액 2%와 4%급여구가 대조구에 비해 유의적(P<0.05)으로 높게 나타났다. 전단력은 저장 1일과 3일에 죽초액 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 낮게 나타나 연도 개선효과를 보였다. 지방산패도는 저장 6일과 9일에 죽초액 2%와 4% 급여구가 유의적(P<0.05)으로 감소하였다. 총균수는 죽초액 2%와 4% 급여구가 대조구에 유의적(p<0.05)으로 낮게 나타났다. 냄새는 저장 1일과 3일에 죽초액 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 높은 점수를 받아 돼지 특유의 이취가 감소하는 효과를 나타냈다. 외관은 저장 1일에 죽초액 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 증가함을 나타냈다. 맛은 저장 1일과 3일, 6일에 죽초액 2%와 4% 급여구가 대조구에 비해 유의적(P<0.05)으로 높게 나타났다. 이상의 결과를 종합해보면 죽초액 2%와 4% 급여된 돼지고기는 육질특성과 저장안정성이 개선된 것으로 사료된다.
