Quality Characteristics of Yakju as Affected by Rice Nuruk with Different Degrees of Milling (도정도별 쌀누룩 약주의 품질특성)

  • This study aimed to investigate the effect of rice nuruk prepared from rice with different degrees of milling (0, 10, 30, 50, and 70%) on physicochemical qualities of yakju. The results indicated significant differences in the qualities of yakju prepared using rice nuruk from rice with different degrees of milling. Specially, pH, amino acidity, brownness, b value, and color difference were significantly reduced as the degrees of milling increased, whereas contents of alcohol and volatile acid, reducing sugar, and L value were increased. Malic acid, succinic acid, and lactic acid were the main organic acids in yakju, and there were significant differences among the treatments in malic acid, lactic acid. However, there was no tendency according to different degrees of milling. In addition, contents of total free amino acids and nitrogen compounds showed no tendency according to degrees of milling, whereas the content of aspartic acid showed a tendency to decrease significantly. The content of 2-phenyl alcohol in the volatile flavor components showed a tendency to increase significantly with higher degree of milling of rice nuruk, whereas contents of n-propanol and iso-amyl alcohol tended to decrease significantly.

Effect of long-term organic matter application on physico-chemical properties in paddy soil -I. Changes of the soil-chemical properties of paddy field by long-term application of organic matter (논토양(土壤)의 이화학적(理化學的) 성질(性質)에 미치는 유기물(有機物)의 연용효과(連用效果) -I. 유기물연용(有機物連用) 답(畓)의 토양화학적(土壤化學性) 변화연구(變化硏究))

  • This experiment was carried out to investigate the effects of long-term applications of organic matters on the chemical properties and on the application levels of nitrogen in Fluvio-Alluvial plain of Jeonbug series. The amounts of application of rice straw and compost, the sources of organic matters, were 500 and 1,000 kg/10a in combined with the different nitrogen levels of 0.15 and 20 kg/10a, respectively. The results obtained from the 9 year's experiment during 1979 to 1987 were summarized as follows: I. In long-term application of Organic matter the soil pH showed the lowest value in the 3rd-4th year at rice straw and 5th-6th year at compost but it varied less in control plot for 9 years. 2. Organic matter content in the soils was gradually increased by yearly application of organic matter, while it was higher in rice straw than in compost since the 5th year. 3. The contents of available silica and available phosphate in soil were rapidly increased by long-term application of organic matter and it was especially higher in rice straw than compost, but it was gradually decreased in control plot. 4. The contents of exchangable cations (Ca, Mg and K) and the total nitrogen were increased by long-term application of organic matter they were in rice straw than in compost. But they showed decreasing tendency in control plot. 5. The soil Eh was lower in order of rice straw, compost and control plot however application of orgnic matter resulted in increasing soil Eh due to the rapid reduction of soil from panicle formation to heading stage in rice cultivation. 6. The number of panicles per $m^2$ and the number of granis per panicle were increased by increment of nitrogen levels in all treatments and especially largest in rice straw application. But 1,000 grain weight increased in low nitrogen level with long-term applications of organic matter. 7. It was estimated that the application levels of nitrogen by long-term application of organic matter were 21, 24 and 20 kg/10a for 1st-3rd, 4th-6th and 7th-9th year in rice straw application, and 16 and 19 kg/10a for 1st-3rd and 4th-9th year in compost application, respectively.

The Changes of Forest Vegetation and Soil Environmental after Forest Fire (산불 후 산림식생 및 토양환경의 변화)

  • This study was carried out to examine the recovery of forest ecosystem at the burned areas of coniferous (Mt. Chosdae) and broad leaved forest (Samsinbong in Mt. Chiri) by investigating the changes of forest vegetation. The results obtained are summarized as follows; 1. In the Samsinbong, the total number of species appeared at the burned area were 5 species at tree layer, 11 species at sub-tree layer and 24 species at herb layer, and at the unburned area were 5 species at tree layer, 14 species at sub-tree layer, 18 species at shrub layer and 23 species at herb layer, respectively. In the Mt. Chosdae, the total number of species appeared at the burned area only showed to 83 species at herb layer, and at the unburned area were 7 species at tree layer, 13 species at sub-tree layer, 21 species at shrub layer and 46 species at herb layer, respectively. 2. In the soil chemical properties of the burned area of Samsinbong, pH was 5.8, and contents of Organic matter, Total nitrogen, Available $P_2O_5$, Exchangeable $K^+$, Exchange $Ca^{{+}{+}}$ and Exchange $Mg^{{+}{+}}$ were 7.42%, 0.73%, 28.5mg/kg, 1.3me/100g, 13.3me/100g and 2.2me/100g, respectively. But they showed a tendency to decrease by passing the time. In the soil chemical properties of the burned area of Mt. Chosdae, pH was 5.3, and contents of Organic matter, Total nitrogen, Available $P_2O_5$, Exchangeable $K^+$, Exchange $Ca^{{+}{+}}$ and Exchange $Mg^{{+}{+}}$ were 6.42%, 0.25%, 24.4mg/kg, 0.7me/100g, 3.7me/100g and 2.1me/100g, respectively, and they also showed a tendency to decrease by passing the time. 3. An the burned and unburned areas of Samsinbong, the total evolved amounts of soil respiration were $4,049.1mg/m^2/h$ and $9,950.0mg/m^2/h$, respectively. An the burned and unburned areas of Mt. Chosdae, the total evolved amounts of soil respiration were $4,392.4mg/m^2/h$ and $8,286.5mg/m^2/h$, respectively.

Relationship between Soil Color Characteristics and Measurement Values by Colorimeter (토양의 색 특성과 색차계 측정치의 상호관계)

  • Soil color characteristics were measured by a optical instrument, colorimeter, comparing with the conventional Munsell color chart and related to the chemical properties of soils. Total of the 67 experimental soils were taken from tobacco fields that located at Cheongwon, Enmseong, Boeun, Goesan, Jincheon, and Chungju countries in Chungbuk Province having the 29 soil series including Samgag. The values of L, a, and b measured by colorimeter were closely related with hue, value, and chroma of Munsell color chart, respectively, indicating the quantitative measurement of soil color characteristics. The standard deviations in measurement for L, a, and b values was smaller in soil sample passed by 0.5 mm sieve than 2 mm sieve, suggesting that soil particle size less than 0.5 mm was better condition for colorimeter measurement. The values of L and b measured by colorimeter showed a tendency to decrease as increase of soil moisture content but nearly on difference with moisture condition for the value of a. However, correlation coefficient between air dry samples and wet soil samples(soil moisture retension of -10 hPa) for measurements of L, a and b value were more than 0.9 showing the same tendency in measurement. Consequently, air dry soil passed by 0.5 mm sieve was recommended to desirable conditions for stable measurement by colorimeter. The measured values by colorimeter were significantly correlated with organic matter, CEC, exchangeable Ca and Mg, showing the highest correlation coefficient between L value and organic matter.

Changes of some chemical constituents in different soil depth with textures of Fluvio-marine soil under assessment of reclamation duration (간척년수(干拓年數)에 따른 토성(土性) 및 작토층위별(作土層位別) 수종(數種) 화학성분변화(化學成分變化) 차이(差異)에 관(關)한 연구(硏究))

  • A series of field and laboratory experiments were conducted to find out the changes of some soil chemical constituents in different soil depth with three different soil textures as Bongnam-clayey, Gwanghwal-silty loam and Mangyeong fine sandy soil on the assessment of reclamation duration in Fluvio-marine soil. The result obtained were summarized as follows; 1. Exchangeable potassium, calcium, magnessium, sodium with manganes, silica and cation exchange capacity were remarkably decreased with assessment of reclamation duration. Decreasing tendency was pronounced more in sandy soil than silty loam or clayly soil. 2. Soil organic matter content in top soil was increased with increasing of reclamation years. From reclamation time, about 30 years in clayly and about 80 years in silty loam and sandy soil were necessary for the maintanance of averaged organic matter content to 2.5%. 3. Potassium activity ratio ($K/{\sqrt{Ca+Mg+Na}}$) was differed with soil depth, soil texture and assessment of reclamation duration. About 50 years is may be necessary for the maintanance of potassium activities ratio in ordinary paddy soil of 0.05-0.2. 4. Percent of adsorbed sodium (PAS), ratio of adsorbed sodium (RAS) and ratio of sodium adsorbtion(RSA) were remarkably decreased with assessment of reclamation duration. Specially, decreasing tendency was pronounced more in sandy soil than silty loam and clayly soil 5. Amount of clay content in subsoil was appearently decreased during 30 years of reclamation, but clay contents in top soil was appearently decreased 50 years after reclamation.

Effects of Mixture Ratios of Cow Manure and Rice Hull on the Growth of Earthworm (Eisenia Foetida) and Cast Production (우분에 왕겨 혼합수준이 지렁이의 생육과 분립 생산에 미치는 영향)

  • This study was conducted to develope efficient vermicomposting using of different mixture ratios of cow manure and rice hull by feeding these to earthworm and then by studying the growth and reproductive efficiency of earthworm, and the chemical composition of worm cast and its production. The results are summarized as follows. C/N ratio of feed was $20.43{\sim}31.16$ and it increased according to the higher proportion of rice hull, and survival of earthworm was $97.6{\sim}98.4%$. Number of young worms were significantly higher in $10{\sim}40%$ addition of rice hull(number of $824{\sim}844$) than number of 769 of real cow manure treatment(P<0.05). Fresh weight of young worms was $8.00{\sim}11.8g$ and it was significantly higher in 40% addition of rice hull than for other treatments(P<0.05). The cast production of earthworm was significantly lower in the 40% addition of rice hull than for other treatments(P<0.05). But digested matters were showed in the tendency of becoming higher in the 40% addition of rice hull than in $10{\sim}30%$ addition of that. C/N ratio of worm cast was significantly higher in 40% addition of rice hull than for other treatments(P<0.05). Heavy metal concentrations of worm cast were showed in the tendency of becoming lower in the 40% addition of rice hull than in addition of that.

Effects of Operating Temperatures on Decomposition and Physicho-chemical Properties of Food Wastes in a Fermentation Dryer (발효건조장치의 가동온도가 음식물쓰레기의 분해 및 이·화학성에 미치는 영향)

  • This study was carried out to investigate the effects of operating temperatures on decomposition and physicho-chemical properties of household food wastes in a fermentation dryer, which was manufactured by Samwoo Co. Ltd. The household food wastes of 100 kg can be put and dried in this dryer at once. The experiments were performed at each temperature of $35^{\circ}C$, $45^{\circ}C$, $55^{\circ}C$ and $70^{\circ}C$ for two days respectively. The samples taken at the fixed time were dried at $105^{\circ}C$ and analyzed to find the decomposition rate and the concentration of each substance. The results obtained were as follows: The decomposition rate at 35 and $70^{\circ}C$ was the highest and showed the similar tendency during the experimental period. The higher the operating temperature was, the faster the water content of the composting material reduced. pH value increased at the operating temperature of 55 and $70^{\circ}C$ and was higher than at the other operating temperatures. Nitrogen content did not show any tendency during the experimental period. $P_2O_5$ and CaO content increased during the experimental period but MgO, $K_2O$ and NaCl were not accumulated. Cu content based on dry matter was in the range of ND~100.4 mg/kg and Cd, Pb and Cr were not detected.

The Effect of Application Times of Cattle Slurry on Dry Matter Yield in Orchardgrass (액상구비의 시용시기가 오차드그라스의 건물수량에 미치는 영향)

  • The aim of this experiment was to investigate the effect of applying times of cattle slurry on dry matter yield of Orchardgrass, when cattle slurry applied at rates of 30m3(average mineral nitrogen fertilizer equivalent to 120kg) per ㏊ in different dressing times, such as S1(1st and 2nd growth), S2(1st and 3rd growth), S3(1st and 4th growth), S4(2nd and 3rd growth), S5(2nd and 4th growth) and S6(application for 3rd and 4th growth). The results were as follows. 1. The average annual yields of dry matter were produced 6.36~7.42 ton per ㏊ in 1995~1997 when cattle slurry applied at rates of 30m3(average mineral nitrogen fertilizer equivalent to 120kg) per ㏊ in different dressing times, especially these tendency were shown higher annual dry matter in S4 plot9application for 2nd and 3rd growth). Those were higher 2.48~3.54 tons or 1.22~2.28 tons per ㏊ than the yields from non-fertilizing or phosphrous and potassium fertilizing. 2. Relative yields of annual dry matter in cattle slurry application plots were 164(S2 plot)~191(S4 plot)% in comparing with non-fertilizing plot. 3. Dry matter yields according to cutting frequency were highest at the 2nd cut(1.50 ton) and were in the order 3rd cut(0.95 ton)>4th cut(0.75 ton)>1st cut(0.69 ton/㏊). Also, those of cattle slurry application plot per ㏊ were in the order 2nd cut(2.02~2.73 tons)>3rd cut(1.56~2.08 tons)>4th cut(1.07~1.68 tons)>1st cut(1.11~1.45 tons/㏊). 4. Relative yields of annual dry matter in cattle slurry application plots were 164~219, 161~210, 143~212 and 135~182% at the 3rd, 1st, 4th and 2nd cut, respectively in comparing with non-fertilizing plot. 5. The efficiencies of nitrogen on dry matter yield(kg DM/kg N) were 18.1, 21.3 and 34.5kg DM/kg N when cattle slurry applied to Orchardgrass at rates of 30m3 (average mineral fertilizer equivalent to 120 kg) per ㏊ in 1993, 1994 and 1995, respectively, especially these tendency were shown higher efficiencies in S4 plot(application for 2nd 3rd growth). On the other hand, those of the same level fertilization of mineral nitrogen were 43.8, 19.2 and 13.4 kg DM/kg N in 1993, 1994 and 1995, respectively.

The Effect of Chitosan and Wood Vinegar Treatment on the Growth of Eggplant and Leaf Lettuce (키토산과 목초액 처리가 가지 및 잎상추의 생육에 미치는 영향)

  • From the experiments on the effect of chitosan and wood vinegar, which are environment-friendly materials, on the growth of eggplant and leaf lettuce, the following results were obtained. 1. The effect of chitosan and wood vinegar treatment on the growth of eggplant 1) There was no difference in soil component elements before and after treatment with chitosan and wood vinegar. The total number of microorganisms tended to increase after treatment with chitosan and wood vinegar, while the number of bacteria increased among microorganisms. However, there was no consistent tendency in the number of Acinomycetes, fungi, and trichodema between treatments. 2) The growth and the yield of eggplant increased compared with the control plot in both the chitosan-treated plot and the wood vinegar-treated plot. However, there was no significant difference between the treatments. The yield of eggplant per 10a increased in chitosan- and wood vinegar-treated plots compared with the controlled plot. There was no significant difference in treatments, however, the plot treated with 800 times-diluted solution showed a higher growth. 2. The effect of chitosan and wood vinegar treatment on the growth of leaf lettuce 1) There was no difference in soil component elements before and after treatment with chitosan and wood vinegar. The number of bacteria increased among microorganisms. However, there was no consistent tendency in the number of Acinomycetes, fungi, and trichodema between treatments. 2) The growth of leaf lettuce in both chitosan-treated plot and wood vinegar-treated plot increased compared with the control plot, however, there was no significant difference between the treatments. On the whole, the plot treated with greater concentration showed a higher growth.

A Study on the Micellization of Sodium Dodecyl Sulfate in 𝜔-Phenylakylammonium Salt Solution (𝜔-Phenylalkylammonium Salt의 수용액에서 Sodium Dodecyl Sulfate의 미셀에 관한 연구)

  • The influence of $\omega$-phenylalkylammonium salt on the critical micelle concentration (CMC) of SDS has been examined using the electric conductivity method. CMC of SDS exhibited the tendency to decrease with the length of alkyl group of additives. The effect of temperature on CMC of SDS in additive solutions has been observed in the range of $18^{\circ}C-50^{\circ}C$. The free energy(${\Delta}G_m^{\circ}$) for the micellization of SDS is negative and the entropy(${\Delta}S_m^{\circ}$) is a large positive value. The enthalpy(ΔHm0is positive in low temperature($18^{\circ}C$) and negative in high temperature($>25^{\circ}C$). In the prensence of organic additives, the micellization of SDS was considered as a spontaneous process and to involve a phase transition. The values of ΔGm0has shown the tendency to increase but the values of ${\Delta}S_m^{\circ}$ and ${\Delta}H_m^{\circ}$ to decrease with the length of alklyl group of additive salts. The changes in ${\Delta}\kappa$(difference of specific conductivity) with increasing mole ratio of additives in the mixed solutions indicated the formation of mixed micelles between SDS and additives. The effect of the length of alkyl chain on the micellization of SDS demonstrated the penetration of organic additives into the palisade layer of the SDS micelle.
