This study investigated organic coffee choice motives from a coffee shop market segmentation perspective in order to understand the potential importance they may have upon attitudes and behavioral intentions to buy organic coffee. A factor-cluster segmentation approach was used for this study. An exploratory factor analysis identified five organic coffee choice motives: 'Sensory', 'Environment', 'Trust', 'Health' and 'Price'. Based upon these five choice motives, cluster analyses classified all respondents into three homogeneous subgroups: 'Highly motivated', 'Moderately motivated' and 'Unmotivated'. Analysis of variance tests indicated that attitudes and intentions to purchase organic coffee were significantly different among the three clusters. In particular, two cluster groups representing 'Highly motivated' and 'Moderately motivated' were found to offer the most utility for further organic coffee market segmentation research. Especially, due to perceptions about high price premium of organic coffee, the 'Moderately motivated' group had higher positive attitudes, although, their intentions to buy organic coffee were not higher than those of the 'Unmotivated' cluster. Findings support previous research propositions that high price could be the strongest barrier for people to purchase organic products including the organic coffee business context. This will assist to market and promote pricing strategies for caf$\acute{e}$s and restaurants to optimize organic coffee sales revenue. Implications for all cluster groups regarding unique socio-demographic characteristics and behavioral intentions are discussed. Organic coffee marketers can apply these findings towards the development of effective target market strategies.
This study aimed to examine the choice motives for organic coffee and investigate how these motives influence consumer attitudes and purchase intentions regarding organic coffee. A survey was administered to people visiting organic coffee shops in Seoul. Analyses of frequency, descriptive statistics, factor and reliability, ANOVA, correlation, and regression were conducted using SPSS 20.0. Six factors were demonstrated as motives for choosing organic coffee: health, price, reliability, familiarity, sensory appeal, and environment friendliness. Among six factors, "reliability" and "environment friendliness" were positively associated with consumer attitudes, which had a significant impact on purchase intentions. This study is one of the first to examine the relationship between consumer attitudes and purchase intentions focusing on organic coffee. Although the organic coffee market has high potential, its theoretical background has been under developed. By revealing choice motives for organic coffee, this study could provide basic information on how to satisfy consumer needs and promote purchasing. In addition, by understanding needs of diverse and specific coffee consumer groups, effective marketing strategies can be developed with a focus on organic coffee. Especially, environment-friendly and reliable organic coffee can satisfy consumers, maximize profits, and improve brand value.
본 연구의 목적은 기능성 커피박 퇴비를 개발하고자 커피박과 커피박 퇴비의 특성을 분석하였다. 커피전문점의 커피박 pH, EC, Zn 함량이 상업용 커피박보다 높게 나타났으나 $K_2O$, CaO, MgO, $Na_2O$, Mn 함량은 유의적인 차이가 없었다. 주요 식물병원균 6종(Rhizoctonia solani, Sclerotinia sclerotiorum, Fusarium oxysporum, Phytophthora capsici, Alternaria alternata, and Botrytis cinerea)에 대한 커피전문점과 상업용 커피박 퇴비의 수용성 추출물의 항균활성을 검정한 결과, 공시한 6종의 식물병원균에 대한 항균력이 있음을 확인하였다. 커피박 추출물의 A. altanata 포자발아 억제 및 P. capsici 유주자낭 형성 억제효과를 조사 한 결과, 10% 깻묵+커피박 퇴비 수용성 추출물이 A. altanata의 분생포자 발아관의 신장과 P. capsici의 유주자낭 형성을 유의적으로 억제하였다. 커피박 퇴비의 기능성을 조사하고자 커피박을 90일간 부숙시키면서 30일 간격으로 총 폴리페놀 함량을 조사한 결과, 총 폴리페놀 함량은 부숙시간의 경과에 따라 증가하였으며, 10% 깻묵+커피박 퇴비에서 90일째에 가장 높은 총 페놀 함량인 평균 $0.35{\pm}0.03mg\;GAE/g$로 나타냈다.
The objectives of this study were: 1) to examine the contents of chemical composition (chlorogenic acids, caffeine, free acids, and free sugars) and 2) to evaluate the sensory attributes (sourness, bitterness, and sweetness) of brewed coffee as affected by two roasting conditions such as varied in the roasting time with the same roasting temperature (RT) and with same color and yield (CY). Quantitative analysis of chemical components was performed using high-performance liquid chromatography (HPLC) system, and quantitative descriptive analysis (QDA) was conducted to analyze sensory attributes. Based on the results of chemical analysis, chlorogenic acids were significantly different (p<0.05) in the short term roasted samples (RT 240 and CY 240), but there was no significant difference in caffeine contents (p>0.05). Organic acid levels were different between RT and CY coffee samples. RT 240 coffee had the most level in organic acids and the longer the roasting time of coffee, the lesser the level of organic acids in coffee was found. However, there was no significant difference in CY coffee (p>0.05). The results of sensory evaluations show that the degree of roasting changed according to the roasting time despite of the roasting temperature. Long term (RT 80) coffee was relatively bitter while short term (RT 240) coffee was relatively sweeter. Also, there was no significant difference (p>0.05) in the sensory characteristics (bitterness and sweetness) of CY coffee although they were roasted at different temperatures. Therefore, the current study concluded that better understanding of proper roasting time and temperature improves the quality of brewed coffee.
The objective of this study was to evaluate the antioxidant and physiological The objective of this study was to evaluate the antioxidant and physiological activities of organic and inorganic coffee based on flavonoid composition. Organic and inorganic coffee varieties were prepared with Brazil arabica bean and Columbia arabica bean, respectively. Color values (Lightness, redness, and yellowness), mineral contents, total phenol content, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, individual flavonoids, and sensory characteristics were then measured in the espresso of each coffee bean. The pH, Brix, and color difference between organic coffee and inorgainc coffee did not correlate with the harvest method. Coffee varieties were more influential on physiological properties, and were markedly more influential than the mineral content. Total phenolics had a higher correlation with DPPH radical scavenging activity ($r^2$=0.832). Depending on the harvesting method, significant differences (p<0.05) were shown in aroma, color, and overall acceptability in sensory evaluation.
This experiment was conducted to study the effect of organic fertilizer on the growth of Peucedanum japonicum Thunberg and the change of soil chemical characteristics. The organic matter contents of coffee sludge and dried food waste powder were 44.26 and 51.18%, respectively. These values exceed the organic matter content of organic fertilizers recommended by the Rural Development Administration (RDA) of South Korea by more than 30%. Accordingly, they indicate the possibility of their use as organic fertilizers. The results from the analysis of soil properties after cultivation showed that the organic matter content of coffee sludge amended soils was two-fold higher than that of dried food waste powder amended soils. However, the content of available phosphorus was two times lower in the coffee sludge amendments. It is expected that the dried food waste powder was actively used to decompose organic substances, and that phosphoric acid was added by the soil microorganisms used to decompose organic substances. In terms of Peucedanum japonicum Thunberg growth, leaf discoloration was observed for all treatments except with the standard rate of dried food waste powder. The standard rate of dried food waste powder also produced relatively better results than other treatments with regard to other growth characteristics such as root length (34.08 cm), root diameter (0.78 cm), and fresh root weight (4.77 g plant-1). Therefore, the standard rate of dried food waste powder produced better results than other treatments and can be used as an organic fertilizer in the growth of Peucedanum japonicum Thunberg.
Coffee is one of the most popular drinks in the world. Roasting process of coffee bean is one of major steps to make coffee, however, there are few studies which analyzed chemical compounds in intermediate state of roasting coffee beans due to technical limitations to get coffee beans with the same roasting condition. We utilized Stronghold S7 pro roasting machine which guarantees the saming roasting conditions repletively with the aid of precise computer to control heat sources to get 20 steps (every 30 seconds) of roasted coffee beans during roasting process (10 min in total). Along with roasting process, phenolic compounds were decreased, which can be explained that roasting process cause phenolic compounds degradation. Caffeine is almost constant during roasting, reflecting that caffeine is not affected in roasting process. These samples presents that organic acids significantly increase along with the roasting process by HPLC analysis. With additional analysis of coffee beans, such as moisture contents, pH, as well as coffee tastes, our analysis will show detailed process of chemical compounds of coffee beans during roasting process.
As coffee consumption per person increases annually to 323 cups in 2018, treating the spent coffee ground has arisen because spent coffee ground results in soil and air pollution. The demands of air purification filters are increasing more and more because the air pollution due to the fine dust has become worse. The spent coffee grounds had a porous structure, however, the pore was blocked by organic oil compounds. Electrocoagulation, which is one of the electrochemical methods, has the potential to remove the organic compounds. The surface area of spent coffee grounds increased effectively after the electrocoagulation treatment, and surface morphology and surface area were confirmed using SEM and BET, respectively. Using the FT-IR, both the spent coffee grounds and the electrocoagulated spent coffee grounds were characterized. The filter characteristics were examined by the adsorption test using formaldehyde, one of the air pollutants.
A study was made to investigate the possibility of treating various organic waste of cattle manure, swine manure, goat manure, apple pomace, chinese medicine residue and coffee less by feeding these to earthworms and then by studying the growth and reproductive efficiency of earthworms, and the chemical composition of worm cast and its production. The results are summarized as follows. 1. When the feed for earthworms were in good condition which were cattle manure, swine manure and apple pomace, the reproductive efficiency of earthworms was improved however in worse condition the feed of which were goat manure and chinese medicine residue, the increasing rate(IR) became faster. 2. Despite the high content of organic matter(OM) in coffee lees, the earthworms fed coffee lees showed significantly lower reproductive efficiency and increasing rate(IR) than those fed other organic waste due mainly to its lower pH and lower total nitrogen(TN) content. Therefore, when coffee lees is considered to be fed to earthworms, it is believed necessary to be mixed with addiveves or other organic waste in order to improve the feed condition. 3. pH in swine manure, goat manure, apple pomace, chinese medicine residue and coffee lees became neutralized by being fed by earthworms. 4. Available P2O5 and exchangeable cation(EC) of earthworm cast were a little increased compared to those of feed. The contents of Mn, Fe and Cu in earthworm cast were a little decreased to compared to those of feed. 5. The contents of Mn, Fe and Cu in earthworm cast were a little a decreased to compared to those of feed. 6. Mean fresh weight of earthworm at final time(FW2) was negatively correlated with number of young worms(NY)(P<0.01), but positively with increasing rate(IR) (P<0.001) and C/N ratio(P<0.05) respectively. Number of cocoons (NC) and fresh weight of cocoons(WC) were positively(P<0.01) correlated with fresh weight of young worms (WY) and digested matter(DI) but negatively(P<0.001) correlated with residual matter(WY) and digested matter(DI) but negatively(P<0.001) correlated with residual matter(RW). Number of young worms(NY) and fresh weigh of young worms(WY) were negatively(P<0.001) correlated with increasing rate(IR), however increasing rate(IR) of earthworm was positively(P<0.05) correlatedd with C/N ratio.
최근 커피 이용량이 증가하면서 폐커피가루의 활용에 대한 관심이 환경공학 분야에서 높아지고 있다. 본 연구에서는 폐커피가루를 재활용하여 오염물질에 대한 흡착제로서의 사용 가능성을 평가하기 위하여 액상의 유기 오염물질(메틸렌 블루)에 대한 흡착평형실험 및 흡착속도실험을 수행하였고, 입상활성탄 및 분말활성탄을 이용한 실험결과와 비교하였다. 실험 결과, 흡착평형의 경우 세 종류의 흡착제 모두 Langmuir 식에 잘 맞는 것으로 확인되었으며, 최대흡착량은 분말활성탄(178.6 mg/g), 폐커피가루(60.6 mg/g), 입상활성탄(15.6 mg/g) 순으로 확인되었다. 흡착속도실험에서도 유사 1차식 및 유사 2차식 모두에서 폐커피가루가 입상활성탄보다 우수한 것으로 확인되었다. 이는 폐커피가루의 입자 크기가 입상활성탄보다 작으며 표면이 입상 및 분말활성탄과 같이 다공성 특성을 띄고 있기 때문인 것으로 판단되었다.
