The purpose of this study was to investigate purchasing variables in the organic food consumption level in Busan. To achieve this purpose, 240 residential women who are organic food consumers were chosen. Among them, 149 women took part in the study. The questionnaire was composed of three parts: 8 demographic characteristics, 9 organic food purchasing conditions, and 22 purchasing variables. The research was continued from August 20th until September 10th, 2007. To derive the results, descriptive analysis, factor analysis, and ANOVA were used by spss 14.0. To sum up the results, three organic food consumption groups were classified into high, middle, and low consumption levels depending on buying condition for organic material. For the factor analysis, 5 factors were named as confidence, quality, safety, appearance, and economy. On the high consumption level, economy factor was highly important than other groups. In general, price would be a more sensitive factor, so they answered the adjusted price range; 52 participants said under 10%, 22 between 11% and 20%, and 17 over 40%.
Increasing use of organically grown foods has renewed interest in the relationship between agricultural methods and food quality. The objective of this study was to evaluate the physicochemical characteristics and antioxidant activities of organic strawberries. For this study, strawberries were measured in terms of quality characteristics, including weight, length, diameter, hunter color, soluble solid contents (SSC), moisture contents, and pH, as well as antioxidant activities, including DPPH and ABTS radical scavenging activities and total phenol and flavonoid contents. Consequently, conventional strawberries showed higher weight, diameter, and L (lightness) and b (yellowness) values than organic strawberries (p<0.001). Length, moisture contents, pH, a (redness) value, and DPPH and ABTS radical scavenging activities were similar (p<0.05). However, organic strawberries showed higher SSC and total flavonoid and phenol contents than conventional strawberries (p<0.001). These results indicate that there were significant differences between organic and conventional agriculture techniques.
Castor oil cake is widely used as a raw material for organic fertilizers (OF) in Korea. Compared to other fertilizer raw materials, it is highly dependent on imports. In terms of replacing raw materials, dehydrated food waste powder (FDP) and castor oil cake have similar nutritional content, and if 30% is replaced, about 20% of the raw material cost can be saved. However, few studies on the effects on crop growth and soil properties when organic fertilizer and dry food waste powder are mixed and applied to the soil have been reported. The effects of an organic fertilizer made by mixing the commercial available organic fertilizer with dehydrated food waste (OF + FDP) on soil properties and the growth of two types of leafy vegetables (lettuce and young radish) were evaluated and compared with the performance of OF. The fresh weights of lettuce and young radish were the highest with OF amendment and stood at 114.3 and 119.0 g·plant-1, respectively. These were followed by OF + FDP amendment, which produced 103.1 and 109.6 g·plant-1, respectively. Compared to the control, OF and OF + FDP increased the lettuce fresh weights by about 69% and 52%, respectively, while the fresh weights of the radish were increased by about 223% and 207%, respectively. The soil pH, EC, total carbon content, and organic matter content in OF and OF + FDP increased. The mixture of dehydrated food waste powder and organic fertilizers is expected to improve soil quality and facilitate stable production of crops and contribute to the substitution of imported organic fertilizer raw materials.
Limonene, pinene, and isoprene are abundant and ubiquitous volatile organic compounds (VOCs) which are found in various natural products and also produced from various manufacture processes. Limonene and pinene are major components of food additives and household products for enrichment of good flavors and elimination of malodors, and isoprene is a basal motif of monoterpenes such as limonene and pinene. They have shown many beneficial effects such as chemopreventive, chemotherapeutic, and antioxidant activities. Upon certain conditions, however, adverse effects of these compounds on human health have also been reported. Although they do not seem to have acute and severe toxicity to human, they can easily generate secondary organic aerosols (SOAs) when they react with oxygen and/or ozone, which have shown certain toxic effects on experimental animal models as well as on humans. Numerous household and scented products containing limonene, pinene, and isoprene are widely used in these days. However, biological consequences upon exposure to these products are largely unknown. The aim of this review is to summarize and analyze the current understanding on the biological effects of VOCs, in particular limonene, pinene, and isoprene, as well as their SOAs.
유기재배법이 배추의 화학적 품질특성에 미치는 영향을 규명하기 위하여, 유기와 일반 재배 배추의 영양 및 기능성성분의 함량을 각각 비교분석 하였다. 일반성분 중 수분은 유기농 배추보다 일반배추에서 높은 함량을 나타내었으나 조단백질, 조지방, 탄수화물 및 조회분은 일반배추보다 유기농배추에서 높은 함량을 나타내었다. 수용성 및 불용성식이섬유, ascorbic acid 및 dehydroascorbic acid, chlorophyll a 및 b, carotenoid 등의 각 함량은 일반배추보다 유기농배추에서 높게 나타났다. 무기질 중 칼륨함량은 유기농배추보다 일반배추에서 높았으나 칼슘, 인, 철, 마그네슘, 황 및 아연의 함량은 일반배추보다 유기농배추에서 높게 나타났다. 유리당인 fructose, glucose 및 sucrose의 각 함량은 유기농배추에서 높았으나 유기산인 malic acid와 citric acid의 함량은 유기농배추에서 낮게 나타났다.
본 연구는 소비자의 구매의도 형성과 관련된 선행요인을 설명하는 주된 이론인 계획적 행동모델을 토대로 식품 관련 및 식품소비관련 소비자의 개성특성, 과거 구매행동 빈도 등의 요인들을 포함하여 유기농식품에 대한 소비자의 구매의도에 미치는 구체적인 영향요인을 제시하고자 이루어졌다. 분석결과를 요약하면 다음과 같다. 첫째, 계획적 행동모델에서 주관적 규범을 제외한 태도, 지각된 행위통제(비용)는 구매의도에 유의하게 영향력이 있는 것으로 나타났으며, 특히 유기농식품에 대해 긍정적인 태도를 가질수록 구매의도가 증가할 확률이 높아진다고 할 수 있다. 둘째, 식품에 대한 관심이 많고 중요하게 생각하는 소비자일수록 유기농식품에 대하여 호의적인 태도를 가지게 될 확률이 증가하며, 과거에 유기농식품을 구매한 빈도가 유기농식품에 대한 구매의도에 영향을 미치는 것으로 나타났다. 셋째, 유기농식품을 이용하지 않을 경우 나타날 수 있는 소비자의 부정적 감정이 유기농식품에 대한 구매의도에 부(-)의 영향을 미치는 것으로 나타났다. 넷째, 주관적 규범은 구매의도에, 식품 관련 개성특성(저항감)은 태도에 유의한 영향을 미치지 않는 것으로 나타났다. 본 연구에서 밝혀진 연구결과는 점차적으로 계획적 행동모델의 설명력을 높이기 위해 다양한 요인들을 포함하는 모델의 확장에 대한 필요성이 제기되고 있는 가운데, 향후 소비자들의 구매행동에 있어 구매의도에 추가적인 요인들의 영향력을 검증하였다는 점에서 그 의미를 찾을 수 있다. 하지만 본 연구에서는 식품의 종류를 구분하지 않고 조사하였기 때문에 식품의 종류에 따라 소비자의 반응이 다를 수 있기에 향후에는 이점을 보완해 나가야할 것이며, 또한 구매경험여부에 따라 군집을 나누어 연구하지 않았기 때문에 유기농식품의 구매경험여부에 따라 구매자들을 비교, 검토하여 연구해나가야 필요성이 제기된다.
In order to understand food sources-metabolism for the pacific oyster (Crassostrea gigas), the stable isotope ratios of carbon (${\delta}^{13}C$) and nitrogen (${\delta}^{15}N$) of its gut, gill, and muscle as well as potential food sources (particulate organic matter, sedimentary organic matter, benthic microalgae, seagrass detritus) were determined in Dongdae Bay. Average ${\delta}^{13}C$ and ${\delta}^{15}N$ values reflect that oysters primarily fed on sedimentary organic matter as opposed to suspended organic matter during summer and winter seasons. However, the relatively enriched $^{15}N$ values of particulate organic matter (>$250{\mu}m$) and sedimentary organic matter in the summer may be due to the photosynthetic incorporation of $^{15}N$-enriched nitrogen (DIN) or the spawning events of bivalves. Specific oyster tissues (gut, gill, and muscle) revealed different metabolic pathways, which were determined through analysis of ${\delta}^{13}C$ and ${\delta}^{15}N$ in each organ. The present results suggest the determination of carbon and nitrogen stable isotopes to be a useful approach in ecological research related to the food sources- metabolism of Crassostrea gigas.
This study has investigated ten different organic acids in 67 types of seasoning Jeotgal (seasoning salted fermented product, SSFP) and Sikhae (seasoning salted fermented product with rice, SSFPR) collected from the market. The levels of organic acids varied significantly depending on the raw materials used for the SSFP and SSFPR. The acetic acid and lactic acid content ranged from being not detected (ND) to 5,667.15 mg/kg for acetic acid in the SSFP, ND to 34,837.89 mg/kg for lactic acid in the SSFP, and 53.47 to 2,089.55 mg/kg for acetic acid in the SSFPR, and 10.69 to 1,733.27 mg/kg for lactic acid in the SSFPR. The range for succinic acid was 57.92 to 2,793.09 mg/kg in the SSFP and 21.21 to 453.32 mg/kg in the SSFPR. Propionic acid content ranged from 8.42 to 277.83 mg/kg in the SSFP and 13.21 to 133.07 mg/kg in SSFPR.The most abundant organic acids were succinic and lactic acid, comprising 48% of the seasoning Jeotgal (succinic acid) and more than 72% in Sikhae (lactic acid). Furthermore, this study suggests that the differences in the organic acid content of samples, based on their raw materials can be discriminated by principal component analysis (PCA).

The study investigates some psychological and environmental factors affecting the intention to purchase organic foods of consumers in the inner-city of Hanoi. Impact factors applied for the study include three psychological factors (health concern, environmental concern, consumer awareness of organic foods) and seven environment factors (family's opinion, friends and colleagues' opinion, influence of celebrities, expert's opinion, social status, mass media, state's encouragement). We analyzed research data from 396 consumers to measure the impacting level of these factors. The convenient sampling method was used to collect the research sample. The measurement applied a 5-point Likert scale classifying from 1-completely disagree to 5-completely agree. Based on previous studies, the research model was recommended. We had estimated the reliability of the scales through Cronbach's Alpha and composite reliability. The research data is analyzed by using Structural Equation Model method (SEM). The findings of the study suggest that psychological factors (health concern, environmental concern, consumer awareness of organic foods) had a significantly positive influence on consumer's purchase attention toward organic food. The results also revealed that environmental factors (family's opinion, friends and colleagues' opinion, influence of celebrities, expert's opinion, mass media) were positively linked to consumer's purchase attention toward organic food.
