일상식 상차림 패턴과 1인 1회 분량에 근거한 중학생의 식단계획 평가 (Assessment of Menu Plan Prepared by Middle School Students According to Ordinary Meal Pattern and Single Serving Size)

  • It is important to prepare and execute the menu plan for proper and balanced intake of nutrients in the adolescence. This study investigated the new approach for planning menu by ordinary meal pattern based on cooked foods groups. The amounts of cooked foods in the menu plan assumed to be single serving size. The middle school second graders participated for the study. A total of 313 questionnaires were analyzed using CAN-pro 3.0 and SPSS WIN 12.0 program. The average content of energy in the menu plan was 2,453 kcal, the average ratios of energy contribution by carbohydrate, protein and fat were 54.3%, 17.9%, 27.8%, respectively. A total of 56.9% menu plans (94.9% of male and 8.7% of female students') were below the lowest limit of optimum carbohydrate energy ratio of 55%. A total of 29.1% menu plans (33.1% of male and 23.9% of female students') were exceed the highest limit of optimum fat energy ratio of 30%. The NAR of minerals and vitamins were all 1.0 except for calcium (0.92) and folate (0.88). When INQ of the individual cooked food groups were calculated, kimch was the highest in all minerals and vitamins examined, suggesting that kimch may be the best source for all minerals and vitamins, including calcium and folate with the minimum change in energy content. In conclusion, the menu plan by ordinary meal pattern in this study was low in carbohydrate, high in fat, and contained enough minerals and vitamins except for calcium and folate for middle school students.

Early Growth Response of Broilers to Dietary Lysine at Fixed Ratio to Crude Protein and Essential Amino Acids

  • The effects of dietary lysine (Lys) at a fixed ratio to crude protein (CP) and essential amino acids (EAA) on early growth response of broilers were studied. Four diets were formulated to contain similar metabolizable energy (ME, 2,950 kcal/kg) but contained graded levels of incremental Lys (1.1, 1.2, 1.3 and 1.4%) while also increasing the dietary CP and EAA (methionine, methionine+ cystine, threonine and tryptophan) to maintain a constant ratio with Lys. Each diet was fed at random to 10 replicates of 6 chicks each throughout the experimental period (1-21 d). At the lowest concentration of Lys of 1.1% (19.04% CP), body weight gain (BWG) was lowest and feed conversion ratio (FCR) was poorest. The BWG increased and FCR decreased linearly as dietary Lys increased upto 1.3% (22.5% CP). Lowest feed consumption was observed in the dietary group that contained 1.1% Lys (19.04% CP) in the diet. Increasing the concentration of Lys to 1.2% (20.77% CP), significantly increased the feed consumption. The concentrations of protein, calcium, phosphorus and cholesterol in serum were not influenced by the variation in Lys contents in the diet. The humoral immune response as measured by antibody titre in response to SRBC inoculation was significantly lower in the diets containing 1.1% Lys compared to 1.4%. It is concluded that the Lys requirement of broilers is 1.3% (22.5% CP) during 0 to 21 days of age for eliciting optimum performance when a fixed ratio of Lys to CP (1:17.31) and essential AA is maintained (1:0.47 Met; 1:0.56 Thr; 1:0.17 Try).

사료의 단백질 및 에너지 함량이 쥐노래미 성장에 미치는 영향 (Effects of the Dietary Protein and Energy Levels on Growth in Fat Cod (Hexagrammos otakii Jordan et Starks))

  • 쥐노래미의 단백질 요구량을 조사하기 위해 카제인과 북양어분을 단백질원으로 하여, 사료의 단백질 함량이 30, 40, 50, $60\%$가 되도록 조정한 4종의 실험사료와 사료의 적정 에너지 함량을 조사하기 위해 가용에너지/단백질 (EP) 비가 9, 10, 11, 12인 4종의 실험 사료를 각각 설계하여 사육실험을 실시하였다. 29g 전후의 쥐노래미를 2개월간 사료의 단백질 함량별로 2반복으로 사육 실험한 결과, 증체율 및 사료효율은 모두 단백질 $50\%$ 사료에서 가장 좋았고, 단백질 $60\%$ 사료에서 성장효과는 오히려 감소하여 4개 실험구 중에서 가장 낮은 값을 나타내었다 (P<0.05). 수학적인 방법으로 이차회귀곡선상에서 증체율을 지표로 하여 단백질요구량을 추정한 결과 최대 단백질 요구량이 $45\%$로 나타났다. 일일사료섭취율은 실험구간에 서로 차이가 없었으나, 단백질섭취율은 사료의 단백질 함량이 증가됨에 따라 증가하는 경향을 보였으며, 단백질효율은 사료 단백질 함량이 증가될수록 유의하게 감소하였다(P<0.05). 가장 성장이 좋았던 실험구의 일일단백질섭취율이 어체중 100g 당 1.7g 이였으며, 이차회귀곡선상에서는 일일단백질 요구량이 어체중 100g당 1.5g으로 나타났다. 전어체의 수분함량은 사료 단백질 함량 $40\~60\%$구간에서는 차이가 없었으나, 사료 단백질 $30\%$구는 $40\%$구보다 유의하게 낮은 값을 보였다(P<0.05). 단백질과 회분 함량은 실험구간에 차이가 없었으며, 지질 함량은 단백질 $30\%$ 실험구가 가장 높았고, $40\%$ 실험구가 가장 낮았다(P<0.05) E/P 비가 다른 사료로 사육 실험한 결과, 증체율, 사료효율 및 단백질효율이 E/P 비가 12인 실험구가 다른 실험구보다 높은 값을 보였다. 전어체의 수분, 단백질 및 회분 함량은 사료의 에너지 함량에 영향을 받지 않았으나, 지질 함량은 에너지가 높은 사료인 E/P 비 11과 12 사료에서 유의적으로 높은 값을 보였다. 본 실험 결과로부터 평균체중 100g 이하의 성장기 쥐노래미의 단백질 요구량은 $45\~50\%$, 일일단백질 요구량은 어체중 100g 당 $1.5\~1.7g$으로 추정되며, 쥐노래미 사료의 적정 E/P 비는 12 전후가 적당할 것으로 생각된다.

Effect of water temperature on protein requirement of Heteropneustes fossilis (Bloch) fry as determined by nutrient deposition, hemato-biochemical parameters and stress resistance response

  • Background: Dietary protein requirements are dependent on a variety of factors and water temperature is one of the most important abiotic factors affecting protein requirement of fish. This study was, therefore, conducted to investigate effects of water temperature on dietary protein requirement of fry Heteropneustes fossilis which has high demand in most of the Asian markets. Methods: Quadruplicate groups of 30 fish per treatment (2.97 ± 0.65 cm; 5.11 ± 0.34 g) were fed seven isoenergetic diets (17.9 kJ g-1 gross energy; 14.99 kJ g-1 digestible energy) containing dietary protein levels ranging from 28 to 52% at two water temperatures (18 and 26 ℃). Experimental diets were fed to apparent satiation as semi-moist cakes thrice daily at 17:00, 12:00, and 17:30 h for 12 weeks. For precise information, various growth parameters, protein deposition, hematological parameters, metabolic enzymes, and stress response were analyzed, and effects of water temperature on dietary protein requirement was recommended on the basis of response from above parameters. Results: Groups held at 26 ℃ attained best growth, feed conversion, and protein deposition at 44% dietary protein indicating that temperature affected dietary protein requirement for optimum growth of H. fossilis fry and protein requirement seems to be satisfied with 44% dietary protein. Interestingly, interactive effects of both dietary protein levels and temperature were not found (P > 0.05). Fish reared at 18 ℃ had comparatively higher values for aspartate and alanine transferases than those reared at 26 ℃ water temperature which exhibited normal physiological value for these enzymes indicating that body metabolism was normal at this temperature. Hematological parameters also followed same pattern. Furthermore, fish reared at 26 ℃ water temperature exhibited more resistant to thermal stress (P < 0.05). The 95% maximum plateau of protein deposition data using second-degree polynomial regression analyses exhibited dietary protein requirement of fry H. fossilis between 40.8 and 41.8% of diet at 26 ℃ water temperature. The recommended range of dietary protein level and protein/digestible energy ratio for fry H. fossilis is 40.8-41.8% and 27.21-27.88 mg protein kJ-1 digestible energy, respectively. Conclusions: Information developed is of high significance for optimizing growth potential by making better utilization of nutrient at 26 ℃ and, to develop effective management strategies for mass culture of this highly preferred fish species.

여름철 넙치치어 배합사료의 적정지질함량 및 공급량 (Optimum Dietary Lipid Level and Feeding Rates of Extruded Pellets in Juvenile Flounder Paralichthys olivaceus during the Summer Season)

  • 본 연구는 여름철에 넙치 치어 배합사료의 적정 지질함량 및 적정 사료공급량을 규명하는데 그 목적이 있다. 적정 지질함량 실험에서 실험사료는 사료내 단백질함량은 52로 동일하게 맞추고 지질함량은 6, 8, 10, 12, 14%가 되도록 설계 하였다. 평균 무게 $18.4{\pm}0.11\;g$ ($mean{\pm}SD$)인 넙치 치어를 300 L 사각수조에 30마리씩 수용하여 각 실험구당 3반복으로 6주간 실시하였으며, 실험기간 동안 평균 수온은 $21{\sim}25^{\circ}C$였다. 실험결과, 증중률, 일간성장률, 사료효율 및 단백질전환효율은 사료내 지질함량이 사료내 지질 함량이 8%(L8)및 10%(L10)인 실험구가 6, 14%인 실험구보다 유의적으로 높았으며(P<0.05), 사료내 지질 함량이 12%인 실험구와는 유의적인 차이가 나타나지 않았다. Broken line model분석을 통한 최대 성장을 위한 여름철 넙치치어 배합사료의 적정 지질 함량은 $9.08{\pm}0.37%$로 사료된다. 적정 공급량 실험에서는 적정 지질함량 실험에서 성장결과가 가장 우수했던 L10을 사용하여 사료공급량을 어체 중 당 2.0, 2.5, 3.0, 3.5% 그리고 만복공급으로 구분으로 6주간 실험하였다. 실험어는 평균무게 $13.4{\pm}0.1\;g$ ($mean{\pm}SD$)인 넙치 치어를 300 L 사각수조에 각각 30마리씩 수용하여 각 실험구당 3반복으로 실시하였으며, 실험기간 동안 평균 수온은 $21{\sim}25^{\circ}C$였다. 적정 사료공급량 실험결과, 증중률, 일간성장률은 사료공급량이 증가할수록 유의적으로 높게 나타났지만(P<0.05),사료공급량이 어체중 당 3.5%와 만복 실험구(어체중 당 4.0% 수준)는 유의적인 차이가 나타나지 않았다(Table 6). Broken line model 분석을 통한 최대 성장을 위한 여름철 단백질 52%,지질 10% (P/E ratio; 108mg protein/kcal)를 함유한 넙치치어 배합사료의 적정 사료공급량은 어체중 당 $3.56{\pm}0.06$로 사료된다. 따라서, 본 연구를 통하여 여름철 넙치치어($10{\sim}50\;g$)배합사료의 적정지질 함량은 $9{\sim}10%$ (Energy: 4,774 kcal, P/E ratio; 108 mg protein/kcal)내외, 이에 대한 적정사료 공급량은 어체중 당 3.5% 내외가 될 것으로 사료된다.

Comparison of Recombination Methods ad Cooling Factors in Genetic Algorithms Applied to Folding of Protein Model System

  • We varied recombination method of fenetic algorithm (GA), i.e., crossover step, to compare efficiency of these methods, and to find more optimum GA method. In one method (A), we select two conformations(parents) to be recombined by systematic combination of lowest energy conformations, and in the other (B), we select them in a ratio proportional to the energy of the conformation. Second variation lies in how to select crossover point. First, we select it randomly(1). Second, we select range of residues where internal energy of the molecule does not vary for more than two residues, select randomly among such regions, and we select either thr first (2a) or the second residue (2b) from the N-terminal side, or the first (2c) or the second residue (2d) from the C-terminal side in the selected region for crossover point. Third, we select longest such hregion, and select such residue(as cases 2) (3a, 3b, 3c or 3d) of the region. These methods were tested in a 2-dimensionl lattice system for 8 different sequences (the same ones used by Unger and Moult., 1993). Results show that compared to Unger and Moult's result(UM) which corresponds to B-1 case, our B-1 case performed similarly in overall. There are many cases where our new methods performed better than UM for some different sequences. When cooling factor affecting higher energy conformation to be accepted in Monte Carlo step was reduced, our B-1 and other cases performed better than UM; we found lower energy conformers, and found same energy conformers in a smaller steps. We discuss importance of cooling factor variation in Monte Carlo simulations of protein folding for different proteins. (A) method tends to find the minimum conformer faster than (B) method, and (3) method is superior or at least equal to (1) method.

The Effect of High Environmental Temperature and Nutrient Density on Pig Performance, Conformation and Carcass Characteristics under Restricted Feeding System

  • An experiment was conducted to examine the effect of a high environmental temperature on the performance, conformation, and carcass characteristics of pigs and the influence of diet. Thirty-six three-way crossed castrated male pigs with average initial body weight of 50.4 kg were used in the experiment. The pig were allocated to the following treatments: two environmental temperatures (20 and $30^{\circ}C$)${\times}$three dietary energy levels (2,980, 3,300 and 3,600 kcal/kg)${\times}$three protein levels (12.8, 15.2 and 17.2%). Daily weight gain was lighter (p<0.01) and feed: gain ratio lower (p<0.05) in pigs at $30^{\circ}C$ than for pigs at $20^{\circ}C$ The pigs at $30^{\circ}C$ were significantly taller with deeper bodies (p<0.05) and significantly longer (p<0.05) both vertically horizontally in the planum nasal when kept at $30^{\circ}C$. The width of body and the circumference of the neck were greater (p<0.05) at $20^{\circ}C$. The lean meat of the loin, middle section, ham, and hind section were significantly greater (p<0.05) in pigs kept at $30^{\circ}C$ and the belly was significantly heavier. The total unsaturated free fatty acids were significantly higher (p<0.05) in the body fat of pigs kept at $20^{\circ}C$ than in that of pigs at $30^{\circ}C$. The results indicated that when pigs are given very restricted same amounts of feed, they may need less energy to maintain their body temperature under moderately high environmental temperature ($30^{\circ}C$); consequently, their performance is better than that of pigs under optimum environmental temperature. The results showed very clearly that weight gain of pigs increased with increasing of dietary protein and energy content. The increasing of dietary protein content seemed more significant when content increasing to 17.2% compared with the 12.8 and 15.2% protein content treatments. The increasing of dietary energy content was more significant when content increasing to 3,600 compared with the other low energy content treatments.

비섬유탄수화물과 반추위분해단백질의 다른 비율이 In Vitro 발효와 젖소의 산유성적에 미치는 영향 (Effects of Different Ratios of Nonfibrous Carbohydrate to Ruminally Degradable Protein on In Vitro Fermentation and Lactation Performance of Dairy Cows)

  • 본 연구는 비섬유탄수화물(NFC)과 반추위분 해단백질(RDP)을 젖소사료에 다양하게 배합하여 NFC : RDP의 비율을 3.5, 3.0 및 2.5로 다양하게 조정하였을 때, in vitro 발효성상 및 젖소의 산유성적에 미치는 영향을 조사하여 적정 NFC : RDP비율을 결정하고자 실시하였다. In vitro 발효시험은 반추위 cannulae가 장착된 Holstein 젖소로부터 반추위액을 얻어 3, 6, 9, 12시간 동 안 배양하였다. 반추위내 pH는 NFC비율이 증가함에 따라 유의한 영향을 받지 않았고, 암모 니아질소농도는 배양 6시간까지 처리군간에 유의한 차이가 나타나지 않았으나, 9시간과 12 시간에서는 NFC : RDP비율이 증가함에 따라 유의하게 감소하였다(P < 0.05). 휘발성지방산생산 량은 acetate 및 propionate농도가 발효 3시간에 NFC함량이 증가함에 따라 유의하게 증가하였 으나(P < 0.05), 나머지 시간대에서는 유의차가 나타나지 않았다. Valerate 및 A : P비율은 NFC : RDP비율에 의하여 영향을 받지 않았고, iso- acids 및 총 휘발성지방산은 전반적으로 NFC함 량이 증가함에 따라 유의하게 증가하였으며(P < 0.05), 3.0비율구가 가장 높은 값을 나타내었다(P < 0.01). 한편, 사양시험은 18 두의 착유우를 공시하여 처리구당 6 두씩 배치하여 총 24주간 실시하였 다. 건물 및 에너지섭취량은 NFC : RDP비율이 증가함에 따라 유의하게 증가하였고(P < 0.01), 섬 유소섭취량은 NFC : RDP비율이 감소함에 따라 직선적으로 증가하였다(P < 0.01). 산유량은 3.5(32.7 kg)비율구가 다른 처리구보다 유의하게 높았다(P < 0.05). 유지방율은 3.0(3.79 %) 및 2.5(3.79 %)비율구가 3.5(3.48 %)비율구보다 유의하 게 높았고(P < 0.05), 유지방생산량은 처리구간 에 차이가 나타나지 않았다. 유단백질과 무지 고형분은 NFC : RDP비율이 증가함에 따라 직선 적으로 증가하였다(P < 0.01). 그러나 우유중 요소태질소농도는 NFC함량이 증가함에 따라 유 의하게 감소하였다(P < 0.05). 이상의 결과로부터 사료내 증가하는 수준의 NFC는 반추위발효, 질소이용효율 및 산유량을 향상시켰고, 사료중 NFC : RDP비율이 3.0이상일 때 반추위발효뿐만 아니라 산유성적이 최대화되는 것으로 나타났다.

Effects of Various Sources and Levels of Chromium on Performance of Broilers

  • Three hundred and twenty four one day old mixed sex broiler chicks were assigned at random into 9 treatment groups. The experimental design was a 3${\times}$3 factorial arrangement. During the starter period (week 1-3), chicks were fed ad libitum. A cornsoybean meal based diet contained 23% crude protein, 3,200 kcal/kg metabolizable energy (NRC, 1994), and supplemented with organic or inorganic forms of chromium. Two organic chromium products, chromium yeast (Cr-Yeast from Alltech Biotechnology Corporation Limited) and chromium picolinate (Cr-Pic) were supplemented at the rate of 200, 400 and 800 ppb. One inorganic product, chromium chloride, was supplemented at the rate of 200, 400 and 800 ppb. During the finishing period (week 4-7), the corn-soybean meal based diet contained 20% crude protein, 3,200 kcal/kg metabolizable energy (NRC, 1994), and the same levels of chromium as in the starter period were added. No significant difference was observed among treatment groups in average daily gain, feed intake, body weight gain, feed conversion ratio and mortality. The carcass percentage of broilers receiving 200 and 400 ppb organic chromium (Cr-Yeast or Cr-Pic) was significantly increased (p<0.01). In addition, the supplementation of organic chromium reduced (p<0.05) breast meat fat content but increased breast meat protein content. The addition of chromium in the diet had no effect on boneless breast, skinless boneless breast, boneless leg, skinless boneless leg but reduced percentage of sirloin muscle. Total cholesterol and triglycerides were reduced by organic Cr supplementation. Supplementation with 200 and 400 ppb of both Cr-Yeast and Cr-Pic showed the lowest total cholesterol. The effects of type of Cr on HDL and LDL were variable, however, LDL increased with increasing level of Cr supplementation. This trial indicates that organic chromium tended to improve growth performances and carcass composition, reduced total cholesterol and triglycerides. The optimum level of organic chromium supplementation was at 200 ppb.

조피볼락(Sebastes schlegelii)치어의 산소소비, 암모니아 질소배설 및 체조성에 미치는 사료내 에너지/단백질비의 영향 (The Effects of Dietary Energy/Protein Ratio on Oxygen Consumption, Ammonia Nitrogen Excretion and Body Composition in Juvenile Rockfish, Sebastes schlegeli)

  • 일정한 에너지를 함유한 사료내의 에너지 /단백질의 비를 11.5, 8.7, 7.0으로 각각 다르게 제조한 사료를 조피볼락, S. schlegeli이 치어에 공급시킨 후 24시간동안 2시간 간격으로 산소소비율과 암모니아 질소배설률을 측정하고 어체를 분석하여 이들에 미치는 사료내 에너지 /단백질비의 영향을 알아보았다. 사료 I, IIl, III을 각각 공급시킨 실험군의 평균산소소비율은 각각 $0,93\pm0.02^a,\;0.92\pm0.02^a\;and\;1.03\pm0.03^bml\;O_2/g/h$ml 이었다. 즉, 사료 III 공급군의 평균산소소비율이 다른 사료공급군에 비해 유의하게 높았다. 사료 공급 후 24시간동안 평균 암모니아 질소배설률은 사료내 에너지/단백질비가 증가함에 따라 증가하였으며, 사료 I, II, III의 공급군에서 평균 암모니아 배설률은 각각 $9.14\pm0.39^a,\;12.41\pm 0.53^a\;and\;14.89\pm0.55^c\;{\mu}g\;N/g/h$ 로 나타났고 각 실험군간의 평균암모니아 배설률값들은 모두 유의한 차를 보이고 있다 (P<0.05). 어체내 단백질 함량은 사료 II의 공급군에서 $62.2\%$로 가장 높게 나타났으며, 사료 I, II 공급군에 비해 유의하게 높았다 (P<0.05). 그리고 체내 지질 함량은 사료 II의 공급군에서 $16.0\%$로 가장 낮게 나타났고, 사료 I의 공급군에서는$23.2\%$로 가장 높게 나타났다. 회분함량은 에너지/단백질비가 낮아짐에 따라 약간씩 증가하며 탄수화물 함량은 사료 I에서 $5.51\%$로 가장 높게 나타났다. 그러나 지질, 회분 및 탄수화물의 함량은 사료 I, II, III의 공급군간에 유의한 차이는 없었다 (P>0.05). 따라서 본 실험에서는 사료 II가 생리학적인 측면에서 관찰한 결과 조피볼락 치어에 대해 가장 적합한 것으로 여겨진다.
