Industrial Status of Organic Mushrooms in Korea (한국 유기농버섯의 산업현황)

  • This study aimed to examine the major domestic and foreign regulations related to the production of organic products. The production and consumption of organic products have been expanding due to the increase in consumer demand for safe food, as well as improved certification procedures and industry trends. In case of organic mushrooms, there were 405 certified farms nationwide in 2021, with a cultivation area of 3,886,628 m2 and a planned production of 6,011 tons. Jeollanam-do has 221 farms, a cultivation area of 2,923,402 m2, and a certification plan for 2,132 tons. Shiitake mushrooms are ranked first with 369 farms, a cultivation area of 3,805,636 m2, and a certification plan for 3,576 tons, representing 91% of the farms, 98% of the cultivation area, and 60% of the certification planning.

Relationship between Macrofungi Fruiting and Environmental Factors in Songnisan National Park (속리산 국립공원의 버섯발생과 환경요인과의 관계)

  • Mushroom fruiting was investigated in pine and oak dominated forest stands in Songni National Park located in central Korea for six years from 2003 to 2008, in order to understand the relationship between mushroom diversity and the environmental factors, precipitation, temperature, soil moisture and vegetation. The most frequent fruiting families were those of ectomycorrhizal mushrooms, Tricholomataceae, Amanitaceae, Russulaceae, Cortinariaceae, and Boletaceae. The frequency of mushroom fruiting varied from 94 to 167 species per year, with July and August having the highest(13~90 species). Mushroom fruiting was positively correlated to precipitation(r=0.897), using Palmer Drought Severity Index for the long term period and Standard Precipitation Index for short term period. Soil moisture content also affected mushroom fruiting, with Lactarius chrysorrheus and Russula virescens fruiting only at soil moisture content higher than 20%. Positive correlation between mushroom fruiting and temperature was also noted(r=0.77), with optimum rates at $21{\sim}25^{\circ}C$. Tricholoma flayayirens, Amanita gymnopus, Lactarius piperatus, Inocybe asteropora and Xerocomus chrysenteron were able to fruit at temperatures higher than $25^{\circ}C$. However, Laccaria amethystea, Amanita virosa and Russula mariae fruited at relatively wide temperature range. The influence of vegetation on mushroom fruiting was likewise noted, with 38 species, including Suillus bovinus and Boletopsis leucomelas being specific to pine dominated stands, while 42 species, including Polyporus arcularius and Hericium erinaceum were specific to oak dominated stands. On the other hand, around 50 species, including Laccaria laccata and Lycoperdon parlatum, were able to fruit in both types of vegetation. In conclusion, mushroom fruiting greatly varies with changes in precipitation, soil moisture, temperature and vegetation.

Effects of Ethylene Oxide and Gamma Energy on the Flavor-Related Components of Mushrooms (Lentinus edodes) (표고버섯의 향미관련 성분에 대한 에틸렌옥시드와 감마에너지의 영향)

  • Flavor-related components were analyzed for dried oak mushrooms (Lentinus edodes) when subjected to ethylene oxide and gamma energy. Volatile flavor components identified by GC and GC-MS were composed primarily of l-oden-3-ol (72.8%), 3-octanone (11.5%) and dimethyl disulfide (6.7%). Most of volatile components were shown labile to the standard cycle of ethylene oxide and 5 kGy-gamma energy, while insignificant changes were observed in the contents of free sugars (mannitol, arabitol, trehalose) and free amino acids. Instrumental analysis have shown, however, that the deterimental effects on flavor-related components were more apparent in EO-fumigated groups than in gamma-irradiated ones, even though the organo-leptic test revealed no significant differences between treated samples and the corresponding control.

Mineral difference of Phellinus from cultivated the variety of material lumber (목질진흙버섯(상황)의 재배원목 종류에 따른 무기성분 함량변화)

  • The purpose of this study was to evaluate the mineral difference about Phellinus from cultivated on mulberry, oak and elm by ICP test. The major mineral components were Ca, K, Fe, P, Al and Na. In Ca, fruiting bodies from cultivated on mulberry were shown about 2~4 times highest, and in case of K was fruiting bodies from cultivated on oak shown about 2 times highest as against the other sample groups. Especially, Na was fruiting bodies from cultivated on oak shown about 10 times highest as against the other sample groups. In this study, fruiting bodies on P. linteus and P. baumii from cultivated the same kind of material lumber are similar mineral components, and we can't really find much their difference. As a results, what kind of mineral component content had showed depend on material lumber.

The optimum media size and composition for sawdust culture of Lentinula edodes (Strain: JNM3022) (표고버섯(JNM3022) 톱밥재배에 적합한 배지조성과 배지크기)

  • These experiments were conducted to search for the optimum media size and composition for culture of Lentinula edodes (JNM3022). Considering the incubation period and the successful culturing rate, the optimum media size was length 25 $cm{\times}diameter$ 14 cm (weight 2.5 kg). The saturation moisture amount of Oak sawdust was 251 ml/100 g. It is a half of pine sawdust 495 ml/100 g. Considering the hypha growing speed and hypha density, the optimum media composition was Oak sawdust 80%+ wheat bran 20% and Oak sawdust 80%+ rice bran 20% In 10 treatments of media composition. The optimum moisture amount of media for growing Lentinula edodes (JNM3022) was 55%. Injection pipe with 20 holes in media was reduced the incubation periods to 11 days when 20cm length media and 32 days when 30cm length media compare to control. The best method for browning media surface was change temperature condition above $10^{\circ}C$ and punching the vinyl bag. This treat could shortened the browning periods to 54 days.

Thermal and Ventilative Characteristics of Single-Span Oak Mushroom Production Facility as Affected by Area of Roof Opening and Shading Rates (단동 표고재배시설의 천창면적과 차광율에 따른 온도 및 환기특성)

  • The quality of oak mushoom(Lentinus edodes(Berk) Sing) is sensitively affected by environmental factors, especially moisture by the rain during the growing period. To protect mushrooms from being wet, plastic-covered facilities with side openings are mostly being used. However, the indoor temperature and humidity f the facility without roof opening become higher due to its poor ventilation, and consequently reduce the productivity and quality as well. In this study, we analyzed the ventilation rates and indoor temperatures of improved facilities as affected by the area of roof opening and shading rate by the model. The indoor temperature decreased by more than 2.5$^{\circ}C$ as the shading rate increased from 50% to 90%, and especially the effect of wind speed on indoor temperature was significantly great under as low as 50% of shading rate. The ventilation rate became higher under wind speed of 1~2m.s-1 regardless of the shading rate. As the wind speed increased from 0m.s-1 to 2m.s-1, the indoor temperature decreased by more than 2.$0^{\circ}C$. Moreover, the indoor temperature became lower with increasing roof opening ratio, but showed no significant differences at more than 50% of roof opening ratio. At lower shading rate, the indoor temperature sensitively decreased with increasing area of roof opening. Additionally, we obtained the higher ventilation performance with the area of roof opening more or less equal to side opening, regardless of the wind speed and shading rate.

Browning efficiency and fruiting body characteristics of Lentinula edodes according to LED light source with sawdust substrate (LED 광원에 따른 표고 톱밥배지 갈변효율 및 자실체 특성)

  • We measured the antioxidant activities of Oak mushroom (Lentinula edodes) in browned sawdust medium under conditions of varying LED sources and amounts of light. Consequently, exposure to 200Lx blue LED resulted in highly efficient browning; the most efficient browning was shown at 200Lx, regardless of the type of luminous source. We identified that quantities obtained with the blue luminous source increased compared to those in other treatment plots. The DPPH radical scavenging test conducted to examine antioxidant activity revealed that the red luminous source caused high radical scavenging compared to efficient browning. The fruiting body for Nongjin-go, as a treatment plot with the highest scavenging, under a 400Lx red luminous source was $34.3{\pm}1.80%$ and that for 'Sanjo 701' at a 300lx red luminous source was $32.99{\pm}1.58%$. The polyphenol content, reported to be correlated with DPPH radial scavenging, showed no similar correlation in the 'Nongjin-go' variety. By contrast, 'Sanjo 701' showed a similar association.

Control effects of benfuracarb and ${\lambda}$-cyhalothrin to oak longicorn beetle, Moechotypa diphysis, infesting the oak mushroom bed logs (표고원목해충인 털두꺼비하늘소에 대한 Benfuracarb와 ${\lambda}$-Cyhalothrin의 방제효과)

  • The toxicity of benfuracarb and ${\lambda}$-cyhalothrin on oak longicorn beetle, Moechotypa diphysis was investigated in terms of residual effect and control efficacy in the field. Mycelial growth inhibition of Lentinula edodes was also investigated in the laboratory. Benfuracarb and ${\lambda}$-cyhalothrin showed 100% of control values and over 90% residual activities of benfuracarb and ${\lambda}$-cyhalothrin were continued for 15 and 20 days after treatment, respectively. Benfuracarb and ${\lambda}$-cyhalothrin did not affect the mycelial growth of L. edodes Imhyup 1 variety. These results indicate that benfuracarb and ${\lambda}$-cyhalothrin might be used for the control of M. diphysis adults in the field.

Development of Fruitbody in the Artificial Oak Sawdust Cultures of Phellinus gilvus Mushroom (마른진흙버섯(Phellinus gilvus)의 톱밥재배 기술에 관한 연구)

  • Present experiments were conducted to determine the possibility of artificial culture with oak sawdust block of Phellinus gilvus Mushrooms, Mycelial growth in sawdust block (oak 90 + rice bran 10, V/N) after 25 days. It took 12 days to make fruitbody from burying of sawdust block to pinhead formation. The fruitbodies produced the total fresh weight 577 g (dried weight 97 g) in a block.

Determination of Proper Amounts of Media and Effects of Fermented Sawdust Addition on Yields of Grifola frondosa in the Bag Culture (잎새버섯 봉지재배시 적정 배지량 및 발효톱밥 첨가효과)

  • This study was conducted to determine proper amount of media and the effect of fermented sawdust on yield of Grifola frondosa in bag culture. The yield of Grifola frondosa was 227 g for 2 kg of media compared with 103 g for 1kg, 256 g for 2.5 kg, and 312 g for 3 kg. The greatest yield of Grifola frondosa per mass of media was 114 g/kg media for 2 kg of media. Days to harvest for 2 kg of media was 95 days compared with 93 days for 1kg, 99 days for 2.5kg, and 104 days for 3kg. Addition of fermented oak sawdust increased yield from 90 to 145 g/kg bag for Hambak cultivar and from 104 to 121 g/kg bag for Yipsae1ho cultivar. Culture duration was shorten 4-7 days by treating fermented oak sawdust.
