  • Vegetative growth of four different strains of Hericium erinaceus was observed. The temperature suitable for optimal mycelial growth was determined to be $25^{\circ}C$, with growth observed in the extend temperature range of $20{\sim}30^{\circ}C$. The different strains of this mushroom showed distinct pH requirements for their optimum vegetative growth, with the most favorable growth observed at pH 6. Considering vegetative mycelial growth, PDA, YM, Hennerberg, Hamada, and Glucose peptone were the most favorable media, and Czapek Dox, Hoppkins, Glucose tryptone, and Lilly were the most unfavorable media for these mushroom strains. With the exception of lactose, most of the carbon sources assayed demonstrated favorable vegetative growth of H. erinaceus. For mycelial growth, the most suitable nitrogen source was alanine and the most unsuitable was histidine. Oak sawdust medium supplemented with $10{\sim}20%$ rice bran was the best for mycelial growth of the mushroom.

  • This study investigated the packaging status and sensory quality of fresh-cut mushroom products from retail markets. Fifty one fresh-cut mushroom products were surveyed / purchased from discount stores in four cities in January (winter), March (spring), August (summer), and October (autumn) 2009. Collected fresh-cut mushrooms include single variety products like whole oyster mushroom and winter mushroom, diced or sliced oak mushroom, sliced king oyster mushroom, and ready-to-cook mixed mushroom products. Most fresh-cut mushrooms were packed in trays made of aluminum, polystyrene (PS), polyethylene terephthalate (PET), nylon materials covered with PVC (polyvinyl chloride) wrap or solid PP (polypropylene) and PS. Eighty nine percent of the covers were labeled with manufacture and expiration date. Collected samples showed severe browning (10%) and off-flavor (4%). The percentage of products with a rating of 'good' or better in overall quality was 90%. Moreover, Survey showed seasonal differences in sensory qualities. All of the collected fresh-cut mushrooms in autumn and winter had high marketability. However, Mushroom products collected in spring and summer had lower quality, hence requires treatment to prevent browning and off-flavor.

  • The change of industrial structure has brought the sharp declination of mine products, and has made many mines closed, which results in environmental pollution by untreated acid mine drainage(AMD). AMD with low pH and high concentration of heavy metals could severely destroy the ecosystem. Many researches have been carried out for the treatment of AMD. In this study, we have treated AMD with oak compost, mushroom compost, sludge cake and cow manure which usually used in AMD treatment systems, and compared the capability of each organic matter. Cow manure and oak compost have been most effective among 4 organic materials. Oak compost removed the heavy metals by ion exchange between Ca-rich particles and soluble heavy metal ions. It also captured the heavy metals using bound functional groups like -OH and -COO-. Sulfate reducing bacteria existing in the cow manure removed effectively heavy metals by producing metal sulfide compound. Therefore, it is effective to use both organic materials in mixture on the treatment of AMD.

  • This study was carried out to develop artificial culture method of Grifola frondosa in polypropylene bag. To find out the favorable substrate formulation of G. frondosa, physicochemical conditions were investigated. The T2 formulation (55 : 25 : 12 : 8) mixing ratio of oak sawdust, oak chip, dried bean-curd refuse and wheat bran showed the shortest time to complete the crop cycle and the highest yield (weight of fresh mushrooms harvested at maturity). Those physicochemical conditions were pH 4.3, 2.4% crude fat contents, 54.1% total carbon, 1.42% total nitrogen, 38.1 C/N ratio, 75.5% porosity and $0.21\;g/cm^3$ bulk density. Among the physicochemical factors, pH, crude fat and total nitrogen may affect mushroom yield. Therefore, development of favorable substrate would be benefit to increase production efficiency of G. frondosa, mushrooms and be commercial potential.

  • To provide further information for reutilization of the bed-logs decayed by oak mushroom(Lentinus edodes), the properties of wood-based board prepared with mixed materials of normal wood and bed-logs were examined. Wood fibers in bed-logs showed different morphology from normal wood fibers, that is, shorter length and rough surface. Thickness swelling increased with increasing mixing ratio of bed-log. On the other hand, modulus of rupture(MOR) in bending strength decreased. In products, the visual surface of board prepared from higher mixing rate of bed-log chips was smooth. Consquently, it is considered that the optimum mixing rate of bed-log to normal wood is the range of 25-50% and the bed-log can be used for raw material of board instead of normal wood.
