  • Pidan and salted duck eggs are of nutritional rich alternative duck egg products which are predominantly consumed in China, Thailand, South Korea and other Chinese migrated countries. Both eggs are rich in proteins, lipids, unsaturated fatty acids and minerals. A Pidan whole egg contains 13.1% of protein, 10.7% of fat, 2.25% of carbohydrate and 2.3% of ash, whereas the salted duck egg contains 14% of protein, 16.6% of fat, 4.1% of carbohydrate and 7.5% of ash. The fresh duck egg contains a range of 9.30-11.80% of protein, 11.40-13.52% of fat, 1.50-1.74% of sugar and 1.10-1.17% of ash. Proteins, lipids, and ash contents are found to be greatly enhanced during the pickling and salting process of pidan and salted duck eggs. However, the alkaline induced aggregation of pidan leads to degradation and subsequent generation of free peptides and amino acids. Very few amino acids are found to be lost during the pickling and storage. However, no such losses of amino acids are reported in salted duck eggs during the salting process of 14 d. Phospholipids and cholesterol contents are lower in pidan oil and salted duck egg yolk oil. Thus, the pidan and salted duck eggs are nutritionally rich alternatives of duck egg products which will benefit the human health during consumption.

  • Various types of health functional foods (HFF) are popularly used among middle-aged. We surveyed 946 middle-aged in Korea for HFF use and significant variables for their HFF use including demographic characteristics, health related variables and nutritional beliefs. The use prevalence of HFF was 58.9%, and among all types of HFF, red ginseng products were taken most frequently, followed by nutritional supplements, ginseng products > mushroom products. HFF was taken more frequently in subjects from high monthly family income (p < .001), and in those from families with a high socioeconomic status (p < .001) in comparison to each corresponding group. Mean age of users was higher than nonusers (p < .001). Self concern about health (p < .001) and usage ratio of HFF by family (p < .001) were higher in users than in nonusers of HFF. Total dietary assessment score was not different in two groups, and users had a more positive view concerning the potential health benefit of HFF than nonusers (p < .001). Most users of HFF took HFF when they were healthy (52.8%) and experienced a little effect through the HFF use (51.2%). Most users of HFF obtained the information on HFF through family and relatives (30.5%) and most of them purchased HFF at pharmacy or oriental medicine clinics (44.5%). HFF users preferred multivitamin and Ca-supplements most among the vitamin mineral supplements belonged to HFF. Given the widespread use of HFF and inappropriate usage of HFF among subjects, the proper use of these products for the contribution to their optimal nutrition and overall health is a subject that should be formed through practical nutrition education considering the various variables affecting their HFF use.

  • The study was conducted to evaluate the performance of the popular isoflavone-rich soybean 'agakong' in upland and in drained-paddy fields. Analysis revealed no significant variation in terms of plant height, number of seeds per pod, number of nodes, and 100-seed weight between the two cropping system. Number of pods was significantly higher in paddy field(234.2kg 10a$^{-1}$) compared to those harvested in the upland field, which was later manifested on the yield where paddy soybeans obtained 278.1kg 10a$^{-1}$ whereas upland only obtained 179.3kg 10a$^{-1}$. This observed difference in yield was attributed to the observed higher amount of N in the paddy soil (0.907%) as compared to the upland soil (0.458%). In terms of nutritional content, protein and phytic acid contents were the only parameters that showed significant differences while oil, sugar, reducing power and fatty acids were all comparable in paddy and filed condition. Protein content was higher in upland soil (47.4%) than that of the paddy (44.9%) soil. On the opposite, phytic acid was higher in paddy (2.90%) than in upland (1.09%). This study showed that the yield of soybean is generally a factor of soil N, drained-paddy field production of soybean is comparable to upland-filed production with the benefit of increasing phytic acid content while maintaining its nutritional value.

  • Various types of functional foods for health (FFH) are popularly used among adolescents. We surveyed 858 students, $15.0 \pm$ 1.6 (14-18) years of age, attending general junior or senior high schools in Korea for FFH use and significant variables for their FFH use including demographic characteristics, food consumption frequency and nutritional beliefs. The use prevalence of FFH was $47.8\%$, and among all types of FFH, nutritional supplements were taken most frequently, followed by red ginseng products > enzyme containing products > plant extract-fermented products. FFH use was higher in older aged-group, subjects lived in small or middle city, and those from families with a high socioeconomic status in comparison to each corresponding group. Health concern on offsprings by parents and usage ratio of FFH by family was higher in users than in nonusers of FFH. Total score of dietary assessment was higher in users than in nonusers of FFH, and users had a more positive view concerning the potential health benefit of FFH than did nonusers. Most users of FFH took FFH when they were healthy ($50.7\%$) , and they did not feel special effects through the FFH use ($57.1\%$) . Most users of FFH got the information on FFH through family and relatives ($61.5\%$) , and most of them purchased FFH at pharmacy or oriental medicine clinics ($55.1\%$) . FFH users preferred vitamin C-and Ca-supplements most among the vitamin mineral supplements belonged to FFH. Given the widespread use of FFH by adolescents, the reasonable use of these products for the contribution to their overall health and well-being is a subject that is emphasized in nutrition education for them. • BACKGROUND/OBJECTIVES: Adequate dietary fatty acid intake is important for toddlers between 12-24 months of age, as this is a period of dietary transition in conjunction with rapid growth and development; however, actual fatty acid intake during this period seldom has been explored. This study was conducted to assess the intake status of n-3 and n-6 polyunsaturated fatty acids by toddlers during the 12-24-month period using 2010-2015 Korea National Health and Nutrition Examination Survey data. SUBJECTS/METHODS: Twenty-four-hour dietary recall data of 12-24-month-old toddlers (n = 544) was used to estimate the intakes of ${\alpha}$-linolenic acid (ALA; 18:3n-3), eicosapentaenoic acid (EPA; 20:5n-3), docosahexaenoic acid (DHA; 22:6n-3), linoleic acid (LA; 18:2n-6), and arachidonic acid (AA; 20:4n-6), as well as the major dietary sources of each. The results were compared with the expected intake for exclusively breastfed infants in the first 6 months of life and available dietary recommendations. RESULTS: Mean daily intakes of ALA, EPA, DHA, LA, and AA were 529.9, 22.4, 37.0, 3907.6, and 20.0 mg/day, respectively. Dietary intakes of these fatty acids fell below the expected intake for 0-5-month-old exclusively breastfed infants. In particular, DHA and AA intakes were 4 to 5 times lower. The dietary assessment indicated that the mean intake of essential fatty acids ALA and LA was below the European and the FAO/WHO dietary recommendations, particularly for DHA, which was approximately 30% and 14-16% lower, respectively. The key sources of the essential fatty acids, DHA, and AA were soy (28.2%), fish (97.3%), and animals (53.7%), respectively. CONCLUSIONS: Considering the prevailing view of DHA and AA requirements on early brain development, there remains considerable room for improvement in their intakes in the diets of Korean toddlers. Further studies are warranted to explore how increasing dietary intakes of DHA and AA could benefit brain development during infancy and early childhood.

  • Purpose: This study aimed to investigate the association between steamed food intake and risk of metabolic syndrome (MetS) in Korean females. Methods: Using Ansan/Ansung data of Korean Genome and Epidemiology Study, general characteristics, nutritional intake and biochemical and anthropometric markers of a total of 4,056 females aged 40 to 69 years were analyzed. MetS was defined following National Cholesterol Education Program Adult Treatment Panel III with some minor modifications. Logistic regression models were established to present the association between steamed food intake and the risk of MetS. Levels of food and nutrient intake by the frequency of steamed food intake and MetS phenotype were analyzed using general linear models. Results: A total of 38.4% of females had MetS. Among them, 24.9% of females with MetS had steamed food more than 1-3 times per week, which reduced the risk for MetS by about 25% (95% confidence interval [CI], 0.650-0.865). However, such association was not evident when various lifestyle factors were considered in statistical models. In rural residents, the benefit of having more steamed food was observed (adjusted odds ratio: 0.747; 95% CI, 0.583-0.958). The frequency of steamed food intake was associated with various food and nutritional intakes. However, trends in those did not differ by MetS phenotype. Conclusion: Having steamed food more than 1-3 times per week may reduce the risk of MetS compared to those who had less steamed food in Korean females. This protective effect of steamed food intake may differ by lifestyle and environmental factors. Although a clear difference in food and nutritional intake was not observed in this study, steaming could be an effective cooking method for a healthy diet for disease prevention and management.

  • This study was designed to identify premenstrual syndrome (PMS) and to investigate the correlation between premenstrual syndrome and nutritional intakes. The subjects of this study were 138 college women residing in Busan Metropolitan City. The subjects were asked to complete Menstrual Discomfort Questionnaire (MDQ) regarding PMS, food intake frequencies and nutritional intake. We studied the correlation between PMS symptoms and nutritional intake. The average height and weight of anemic subjects were 161.42 $\pm$ 3.50 cm and 51.87 $\pm$ 5.42 kg. The average BMI (body mass index, kg/$m^2$) was 19.92 $\pm$ 2.14 and PIBW (percent ideal body weight) were 93.02 $\pm$ 9.75%. Except for phosphorous, vitamin A and vitamin C intakes, the intake levels of all other nutrients were below the Korean RDA. The average calorie intake of the subjects was 1645.65 $\pm$ 352.63 kcal (82.2% of the Korean RDA) and iron intake of the subject was 11.06 $\pm$4.03 mg (69.1% of the Korean RDA) . The calcium and vitamin $B_6$ intakes were 512.26 $\pm$ 183.12 mg (73.1% of the Korean RDA) and 1.12 $\pm$ 0.14 mg (80.0% of the Korean RDA), respectively. With regard to their menstrual state, 45.9% subjects responded that their menstrual cycles were irregular. The frequency of PMS of the subjects was 30.2% (over 3 points) on 5 point scale (1 : no. 5 severe). The common symptoms of PMS of the subjects were pain (2.32 $\pm$ 1.01), negative effects (2.27 $\pm$ 0.87), behavioral changes (2.26 $\pm$ 0.85), water retention (2.07 $\pm$ 0.78) , arousal (1.79 $\pm$ 0.84) , autonomic reactions (1.77 $\pm$ 0.87) , lack of control (1.69 $\pm$ 0.75) and decreased concentration (1.68 $\pm$ 0.75) . There was significant correlation between all the PMS symptoms and calcium (p < 0.01) , vitamin E (p < 0.05) , carbohydrate (p < 0.05) . This suggests that PMS represents the clinical manifestation of nutrient deficiency states especially calcium. Therefore we concluded that calcium supplementation is likely to be of benefit in relieving PMS symptoms.

  • A chronological account of the prospect and problems of utilization of urea in poultry diets is presented. Urea has long been considered as toxic to poultry but recent research, although limited, has yielded controversial results. The main problem appears to be due to the fact that whether or not response to urea is dependent on environment (germ free versus conventional). Although caecum is found to be the major site of ammonia production from urea, the so called nutritional benefit derived by chicken fed urea is probably limited to its utilization for the synthesis of nonessential amino acids in the protein depleted chicken, but not in the protein adequate chicken. More research is needed to monitor production characteristics of birds fed urea and investigate its toxic effect, if any, in some greater detail before recommending this nonprotein nitrogenous substance for inclusion in the poultry diets.

  • Television food advertisement is the most effective way to reach to consumers with food and nutritional informations and affect their eating behavior. Therefore, 218 food commercials were reviewed using video tapes and copies to know the present food product trends, food messages they transmit and define misleading food commercials. Messages were focused on the benefit of health promoting substances they contain, especially for functional food components, fortified nutrients, food safety focused on food additives, convenience and differentiation with other products. Overnutrition on specific nutrients could be expected due to nutrient fortified products and misleading of food commercials were also noted. Regarding trends, guidelines provided by television broadcasting company shoud be fortified in the connection of Food Hygine Law and supervision committe should reinforce the food company to summit data for the approval of their advertisement claims. Nutrition educational spot program shoud be produced and broadcasted for the public to protect the consumer from food faddism in near future.
