  • Meat and bone meal is a valuable protein and mineral source in diets of production animals and contributes to the protein, energy and mineral component of diets. The aim of the present study was to more accurately characterise the apparent ileal amino acid digestibility of meat and bone meals produced in New Zealand and evaluate routine in vitro assays used in practise to measure meat and bone meal quality. A total of 94 commercial meat and bone meals from 25 New Zealand rendering plants over a two and a half year period were analysed for proximates, gross energy, gross amino acid content (incl. hydroxyproline, hydroxylysine and lanthionine), apparent ileal amino acid digestibility, pepsin nitrogen digestibility, protein solubility and bone content. The mean crude protein content of the 94 meat and bone meal samples was 56.8% with a range of >35% units and a coefficient of variation of 9.8%. The mean crude fat and ash content were 10.0 and 28.4% respectively. These latter components showed a large range (16 and 43%, respectively) with coefficients of variation above 22%. Amino acid digestibility between samples was highly variable with lysine and sulphur amino acids digestibility ranging between 45.8-89.0 and 38.2-85.5%, respectively. Pearson correlation coefficients are presented between crude protein content and individual gross amino acids, crude protein content and individual digestible amino acid content, and pepsin N digestibility and individual digestible amino acid content. There was a significant relationship between the digestible amino acid nitrogen content and the crude protein content while pepsin nitrogen digestibility was not correlated to ileal amino acid nitrogen digestibility (r=-0.06). Meat meals with a high protein content had relatively low hydroxyproline and hydroxylysine levels something that was attributed to the levels of collagen from bone. The data indicated that lanthionine (formed upon heat treatment of cysteine with a hydroprotein) is not a good indicator of the heat treatment employed to meat and bone meals. Step-wise multiple regression equations to predict the apparent digestible content of amino acids from rapid in vitro assays are presented. The most selected variables included ash and crude fat content. In general the equations derived for the essential amino acids had a higher degrees of fit (R2) compared to the non-essential amino acids. The R2 for the essential amino acids ranged from 0.43 for histidine and 0.68 for leucine. These equations provide a means of more rapidly estimating the apparent ileal digestible amino acid content (protein quality) of meat and bone meal using standard analyses.

  • This study investigated the food and nutritional characteristics of alkaline-insoluble fractions (AIFs) recovered from bastard halibut Paralichthys olivaceus (BH) and skipjack tuna Katsuwonus pelamis (ST) roes using the alkaline solubilization. The moisture content of AIFs ranged from 4.8% to 12.8%, and ST provided significantly better yields (9.5 for STAIF-11 and 7.1 g/100 g roe for STAIF-12) than did BH (P<0.05). The protein content of AIFs ranged from 71.7% to 79.2%, with the highest level yielded by STAIF-11 (6.8 g/100 g roe). The crude fat content of AIFs was 10.9-14.3% and the mineral content was 0.7-3.4%. The major mineral components of AIFs were sulfur, sodium, potassium, and phosphorus. Color values showed that BHAIFs were significantly brighter than STAIFs. Total contents of essential amino acids were significantly higher in STAIFs (47.5-49.5%) than in BHAIFs. The major essential amino acids found in AIFs from both sources were Val, Leu, Lys, and Arg. Therefore, AIFs were significantly superior to whole BH roe in terms of physicochemical and nutritional status, and we identified species-specific differences between BH and ST. Protein is a major component of AIFs recovered from fish roes, which suggests that they have potential for use as a protein source.

  • The traditional Korean diet, which is high in rice and vegetables, is fast being replaced by a Western style diet as the standard of living goes up. In addition to this, cigarette smoking has taken on serious proportions, especially amongst those of the younger generation. Because Seoul (and it's surrounding areas) is the hub of Education and Business, it is densely populated and heavily polluted Consequently health-related issues and diseases are starting to resemble those prevalent in Western communities. Historically, stomach cancer was the #1 killer-disease in Korea, but nowadays lung cancer ranks either 1st or 2nd on the list of killer-disease in Korea. This is presumably due to the lethal combination of heavy smoking and pervasive air pollution. Despite these disquieting facts, almost no study had been made of the nutritional patterns and dietary habits of smoking and non-smoking young adults in the Seoul area. Therefore the purpose of this study is to compare the dietary and nutritional patterns of young smokers with those of young non-smokers in and around Seoul. This is done with regards to their eating habits and lifestyles, as well as the dietary components that contribute towards maintaining good health. The results showed that compared to non-smokers, smokers manifested irregular eating patterns and also tended to overindulge on fast- or junk foods. In contrast to this, non-smokers enjoyed a healthier diet, which was high in brown rice, grains, legumes, fresh fruit and vegetables, and 'kimchi'. Amongst the male subjects of this study, it was found that smokers consumed significantly less vitamin $B_2$, calcium, and phosphorous than non-smokers. It was also established that in general, stress-generated smoking habits were formed during the high school years of the younger generation. In conclusion: Because smokers maintain a less healthy diet and life-style, it is to recommended that a 'Health Education Program' be developed which could guide young smokers into adopting better dietary habits and life styles.

  • Milk urea nitrogen (MUN) determination is being used an indicator of the protein-energy balance in dairy herds. A faulty balance can be corrected to optimize milk production and animal health. This parameter is regarded as a potential tool to evaluate suboptimal feeding practices and reproductive disorders. Therefore, the purpose of this study was to investigate the response of milk composition by regular feeding analysis and to compared the relationship between MUN and milk protein(MP) and fertility at the insemination period in Holstein dairy cows. Total of 355 artificial insemination (AI) for 150 Holstein cows in the herd were used to examine the relationship between MUN and MP content and conception rate. The AI occured for the cows 50 to 150 day in milk, and MUN and MP concentration were determined using automated infrared procedures. The mean${\pm}$standard deviation of MUN and MP concentration in the herd were $15.6{\pm}2.1mg/dl$ and $3.23{\pm}0.38%$, respectively. MUN contents of bulk milk were increase by elevated crude protein intake. The conception rate was lower in the cows in which the level of MUN was lower than > 8.0mg/dl (10.0%) or > higher than 25mg/dl (15.4%) relative to the cows in MUN content of 12.0~17.9 mg/dl (36.7%) at the time of insemination. Also, lower MP than 3.0% or higher MP than 3.25% were associated with a lower conception rates. Consequently, MUN and MP analyses may be used serve as a monitoring tool of protein and energy nutritional balance to improve reproduction efficiency in Holstein dairy cows.

  • The nutritional composition of thawed Hanwoo beef fed no mugwort (T0) and thawed Hanwoo beef fed mugwort (T1) were analyzed after freezing at $-20^{\circ}C$ for 12 months. Also the effect of feeding mugwort was investigated by comparing physicochemical and palatability changes by chilling the beef after thawing. There were no significant differences in general components of T0 and T1 Hanwoo beef. Among the minerals, there were no significant differences in the contents of Ca, P, K, Mg and Zn, however Na content in T0 and Fe content in T1 were significantly higher. The total amino acid did not show a significant difference but leucine was found to be higher in T0 than T1, and glycine, cysteine, histidine and arginine were higher in T1 than T0. Regarding fatty acids, stearic acid was higher in T0, while palmitoleic acid, oleic acid and total unsaturated fatty acid was significantly higher in T1. The hardness value became lower by chilling after thawing regardless mugwort consumption, and therefore the tenderness improved. The freshness, fat rancidity and antioxidant activity of thawed Hanwoo beef changed more slowly for T1 than T0, which indicates that feeding mugwort had a positive effect. There were no significant differences in taste, juiciness, tenderness or and palatability of the cooked beef between T0 and T1 for both 0 days and 3 days after thawing. However, the aroma of cooked T1 beef was significantly superior.

  • Nutritional composition, contents of phenolic compounds, and antioxidative activities of small black soybean were investigated. Proximate composition of the soybean was crude fat, crude protein, carbohydrate, and crude ash at 15.9, 34.7, 38.5, and 3.7%, respectively. Potassium was the predominant mineral, followed by phosphorus, calcium, and magnesium. Glucose and galactose were the major sugars. Twelve different kinds of fatty acids were identified in whole soybean, dehulled soybean, and soybean hull. The 75% methanol and ethyl acetate extract fractions from the soybean hull contained total phenolic compounds at 4.64 and 13.53 g/100 g, respectively. The methanol extract of soybean hull showed strongest antioxidative activity among samples tested. Ethyl acetate fraction of the soybean hull exhibited DPPH radical scavenging activity at level similar to those of ${\alpha}-tocopherol$ and BHT. Phenolic compounds were the major biological components in the soybean hull. These results suggest that small black soybean can be used as a new material for functional food.

  • This study was carried out to investigate the growth characteristics, yield and chemical compositions of corn hybrids for silage according to ridging times in the paddy field cultivation. The experimental design was arranged in a randomized block design with five treatments and three replication. The ridging times of five treatments were untreated (C), 7 leaves (T1: 31 days), 8 leaves (T2: 37 days), 9 leaves (T3: 42 days) and 10 leaves stage (T4: 48 days after sowing) of silage corn. The ridging treatments (T1, T2, T3, T4) were higher (p<0.01) dry matter yield and TDN yield than the unridging treatment (C). However, there were no significant differences among T1, T2, T3 and T4 treatments. The Crude protein content of unridging treatment was decreased (p<0.01), while NDF content was increased (p<0.01) compared to ridging treatments. The contents of mineral and amino acid in ridging treatments were higher than unridging treatment (p<0.05, p<0.01). In particular, mineral and amino acid contents were the highest in T4 and T1, respectively (p<0.01). Based on the above results, ridging work is to be increased the yield quantity and nutritional value of silage corn. And the best result was obtained in T4 treatment of ridging treatments.

  • The extracts of four species of ectomycorrhizal mushrooms-Cantharellus cinnabarinus (OK1247), Lactarius parallelus (OK1264), Tricholoma matsutake (OK1282), and Ramaria botrytis (OK1283)-were prepared to determine their antioxidant activities and nutritional properties. R. botrytis extract displayed the highest 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity (33.8%), ferric reducing antioxidant power (0.38), reducing power (0.35), total polyphenol (13.83 mg gallic acid equivalent/g), and flavonoid contents (2.56 mg quercetin equivalent/g). L. parallelus extract displayed the highest nitrite scavenging activity. Analysis of amino acid contents revealed that C. cinnabarinus extract had the highest total amino acid (1,046.1 mg/kg) and essential amino acid (404.9 mg/kg) contents, while R. botrytis extract had the lowest total amino acid (708.3 mg/kg) and essential amino acid (247.3 mg/kg) contents. Among the amino acid components detected in the four ectomycorrhizal mushrooms, cysteine was the most abundant, accounting for 14.3~20.7%, followed by phenylalanine, which accounted for 9.5~13.4% of all amino acids. In summary, the antioxidant activities were the highest in R. botrytis extract, and the amino acid content was the highest in C. cinnabarinus extract, among the four ectomycorrhizal mushrooms.

  • Recently it has been reported that vitamin A and retinol binding proteins (RBPs) in blood and urine were changed in the condition of diabetes mellitus or hyperlipidemia. Fruits and vegetables are recommended to consume for the people suffered from these chronic degenerative diseases. The main components of fruits and vegetables are dietary fibers, for example cellulose and pectin, of which function to affect the absorption and excretion of dietary fat and fat-soluble substances. This study was conducted to investigate the effect of dietary fibers on RBPs mRNA expression in liver, small intestine and serum of rat fed high fat diet during 4 weeks. Sprague-Dawley rats, weighing 121g on average, were divided into four groups; (Control; $17\%$ fat & cellulose supplement diet, HF0: $25\%$ fat & fiber free diet, B:.Uc: $25\%$ fat & cellulose supplement diet and HF0: $25\%$ fat & pectin supplement diet) . The rats fed high fat diet groups (HF0, HFC, HFP) tended to consume the food less than the control group, but FER of HF0 groups was significantly higher than the control (p < 0.05) . The weight of adrenal gland in high fat diet groups (HF0, HFC, HFP) was significantly less than the control. Total lipid in feces daily excreted and in liver did not show any significant differences among the groups. Total cholesterol in HFP group was significantly different from that of HFC group. Serum total cholesterol and triglyceride in other group tended to lower than other groups and HDL cholesterol higher. Consequently, AI (atherogenic index) was the lowest in HFP group. Vit A contents in feces daily excreted tended to lower in high fat diet groups (HF0, HFP) compared to the control group. That content in adrenal gland was the lowest in HF0 group, but not in liver. In HFP group were down-regulated cRBPI mRNA in liver and cRBPII mRNA in small intestine and up-regulated RBP and transthyretin expression in serum compared to the other groups. In conclusion, dietary fibers, especially pectin, in high fat diet might down-regulate the expression of CRBP I, CRBP II mRNA in liver and small intestine, but increase the secretion of RBP into serum and therefore inhance the bioavailability of Vit A through the body. • Changes in proximate composition and meat weight of oysters cultured in shallow-water at Bukman bay of Tongyeong in Korea with Korean and Japanese spats were investigated. Protein content (dry basis) was rich in August and September, accounting for $70\~72\%$ in the oyster (Korean oyster) cultured with Korean spat and $75\~76\%$ in the oyster (Japanese oyster) cultured with Japanese spat. On the contrary to protein content, carbohydrate contents (dry basis) in the both oysters were poor in the both months, There was a negative correlation (r=-0.94, p<0.01) between protein and carbohydrate content during growing of the bath spats. Total lipid (TL) content was the poorest in August, which is known as spawning season, accounting for $1.4\~1.5\%$ in the both oysters. In addition, the korean oyster also showed the lowest level or TL content in october. Meat weights or the Korean and japanese oysterswere 4.2$\~$4.8 g/specimen and 7.5$\~$8.3 g/specimen, respectively, in the harvest season from November to December. Meat weight increased exponentially with TL content, $y=0,2081e^{1.5696x}$ (r=0.8856, p<0.001). These nutritional components per specimen were contained about two times more in the Japanese oyster than in the Korean one in the harvest period.
