어린이집 교사들의 영양지식과 영양교육에 대한 인식 조사연구 (A Survey of Teachers' Recognition on Nutrition Knowledge and Nutrition Education at Day-care Centers)

  • This study was aimed at knowing the recognition of teachers' nutrition knowledge and nutrition education at day-care centers in Seong-nam. Teachers were all female, most of whom were in the 20, and their careers were less than 3 years. And $76.2\%$ of the teachers graduated from high school and junior college. The score of the nutrition knowledge was average $14.3\pm2.2$ (out of 20). It shows that they are lack of general information of nutrition. As the teachers had higher education, they scored higher nutrition knowledge levels (p < 0.01). It also says that there was meaningful interrelationship between the nutrition knowledge and the number of children they had (p < 0.05). $93\%$ of the teachers said that nutrition education should be given when children are three years old, at least and most of the teachers thought that nutrition education is necessary and should be taught in a separate course. $50.4\%$ of the teachers thought that nutrition education for early childhood should be taught by a nutritionist, but $35.2\%$ of them thought that the teachers themselves should be in charge of it. About $60\%$ of the teachers thought that 'Cooking Activity for Early Childhood' course should be established and it is desirable that the nutrition education should be in the area of cooking activity for childhood at day-care centers. The teachers thought that dietary habit is the most important subject in nutrition education and they got more information from the internet rather than in the class related to nutrition. 한국 성인의 대사증후군 예방을 위한 건강한식 교육프로그램 개발 (Development of healthy Han-sik nutrition education program featuring consumption of Korean foods for prevention of metabolic syndrome in Korean adults)

  • Metabolic syndrome is a cluster of metabolic risk factors associated with increased risk of cardiovascular diseases. Recently, the prevalence of metabolic syndrome has increased in Korea. The aim of this study was to develop a Healthy Han-sik Nutrition Education Program (HHNEP) based on commonly recognized Korean foods in order to decrease metabolic syndrome risks. The target population of the HHNEP is adults with metabolic risk factors. The initial version of the HHNEP was developed based on a review of literature and various dietary guidelines by expert committees as well as the results of a survey on the perception of common Korean dishes and foods as Han-sik. The focus group discussion conducted of nine participants from the target population. After minor modification, the final version was developed. The contents included five sections: 1) aims, 2) introduction of Korean Food Guidance System, 3) cholesterol contents in food, 4) menu planning method using Han-sik, and 5) examples of daily Han-sik menu. The Han-sik list was selected based on the results from a Han-sik perception answered by 35 Korean adults aged 30-60 years using 517 frequently consumed Korean foods from the fourth Korea National Health and Nutrition Examination Survey. The nutrition education program was developed based on scientific evidence for the prevention of metabolic syndrome and focuses on tailoring education to an individual's dietary problems. Educational method was developed by a group of expert committees based in planned behavior theory and related research results. The education method consisted of assessment of current diet, four face-to-face nutrition education sessions over 8 weeks, and evaluation after 8 and 16 weeks. Initial version of nutrition education materials and methods was tested for feasibility by a select group of nine Korean healthy adults. Successful implementation of the program would include application by nutritional professionals at the health promotion center of the hospitals, public health center, and work sites. Intervention studies are needed to evaluate the feasibility and effectiveness of this program before large-scale applications.

대중매체 식품영양정보에 대한 성인 여성의 요구도 조사 (A Survey for Needs and Preference of Food and Nutrition information on Mass Media for Korean Female Adults)

  • Objectives: This study was conducted to examine the preferences and needs of typical Korean females adults for food and nutrition information provided by the mass media. Methods: A total of 343 females (77 in their 20s, 85 in their 30s, 88 in their 40s and 93 in their 50s) residing in the Seoul/Gyeonggido area was surveyed on general characteristics, main sources of food and nutrition information and needs for sources and contents of nutrition information. Results: The survey showed that typical Korean females obtained knowledge of food and nutrition mainly through the Internet (30.4%) and broadcasting (29.0%). Typical Korean females were interested in 'dietary management for weight control' (21.9%), 'the prevention and treatment of disease' (20.0%), 'food safety' (16.8%), 'proper dietary habits' (14.6%), 'cookery' (11.8%), 'functional foods' (9.6%), 'restaurant details' (3.5%) and 'life-cycle-specific dietary guideline' (1.6%). Needs for food and nutrition program forms on TV were 'educational programs' (34.3%), 'documentaries' (20.8), 'expert lecture-style' (13.0%), 'entertainment programs' (11.9%), 'expert conversation' (11.4%), 'news-style' (4.6%) and 'public campaign advertisements' (4.0%). On the Internet, 38.6% of the respondents preferred to get information provided by food and nutrition-related institutions (38.6%) while 26.1% preferred webtoons for nutritional information. The favored forms in mobile applications were 'monitoring their diets' (29.5%), 'data-based texts information' (21.4%), 'experts feedback' (20.6%), 'communities' (15.1%) and 'games' (13.1%). The rates of the preference to obtain information from experts such as nutritionists and dietitians and doctorsor dietitian turned reporters increased markedly with older ages. Conclusions: Since the mass media is a main source of food and nutrition information for the general public, the effectiveness and accuracy of the information provided should be enhanced by taking the needs of the public into account. The quality of information should be improved by involving more nutrition experts.

한국 청소년의 영양표시 이용에 따른 식생활 및 건강행태: 2016-2018년 국민건강영양조사 자료를 활용하여 (The Study of Dietary Habits and Health Behaviors according to Nutrition Label Utilization in Korean Adolescents: Based on the 2016-2018 Korea National Health and Nutrition Examination Survey)

  • 본 연구는 국민건강영양조사 제 7기 2016년~2018년 자료를 활용하여, 만 12~18세 남녀 청소년 1,068을 대상으로 영양표시 이용여부에 따른 식습관 및 영양소 섭취와 건강행태 등을 비교하여 영양표시 이용과 올바른 식생활 관리를 위한 기초자료로 제공하고자 하였다. 본 연구결과 전체적으로 영양표시를 인지하는 비율은 91.9%였고, 이들 중 영양표시를 이용하는 청소년은 27.9%로 인지율에 비해 이용률이 낮았다. 아침결식률과 외식빈도, 음주, 흡연, 주관적 건강상태의 경우는 영양표시 이용군과 비이용군별 간에 유의적인 차이는 보이지 않았다. 영양소 섭취량의 경우 무기질인 칼슘, 인, 칼륨 섭취량은 이용군이 비이용군의 섭취량 보다 더 높게 나타났다(p<0.01). 영양표시 이용군에게서 섭취 영양소 중 단백질(p<0.05), 칼슘(p<0.01), 인(p<0.01), 칼륨(p<0.01)의 섭취기준 비율이 비이용군에 비해 높게 나타났다. EQ-5D index로 분석한 건강 관련 삶의 질 점수는 영양표시 이용군은 0.97점, 비이용군은 0.96점으로 영양표시 이용군의 삶의 질 점수가 비이용군 보다 더 높았다(p<0.001). 이상의 연구결과 청소년들의 식생활 개선과 영양표시제 관련 영양교육이 매우 필요하며, 청소년들의 합리적인 식품선택을 도와주고 영양표시 활용도를 높일 수 있는 체계적인 영양 교육이 이루어져야 한다. 따라서 본 연구는 청소년의 올바른 영양표시 이용과 식생활 관리를 위한 영양교육의 기초자료를 마련하는데 유용한 정보로 활용 될 수 있을 것으로 기대된다.

Comparison of total energy intakes estimated by 24-hour diet recall with total energy expenditure measured by the doubly labeled water method in adults

  • BACKGROUND/OBJECTIVES: The doubly labeled water (DLW) method is the gold standard for estimating total energy expenditure (TEE) and is also useful for verifying the validities of dietary evaluation tools. In this study, we compared the accuracy of total energy intakes (TEI) estimated by the 24-h diet recall method with TEE obtained using the doubly labeled water method. SUBJECTS/METHODS: This study involved 71 subjects aged 20-49 yrs. Over a 14-day period, three 24-h diet recalls per subject (2 weekdays and 1 weekend day) were used to estimate energy intakes, while TEE was measured using the DLW method. The paired t-test was used to determine the significance of differences between TEI and TEE results, and the accuracy of the 24-h recall method was determined by accuracy predictions percentage, root mean square error, and bias. RESULTS: Average study subject age was 33.4 ± 8.6 yrs. The association between TEI and TEE was positive and significant (r = 0.463, P < 0.001), and the difference between TEI (2,084.3 ± 684.2 kcal/day) and TEE (2,401.7 ± 480.3 kcal/day) was also significant (P < 0.001). In all study subjects, mean TEI was 12.0% (307.5 ± 629.3 kcal/day) less than mean TEE, and 12.2% (349.4 ± 632.5 kcal/day) less in men and 11.8% (266.7 ± 632.5 kcal/day) less in women. Rates of TEI underprediction for all study subjects, men, and women, were 60.5%, 51.4%, and 66.7%, respectively. CONCLUSIONS: This study shows that 24-h diet recall underreports energy intakes. More research is needed to corroborate our findings and evaluate the accuracy of 24-h recall with respect to additional demographics.

Developing educational videos to inform rightly about school foodservice from kindergarten to high school: a case study

  • Objectives: Since the enactment of the School Nutrition Act in 1981, school lunch programs in South Korea have grown quantitatively and qualitatively with a current student participation rate of 99.8%. Nonetheless, educational materials are needed to reduce misunderstanding and ignorance about school lunch programs. This study aimed to develop 3 educational videos that help students of various ages (kindergarteners/lower-grade elementary, upper-grade elementary, and secondary school, respectively), understand the school lunch program. Methods: A scenario was created, was made, and the opinions on the scenario from experts in foodservice sectors were collected. A survey was conducted to students and parents to determine topics they wanted to know about school foodservice. The final videos were produced using this information and the expert opinions. The data were analyzed using SPSS 27.0 for Mac (IBM Corp., Armonk, NY, USA); a P-value of < 0.05 was considered significant. Results: Three videos on school foodservice were developed for various age levels of students: kindergarten/lower-grade elementary, upper-grade elementary, and secondary school. Additionally, English subtitles were included for the multicultural student population. These videos, each lasting about 7 minutes, cover topics such as nutrition, hygiene, and the cultural significance of the school lunch program. The survey results showed that parents and students wanted to know the following topics about the school lunch program: "nutritionally balanced diet" (11.9%), "purchasing safe food ingredients" (10.9%), and "healthy eating habits" (9.9%). Conclusions: The developed videos will serve as valuable educational resources on school foodservice, foster a deeper understanding of the school lunch program in parents and students, and potentially address their inquiries regarding production processes, nutrition, hygiene, cultural heritage, and health.

식생활교육을 위한 대구시 중학생의 교육 요구도 조사 (Analysis of Educational Demands for Diet Education of Middle School Students in Daegu)

  • The purpose of this study is to provide fundamental data for development of textbooks and guides on diet education for middle school students. A survey was conducted for 250 middle school students in Daegu, who have completed the nutrition courses. The data were collected from the results of a self-administered questionnaire. The results obtained by this research are as follows: 1) For the education for dietary habit and attitude at school, more than half of students answered 'not being done'(55.1%), and 'needed'(41.1%). 2) When educating food and nutrition at school, both boys and girls preferred 'classes using media such as movies and slides'. 3) The boys wanted to learn 'proper dining etiquettes'(23.5%), and girls wanted to learn 'weight management'(43.8%) for further courses of food and nutrition(p < .001) in the educational demand analysis.

부산지역 대학생들의 식생활 행동에 대한 조사연구 (A Study on Dietary Behaviors of College Students in Pusan)

  • The purpose of this study is to investigate the socio-economics status and the dietary behaviors of college students in Pusan. This survey was carried out through questionnaries and the subjects were 244 men and 229 women students of 7 universities in Pusan. The results of this study can be summarized as follow: 1. 54.1% of men and 43.5% of women were having breakfast regularly, while 43.9% of men and 30.1% of women were having dinner regularly. 2. Mean score of the eating behavior was 3.29 in men and 3.21 in women, and of the concern on food and nutrition was 8.46 in men and 9.98 in women. 3. Eating behavior had significantly high relationship with concern on food and nutrition but had a little relation with valuation on food and nutrition. 4. Variation in valuation and concern on food and nutrition or in eating behavior were negatively related with smoking and drinking. A considerable correlationship between smoking and drinking was found.

수원 시내 일부 여성의 영아영양법에 관한 실태 조사 (A Study on the Infant Feeding Method of Mothers in Suwon City)

  • This survey was conduced to investigate the feeding methods of mothers in Suwon, Kyungkido. Incidence of breast feeding was 29.9eA of the Interviewed mothers, which showed lower percentages than those of previous surveys. The jai or factors influencing the method of infant feeding were generally depended on mother rather than infant. The mothers who had a higher income and a higher academic career tended to pre(or the bottle feeding to the other. md first birth order made them select the breast feeding rather than the other. Generally mothers knew the information about infant nutrition very well (91.0%), but their knowledge actually did not work. The sources of mother's Information on the Infant nutrition were the books of rearing infants and magazine. But there were some discrepancies between the actual and needed source of information : i.e. mothers wanted to acquire their information from mass communication.

Korean adolescents' perceptions of nutrition and health towards fast foods in Busan area

  • Adolescents in Busan area were asked in a survey about their perception and attitudes towards fast food. Most respondents answered that they consume fast food once a month because it is fast, easily accessible and tasty. Although they perceived fast food as unhealthy and less nutritious, they were less aware of its effect on their health and nutritional status. The more knowledgeable respondents were about nutrition and health the less likely they were to choose fast food over other meals. However, respondents who had little or no knowledge about the nutritional factors of fast food accounted for 43.1%. As to their source of dietary information, students relied on themselves(31.0%), parents(20.5%) and mends(19.9%). The medium through which students got the most nutrition and health information was television(66.8%), followed by the Internet(36.7%) and magazines(29.7%). This study will enable educators to plan more effective strategies for improving the dietary knowledge of the adolescent population.
