  • To determine the relationships between soybean food intake, dietary isoflavone intake, and osteoporosis incidence, questionnaire surveys, bone mineral density measurements, and dietary surveys by food record were performed with 19 postmenopausal women ($57.6{\pm}7.3$ yrs of age) in Daejeon city. The subjects were divided into two groups: an 'osteoporosis group' (OG, n=10) and a 'normal group' (NG, n=9). Mean age, height, and body weight were similar between the two groups but BMI was higher in OG than in NG. Mean age at menarche was not different between the two groups. However, mean number of childbirths was greater in OG than in NG and mean total period of lactation was shorter in OG. Mean exercise time per week was similar between the two groups, and mean time of sunlight exposure tended to be shorter in OG. Mean daily intake of calcium was lower in OG whereas sodium intake was higher in OG. Mean daily intakes of total soybean food (OG: $203.8{\pm}84.6\;g/d$, NG: $285.0{\pm}146.3\;g/d$) and total dietary isoflavone (OG: $29.1{\pm}14.3\;mg/d$, NG: $38.3{\pm}23.1\;mg/d$) were not different between the two groups. However, greater intakes of soybean food and dietary isoflavone were associated with higher bone mineral density, respectively. The above results indicate that osteoporosis incidence tends to be influenced by BMI, maternal factors, dietary nutrient intakes, soybean food intakes, and dietary isoflavone intakes in postmenopausal women; although no significant differences in soybean food and dietary isoflavone intake were found between the two groups. This tendency implies that greater intakes of soybean food and dietary isoflavone lead to lower incidence of osteoporosis in postmenopausal women.

  • This study was conducted using the National Health and Nutrition Survey data for 2010-2014 to investigate the relationship between pregnancy-related health factors and periodontitis in adult women. Dependent variable was periodontitis, and independent variables, pregnancy-related health factors(duration of lactation and number of pregnancies) were analyzed. Socioeconomic variables and health-related behaviors were corrected by confounding variables. The number of pregnancies and periodontitis were highly correlated after adjusting for various confounding factors [odds ratio for women with 2-3 pregnancies: 2.66 (95% confidence interval(CI): 1.56-4.54); The odds ratio for women with four or more pregnancies 3.02 (95% CI: 1.70-5.36). In conclusion, periodontitis is closely related to the number of pregnancies and this will be used as basic data for development of oral health education programs for women and pregnant women.

  • It has been more than three decades since the first assay assessing circulating 25 (OH)D in human subjects was performed That publication as well as several that followed it defined 'normal' nutritional vitamin D status in human populations. Recently, the wisdom by which 'normal' circulating 25 (OH)D levels in human subjects were assigned in the past has come under question. It appears that sampling human subjects, who appear to be free from disease, and assessing 'normal' circulating 25 (OH)D levels by plotting a Gaussian distribution is grossly inaccurate. There are many reasons why this method is inaccurate, including race, lifestyle habits, sunscreen usage, age, latitude, and inappropriately low dietary recommendations for vitamin D. For instance, a 400 IU/day. AI for vitamin D is insignificant when one considers that a 10-15 minute whole body exposure to peak summer sun will generate and release up to 20,000 IU vitamin $D_3$ into the circulation. Recent studies, which orally administered up to 10,000 IU/day vitamin $D_3$ to human subjects for several months, have successfully elevated circulating 25 (OH)D levels to those observed in individuals from sun-rich environments. Further, we are now able to accurately assess sufficient circulating 25 (OH)D levels utilizing specific biomarkers instead of guessing what an adequate level is. These biomarkers include intact parathyroid hormone (PTH), calcium absorption, bone mineral density (BMD), insulin resistance and pancreatic beta cell function. Using the data from these biomarkers, vitamin D deficiency should be defined as circulating levels of 25 (OH)D$\leq$30 ng/mL. In certain cases, such as pregnancy and lactation, significantly higher circulating 25 (OH)D levels would almost certainly be beneficial to both the mother and recipient fetus/infant.

  • Twenty lactating crossbred cows yielding 10 to 15 litres of milk daily during mid lactation were selected and divided into four groups of five animals to assess the effect of feeding calcium soaps of palm oil fatty acids (bypass fat) on milk yield, milk composition and nutrient utilization in lactating crossbred cows. The animals in groups 1 (control), 2, 3 and 4 were fed concentrate mixture containing 0 (no bypass fat), 2, 4 and 6% bypass fat, respectively. The average daily dry matter consumption in the various groups ranged from 13.1 to 13.6 kg and showed no significant difference among treatment groups. There was no significant difference among different groups in digestibility of DM, OM, CP and CF, however, ether extract digestibility in cows of groups 2 and 4 was significantly (p<0.05) higher than the control group. The average milk yields of the cows in group 3 (4% bypass fat) showed a significantly (p<0.05) higher value than cows of groups 1 and 2. Similarly, a significant (p<0.05) increase in fat yield, 4% FCM yield and SNF yield was observed for the cows in group 3 (4% bypass fat). The milk composition in terms of total solids, fat, lactose, protein, solids-not-fat and ash percentage showed a varying response and bypass fat feeding did not have any effect on milk composition of cows in different groups. The gross and net energetic efficiency of milk production ranged from 23.6 to 27.5% and 37.1 to 44.4%, respectively, and showed no significant difference among different treatment groups. The gross and net efficiency of nitrogen utilization for milk production ranged from 24.0 to 28.7% and 37.2 to 43.5%, respectively, and no significant difference was noted among different treatment groups. The supplementation with calcium salts of palm oil fatty acid reduced the proportion of caproic, caprylic and capric acids and significantly (p<0.01) increased the concentration of palmitic, oleic, stearic, linoleic and linolenic acids in milk fat with increase in level of bypass fat supplementation. It was concluded that incorporation of calcium salts of palm oil fatty acids at a 4% level in the concentrate mixture of lactating crossbred cows improved the milk production and milk quality in terms of polyunsaturated fatty acids without affecting the digestibility of nutrients.

  • Background: The aim of this study was to investigate demographic features, dietary habits, and some possible risk factors for being susceptible to breast cancer in Iranian women. Materials and Methods: A study of dietary habits and breast cancer was conducted among 53 Iranian women with histological confirmed disease and 40 matched controls. A dietary habits questionnaire was used to evaluate the pattern of selected food intakes. The risk of cancer was analyzed after adjustment for confounding factors. Age, weight, body mass index (BMI), waist circumference, educational status, parity, lactation, marital status, menopause, history of estrogen therapy, and family history of breast disease or cancer were assessed among participants. Special attention was given to the relationship between consumption of high fat meat, milk, yogurt and cheese as well use of frying oils for frying foods, use of olive/liquid oils for cooking, removing fat from meat and poultry, removing chicken skin and not use of mayonnaise as salad dressing and the risk of breast cancer. Moreover, salad, vegetable and fruit consumption, and eating outdoors owere investigated. Results: Our results revealed significant lower education and higher BMI and waist circumference levels in patients with breast cancer. There was significantly increased breast cancer risk in overweight women in comparison with normal weight (OR=2.91, 95%CI 1.24 to 6.82). High intake of fat dairy products including milk and cheese was found to be a statistically significant factor for increasing breast cancer risk in models adjusting for age, BMI and education. Use of olive/liquid oils for cooking and avoidance of mayonnaise as salad dressing are related to lower risk of breast cancer. The frequency of vegetable and fruit consumption was significantly lower in patients with breast cancer compared to healthy women. Conclusions: Dietary habits might be risk factors for breast cancer among Iranian women. Adoption of a prudent diet could be an appropriate strategy for preventing breast cancer.

  • The main objectives of the present study were to understand the knowledge and practice of breastfeeding mothers about the feeding and supplementary food and to analyze the factors related to it. The data for the present study collected from July 9 to July 31, 1984 for 302 mothers in Seoul. 1. The Knowledge of Breastfeeding Mothers about the Fee4ing and Supplementary Food (1) In the knowledge of mothers on the appropriate feeding pattern before 6 month, 69.3% of total women believed that breast-fed babies are healthier. There was a singificant difference in the type of feeding in order to education level, socio-economic state, and. mass-media exposure. (2) In the knowledge of mothers on an appropriate duration of lactation, the mean duration of breastfeeding is 8. 1 month. The duration of breastfeeding gradually decreases in order of education level, socio-economic state, mass-media exposure, and employment status. (3) In the knowledge of mothers on an appropriate time of introduction of supplementary food, the mean time of introduction of supplementary food is 4. 7 month. It is gradually decrease in order of education level, socioeconomic state, mass-media exposure, and employment state. 2. The Practice of Breastfeeding Mothers about the Feeding and Supplementary Food (1) The practice of mothers on infant-feeding before 6 month and that education level, socio-economic state and mass media exposure are the higher, the rate of breast feeding is the less. (2) The mean duration of breastfeeding is 9 month. It is 1 month longer the knowledge of mothers on an appropriate feeding pattern before 6 month. (3) The time of introduction of supplementary food is average 4.75 month. It is similar to the knowledge of mothers on an appropriate time about introduction of supplementary food. The result of this study indicate that the knowledge and practice of breast feeding is maintained comparatively high in low educated group, whereas it is noticeably decreasing among the high educated group. High educated group believed that the short duration of breastfeeding better than long, and they practiced breastfeeding so short period. And high educated group also thought early introduction of supplementary food is good for the babies health. Consequently, in this study, for the most part, elite group is found to have rather wrong opinions and practice about infant nutrition. Therefore the accurate information of infant nutrition is must be encouraged to mothers.

  • Weanling female Sprague Dawley rats were fed d diets containing 22mg pyridoxine. BCI/kg diet (control diet) and l.2mg pyridoxine. BCI/kg diet (deficient diet). One control group and one defic dent group were fed their diet throughout growth, g gestation and lactation. After the pups were born and weaned, the deficient group was divided into two groups. One switched to control diet(suppleI mented group) and the other continued the same d deficient diet( deficient group) until 10 week -old. The liver mitochondrial and cytosolic asparate a aminotransferase activity and pyridoxal phosphate content were determined in offspring rats. The aspartate aminotransferase activities in both liver mito$\phi$ondrial and cytosolic fractions of dend cient group were significantly lower than those of controls, but there were no significant differences between two groups after addition of 1O^{-4}M pyrid do뼈I phosphate to the medium. By pyridoxine s supplementation after weaning, the reduced aspara tate aminotnmsferase activities were only partialy I restored to control levels. The pyridoxal phosphat te content of deficient group in Iiver mitochondrial and cytosoIic fractions were alo significantly different from those of controls, but readily restored by dietary supplementation. These results suggest that there is a quantitative and a qualitative changes of aspartate amino transf ferase and pyridoxal phosphate in liver mitochond drial and cytosolic fraction by long-term pyridox xine deficiency and these reductions can partially recovered by dietary pyridoxine supplementation after weaning.

  • The objective of this study was to investigate the influence of three types of protein source in a basal diet during the prenatal and lactating periods on the cellular growth and development of organs in rate. Twenty four pregnant Sprague-Dawley rats weighing 187.7${\pm}$18.5 g were fed ad libitum diets containing casein, soy protein, or corn gluten. The weight of organ and the contents of DAN, RNA, and protein of organs in pups were determined at 0, 3, 7, 14, and 21 days after the birth. Dietary intake of rats during trimester of pregnancy and lactation were significantly higher in the rats fed case in containing diet than those of rats fed the corn gluten diet. Body weight of the progeny fed casein diet at birth and after 7 days were significantly higher than those of rats fed the corn gluten diet. The weight of brain, liver, and kidney of pups which fed corn gluten diet were significantly lower than those fed the casein diet. DNA contents in the brain of pups fed the casein and the soy protein were slightly higher than those fed the corn gluten diet. RNA and protein contents of the brain, and DNA, RNA and protein contents of the liver of the corn gluten treated group were significantly lower than those of the others.

  • The change in fatty acid composition in brain tissue of the second generation rats(Sprague-Dawley strain) was studied using four different fat diets(Corn oil=CO, Soybean oil=SO, Perilla oil=PO, Fish oil=FO, 10% by Wt). The experimental diets were started from pregnancy in four different groups, each consisting of 9 rats. The seound generation rats were fed the same diet as their mothers. Animals were anesthetized with ether at 0, 3, 9 & 16 weeks of age. Whole brains were dissected out, brain tissues were, then, homogenized and lipids were extracted from brain tissues. The fatty acid compositions were measured after methylation by gas-liquid chromatography at 0, 3, 9 and 16 weeks of age of offspring. The changes in the relative concentrations of polyunsaturated fatty acids(PUFA) or more specifically docosahexaenoic acid(22 : 6, $\omega$3, DHA), the major $\omega$3 fatty acid component in rat brain at different age were similar to changes in the amount of DNA in brain tissue showing the maximum value during the lactation. The changes in saturated fatty acid(SFA) content showed a contrasting patten to those of PUFA, while monounsaturated fatty acid(MUFA) increased steadily throughout the experimental period. At birth, the relative concentrations of $\omega$3 series fatty acids the relative concentrations of PUFA, MUFA and SFA converged to very similar values respectively regardless of the dietary fatty acid compositions. In brain tissue, it is of value to note that while changes in relative concentrations of linoleic acid (18 : 2, $\omega$6, LA) and arachidonic acid(20 : 4, $\omega$6, AA) showed a precursor-product-like relationship, $\alpha$-linolenic acid(18 : 3, $\omega$3, $\alpha$-LnA) and DHA showed a different pattern. Even when the $\omega$3 fatty acid content in very low in maternal diet(CO), the second generation rat brain tissues appeared to secure DHA content, suggesting an essential role of this fatty acid in the brain. The fact that a large amount of $\alpha$-LnA in the maternal diet did not have a significant effect on the second generation rat brain $\alpha$-LnA content, indicated that DHA seemed essential component for the brain development in our experimental condition. In all groups, the relative content of $\alpha$-LnA in the brain tissues remained relatively constant throughout the experimental period at the very low level. The study of the specific concentrations and essential role(s) of DHA in each parts of brain tissue is needed in more details.
