  • Differences in food and nutrient intake among Korean adults based on different stress levels were investigated using information obtained from 7,370 adults who participated in the 1998 Korean National Health and Nutrition Survey. The twenty-four hour recall method was used for this dietary survey. Data pertaining to indivisual stress levels were collected by means of interviews as part of the National Health Behavior Survey. Following the analysis of variance, Duncan's Multiple Range Test was used to test the differences in food and nutrient intake among groups with different levels of stress. Eighty-three percent of the study subjects were reported to have a certain level of stress. Unlike the observations made in European and American studies, there were no significant differences observed in food and nutrient intake based on the stress levels among Korean adults of either sexes. These results may imply that even though stress was clustered with other health related behavior, the association between food intake and stress among Koreans was very weak. • This study was performed to investigate the degree of different stresses and to search the influence of food habit and nutrient intakes at stress situation in university students and secondary school teachers. The data was collected by questionnaire method and searched nutrient intakes by 24 hours recall. The subjects were 282 students and 152 high school teacher in Kyunggi do. Physical status was no difference with two groups. Energy intake of teachers was lower than that of students, but the intakes of vitamin A and C were high in teachers' group. The university students had more stress situation than teachers in almost kind of stresses except overload stress. Self-diagnosed dietary habits were better in the group of teacher. Especially smoke and alcohol drink behavior were correlated with nutrient intakes in male teachers and students. The quantity of nutrient of nutrient intakes was correlated with different kind of stress. The stress of life event was correlated with the intakes of carbohydrate, minerals, thiamin and riboflavin, and the deprivation was with iron and vitamin A in teachers' group. The intake of almost nutrients was correlated with the stress of noise in students' group. By the analysis of stepwise multiple regression, although the $R^2$ values were very low, vitamin C intake was influenced in the factor at the stress of life events($R^2$=0.025), self-efface($R^2$=0.030) and noise($R^2$=0.020), thiamin was at food induced stress ($R^2$=0.021) and vitamin A was at the stress of type A behavior($R^2$=0.022) and anxiety response($R^2$=0.014). Therefore, we could concluded that different kind of stresses were influenced in dietary behavior and nutrient intakes. More research would be needed at the aspects of health promotion in the stressful situation of modern society.

  • This research was designed to see the relationship among nutrient intake, food intake frequency and psychosocial stress in ordinary life. The subjects were 190 males and 263 females of university students in urban areas. There were significant correlations between nutrient intake and stress value, and between food intake frequency and stress value. In male, the more they consumed energy, protein and carbohydrate, the higher they had stress in several categories. But in female the results were reversed. Their stress values were lower when they have consumed protein source food frequently. And in general, stress values of female were higher than those of male. From these results, we conclude that nutrient intake tends to be decresed with increase stress in less stressful condition, but to be increased in more stressful condition.

  • A survey was carried out to investigate relation between life stress and nutrient intake status in female university students. It was represented that increasing trends of food intake under the stress condition and preference taste was sweet and hot in female students. The female students thought that food intake for coping with stress was produced negative results and they perceived the relation between stress and their health problem. There was a positive correlation between stress level and the change of food intake in female students statistically(p<0.01). They had higher stress in future prospect, academic problem, friend relationship, personality and family relationship. The average calorie intake of female university students was 1553.06kcal(77.65% of RDA). The intake of protein, calcium and iron were quite less than the RDA, whereas the intake of phosphate, vitamin A, $B_2$, C, niacin were more than the RDA. In changes of nutrient intake under the stress conditions, the higher stress group had decreased intake of calcium, iron, vitamin $B_1,\;B_2$, C than the lower stress group(p<0.05).

  • This study was performed to investigate the degree of different stresses in university students of outer region of Seoul and to search the influence of food habit and nutrient intakes in stress. The data was collected by questionnaire method for self-diagnosed different stresses, dietary habit, and physical status and 24 hours recall for nutrient intakes. The subjects were 282 students attended at the lecture Food and Health. Diet balance was no difference with gender but food intakes were more diverse in female. Nutrient intake of male students was lower in vitamin A and riboflavin, but that of female was low in vitamin A and iron. The university students outer region of Seoul had more stress situation in frustration, deprivation and self-efface than in the stress of the noise and Type-A behavioral stress. Total self-diagnosed dietary habit score was better in the group of no susceptive overload stress than that of the high susceptive group. Same trend of dietary behavior score was in the group of no noise and anxiety-response stress than that in the susceptive groups. The quantity of nutrient intakes was correlated with different kind of stress. Niacin intake was positively related with the stress from life-events, and food induced stress. Thiamin intake was positively related with food induced stress. But the intake of iron, calcium, niacin and riboflavin were negatively related with the stress of noise. Therefore, we could concluded that different kind of stresses were influenced in dietary behavior and vitamin-mineral nutrient intakes. • This study was undertaken to investigate the effects of oxidative stress on growth performance, nutrient digestibilities and activities of antioxidant enzymes of weanling pigs. In the experiment, 24 male $Landrance{\times}Yorkshire $weanling pigs were allotted to three groups of 8 animals each. Pigs were fed individually. According to a single factorial arrangement, pigs received diets with 5% of either fresh (group 1 and group 3) or oxidized fish oil (peroxide value was 786.50 meq $O_2/kg$ before inclusion in the diet, group 2). At the beginning of the experiment, pigs in group 3 received an intraperitoneal injection of diquat at 12 mg/kg of body weight. The trial lasted for 26 d. A metabolism test was carried out during the last 4 days of the second week. The results showed that feeding diets containing oxidized fish oil or injection with diquat depressed the growth performance and nutrient digestibilities of weanling pigs, decreased activities of antioxidant enzymes and increased concentration of malondialdehyde in plasma and liver. Intraperitoneal injection of diquat would induce more serious oxidative stress than oral intake of oxidized fish oil in the diet. In conclusion, administration of oxidized fish oil or diquat could induce oxidative stress in weanling pigs, and oxidative stress could depress growth performance and impact anti-oxidative ability of young pigs.

  • The purpose of this study was to estimate the relationships between dietary factors and the stress perception levels of College students. A survey was conducted in June, 2010, targeting 332 college students in Gwangju. General environmental factors, stress perception levels, dietary behaviors, and dietary action guide performance of the subjects were evaluated by questionnaire, and food intakes was determined by the 24-hour recall method. The results are summarized as follows.: The score of frequency experiencing was $45.1{\pm}16.9$ for male students, and $47.0{\pm}16.7$ for female students. The importance scores were $50.8{\pm}18.5$ for males, and $53.3{\pm}18.7$ for females. The total score for dietary action guide performance was $39.6{\pm}7.2$ for males and $40.6{\pm}6.5$ for females. Nutrient intake levels were evaluated based on dietary reference intake (DRI), revealing energy intakes to be 68.5% EER in males and 73.9% in females. The mean intakes of nutrient were 54.2% RI for calcium, 73.6% RI for riboflavin, and 51.2% RI for vitamin C but 203.6% AI for sodium, which indicates an imbalance in nutrient intake. Analysis of the correlations between stress perception levels and dietary factors, scholarship achievements, financial problems, future problems, value senses, and family relationships revealed significant correlations with general environment factors, dietary behaviors, Dietary action guide performance, and nutrient intakes (p<0.05). The higher the stress perception levels of the students, the higher the energy, coffee and alcohol intake, which predicts that appropriate stress control in college students will lead to better dietary habits. It is expected that the results above will be used as basic data for the development of proper nutrition education programs and stress control strategies.

  • Stress has been associated with poor eating behavior and diet quality. Yet, the relationship between nutrient and food intake and perceived stress in Korean female adults has not been validated. The purpose of this study is to identify the relationship between nutrient and food intake and perceived stress in Korean female adults. This is a cross-sectional study based on the 2014-2015 Korean National Health and Nutritional Examination Survey data. This study investigated 2,010 female adults age 19~64. In this study, according to subjects' perceived stress, we classified subjects into very low-stress recognition group (VLSRG) (n=211), low-stress recognition group (VSRG) (n=1,223), high-stress recognition group (HSRG) (n=488) and very high-stress recognition group (VHSRG) (n=88). Daily nutrients and food group intake, food groups consumed (Dietary Diversity Score, DDS) were analyzed using data from the 24-recall method. The VHSRG had a larger proportion of subjects that were younger (p<0.0001), single (p<0.0001) and smokers (p<0.0001) compared to the VLSRG. Energy and food intake did not differ between the four groups. Percentage of subjects with protein (p=0.0322), vitamin A (p=0.0364) and vitamin C (p=0.0115) intake lower than the EAR (estimated average requirement) in the VHSRG were significantly lowest in the four groups. Also, food intake percentage from fruits and seaweed groups in the VHSRG were lower than other groups (p=0.0034, p=0.0015). DDS in the VHSRG (3.87) was significantly lowest in the four groups (p=0.0022). Results suggest that perceived stress in Korean female adults may by significant to consider in nutritional education programs.
