Ensiling Techniques for Shrimp By-Products and their Nutritive Value for Pigs

  • An experiment was performed to evaluate different methods for preserving shrimp by-products and to determine their chemical composition. In the first experiment three ratios of shrimp by-product (SBP) to molasses (6:1, 4:1 and 3:1, wet weight), and to cassava root meal (3:1, 2:1 and 1:1, wet weight of shrimp by-product and air-dry weight of cassava root meal) were investigated. The pH of the SBP ensiled with molasses at a ratio of 3:1, and with cassava root meal at a ratio of 1:1, decreased during the first week to below 4.5 and remained low up to day 56 of ensiling, whereas the pH of the mixtures with higher ratios of SBP remained above 7.0, and the material deteriorated rapidly. The dry matter decreased initially in all treatments but then increased slightly from day 28 in the treatment where shrimp by-product was ensiled with cassava root meal at a ratio of 1:1. The crude protein (CP) and ammonia-N $(NH_3-N)$ contents of the preserved shrimp by-product material ensiled with molasses at a ratio of 3:1 increased significantly one week after ensiling. The CP content then remained constant, while the $NH_3-N$ concentration continued to increase up to 56 days after ensiling. When SBP was ensiled with cassava root meal at a ratio of 1:1 the CP content of the silage increased significantly up to 21 days after ensiling and then decreased back to the original level after 56 days, whereas $NH_3-N$ increased markedly up to 14 days and then remained fairly constant up to 56 days. However, the $NH_3-N$ content was significantly higher when SBP was ensiled with cassava root meal than with molasses. A balance experiment was carried out, arranged as a double Latin-square and including 6 F1 (Large White ${\times}$ Mong Cai) castrates fed randomly one of three diets based on cassava root meal, rice bran, and fish meal (FM) or shrimp by-product ensiled with molasses (SBEMO) or with cassava root meal (SBECA) as the main protein source. Apparent organic matter and CP digestibilities were significantly (p<0.001) higher for the fish meal diet than for the two shrimp by-product diets, although CP digestibility in SBEMO and SBECA was similar (p>0.05). N-retention was significantly higher for the fish meal diet than for the SBEMO diet, which in turn was significantly higher than for the SBECA diet (p<0.01). It can be concluded that shrimp by-product can be preserved by ensiling with molasses at a ratio of 3:1 or with cassava root meal at a ratio of 1:1. Nutrient digestibility and N-retention of diets based on these shrimp by-product silages were lower than for similar diets based on fish meal, probably due to their high chitin content and inferior amino acid balance.

충북지역 노인들의 약물복용 및 영양상태 - I. 질병 및 약물복용실태- (Drug Consumption and Nutritional Status of the Elderly in Chung-Buk Area - I. Diseades and Drug Consumption-)

  • Three hundred sixty-two(male 131, female 231) elderly aged over 65 in Chungb- uk area were interviewed to determine the disease states and drug usage patterns. The prebalence of disease was 78% and women reported more chronic diseases(83%) than men(71%). Elderly who live with spouse and have an occupation have a lower rate of disease. Average number of diseases of the elderly was $1.8\pm{1.1}$, and women$(2.1\pm{1.3)}$ have significantly higher average number of diseases than that of men$(1.4\pm{0.7)}$. Also the elderly in urban areas$(2.1\pm{1.4)}$ have significantly higher number of diseases than that of the elderly in rural areas$(1.6\pm{0.9)}$. Arthritis, hypertension, cardiovascular and gastric diseases were the most frequently listed chronic diseases in order for both men and women. Anemia and fracture of bone were relatively higher in women than in men. Particularly, the arthritis of the urban elderly have a rate of 1.5 times higher than that of the rural elderly. Fifty-two percent of the elderly were currently using drugs ; among drug users 71.2% used prescription drugs and 20.5% used nonprescription drugs. The average number taken per person was 2.1$\pm$1.4 and there was no sex or age difference. However, the elderly in rural areas $(2.7\pm{1.7)}$ consumed a significantly higher number of drugs than those in urban areas$(1.7\pm{0.7)}$. The average number of prescripti- on drugs taken was 2.0$\pm$1.4 while the average of nonprescription drugs taken was $(1.3\pm{0.6)}$. Analgesics and antihypertensive drugs were most commonly used. Vitamin and analgesics were the most frequently used self-prescribed drugs. It was noted that potential adverse drug interaction by concominant drug consumption for arthritis and antihypensive drug, abuse of digestants and antiacid without treatment of the underlying disease, and misuse of quick-acting bowel medications were problematic for the elderly. In addition drugs used for the elderly have some adverse effect on the digestive system. The types and composition of drugs used by the elderly were identified and presented. Medication compliance was poor and 13.5% reported adverse reactions such as edema, heartburn, nausea, and difficulty with eating. Seventeen percent of the elderly obtained drugs arranged by those other than medical staff. Also, even among those elderly who obtained drugs prescribed by a doctor, 69.1% of subjects had not receive instruction about potential adverse reactions. These results suggest that nutritional problems related to drug usage might exist and so dietitians, either individually or as members of health teams, need to have a better understanding of drug-nutrient interaction and closer supervision, and drug information/education service should therefore be provided to prevent or minimize adverse drug reaction in elderly users of medication.

12주 동안의 저열량식사와 행동수정요법이 비만여성의 체격지수와 생화학적 영양상태에 미치는 영향 (Effect of 12-week Low Calorie Diet and Behavior Modification on the Anthropomeric Indices and Biochemical Nutritional Status of Obese Woman)

  • This study was conducted to investigate the effect of a 3 week low calorie diet (LCD) and a 9 week of behavior modification (BM) program on the weight loss, mineral and vitamin status in 22 obese women. The subject were healthy, obese (PIBW> $120\%$) women aged 20 - 50 Yr and not taking any medications known to influence body composition, mineral or vitamin metabolism During the LCD program, subjects were provided commercial liquid formulas with 125 kcal per pack and were instructed to have a formula for replacement of one meal and at least one regular meal per day within the range of daily 800 - 1200 kcal intake. During the BM program the subjects weekly attended the group nutrition counseling session to encourage themselves to modify their eating behavior and spontaneously restrict their energy intakes. The BM program focused on stimulus control, control of portion sizes and modification of binge eating and other adverse habits. The initial mean energy intake of subjects was 2016.9 $\pm$ 129.8 kcal ($100.8\%$ of RDA) and dropped to 1276.5 $\pm$ 435.7 kcal at the end of a 3 week of LCD program and elevated to 1762 $\pm$ 329.3 kcal at the end of a 9 week of BM program. Carbohydrate, protein and fat intakes were significantly decreased at the end of the LCD but carbohydrate was the only macro nutrient that showed significant decrease (p < 0.05) at the end of the BM program compared to baseline. Calcium and iron intakes decreased significantly (p < 0.01, respectively) with no significant changes in other micronutrients at the end of the LCD. The mean weight of the subjects decreased from 73.8 $\pm$ 8.0 kg to 69.2 $\pm$ 7.7 kg with LCD and ended up with 67.7 $\pm$ 7.1 kg after 9 weeks of BM. The 3 weeks of LCD reduced most of the anthropometric indices such as BMI, PIBW, fat weight, wast-to-hip ratio and subscapular and suprailiac skinfold thickness. The 9 weeks of behavior modification showed slight change or maintenance of each anthropometric measurements. Weight loss and decreased WHR with the diet program induced significantly decreased systolic blood pressure. SGOT, SGPT and serum insulin levels with improved serum lipid profiles. Biochemical parameters related to iron status such as hemoglobin, hematocrit were significantly decreased (p < 0.01) at the end of the LCD. But their mean values were within normal range. The mean serum 25 (OH) vitamin $D_3$ level significantly increased after whole diet program. Serum folate level significantly decreased after 12 weeks of diet program. In conclusion 3 weeks of LCD brought 4.6 kg reduction in body weight without risk of iron, zinc or vitamin D deficiency and 9 weeks of the BM was effective to maintain nutritional status with slightly more weight reduction (1.5 kg). However calcium intake and serum folate should be monitored during the LCD and BM because of increased risk of deficiencies.

체질량지수에 따른 여대생의 식이섭취 실태와 혈액성상에 관한 연구 (Food Intake and Clinical Blood Indices of Female College Students by Body Mass Index)

  • This study was conducted to investigate the relationships among body composition, dietary intake, and clinical blood indices in college students by body mass index (BMI). Their body compositions were determined by means of BIA (Bioelectrical Impedance Analysis) method. Their dietary intake was determined using a 3-day record method and their hematological indices were determined by semi-automated microcell counter (Sysmex F-520). Their serum lipid levels were measured using biochemical analyzer (Spotchem). Subjects were classified as underweight, normal or over-weight groups according to their BMI. The subjects were 69 healthy college students aged 20 to 26 years. The average age, height, weight, and BMI was 21.3 years, 162.6 cm, 54.4 kg, and $20.6cm/m^2$, respectively. Their average consumption of energy was 1693 kcal, 84.7% of RDA and their mean ratio of carbohydrate: protein: fat were 54.5 : 16.4 : 29.0. There was no significant difference in nutrient intake among the groups except ${\beta}$-carotene and vitamin C. The ${\beta}$-carotene intake was significantly higher in the underweight group. Vitamin C intake was significantly higher in the overweight group. The mean intakes of Ca, Fe, Zn and folate of subjects were 74.8% to 83.2% of RDA. Especially, intakes of Ca, Fe, Zn and folate were lower in the abnormal weight groups. The overall mean values of the hematological indices in female college students were within the normal range and there was no significant difference among the groups. However, anemic subjects with hemoglobin (< 12 g/dl) and hematocrit (< 36 g/dl) accounted for about 11% of the subjects. The everall mean values of the serum lipid levels were within the normal range and there was no significant difference among the groups. But serum HDL-cholesterol level of the overweight group was lower than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the overweight group compared to the other groups. Based upon this study, it is necessary for college women to be educated regarding consuming more Ca, Fe, Zn, folate and less fat and cholesterol in order to have better health promotion.

해양세균(海洋細菌)을 이용(利用)한 EPA(eicosapentaenoic acid) 생성(生成)에 관한 연구(硏究) (Studies on the EPA(eicosapentaenioc acid) production by marine bacteria)

  • This project has been worked out for isolation of EPA-producing bacteria from marine source of sea water, sea sediment and intestinal contents eviscerated from some red-muscle fish such as mackerel, horse-mackerel and spike fish. The samples were precultured on the media of PPES-II glucose broth and then pure-cultured on Nutrient agar and P-Y-M glucose. Lipids extracted from those bacterial mass collected by centrifugation were analysed in terms of lipid class and fatty acid composition. The results are resumed as follows : 1. 112 strains from sea water and 76 strains from sea sediment were tested for their EPA producing capability, but both strains of (SA-67 and SA-91) from the former and four strains(SS-35, 37, 51 and 71) from the latter have been proved to produce EPA above the level of 2% of total fatty acids. The strains such as GS-11, 29, 31, HM-9, 29, B-18, 33, 107, YL-129, 156, 203, 77, 104 and 256 which were isolated from fish intestinal contents, have also produced EPA at higher level than 2% of total fatty acids. 2. Contents of total lipids extracted from the cultures of these strains grown at $25^{\circ}C$, range from 2.8% to 6.9% (on dry weight %), and they are mainly composed of polar lipids($40.9{\sim}52.9%$) such as phosphatidyl glycerol($^{+}cardiolipin$)(?) and phosphatidyl ethanolamine ($33.8{\sim}40.0%$), with smaller amount of free fatty acid ($11.2{\sim}20.2%$). 3. EPA was isolated from a mixture of fatty acid methyl esters obtained from the lipid of each strain by HPLC in silver-ion mode and was identified by GC-Mass spectrometry. 4. The strains of SW-91, GS-11, GS-29, HM-9, B-18 and YL-203 grown at $25^{\circ}C$ have a level of 5% EPA in their total fatty acids, and the GS-11 and HM-9 strains show a tendency of increase in the EPA level with an increase of growth temperature.

어육의 배소에 의한 지질산화에 관한 연구 I. 적색육어의 배소 및 재가열에 의한 지질의 산패 (Lipid Oxidation in Roasted Fish Meat 1. Rancidity in Roasted and/or Reheated Dark Muscled Fish)

  • 어류의 배소 산화에 대한 체계적인 기초자료를 얻기위해 적색육어인 고등어와 꽁치를 온도와 시간을 달리하여 배소한 것과 배소한 시료를 저온 $(5^{\circ}C{\pm}2^{\circ}C)$에서 저장한 후 가열 및 재가열 했을 때의 지질 산패도를 조사하였다. 총지질의 지방산 조성은 포화산의 경우 고등어가 $36.7\%$, 꽁치가 $28.4\%$ 였으며, monoene산은 $33.0\%$$20.2\%$였다. 또한 polyene산에서는 고등어가 $29.9\%$ 인 반면 꽁치는 $49.7\%$였다. 고등어와 꽁치의 불포화지방산대 포화지방산 (UFA/SFA)의 비는 1.7과 2.5였으며, 특히 고등어는 총 지질 함량이 $16.5\%$로 꽁치보다는 높지만 UFA/SFA는 오히려 낮은 지방산 조성상의 특징을 나타내었다. 과산화 물가는 고등어에 있어서는 배소, 가열 및 재가열 후 계속 증가하였으며, 최고값은 51meq/kg였다. 꽁치는 가열 후까지 증가하였으나, 재가열 후 감소하였다. 카르보닐가의 경우 적색육어인 고등어나 꽁치 모두 배소에 의해 생성된 카르보닐화합물이 가열, 재가열 후에도 계속 증가하였으며, TBA가는 배소 및 가열 후 증가하였으나 재가열 후 크게 감소하였다. 배소, 가열 및 재가열 후 유리지방산의 생성은 지속적으로 증가하는 경향이었으며 특히 불포화지방산의 비율이 높은 꽁치가 고등어보다 생성된 유리지방산이 많았다. 공역이중결합은 배소, 가열 및 재가열 후 지속적으로 증가하였으며 특히 $180^{\circ}C$에서 배소한 것이 $200^{\circ}C$$220^{\circ}C$에서 배소한 것보다 많이 생성되었다. 따라서 같은 적색육어라도 배소에 의한 산화의 경우 지질 함량보다는 고도불포화지방산이 더 큰 영향을 받았으며 또한 어피가 열을 차단하는 역할을 하여, 초기 산화를 억제하는 효과를 나타내었다.

어육의 배소에 의한 지질산화에 관한 연구 II. 백색육어의 배소 및 재가열에 의한 지질의 산패 (Lipid Oxidation in Roasted Fish Meat II. Rancidity in Roasted and/or Reheated White Musled Fish)

  • 수산물 열처리과정이나 식생활에서 행해지는 배소, 가열 및 재가열 등 연속적으로 또는 시차를 두고 되풀이되는 가열에 따른 지질산화 경향을 검토하기 위하여 백색육어인 각시가자미와 조기를 단계적으로 가열처리한 후 지질 산패도에 대해서 조사하였다. 총지질의 지방산 조성은 포화산의 경우 각시가자미가 $27.4\%$, 조기가 $33.4\%$였으며 monoene산은 $36.5\%$$38.7\%$였다. 또한 polyene산에서는 각시가자미가 $34.5\%$인 반면 조기는 $26.5\%$였다. 각시가자미와 조기의 불포화지방산대 포화지방산 (UFA/SFA)의 비는 2.6과 2.0이였으며, 총지질함량은 $1.4\%$$0.8\%$였다. 과산화물가는 각시가자미의 경우 배소 후 과산화물가가 증가하였으나, 가열 후부터 감소하였다. 조기의 경우는 배소에 의해 생성된 과산화물이 가열 후 분해되어 감소하였으나 재가열 후에는 다시 증가하였다. 따라서 초기산화의 진행은 총지질 함량과 polyene산의 조성비에 따라 다른 것을 알 수 있었다. TBA가는 배소 및 가열 후 증가하였으나 재가열 후 크게 감소하였다. 배소, 가열 및 재가열 후 유리지방산의 생성은 지속적으로 증가하는 경향이었으며 특히 불포화지방산의 비율이 높은 각시가자미가 조기보다 생성된 유리지방산이 많았다. 공역이중결합은 배소처리 후에는 온도에 따른 산화양상은 그다지 큰 차이가 없었으나 가열, 재가열처리에 의해 초기 산화가 상당히 진행된 것을 알 수 있었다.

Lactation Performance of German Fawn Goat in Relation to Feeding Level and Dietary Protein Protection

  • Effects of high and low levels of feeding with or without protected protein on the performance of lactating goats were studied. Twenty four German Fawn goats either from 1st ($43.37{\pm}3.937$ kg and 2 year old) or 3rd $62.64{\pm}6.783$ kg and 4-5 year old) parity were used for the trial. Feeding levels were 7.2 (I) and 5.2 (II) MJ ME/litre of milk of 3.5% fat in addition to that of the maintenance allowance. At each feeding level, diet had either unprotected (U) or formaldehyde protected (P) soya-meal. Thus, four diets were IU, IP, IIU and IIP, having six animals in each. The diets were composed of hay and pellet (10:4:1 of beet pulp : barley : soya-meal). Effect of feeding level, protein protection, parity, health status and kid number on intake, milk yield, milk composition, growth rate of goats were recorded across the 21 weeks of study. High feeding level resulted increase (p<0.001) in estimated metabolizable energy (ME) and metabolizable protein (MP) availability. Dietary inclusion of protected soya-meal increased (p<0.001) the estimated MP but not the ME availability. Animals in 1st parity ate more (p<0.001) DM (111 vs. 102 g/kg $W^{0.75}$/d) than those in 3rd parity. Animals with twin kids (110 g/kg $W^{0.75}$/d) had higher (p<0.001) DM intake than those with single kid (102 g/kg $W^{0.75}$/d). Fat (4%) corrected milk (FCM) yield was not effected by high (1,924 g/d) or low (1,927 g/d) feeding level but increased (p<0.001) with protected (2,166 g/d) compared with unprotected (1,703 g/d) soya-meal. FCM yield for four dietary combinations were 1,806, 2,078, 1,600 and 2,254 g/d for diets IU, IP, IIU and IIP, respectively. For unit increase (g) in estimated MP availability relative to ME (MJ) intake, FCM yield increased ($1,418{\pm}275.6$) g daily ($r^2$=0.58; p<0.001). Milk fat (3.14 vs. 3.54%; p<0.001) and protein (2.94 vs. 3.04% p<0.05) contents were lower at high than the low feeding level. Protected protein increased (p<0.001) the fat, lactose and net energy (NE) content of milk. Milk urea concentration of 175, 183, 192 and 204 mg/l for diets IU, IP, IIU and IIP, respectively indicated lower RDP content of these diets. The RDP contents were 6.97, 6.70, 7.30 and 6.83 g/MJ of ME for diets IU, IP, IIU and IIP, respectively. Live weight change over the experimental period were 41, 6, 17 and 19 g/d. Absence of any positive response of high feeding was probably due to inefficient rumen fermentation resulting from inadequate RDP supply. Protected protein improved production performance apparently by increasing MP:ME ratio in the absorbed nutrient.

Conjugated linoleic acid의 섭취와 운동여부가 체지방 함량이 높은 여대생의 체중과 체성분 변화에 미치는 영향 (The Effects of Conjugated Linoleic Acid and/or Exercise on Body Weight and Body Composition in College Women with High Body Fat Mass)

  • 체중이 정상이면서 체지방률 함량이 30% 이상인 여성을 대상으로 CLA 보충과 운동 여부가 체지방함량과 체중 및 혈당, 혈중 지질 농도에 미치는 영향에 대하여 살펴 본 결과는 다음과 같다. 실험 대상자들의 평균 연령은 22세였으며, 실험이 진행되는 동안 대상자들은 식이 조절을 하지 않았다. 실험 대상자들의 실험 후 체중과 BMI, 체지방 함량의 변화를 살펴본 결과, CLA-운동군이 placebo-비운동군에 비해 체중과 BMI가 유의적으로 작았으며, 체지방 함량도 적은 것으로 나타났다. 또한, 복부지방을 나타내는 허리둘레도 CLA-운동군이 placebo-비운동군과 비교하여 유의적으로 감소하여 CLA를 섭취하고 운동을 하는 것이 운동을 하거나, CLA만 섭취하는 것보다 체중 조절에 더 효과적인 것으로 나타났다. 대상자들의 평균 공복혈당, TG, total cholesterol, LDL-C, HDL-C은 모두 정상 범위에 속하였고, CLA를 섭취하거나 운동을 하는 경우 혈중 HDL-콜레스테롤의 함량을 증가시키는 것으로 나타났으나, CLA와 운동을 병행하는 경우 상승효과를 보이지는 않았다. 이러한 결과, CLA를 보충함으로써 체중 조절을 하는 것보다는 CLA와 운동을 함께 병행하는 것이 체중 조절에 효과적이며, 혈중 지질 농도를 개선시킬 수 있을 것으로 사료된다.

미량원소 엽면 처리에 의한 엽채류의 질산태 질소 축적 억제 (Suppression of Nitrate Accumulation in Vegetables by Foliar Application of Micronutrients)

  • 본 연구에서는 키토산 화합물을 함유한 미량원소 엽면 살포제를 엽채류에 처리하여 질산태 질소 축적 저감 효과를 조사하였다. Ca, Cu, Mn, Mo, Zn 등의 무기영양원소에 키토산과 키토산올리고당을 각각 첨가한 2종류의 미량원소 액제를 온실조건에서 포트에 재배한 상추와 시금치에 정식 후 3주와 4주째에 엽면 살포하였다. 정식 후 5주째에 수확하여 생육량, 엽록소와 미량원소 함량 및 Brix 당도,그리고 질산태 질소와 질산환원효소 활성을 조사하였다. 엽면 살포 액제의 시용을 통하여 작물의 생육 촉진과 함께 질산태 질소의 축적을 10-23% 정도 저감시킬 수 있는 것으로 나타났다. 이러한 결과는 미량원소와 키토산 화합물의 흡수를 통하여 엽록소와 미량원소 함량이 증가되었고 결국 광합성을 비롯한 관련 대사과정들과 질산 환원효소의 활성을 증대시킬 수 있으며 따라서 동시에 질산의 축적을 저감시킬 수 있는 것으로 판단되었다. 이러한 엽면 처리를 통한 질산태 질소의 축적 저감 효과를 극대화하기 위해서는 엽면처리 미량원소의 종류와 함유 비율, 처리 농도, 처리 시기 및 회수의 최적화 등에 대한 검토와 연구가 더 이루어져야 할 것이며, 질소 시비량과 재배환경의 조절 측면의 연구와 대책 또한 동시에 마련되어야 할 것으로 보인다.
