  • Panax ginseng seedlings were grown in vermiculite with nutrient solution different in nitrogen, phosphorus ana potassium level. Ginsenoside contents of root were investigated by high performance liquid chromatogram. Elimination or increase of one of N.P.K. increased or decreased total saponin content. Nitrogen was most effective (15.5% for-N to 8.9% for 3N) and potassium least. Similar trend was shown in each ginsenoside. According to coefficient of variation in one nutrient treatment or among all nutrient treatments ginsenoside Re was most insensitive to nutrient change and also other environmental factors and Rd most sensitive. Diol content (PD) was more variable than triol (PT) and variation of PT/PD was about half of them. Variation of ginsenoside content by nutrient change had no relation with the ginsenoside content. Similarity of ginsenoside pattern slightly decreased with the difference of saponin content by nutrient change. Root weight was significantly small only in tap water plot.

  • Nutrients and water absorption by Citrus unshiu Marc. cv. Miyagawa Wase were examined using spray type of out-door hydroponics system. Three different concentration levels of nutrient solution were treated to citrus trees to examine nutrient uptake. To do so, concentration and the volume change of nutrient solution was measured for each treatment. By weighing the volume of solution and citrus trees, amounts of water uptake and fresh weight increase were observed periodically. Water uptake by trees increased as tree grew and time elapsed, but was lower at high level of nutrient concentration than the rest, due partly to the reduction in hydraulic conductance and to the sustained high salt concentration. Rapid increase in fresh weight and nutrient uptake occurred from May to July and from August to September. The amounts of nutrient uptake were significantly different among nutrient levels: the higher concentration, the greater uptake by citrus tree. The absorbed amounts of $NO_3$, K and Ca were much higher than those of $NH_4$, S, P, Mg, and Fe. Most mineral contents in leaves were proportional to the concentration of supplied nutrient solutions. From the results of nutrient absorption and contents in leaves at different levels of nutrient solutions, the composition of major elements for citrus nutrient solution can be modified as follows: 27.1, 16.5, 66.0, 80.0, and $24.0mg\;L^{-1}$ for N, P, K, Ca, and Mg, respectively.

  • This study was accomplished to investigate the prevalence of obesity and the factors related to obesity of high school girls in the large cities from May 20 to July 10 1990. In this study, three hundred eighty nine high school girls were chosen from high schools located in Seoul and Inchon. Anthropometry including weight, height, and skinfold thickness (triceps) were measured, and dietary intakes were calculated according to food composition tables. Means of the obesity index, food pattern, nutrients intakes were compared by Pearson's correlation coefficient. Nutrient intakes of the groups categorized by tricep skinfold thickness were compared by means of Duncan's multiple range test. Prevalence of obesity was 16.7%, 3.6%, and 20.8% by criteria of skinflod thickness, BMI, and Rohrer Index, respectively. Most of the subjects had three meals and took snacks two times per day 23.9% of the subjects were taking nutrient supplements of which vitamin supplement was the most popular. Food habit of subjects such as frequency of snack and bedtime meal were positively related to fatness. Nutrient intakes of the obese groups classified by tricep skinfold thickness, tended to consume more calories than another tricep category groups. Therefore, it could be concluded that prevalence of obesity in this subject was higher than the one for the past years, and it was more profound in girls who had a poor food habits and high calorie intakes. Thus, these results suggested that a good food habits and adequate nutrient intakes are essential to prevent the obesity of high school girls.

  • This study was performed to assess diet quality in the postmenopausal women. The data of dietary intakes were obtained using food frequency questionnaires which were collected from 151 postmenopausal women in urban area. We evaluated nutrient intake and diet quality. Diet quality was assessed by NAR(nutrient adequacy ratio), FGIP(food group intake pattern), DDS(dietary diversity score), DVS(dietary variety score), FGS(food group score), DQI(diet quality index). Nutrient intakes of the subjects were close to Korean RDA. Nutrient composition of the diet(in percentage of total energy) was 64% carbohydrate, 15% protein, and 19% protein, and 19% total fat, that was close to 65 : 15 : 20. NAR of most nutrients, except vitamin A, E, were higher than 0.75 and MAR was 0.88. NAR and MAR of the subjects in theis study were higher than those of the subjects of rural area in other studies. The subjects who consumed the five food groups were 60.9%. The mean of DDS was 4.5. The subjects who consumed more than 61 dish items during a month were 61.5%. The mean of DVS was 62.4 and it was significantly higher in the elder age group. 67.6% of the subjects were below FGS of 12. The mean of FGS was 10.6 and few subjects consumed serving numbers of each food groups which were recommended for Koreans. 55.0% of the subjects were DQI scores of 0, 1, and 2. The mean of DQI was 2.3 and few subjects followed the five dietary guidelines for Korean.

  • Twenty male crossbred ($Sahiwal{\times}HF$) calves of about 6-9 months of age were divided into four groups of five animals each. All the animals were offered wheat straw ad lib. As the basal feed. However, animals in group I were fed concentrate mixture while the animals in groups II, III and IV had free access to urea molasses mineral block (UMMB) lick (I), (II) and (III) respectively as a partial substitute of concentrate mixture. The average concentrate offered (kg/day) to the animals was significantly (p<0.01) higher in group I ($2.69{\pm}0.18$) compared to groups II ($1.76{\pm}0.15$), III ($1.70{\pm}0.06$) and IV ($1.65{\pm}0.12$). The UMMB lick consumed was non-significantly different amongst groups I ($535.40{\pm}38.14$), II ($525.60{\pm}31.82$), III ($551.00{\pm}38.49$) and IV ($548.80{\pm}45.46$). Except ether extract, the digestibility coefficients of CP, ADF and NDF were non-significantly different in different groups. Similarly, N balance (g/day) and percent N retention of intake was not affected in different groups on supplementation of UMMB lick. Body composition of animals was similar in different groups supplemented with either concentrate mixture or concentrate mixture and UMMB licks. It may be concluded from these studies that UMMB lick can partially replace the concentrate mixture in the diet of growing calves without affecting the growth rate, nutrient utilization and body composition. The UMMB lick, thus, can form a part of the ration economically in the diet of growing ruminants especially in developing countries.

  • This study was to investigate the consumer recognition of commercial Sunsik & Saengsik. The data was collected from the 395 married women residing in Seoul and Kyungki area by the self-administered questionnaire. A related purpose was to analyze the nutrient composition and the hygienic safety of commercial Sunsik and Saengsik. The results from this study were as follows. The purchasing and using behaviors were significantly different between two user groups. Sunsik users have generally purchased the products at a discount store(41.0%) as a between-meal snack(36.4%). The products were usually the ones made on the spot(55.0%). However, Saengsik users have purchased the manufactured products-serving size package-(84.0%) at a health foods store(50.7%) as a health food(38.7%). Many of Sunsik users have had Sunsik in water or milk with sugar(40.7%) and 1-2 times a week(40.0%). But Saengsik users have usually had Saengsik in water or milk with honey(38.6%) and everyday(34.7%). According to the analysis on nutrition composition, crude proteins were significantly more rich in Sunsik samples, and crude ashes were more rich in Saengsik samples(p<0.01). Sunsik E and all the Saengsik samples showed the high total viable plate counts of $4.8{\sim}7.0$ log cfu/g. Coliform groups were detected in all the Saengsik and two Sunsik(A, E) samples.

  • Snake tomato (Trichosanthes cucumerina) has been cultivated and used as a replacement for Lycopersicum esculentum in many Asian and African diets. Matured T. cucumerina fruits were harvested at different ripening stages and separated into coats and pulps for analyses to determine their suitability for use in culinary. They were analyzed for the nutritional composition and antioxidant potential using different biochemical assays [1,1-diphenyl-2-picrylhydrazyl, 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activities, and ferric reducing antioxidant power] and antioxidative enzymes activities. The nutritional composition revealed that T. cucumerina contains over 80% water and is very rich in fiber, thus it can serve as a good natural laxative. The lycopene and ${\beta}$-carotene contents were especially high in the ripe pulp with values of $21.62{\pm}1.22$ and $3.96{\pm}0.14mg$/100 g, respectively. The ascorbic acid content was highest in the pulp of unripe fruit with a value of $56.58{\pm}1.08mg$/100 g and significantly (P<0.05) decreased as ripening progressed. The antioxidant potential of the fruits for the 3 assays showed that unripe pulp> ripe coat> ripe pulp> unripe coat. There were decreases in the antioxidant enzymes (superoxide dismutase, ascorbate peroxidase, and glutathione reductase) activities, with the exception of catalase, as ripening progressed in the fruits. These decreased activities may lead to the softening of the fruit during ripening. Harnessing the antioxidative potential of T. cucumerina in culinary through consumption of the coats and pulps will alleviate food insecurity and help maintain good health among many dwellers in sub-Saharan Africa and Southeast Asia.

  • In a trial involving 240pigs, the proximate composition, physico-chemical properites, color, amino acid composition and fatty acid composition of loin muscle were investigated in feeding various finished pig feeds. The treatments included feeding control) the low-nutrient density diet(2,960cal/kg ME, 12.25% CP, 0.41% lysine and 0.70% Ca), T1) the medium-nutrient density diet(3,220cal/kg ME, 15.50% CP, 0.87% lysine and 0.90% Ca) and T2) the hight-nutrient density diet(3,350cal/kg ME, 17.50% CP, 1.05% lysine and 0.90% Ca). The crude ash contents of T1 were significantly(p〈0.05) higher than those of control and T2. The pH$_{u}$ of T2 were significantly higher than those of control and T1, but cooking loss were significantly(p〈0.05) lower than those of control. In compositions amino acid, aspartic acid, threonine, iso-leucine and histidine of T2 were higher than those of control, but proline and glycine were significantly(p〈0.05) lower then those of control. The oleic acid(18:1) contents of control were significantly higher than those of T1 and T2, but the contents of linoleic acid(C18:2) and arachidonic(C20:4) acid were significantly(p〈0.05) lower. Inconclusion, the results of the experiments suggest that the high-nutrient density diet for pigs tended to improve the postmortem pH$_{u}$ and cooking loss.
