강황, 자색고구마, 톳을 첨가한 쌀국수의 기능성 (Functional Properties of Rice Noodles Supplemented with Turmeric, Purple Sweet Potato or Seaweed (Hizikia fusiforme))

  • We investigated noodles supplemented with turmeric, purple sweet potato, or seaweed (Hizikia fusiforme) for their functional properties, including total phenol, flavonoid contents, electron donating abilities, and nitrite scavenging abilities. The percentage of total phenolic compounds in turmeric, purple sweet potato, and seaweed noodles were 2.40, 2.47, and 1.27%, respectively, whereas the percentage of total flavonoid contents were 0.55, 0.92, 0.74%, respectively. Results showed that purple sweet potato noodles had the highest amount of phenolic compounds and flavonoids compared to the other types of noodles. The electron donating abilities of the turmeric, purple sweet potato, and seaweed noodles were 4.72, 4.11, and 3.11 at 1,000 ppm respectively. The nitrite scavenging abilities of the turmeric, purple sweet potato, and seaweed noodles were 75.93, 79.81, and 73.51% at pH 1.2, respectively. Purple sweet potato noodles had the highest nitrite scavenging abilities, with an effect better than BHT and ascorbic acid. The ferrous ion chelating effect of turmeric, purple sweet potato, and seaweed noodles were 12.17, 13.63, and 42.12%. All of the experimental results showed good anti-oxidative activity; thus rice noodles supplemented with turmeric, purple sweet potato, or seaweed, have good functional effects for human beings.

양파 메탄올 추출물의 생리활성 및 항산화효과 (Physiological Activity and Antioxidative Effect of Methanol Extract from Onion (Allium cepa L.))

  • Onion was extracted by methyl alcohol and some physiological activities and antioxidative effect of the extracts on soybean oil, corn oil, lard and shortening were compared with commercial antioxidants such as $\alpha$-tocopherol and BHT. The electron donating ability was about 70% at concentration above of 30mg/mL. Nitrite scavenging effects of all concentrations diminished at higher pH, while in the case of pH 1.2, it showed a nitrite scavenging effect of more than 80% af concentration above of 30mg/mL. And also, the angiotensin I-converting enzyme inhibitory effect was good above 80%. The soybean oil, corn oil, lard and shortening containing different levels of the onion extract were stored at 6$0^{\circ}C$ to evaluate the antioxidative activity of onion extracts. Peroxide value, acid value and TBA value of each oil were detected. Onion extract was very effective to retard oxidation of soybean oil, corn oil and lard, and especially, the very high antioxidative effect was observed for lard.

  • 갈대(Phragmites communis) 뿌리를 70% 에탄올 수용액으로 추출한 후 n-hexane, chloroform 및 ethyl acetate를 사용하여 순차적으로 분획하였다. 갈대 뿌리 에탄올 추출물의 분획물 중 ethyl acetate 분획의 폴리페놀 함량이 가장 높았다. 갈대 뿌리 추출물의 chloroform과 ethyl acetate 분획물은 우수한 아질산염 소거 능력을 나타내었다. 또한 각 용매 분획물은 10 mg/mL 농도에서 효과적인 지질과산화 억제능을 보여주었다.

  • n-Butanol and ethyl acetate extracts of thermal treatment yam (Dioscorea batatas $D_{ECNE.}$) belonging to the family Dioscoreaceae were measured for their radical scavenging activity and lipid peroxidation inhibition ability. In this study, ethyl acetate extract showed the most potent antioxidant activity evaluated by ferrous ion chelating activity and NO radical scavenging activity. Nevertheless, n-butanol extract was more effective in inhibiting linoleic acid peroxidation. A significant difference between n-butanol extract and ethyl acetate extract in nitrite scavenging activity ${\beta}$-carotene bleaching assays could not be found. Also, the results of this study showed that thermal treatment yam could be used as easily accessible source of natural antioxidants and as a possible food supplement.

Physiological and Functional Properties of Salicornia herbacea (Tungtungmadi) Leaf Extracts

  • The physiologically relevant functional properties of various solvent extracts from Salicornia herbacea leaves were investigated by measuring lipid peroxidation, DPPH radical scavenging, nitrite scavenging, and xanthine oxidase inhibition. Ethyl ether, chloroform, ethyl acetate and n-butanol fractions obtained from the 80% aqueous ethanol extracts of Salicornia herbacea leaves showed strong antioxidative activities in linoleic acid methyl esters. Peroxide values (POV) were not significantly different among the samples treated with the different fractions; the incubation time required to reach a peroxide value of 80 meq/kg was about 40 hrs. However, control linoleic acid methyl esters had POV of more than 480 meq/kg after 40 hrs. The DPPH radical scavenging activity of the ethyl acetate fraction was much more effective than diethyl ether, n-butanol, chloroform and water fractions, with an $IC_{50}$/ of 279 $\mu\textrm{g}$/mL, but less effective than ascorbic acid ($IC_{50}$/ : 67 $\mu\textrm{g}$/mL). The nitrite scavenging activities of all fractions increased as pH decreased. Among the fractions, nitrite scavenging activities of diethyl ether and ethyl acetate fractions at pH 1.2 were highest at 59.0 and 56.2%, respectively. The diethyl ether fraction obtained from the 80% aqueous ethanol extract of Salicornia herbacea loaves was the most effective inhibitor of xanthine oxidase of all the solvent extracts at 84% inhibition for a 1 mg/mL concentration. These results suggest that Salicornia herbacea leaf extracts may be effective antioxidants, not only in food stability, but also in human health.

오미자의 이화학적 특성 및 항산화 활성 (Physicochemical Properties and Antioxidative Activities of Omija(Schizandra chinensis Bailon))

  • To develop physiological functionality of Omija extracted with water was evaluated on antioxidative activity. Omija, high acid material with pH 3.6, contain $57.5{\pm}1.03%$ of moisture, and $18.8{\pm}0.12%$ of crude fat. This material have $12.6{\pm}0.04%$ of carbohydrate and $11.1{\pm}0.07%$ of crude protein as well, but ash and crude protein contents were found less than 10%. 10 mineral contents were also found, too; K and Ca showed the highest level, then Al, Mg, Na and Mn were followed. In composition amino acid contents, glutamic acid took the largest portion, $131.7{\pm}1.3$ mg/100 g, aspartic acid $51.5{\pm}0.6%$, and other composition amino acid under 50%. In case of free sugar contents, 7 types were found. Most of them were glucose and fructose. Total phenolic compounds showed the highest level, $2,862.6{\pm}31.7$ mg/100 g. $197.8{\pm}14.6$ mg/100 g of flavonoid and $225.6{\pm}18.2$ mg/100 g were included. In terms of electron donating ability, radical scavenging ability activated as the amount of Omija extract increased. In particular, Omija extract in 1,000 ${\mu}g/m{\ell}$ demonstrated almost similar electron donating ability, $72.4{\pm}0.21%$, to BHT. It was also found that antioxidant activities of electron donating ability, SOD-like ability, hydroxyl radical scavenging ability and nitrite scavenging ability were highly promoted as Omija extract concentration increased. The nitrite scavenging ability was significant when the extract belonged to strong acid region and doping concentrations increased.

수순(水醇)추출법으로 조제된 오공 약침액의 생리활성 효과 (Biological Activities of Scolopendrid Pharmacopuncture)

  • Reactive Oxygen Species(ROS) are continuously produced at a high rate as a by-product of aerobic metabolism. Since tissue damage by free radical increases with age, the reactive oxygen species(ROS) such as hydrogen peroxide($H_2O_2$), nitric oxide(NO). Several lines of evidence provided that ROS appears to cause to develop aging-related various diseases such as cancer, arthritis, cardiovascular disease. Our reserch objective was to examine the in vitro biological activity of Scolopendrid Pharmacopuncture, including the total poly-phenol content, DPPH radical scavenging, ABTS radical scavenging, Superoxide dismutase(SOD)-like activity, Nitrite scavenging ability. The total poly-phenol contents of Scolopendrid Pharmacopuncture was 35.859mg/L. Elctron donation ability on DPPH was 36.82%. The 2,2'-azinobis-3-ehtlbezothiazoline-6-sulfonic acid radical decolorization (ABTS) was 84.7%. The superoxide dismutase (SOD)-like activities of Scolopendrid Pharmacopuncture was 44.33%. The nitrite scavenging effects were pH dependent, and were highest at pH 1.5(45.2%) and lowest at pH 6.0(11.3%). We conclude that Scolopendrid Pharmacopuncture may be useful as potential sources of antioxidant.

버섯균사체를 달리한 발효가시오가피 추출물의 항산화 활성 및 아질산염 소거능 (Antioxidant and Nitrite Scavenging Activities of Acanthopanax senticosus Extract Fermented with Different Mushroom Mycelia)

  • 본 연구에서는 가시오가피 영지버섯발효 추출물, 상황버섯발효 추출물 및 노루궁뎅이버섯발효 추출물의 pH, 항산화 성분함량(총 페놀 및 플라보노이드 함량), 항산화 활성(ORAC 지수, DPPH 라디칼 소거능, ABTS 라디칼 소거능, FRAP활성 및 reducing power), 아질산염 소거능을 측정하였다. pH는 가시오가피 상황버섯발효 열수추출물이 4.55로 가장 높았고 상황버섯발효 70% 에탄올추출물이 3.72로 가장 낮았다. 총 페놀 함량은 가시오가피 영지버섯발효 열수 추출물이 42.09 mg GAE/g으로 가장 많았으며, 상황버섯발효 70% 에탄올추출물이 29.46 mg GAE/g으로 가장 적었다. 반면에 총 플라보노이드의 경우 가시오가피 노루궁뎅이버섯발효 열수추출물(23.93 mg RE/g)에서 가장 높았고, 상황버섯발효 70% 에탄올추출물(15.19 mg RE/g)으로 가장 낮았다. 항산화 활성의 경우 ORAC 지수는 총 페놀함량과 같은 경향을 나타내었으며 DPPH 라디칼 소거능은 34.29-50.08% 범위에서 측정되었다. 또한 ABTS 라디칼 소거능(7.73-88.07%), FRAP활성(0.10-0.22) 및 reducing power (0.29-0.70)은 농도 의존적으로 증가하는 경향을 나타내었으며 가시오가피 영지버섯발효 추출물에서 우수한 항산화활성을 나타내었다. 아질산염 소거능의 경우 16.89-22.69%의 결과를 나타내었다. 이상의 결과를 종합하여 볼 때 버섯균사체를 이용한 발효가시오가피 추출물들은 다양한 항산화 모델에서 효능을 나타내어 기능성 식품원료로서의 활용도가 매우 넓을 것으로 판단된다.

Immune Cells Activity, Cytotoxicity and Nitrite Scavenging Activity of Extracts from Several Resource Plants

  • This study was conducted to explore the immune activity, anticancer activity and nitrile scavenging activities of methanol extracts from the various organs of four Korean resource plants. The immune responses from both human T and B cell line was significantly enhanced in the cell growth compared to control while the cell growth was influenced at a certain period of culture. The results revealed that the cell growth of both human T and B cell was altered in a time dependent manner. Among tested several resource plants, the flower extract of E. japonicum demonstrated a pronounced cytotoxicity against HCT-116 cell with an IC50 value $132.08{\mu}g\;ml-1$. The flower extract from Corylopsis coreana had a promising scavenging activity against pH 1.2 compared to other species. Taken together, the studied resource plants have influenced significantly in response to immunity and also have the potential cytotoxicity and nitric scavenging activities. However, the species E. japonicum exhibited the pronounced activities from several resource plants. The result from this investigation suggests that the extracts of studied resource plant could be an addition to basic medicine for some diseases.

유자 용매추출물의 전자 공여능, 아질산염 소거능 및 NDMA 생성 억제능 (The Electron Donating Ability, Nitrite Scavenging Ability and NDMA Formation Effect of Solvent Extracts from Yuza (Citrus junos SIEB ex TANAKA))

  • 유자를 과육과 과피로 분리하여 methanol, ether, ethylacetate 및 물로 추출하며 전자 공여능, 아질산염 소거능 및 NDMA생성에 미치는 영향을 검색하였다. 유자 과육 추출물의 경우 10 mg/ml이상 첨가시 ether추출물을 제외한 모든 실험구에서 $50\%$이상의 전자 공여능을 나타내었다. 과피 메탄올 추출물을 40 mg/ml 첨가시에는 BHA 및 ascorbic acid의 효능과 유사한 수준인 $99.2{\pm}0.37\%$의 전자 공여능이 나타났다. pH 1.2에서 아질산염 소거작용은 1mg/ml 첨가시 $40\%$ 이상의 소거능을 보였으며 시료량이 증가할수록 상승하였다. 또한 과육보다는 과피에서 아질산염 소거능이 다소 우수한 것으로 나타났다. 유자 과육 추출물의 NDMA생성 억제 효과는 메탄을 추출물을 pH 1.2의 반응 용액에 40 mg/ml 첨가시 $31.7{\pm}1.25\%$로 가장 높게 나타났다. pH 4.2 및 6.0의 반응 조건에서는 모든 시료 첨가구에서 $20\%$미만의 억제 효과가 있었다.
