Objective: The objective of this study was to investigate the influence of dietary supplementation of Eucommia ulmoides leaf extract (ELE) on muscle metabolism and meat quality of pigs with and without pre-slaughter transportation. Methods: In a 43-day feeding experiment, a total of 160 pigs with an initial body weight 60.00±2.00 kg were randomly assigned into four groups in a completely randomized design with 10 replicates. Pigs in groups A and C were fed a basal diet and pigs in groups B and D were fed a basal diet supplemented with 0.5% ELE. Pigs were slaughtered with (group B and D) or without (group A and C) pre-slaughter transport. Muscle chemical composition, postmortem glycolysis, meat quality and muscle metabolome were analyzed. Results: Dietary ELE supplementation had no effect on the proximate composition of porcine muscle, but increased free phenylalanine, proline, citruline, norvaline, and the total free amino acids in muscle. In addition, dietary ELE increased decanoic acid and eicosapentaenoic acid, but decreased heptadecanoic acid, oleic acid, trans-oleic acid, and monounsaturated fatty acids in muscle. Meat quality measurement demonstrated that ELE improved meat water holding capacity and eliminated the negative effects of pre-slaughter transport on meat cooking yield and tenderness. Dietary ELE reduced muscle glycolytic potential, inhibited glycolysis and muscle pH decline in the postmortem conversion of muscle to meat and increased the activity of citrate synthase in muscle. Metabolomics analysis by liquid chromatographic tandem mass spectrometric showed that ELE enhanced muscle energy level, regulated AMP-activated protein kinase (AMPK) signaling, modulated glycogenolysis/glycolysis, and altered the metabolism of carbohydrate, fatty acids, ketone bodies, amino acids, purine, and pyrimidine. Conclusion: Dietary ELE improved meat quality and alleviated the negative effect of pre-slaughter transport on meat quality by enhancing muscle oxidative metabolism capacity and inhibiting glycolysis in postmortem muscle, which is probably involved its regulation of AMPK.

This work was carried out to study the chemical and fatty acid composition of Longissimus muscle (LM) of crossbred young bulls finished in a feedlot. After weaning (at 8 months old), the bulls were kept in a feedlot for 180 days. The bulls were kept in individual pens and fed (twice daily) with corn silage, soybean hulls, cracked corn, limestone, urea and mineral salt. The bulls were slaughtered with a final weight of 464 kg. Forty bulls were used: 10 Caracu (CAR), 10 Canchim (CAN), 10 Caracu vs. Charolais (CCH) and 10 Canchim vs. Aberdeen Angus (CAA). The percentages of moisture, ash, crude protein, total lipids, as well as the fatty acid composition, were measured in the LM. The moisture percentage was lower (p<0.05) for bulls from CAA genetic group (71.2%) in comparison to bulls from CAR (74.2%), CAN (74.9%) and CCH (74.7%) genetic groups. On the other hand, there was no difference (p>0.05) among bulls from CAR, CAN and CCH genetic groups. Ash percentage was lower (p<0.05) for CAR bulls (0.96%) in comparison with the other genetic groups. There was no difference (p>0.05) among CAN, CCH and CAA genetic groups. Similarly, there was no difference (p>0.05) in crude protein among the different genetic groups. Total lipids percentage was higher (p<0.05) for CAA bulls (5.35%) and lower (p<0.05) for CAN (1.85%) and CCH (1.41%) genetic groups. Genetic group has little effect on the fatty acid composition of Longissimus muscle of bulls. However, CLA (C 18:2 c-9 t-11) percentage was higher (p<0.05) for CAR (0.33%) and CCH (0.37%) in comparison to CAN (0.27%) and CAA (0.29%) genetic groups. Saturated, monounsaturated and polyunsaturated fatty acids, n-6 and n-3 percentages did not differ (p>0.05) among genetic groups. PUFA/SFA ratio ranged from 0.10 to 0.15, with no difference (p>0.05) among genetic groups. Similarly, n-6/n-3 ratio ranged from 12.6 to 16.3, without difference (p>0.05) among genetic groups.
Objective: This study determined the effects of dietary treatments and castration on meat quality, fatty acids (FAs) profiles, and volatile compounds in Korean native black goats (KNBG, Capra hircus coreanae), including the relationship between the population of rumen microbiomes and meat FA profiles. Methods: Twenty-four KNBG (48.6±1.4 kg) were randomly allocated to one of four treatments arranged into a 2×2 factorial structure. The factors were dietary forage to concentrate ratio (high forage [HF, 80:20] and low forage [LF, 20:80]), and a castration treatment (castration [CA] vs non-castration [NCA]). Results: Among meat quality traits, the CA group exhibited a higher percentage of crude fat and water holding capacity (p<0.05). The profiles of the saturated fatty acid (SFA) in meat sample derived from CA KNBG showed a significantly lower percentage compared to NCA individuals, due to the lower proportion of C14:0 and C18:0. Feeding a high-forage diet to KNBG increased the formation of C18:1n7, C18:3n3, C20:1n9, C22:4n6 in meat, and polyunsaturated fatty acid (PUFA) profiles (p<0.05). Consequently, the n6:n3 ratio declined (p<0.05). There was an interaction between dietary treatment and castration for formation of C20:5n3 (p<0.05), while C18:1n9, C22:6n3, monounsaturated fatty acid (MUFA) and the MUFA:SFA ratio were influenced by both diet and castration (p<0.05). Nine volatile compounds were identified and were strongly influenced by both dietary treatments, castration (p<0.05), and their interaction. In addition, principal component analysis (PCA) revealed distinctly different odor patterns in the NCA goats fed LF diets. Spearman correlation analysis showed a high correlation between rumen bacteria and meat PUFAs. Conclusion: These results suggest the essential effects of the rumen microbial population for the synthesis of meat FAs and volatile compounds in KNBG meat, where dietary intake and castration also contribute substantially.
Purpose: The purpose of this study was to investigate the effects of the Korean Dietary Approaches to Stop Hypertension (DASH) education program on oxidative stress, antioxidant capacity, and serum homocysteine (Hcy) level in elderly Korean women. Methods: This was a quasi-experimental study employing non-equivalent control group pretest-posttest design. The DASH group (n= 27) underwent the DASH education program for 12 weeks, whereas the control group (n= 21) was provided one education session. The survey was conducted before and after the intervention period. Results: In DASH group, monounsaturated fatty acid (MUFA), eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA) intakes significantly increased after the intervention as compared to prior to the intervention. No significant differences were found in the control group. After the intervention, thiobarbituric acid reactive substance (TBARS) and Hcy levels significantly decreased in the DASH group but not in the control group. Conclusion: The DASH education program was effective in reducing oxidative stress and Hcy levels in elderly Korean women.
According to economical status, under-nutrition and over-nutrition coexist in preschool children in Korea. Subjects consumed more than RDA in most nutrients, and children in of the upper income class tended to have more nutrients than those of the low income class. Especially in case of energy, protein, fat, vitamin $B_2$, and P there were significant differences among the different classes. The mean calorie compositions of carbohydrates, protein and fat were $57{\sim}59:\;16{\sim}17:\;26{\sim}27$ and fat calorie percentage was higher than quantity recommended for Korean adults. Energy, protein, Fe, vitamin A, $B_1$ and C intakes were taken mostly from plant food sources. In the upper income class group, intakes of protein and vitamin $B_2$ from animal food sources were higher than in any other income classes. Intakes of iron, vitamin A, $B_1$ and C were largely provided by plant food group. Especially 44-45% of vitamin A were taken from vegetable and fruits group, which indicated that about 50% of vitamin A intake was the form of ${\beta}-carotene$. Also compared with other groups, in the upper income class group, the intakes of energy, protein, Ca, p, vitamin $B_1$ and vitamin $B_2$ from cereal and potatoes were significantly lower, and those of Ca and P from milks and meats, fishes & eggs were significantly higher(p<0.05). The mean fat intake in all subjects was $38{\sim}43g/day$. Regardless of income class, oleic acid($6.6{\sim}8.4g$) and linoleic acid($6.7{\sim}8.1g$) were the most abundant fatty acids contained in the diet. The upper class group consumed significantly more total saturated fatty acids and total monounsaturated fatty acids(p<0.05). In polyunsaturated fatty acids, there were no differences between 3 different income classes, but intakes of total ${\omega}6$ fatty acids in the upper class tended to be higher and those of total o3 fatty acids in low class tended to be higher. Therefore, ${\omega}6/{\omega}3$ tended to be higher in the upper class group. Regardless of income classes, P/M/S and ${\omega}6/{\omega}3$ ratios in all subjects were $0.9{\sim}l.3/1.0{\sim}1.1/1.0$ and $5.2{\sim}7.4/1.0$, respectively and were in a desirable range. Cholesterol intake of subject was 184-218 mg/day, which was comparable to the value of Korean adult intake.

This study was performed to evaluate the quality of fermented sausages manufactured with processed sulfur-fed pigs. The fermented sausages were divided into two groups; one was manufactured with non sulfur-fed pigs (NP), the other one was made with processed sulfur-fed pigs (SP). No differences were found in moisture and fat contents (p>0.05) between NP and SP, but the protein and ash con-tents of SP were significantly higher than those of NP (p<0.05). The pH of SP was significantly lower than that of NP, and the water activity ($a_w$) of SP was significantly higher than that of NP after 14 and 21 d (p<0.05). The TBA (Thiobarbituric acid reactive substance) w value of SP was significantly lower than that of NP (p<0.05). The lightness and yellowness of NP were significantly higher than those of SP, whereas the redness of NP was lower than SP (p<0.05). The total plate count of SP was lower than that of NP (p<0.05). There was no significant difference in TPA (Texture profile analysis) between the two samples. SP showed significantly increased monounsaturated fatty acid (p<0.05) and decreased saturated fatty acid. Umami taste and richness in SP were significantly higher than in NP (p<0.05). Therefore, it is suggested that processed sulfur fed pigs may play a key role in enhancing the quality of meat products.
The present study was undertaken to investigate the quality characteristics of Korean Woori black pig (KWP) bellies and loins by different slaughter weight (SW) groups. The loin and belly samples collected from KWPs with different body weights (50, 75, 90, 105, and 120 kg) at 24 h post-mortem were used in the present investigation. The samples were analyzed for quality traits, fatty acid profiles, and volatile flavor compounds. Results showed that the fat content of the loin (8.64%) and belly samples (46.78%) was significantly higher in the 120 kg SW group compared to those of other SW groups (p<0.05). However, a lower protein content (12.20-12.67%) was found in the belly cuts of the heavier SW groups (105-120 kg) compared to those of the lighter SW groups (p<0.05). The lowest cooking loss (24.34%) was found in the loin cuts of the 120 kg SW group (p<0.05). Both the loin and belly cuts were observed to be redder in color with increasing SW (p<0.05). Higher oleic acid (C18:1, n9) and total monounsaturated fatty acid content and lower linolenic acid(C18:3, n3) and total polyunsaturated fatty acid content were observed in both cuts of the 120 kg SW group (p<0.05). Out of the flavor compounds identified, 11 and 17 compounds in the loin and belly, respectively, were associated with the SW. An increase in the SW resulted in increased concentrations of C18:1n9- and amino acid-derived flavor compounds. Overall, the meat samples of the heavier SW groups (120 kg) exhibited better quality and higher concentrations of volatile compounds associated with pleasant flavors. However, the meat of the 120 kg SW group also contained a much higher fat level (8.64 and 46.78% in the loin and belly, respectively) that may result in high trimming loss and hence a high rejection risk by consumers.
Objective: An experiment was conducted to determine the effect of partial replacement of soybean meal (SBM) by white lupine seeds (WLS) on milk yield and quality, feed efficiency and rumen fermentation of high-yielding dairy cows. Methods: Thirty multiparous cows of two breeds (20 Holstein and 10 Czech Pied cows) in early mid-lactation received three diets (treatments) in a 3×3 Latin square design with a 28-d period. The dietary treatments were as follows: CON (control total mixed ration with SBM, no WLS), WLS30 (30% of the SBM was replaced, on a dry matter basis, by WLS), and WLS50 (50% of the SBM was replaced by WLS). Results: Feed intake by the cows was not affected (p = 0.331) by the diets. Milk production decreased with increasing proportions of WLS in the diet. Cows fed WLS50 yielded approximately 1 kg/d (p<0.001) less milk than cows fed the CON diet. The proportions of milk fat (p = 0.640), protein (p = 0.507), and lactose (p = 0.709) were not altered by the diet. For milk fat, feeding with WLS50 reduced the proportion of total saturated fatty acids (p<0.001) and increased the proportion of total monounsaturated fatty acids (p<0.001), mainly through oleic acid (p<0.001). No differences were found in feed efficiency, body weight, and blood plasma metabolites between groups. Rumen ammonia-N levels tended (p = 0.087) to increase with increasing proportions of WLS in the diet, whereas no effect of diet on rumen pH was found (p = 0.558). Conclusion: We did not identify the safe range within which raw WLS can efficiently replace SBM in the diet of high-producing dairy cows. In contrast, even partial replacement of SBM by WLS favorably changed the milk fatty acid profile.
Despite the benefits associated with the use of food waste (FW), there are mixed consumer perceptions regarding pork quality harvested from pigs fed FW. Twenty crossbred pigs were selected for the present study. Ten pigs were fed a conventional diet (control group), and the other 10 pigs were given a conventional diet and FW (FW group) during different growth stages. Meat quality in the FW group showed deteriorative qualities with higher lightness and yellowness synonymous to pale soft exudative meat. Drip loss in the experimental group was significantly higher than that in the control group (p<0.01). The contents of polyunsaturated fatty acids in the FW group were higher and those of saturated and monounsaturated fatty acids were lower than those in the control group. The contents of thiobarbituric acid were significantly different between the control and FW groups (p<0.05). There was also a significant difference between the control and FW groups in terms of off-flavor (p<0.05) after sensory evaluation. To conclude, the off-flavor noted, including other inferior pork quality traits, in the FW group implies that FW should not be used as swine feed.
Eleven types of nuts and seeds were analyzed to determine their energy (326-733 mg), moisture (1.6-18.3 mg), carbohydrate (8.8-70.9 mg), protein (4.9-30.5 mg), lipid (2.5-69.8 mg), and ash (1.2-5.5 mg) contents per 100 g of sample. Energy content was highest in pine nuts (733 mg/100 g), carbohydrate level was highest in dried figs (70.9 mg/100 g) and protein was highest in peanuts (30.5 mg/100 g). The amino acid compositions of nuts and seeds were characterized by the dominance of hydrophobic (range = 1,348.6-10,284.6 mg), hydrophilic (range = 341.1-3,244.3 mg), acidic (range = 956.1-8,426.5 mg), and basic (range = 408.6-4,738.5 mg) amino acids. Monounsaturated fatty acids (MUFA) were highest in macadamia nuts (81.3%), whereas polyunsaturated fatty acids (PUFA) were highest in the walnuts (76.7%). Macadamia nuts did not contain any vitamin E, whereas sunflower seeds contained the highest level (60.3 mg/kg). Iron (Fe) content was highest in pumpkin seeds ($95.85{\pm}33.01$ ppm), zinc (Zn) content was highest in pistachios ($67.24{\pm}30.25$ ppm), copper (Cu) content was greatest in walnuts ($25.45{\pm}21.51$ ppm), and lead (Pb) content was greatest in wheat nuts ($25.49{\pm}4.64$ ppm), significantly (P < 0.05). In conclusion, current commercial nuts and seeds have no safety concerns, although further analysis of Pb contents is necessary to ensure safety.

제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
