The Effects of Pig Breeds on Proximate, Physicochemical, Cholesterol, Amino Acid, Fatty Acid and Sensory Properties of Loins (돼지 품종이 등심의 일반성분, 물리화학적, 콜레스테롤, 아미노산, 지방산 조성 및 관능적 품질 특성에 미치는 영향)

  • A total of 100 pigs were used to investigate the effects of pig breed on proximate, physicochemical, cholesterol, amino acid, fatty acid and sensory properties of loins. Crossbred pigs were alloted into one of five experimental groups [×Duroc(LYD), ×Berkshire (YBB), British Berkshire(BB), Kagoshima Berkshire(KB), Korean native black pig×Wild boars(KW; Sus coraanus)]. Pigs were slaughtered at 110 kg live weight. Moisture content was significantly(p<0.05) higher in KW than those of other pig breeds. Crude protein content was significantly(p<0.05) higher in YBB and KW than in LYD, BB, and KB. Cholesterol content was significantly(p<0.05) higher in YBB than those of other pig breeds. WHC and pH value had lower and shear force had higher(p<0.05) in YBB than those of other pig breeds. In color, LYD was significantly(p<0.05) higher in L* than those of other pig breeds. There was no significant different in a* and brittleness value among the breeds. In fatty acid and amino acid composition, KW had a higher(p<0.05) UFA/SFA, EFA/UFA ratio and EAA content but lower (p<0.05) SAAA. Total amino acid content was significantly(p<0.05) higher in LYD(20.44%) and BB (20.81%) than those of other pig breeds. In fresh meat, breeds affected meat color, drip loss, marbling score, and overall acceptability(p<0.05). Preparation of Jelly Using Enzyme Soluble Extracts of SeaMustard(Undaria pinnatifida) (미역의 효소추출물을 이용한 젤리의 제조)

  • The difference on compositions of enzyme extracts which were produced with two kinds of enzyme, celluclast and pectinex, and from sea mustards prepared with two kinds of pretreatments, heating and non-heating treatment, were investigated. The moisture compositions of enzyme extracts from the heating sea mustard were little higher than that of nonheating sea mustard, although the compositions of crude ash and pectin were no significant differences between two kinds of different pretreatment extracts. The supernatant extract ratio was slightly higher level in the heating pretreatment enzyme extracts than non-heating pretreatment extracts and the level of extracts prepared with only celluclast enzyme was higher than using only pectinex and the mixture of two enzymes. The general sensory evaluation value of jelly made from non-heating pretreatment extracts was higher than that from heating pretreatment extracts except on the taste and the texture.

The Quality and Antioxidant Properties of Cookies Containing Codonopsis lanceolata Powder (더덕 분말을 첨가한 쿠키의 품질특성 및 항산화활성)

  • We investigated the feasibility of incorporating Codonopsis lanceolata (C. lanceolata) powder into cookies as a value-added food ingredient. The density and moisture content of the dough was not significantly affected by the addition of C. lanceolata powder (p>0.05); the pH ranged from 6.01-6.51. The spread ratio decreased significantly with the increasing levels of C. lanceolata powder added (p<0.05). The lightness decreased, but both browning and hardness increased significantly with the higher amounts of C. lanceolata powder in the formulation (p<0.05). The 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities were increased significantly (p<0.05) and correlated well with increasing amounts of C. lanceolata. In consumer acceptance tests, the addition of C. lanceolata powder, up to 10% (w/w), had a favorable effect on consumer preferences for all the attributes tested. Based on these observations, we recommend cookies with 5% C. lanceolata powder to take advantage of its functional properties without sacrificing consumer acceptability.

  • This study investigated the environmental and economical assessment for sewage sludge treatment options including biogasification, incineration, carbonization, drying, and solidification. Considering B/C ratio for an anaerobic digestion treatment, for $270,000m^3/d$ (over $1,150m^3/day$), B/C was 1, as the moisture content increased to 95 %, B/C was 1 for $100000m^3/d$ (capacity of $400m^3/day$). Anaerobic digestion+solidification was the most economically feasible, then Anaerobic digestion+incineration and anaerobic digestion+drying were the next economically feasible and then anaerobic digestion+carbonization was the least economically feasible. If anaerobic digestion efficiency was improved to 45%, the treatment costs for anaerobic digestion+carbonization, anaerobic digestion+incineration and anaerobic digestion+drying were decreased to 3,000~5,000 won/t and the costs for anaerobic digestion+solidification was decreased to 2,000~3,000 won/t due to increasing of the beneficial cost of the biogas production.

Biochemical Composition of the Wild and Cultured Yellow Croaker (Larimichthys polyactis) in Korea (자연산과 양식산 참조기의 식품학적 품질평가)

  • The biochemical composition of wild and cultured yellow croaker, Larimichthys polyactis, was analyzed in this study. The moisture contents in wild and cultured yellow croaker was high: $75.2{\pm}1.60%$ and $79.5{\pm}1.95%$, respectively. The crude lipid contents of wild and cultured yellow croaker were low; moreover, the crude protein and ash contents did nol differ significantly (P>0.05). The total amino acid content of wild and cultured yellow croaker did not differ significantly; however, the cystine content of wild yellow croaker was higher than than of cultured yellow croaker. The essential /nonessential amino acid (E/NE) ratio in wild and cultured yellow croaker was $0.76{\pm}0.01$ and $0.77{\pm}0.02$, respectively. The free amino acid and extractive nitrogen contents of cultured yellow croaker were high and differed significantly. The water soluble vitamin ($B_1$, $B_2$, $B_6$, $B_{12}$, C and folate) and fat-soluble vitamin (A and E) contents did not differ significantly. expect for niacin. The niacin content of cultured yellow croaker was higher than that of wild yellow croaker. The fatty acid composition of wild and cultured yellow croaker did not differ significantly The sodium, magnesium, and copper contents in wild yellow croaker were relatively low. In comparison, the calcium, phosphorus and iron contents in cultured yellow croaker were relatively high. Overall, the biochemical composition of wild and cultured yellow croaker did not differ significantly.

Dietary Squid Liver Powder (SLP) with Dehulled Soybean Meal (DHSM) as a Fish Meal (FM) Substitute for Olive Flounder, Paralichthys olivaceus (치어기 넙치(Paralichthys olivaceus)에 있어서 어분 대체원으로써 탈피대두박을 이용하여 생산한 오징어 간분의 평가)

  • This study was conducted to determine the proper inclusion levels of squid liver powder (SLP) and dehulled soybean meal (DHSM) as a fish meal (FM) replacement in the diets for olive flounders. All the experimental diets were formulated to be isonitrogenous (50% crude protein, CP) and isocaloric (17.1 kJ energy $g^{-1}$ diet). Four diet were formulation of FM with SLP (DHSM) were tested at 0, 25, 50, 75% (SLP(DHSM)$_0$, SLP(DHSM)$_{25}$, SLP(DHSM)$_{50}$ and SLP(DHSM)$_{75}$, respectively). Triplicate groups of 12 fish with an average body weight of 5.56$\pm$0.1 g (mean$\pm$S.D.) were fed one of three experimental diets for 7 weeks. Weight gain (WG) and the specific growth rate(SGR) of fish fed SLP(DHSM)$_0$ and SLP(DHSM)$_{25}$ diets were significantly higher than those of fish fed SLP(DHSM)$_{50}$ and SLP(DHSM)$_{75}$ diets (P<0.05). Also, WG and SGR of fish fed SLP(DHSM)$_{50}$ had significantly higher WG and SGR than that of fish fed SLP(DHSM)$_{75}$ (P<0.05). The feed efficiency (FE) and protein efficiency ratio (PER) of fish fed SLP(DHSM)$_0$ and SLP(DHSM)$_{25}$ were significantly higher than those fed SLP(DHSM)$_{50}$ and SLP(DHSM)$_{75}$ (P<0.05). The whole-body crude lipid content of fish SLP(DHSM)$_{75}$ was significantly higher than that of fish fed SLP(DHSM)$_{50}$ (P<0.05). However, there were no significant differences in whole-body moisture, crude protein and crude ash of fish fed all diets. Based on these growth performance results, the SLP(DHSM) combination replace up to 25% FM protein by the ANOVA test in juvenile olive flounder diets.

Preliminary Study of Semi-continuous Liquid Recirculating Anaerobic Digestion for Source Separated Food Waste (음식물류 폐기물 처리를 위한 준 회분식 액순환 건식 혐기성 소화법에 대한 기초연구)

  • In this study, the experiment was carried out to produce methane by applying Semi-Continuous Leachate Recirculation Anaerobic Digestion System fed with source separated food waste from school cafeteria. There were two systems and each system consisted of a bioreactor and a liquid tank. Each bioreactor had a screen near the bottom of the reactor. 2.5L of separated liquid was transferred to the liquid tank for 30min each day by using a tubing pump and the liquid from the liquid tank was pumped to the bioreactor at the upper of the bioreactor as soon as the transfer was ended. Through this circulation, the liquid having high concentration of VFAs was supplied to the top of bioreactor. At the beginning of the experiment, food waste/inoculum anaerobic sludge volume ratio was 2:8 that is 9g VS/L of OLR(Organic Loading Rate). Feeding was conducted every two weeks. Experimental results showed that the contents of moisture, combustible matter, ash were 65.91%, 32.73%, and 1.36%, respectively. Two different food waste loading were studied. The average organic loading rates were 3.51g VS/d for System A and 3.86g VS/d for System B, respectively. The average produced methane based on food waste fed to bioreactor were observed as $6.30m^3CH_4/kgVS{\cdot}d$ for system A and $4.94m^3CH_4/kgVS{\cdot}d$ for System B, respectively.

Stabilization of Lactobacillus with Double Matrix Capsulation (더블매트릭스 캡슐화에 의한 유산균의 안정화)

  • This study using yogurt of food in order to increase the conservativeness and stability of lactobacillus, to be deliciously flavored and give it visual differential effect, were described regarding making the preparing method of double matrix capsulation in food industries. Our study group was especially made to soft and moisture cream using 5wt% of sucrose ester emulsifier as first capsulation. Double matrix capsulation was formed with the best stabilized bead type capsules when it blended 1:3 ratio of chitosan and alginate. The bead diameter size was about 2.5~4mm (mean diameter: 3mm). Activity of lactobacillus containing cream for depending on various pH variations showed that alkalinity ($pH=10.3{\pm}0.3$) condition was higher than acidity ($pH=4.3{\pm}0.3$) and neutrality ($pH=7.12{\pm}0.2$) conditions. After a month, it also was certified to the activity of lactobacillus in incubated at $37^{\circ}C$ in culture medium. As application of food industry, we developed the containing lactobacillus capsule and 5 colored kinds of double matrix capsulation in yogurt cream. As for above mentioned those results, one of tool to stabilize the living lactobacillus, doubled matrix capsulation greatly be expected to contribute to food industry. Furthermore, it can be expected to apply the drug delivery system (DDS) to active ingredients of stabilizing technologies at drug and cosmetic industries.

A Study of the Bio-Nutritional Evaluation of Duck-Meat (오리고기의 영양생화학적 가치에 관한 연구)

  • Commercially available duck-meat was subjected to proximate analysis. On a wet basis, the duck-meat contained 62.87, 17.05, 19.06 ana 1.02 percent of moisture, crude fat, crude protein and ash, respectively. Almost all the essential amino acids contained in the duck-meat protein, ana the tryptophan was the limiting one by amino acid analysis of GLC. An analysis of the fatty acid composition by GLC showed a relatively high concentration of oleic acid. There was also a considerable content of linoleic acid. The content of polyunsaturated fatty acids of duck-meat was 70.9% and the P/S ratio of fatty acids was 3.4. The cholesterol content in duck-meat was determined to be approximately 70. 5mg/100g ofm sample. According to blood analysis, it was understood that the content of phospholipids was relatively high, particulary in lecithin. ATP-phosphorus, at the higher temperature, was released faster than at the lower temperature, by two hours after postmortem. The ATPase activity of Myogibril was inhibited at the relatively high concentration of added EDTA and metallic ions, but the activity was very high in the lower concentrations. According to the cooking conditions, boiled duck-meat showed good digestion by pepsin. It was understood that the digestibility of duck meat was relatively high, so the duck-meat protein is good source of animal protein. Therefore, it is able to be recommended that duck-meat is good nitrogen source animal food.

Studies on the Compositional Change of Media During Oyster Muchroom Cultivation (느타리버섯 재배기간중 배지의 성분변화에 관한 연구)

  • In order to investigate the compositional change of the lauan and pine sawdust media during the coltivation of oyster mushroom (Pleurotus ostreatus) chemical components of the two media and mushroom were analized periodically from spawning to ending. The results are summerized as follows: 1) The total yield of mushroom from the lauan sawdust media was 6.39 kg/$m^2$, and from the Pine saw-dust media 6.31 kg/$m^2$, 94% of which was produced from the first and second cropping period. 2) In both media ash content increased gradually, while organic matter content decreased as the cultivation progressed. Moisture content, which was about 79% at the time of spawning, decreased a little during the priod of mycelial propagation, after which no change was observed. 3) Total nitrogen content of the two media decreased gradually as the cultivation progressed, and total loss of insoluble nitrogen was greater than that of soluble nitrogen. Amino nitrogen content tended to increase continually. 4) In both media pentosan, $\alpha$-cellulose, lignin and C/N ratio decreased gradually, while the content of reduced sugar, trehalose and mannitol continued to increase. 5) In both media phosphorus, potassium, manganese and zinc decreased, and magnecium, calcium, iron and copper showed irregular changes. 6) CMC-saccharifying and liquefying activity gradually increased from after mycelial propagation to the second cropping, after which it decreased in both media. Xylanase activity rapidly and greatly increased during the second cropping period rather than the first period. At the start of the third cropping period the activity decreased slowly. Protease activity was highest after mycelial propagati, after which it gradually decreased. The pH of the two media decreased as the cultivation progressed. 7) In both media little change was observed in the content of the components of mushroom cropped from the first to the third period, but slight decrease was noticed at the fourth cropping.
