Mineral and Saponin Component in white Sesame, black Sesame and Perilla Seed (흰깨, 검은깨, 들깨 중의 무기질 및 Saponin 함량)

  • the purpose of this paper is to study on the proximate composition, mineral and saponin content in white sesame, black sesame, and perilla seed. For this purpose, we have compared six different materials: white-raw-sesame, white-roast-sesame, black-raw-sesame, black-roast-sesame, raw-perilla seed and roast perilla seed, and have come to the following results. The crude fat content was the highest in white-raw-sesame(55.3%). In all the six samples, the crude fat content in raw seeds was all higher than that in roast seeds. The crude protein content was the highest in the roast perilla seed(24.6%), and in the six samples, the crude protein content in roast seeds all higher than that in roast seeds. The total sugar content was found to be the highest in the roast perilla seed(8.29%). The reducing sugar content was higher in raw perilla seed(1.57%) than in other sample materials. The ash content was the highest in black raw-sesame(5.93%), and that percentage rates was the same as that of FAO and of Japan. Minerals like Cd. Mn. Cu. Na. Mg. Pb. and Ca. were found to be contained more in black sesame than in other sample materials. The minerals contained most in white sesame were Zn.(61.6ppm) and Fe(49.4ppm), and K was contained a little more in perilla seed than in the others. The sample materials which contain saponin most were white-roast-sesame(0.34%) and black-roast-sesame(029%).

Nutritional value and antioxidant potential of lemon seed and sprout

  • High amounts of lemon seeds are discarded as by-products of processing industries. It is important to find some measures, whereby they could be used in value-added ways. Although few studies have been conducted on lemon seed oils, no study has been conducted on the nutrient content of lemon seed sprouts. The objective of this study was to investigate the nutritional value and antioxidant potential of lemon seeds and sprouts. The 1,1-diphenly-2-picrylhydrazyl radical-scavenging potential, total polyphenol, and total free amino acid content were higher in the sprouts than in the seeds. Similarly, the content of such mineral elements as Fe, Na, and Zn, increased with germination. However, salicylic acid and total mineral content were lower in the sprouts than in the seeds. The results indicate that lemon seeds and sprouts could be regarded as high-value materials in food and cosmetic industries.

Nitrogen mineralization of oil cakes according to changes in temperature, moisture, soil depth and soil texture (유박의 온도, 수분, 토심, 및 토성에 따른 질소의 무기화)

  • To investigate the characteristics of the nitrogen mineralization of oil cakes according to changes in temperature(10, 20, $30^{\circ}C$) moisture(40, 50, 60, 70% of field capacity in loam and 50, 60, 70, 80% of field capacity in sandy loam), mineral nitrogen was measured in soil after incubation for 30 days. In addition, the mineralization in sandy loam and loam which had different soil texture were compared. According to incubating the castor seed, soybean, and rice bran cakes with soil, the higher the temperature and moisture content were, the higher the content of mineral nitrogen was observed. The content of mineral nitrogen was higher in sandy loam than loam. The content of mineral nitrogen was decreased with soil depth increasing and was also higher in sandy loam than loam.

Influence of Microhardness and Mineral Content on Fluoride Materials Containing Low Concentration with Sodium Fluoride (저농도의 불화나트륨을 함유한 불소제제가 치질의 강도와 화학적 성분에 미치는 영향)

  • The purpose of this study was to evaluate the efficacy of gargle and toothpaste containing low concentration with sodium fluoride on the remineralization through the surface microhardness and mineral content in enamel. After 4 weeks-application, the enamel surface was measured using microhardness tester and the calcium (Ca) and phosphorous (P) concentration of mineral content by electron probe microanalyzer (EPMA) analysis. By combining fluoridated gargle with toothpaste, a remineralized enamel resulted in significantly significant differences among the four groups (p<0.05). The Ca change treated with 0.23% fluoridated toothpaste and 0.02% fluoridated gargle with 0.23% toothpaste demonstrated the highest among the other groups. In conclusion. the fluoridated gargle with toothpaste by low concentration showed a significantly greatest synergistic effect on remineralization of the enamel than the other groups.

A Longitudinal Study of micro-Mineral Concentration in Human Milk (수유 기간에 따른 모유의 미량 무기질 농도 변화에 관한 연구 -모유의 동, 아연, 망간 및 셀레늄의 농도 변화-)

  • This study investigated micro-mineral content in human milk along with nutritional intake of lactating women. Milk samples were collected from 33 healthy lactating women and mineral levels were analyzed. Copper, zinc, manganese and selenium were analyzed. The factors that affect the mineral levels in human milk were also investigated longitudinally from 2-5 days to 12 weeks postpartum. Concentrations of manganese and selenium didn't differ significantly within the lactation period. the levels of copper and zinc declined linearly over the first 12 weeks of lactation. Statistically significant quadratic trends were observed in zinc concentrations. There was no significant correlation between maternal age and mineral concentrations throughout the lactation period. In addition, no significant differences were found between the primipara and the multipara for mineral concentrations in human milk.

Comparison of Mineral Content and External Structure of Various Salts (소금의 종류별 미네랄 함량과 외형구조 비교연구)

  • There are several types of salts that classifed into raw salts(Chunil salt, Saeng salt), purified salts (NaCl reagent grade, Hanju salt) and processed salts(Gueun salt, Saeng kum, Bamboo salt) in Korea. Their major element is NaCl but raw salt from sea water contains other minerals such as K, Mg and S. Mineral contents of the various kinds of salt analyzed with ICP-AES and AAS were different, especially on the contents of K, Mg and Ca. Chunil salt was abundant in Ca(1,037ppm), K(3,707ppm), Mg(10,266ppm) and S(7,459ppm), and salt water from the Chunil salt contained small amounts of Pb, Al, Cr and Hg. Processed salts contained high levels of Ca, K, Mg and Fe. Especially, high levels of K, P, Fe and Ge were detected in bamboo salt. Purified salts showed regular crystal form and raw salts exhibited irregular crystal form under the SEM. The processed salts were not crystal form, but fused and irregular round form.

  • The general red-mud minerals consist of hematite, sodalite, anatase, quartz, gibbsite and miner impurities. This gives serious environmental damage for the ocean disposal. It mixed with chloride compound and the content of chlorine is about 2,000-3,000ppm. This paper can be suggested the chloride reduction technology that is applied basically mineral processing by physical separation. Then it can be possible to produce the totally 24wt. $\%$ useful red-mud which chloride content is less then 400ppm.

Mineral Contents and Fatty Acid Composition of Jemsosojoo (흑염소 소주의 무기질 함량과 지방산 조성)

  • This study was undertaken to analyze proximate comosition, mineral contents and fatty acid composition of pure jemsosojoo(PJ) and jemsosojoo added medicinal herb(JMH). Mositure, ash, crude protein and crude fat of pure jemsosojoo were higher than those of the JMH, but carbohydrate content was higher in the JMH. Among minerals, Ca, Mg, Fe, Zn content of the JMH were higher than those of the PJ, while P and Na were higher in the PJ and those difference were significant between the PJ and the JMH(p<0.05). U/S (unsaturaed fatty acid/saturated fatty acid) ratio was higher in the JMH than those of the PJ, the ratio o fglycolipid was 1.75 in the PJ and that of neutral lipid was 3.07 in the JMH. Octadecenoic acid, hexadecanoic acid, octadecenoic acid and hexadecenoic acid were major fatty acids in the total lipids, neutral lipids glycolipids and phospolipids of the PJ and the JMH. Especially, octadecadienoic acid and octadecatrienoic acid were higher in the JMH than those of the PJ.

  • The article presents the results of the content of the chemical and biochemical composition of the pupa of the wild silkworm Saturnia pyri belonging to the family Saturniidae, species of Lepidoptera. The nutritional value of silkworm Saturnia pyri pupae was evaluated, which contained 51% dry matter, 52.50% crude protein, 27.89% fat, 10.50% chitin fibers, 2.5% ash and 27 macro- and microelements and 25 mg alpha tocopherols in 100 g oil. The X-ray fluorescence method was used to determine the content of mineral elements in the pupa of the silkworm Saturnia pyri. It was revealed that the pupa of this type of silkworm contains 25 elements, of which the relative amount of K, Mg, Na, Ca, Al is much higher than other elements.

The Relationship Between Bone Mineral Density and The Environmental Factors in Korean Pubescent Girls (한국 사춘기 소녀들의 골밀도와 환경요인들과의 관계(I))

  • The relationship between bone mineral density and the environmental factors were investigated from the view point of preventing osteoporosis in Korean pubescent girls. The effects of calcium, nutrient intake, physical activity on total bone mineral density, lumbar spine and femoral bone mineral density and total bone mineral content were evaluated 33 healthy pubescent girls aged 14∼16y. A convenient method was used to assess nutritional and energy intake and calcium index was used together. Calcium intake in childhood was estimated by asking whether subjects usually drank milk as children. Eating habits data and history of menstruation were obtained by questionnaire and interview. Average energy expenditure was calculated. Bone mineral density and content were measured by dual energy x-ray absorptiometry using a Lunar DPX+Scanner (Lunar, Madison, WI). The lumbar spine(L2∼L4) and three sites in the proximal femur (femoral neck, trochanteric region, and Ward's triangle)were measured. Height and weight were measured, and the body mass index(BMI) was derived from the formula : BMI=kg/㎡ Statistical analysis was performed by simple correlation using the SAS package. The mean calcium intake (736mg) was below the RDA of 800mg/d. Twelve percent of the total subjects did not drink milk at all because they did not like the taste. Skipping meals, low calcium intake and low energy intake were significantly correlated with the low BMD. Also the data indicate that girls who reported drinking milk with every meal during childhood had significantly higher bone densities than girls who reported drinking milk less frequently. The results suggest that milk consumption in childhood appears to be needed not only for growth and development, but possibly also to assure an optimal peak of bone mass and thus greater latitude for the maintenance or skeletal integrity in the face of bone losses. There was a highly significant correlation between the total BMD and overall level of physical activity. Body weight was a better predictor of total BMD than was and other factor. Simple mechanical loading may explain why body weight, but total BMC was positively relatd to height. Conclusively, increasing calcium intake and physical activity in the pubescent girls could influence BMD.
