Direct-fed Microbials for Ruminant Animals

  • Direct-fed microbials (DFM) are dietary supplements that inhibit gastrointestinal infection and provide optimally regulated microbial environments in the digestive tract. As the use of antibiotics in ruminant feeds has been banned, DFM have been emphasized as antimicrobial replacements. Microorganisms that are used in DFM for ruminants may be classified as lactic acid producing bacteria (LAB), lactic acid utilizing bacteria (LUB), or other microorganisms including species of Lactobacillus, Bifidobacterium, Enterococcus, Streptococcus, Bacillus and Propionibacterium, strains of Megasphaera elsdenii and Prevotella bryantii and yeast products containing Saccharomyces and Aspergillus. LAB may have beneficial effects in the intestinal tract and rumen. Both LAB and LUB potentially moderate rumen conditions and improve feed efficiency. Yeast DFM may reduce harmful oxygen, prevent excess lactate production, increase feed digestibility, and improve fermentation in the rumen. DFM may also compete with and inhibit the growth of pathogens, stimulate immune function, and modulate microbial balance in the gastrointestinal tract. LAB may regulate the incidence of diarrhea, and improve weight gain and feed efficiency. LUB improved weight gain in calves. DFM has been reported to improve dry matter intake, milk yield, fat corrected milk yield and milk fat content in mature animals. However, contradictory reports about the effects of DFM, dosages, feeding times and frequencies, strains of DFM, and effects on different animal conditions are available. Cultivation and preparation of ready-to-use strict anaerobes as DFM may be cost-prohibitive, and dosing methods, such as drenching, that are required for anaerobic DFM are unlikely to be acceptable as general on-farm practice. Aero-tolerant rumen microorganisms are limited to only few species, although the potential isolation and utilization of aero-tolerant ruminal strains as DFM has been reported. Spore forming bacteria are characterized by convenience of preparation and effectiveness of DFM delivery to target organs and therefore have been proposed as DFM strains. Recent studies have supported the positive effects of DFM on ruminant performance.

Influence of Ripening Stages on the Quality of Whole Crop Silage and Grain Silage of Fodder Rice

  • In high-income Asian countries like Korea and Japan, per capita rice consumption has declined because of the change in consumer' favorite foods from rice to high-cost quality foods. This has forced farmers to reduce rice production. Although fodder rice could be another option to be cultured by farmers, available information concerning rice grain silage has been limited. In the present study, therefore, the difference in the quality of fodder rice silage prepared from either whole crop or grain at different ripening stages was compared. Various supplements were also added into whole crop and grain silages of fodder rice before ensiling, and thereafter, the palatability of prepared silages was determined by beef cattle. At ear emergence stage, the pH values for both grain and whole crop silages were approximately 4.5. In both grain and whole crop silages, the pH values were significantly increased by progressing ripening stages from milk-ripe stage to yellow-ripe stages, and the increase in pH value for grain silage was faster than that for whole crop silage. In the grain silage, the higher lactic acid (LA) content in grain silage seemed to be, the lower pH value was. Both in grain and whole crop silages, pH was significantly decreased by supplementation with LA bacteria. There were no significant differences in feed intake among any treatment groups.

Effect of Different Commercial Oligosaccharides on the Fermentation Properties in Kefir during Fermentation

  • Kefir is traditional fermented milk produced by various lactic acid bacteria (LAB) and yeast, which produce lactic acid, ethanol, carbon dioxide, and other flavor compounds. The purpose of this study was to evaluate the effects of different commercial oligosaccharides, such as maltotriose, fructooligosaccharide (FOS), galactooligosaccharide (GOS), and isomaltooligosaccharide (IMO), on the fermentation properties of kefir. First, we determined the acidification kinetic parameters, such as $V_{max}$, $t_{max}$(h), $t_{pH5.0}$(h), and $t_f$(h) of fermented milk supplemented with 4% (w/w) of different oligosaccharides. The probiotic survival and chemical composition (pH, organic acids profile, and ethanol content) of kefir during fermentation were also measured. Compared to control fermentation, all oligosaccharides increased acidification rate and reduced the time to complete fermentation (pH 4.7). The addition of FOS, in particular, resulted in the lowest $t_f$(h) and the highest populations of LAB and yeast during fermentation. All oligosaccharides increased ethanol production during fermentation. Further, significant differences were observed in the formation rates of six organic acids during fermentation. This study provided comparative data on the properties of commercial oligosaccharides for kefir manufacturing. Consequently, FOS especially had the potential for adequate and effective oligosaccharides in commercial kefir for the improvement of cost- and time-effectiveness.

Case Study of the Viability of Smallholder Dairy Farming in Nharira-Lancashire, Zimbabwe

  • There is little information on smallholder dairy farming in Zimbabwe. With such inadequate knowledge, no meaningful decisions on how to improve these systems can be made. A study was, therefore, carried out in Nharira communal area and Lancashire small-scale commercial area to provide information on the viability of dairy farms. This paper is based on data obtained through participatory monitoring of 13 smallholder dairy farms in 1996 and 1997. All the four farms in Lancashire were found to be viable in both years. In Nharira, two out of the nine farms in 1996 and three farms in 1997 failed to break even. There were considerable inter-farm differences in the contribution of milk sales towards total income from dairy farming, ranging from 41% to 99% in Nharira and 71% to 81% in Lancashire in 1996. Corresponding estimates in 1997 were 51-95% and 72-78%, respectively. Expenses on cattle feeds contributed 36-84% in 1996 and 37-80% in 1997 towards total variable costs in Nharira. In Lancashire, the respective estimates were 15-33% and 22-36%. Seven out of the nine studied farms in Nharira and three out of four in Lancashire realized higher gross margin (GM) in 1997 than in 1996. All these farming households had conserved considerable amounts of farm-grown feeds. It was concluded that feed costs, number of cows and sizes of land holdings were the main factors determining viability of smallholder dairy farming. The major challenge to smallholder dairy farming in Nharira, in particular, was to develop low-cost feeding strategies.

  • New Zealand, Palmerston North 지역의 낙농가 80여 개 낙농가에 1998년 2월부터 1998년 7월까지 우편설문지에 의해 조사되었다. 주어진 질문항목은 1). General characteristics (10개 질의), 2). Milk yield and feed supplementary (7개질의), 3). Reproductive efficiencies (14개 질의), 4). Reproductive disorders (12개 질의) 4개 항목을 포함하는 합계 43개의 질문을 내포하고 있었다. 낙농가의 응답자 38농가 (47.5%)에서 회수된 질의문 4개 항목중 1). 2). 항목에 해당되는 낙농사업에 있어서 일반적인 낙농 사육현황, 보조사료 그리고 우유 생산 등을 집계 분석하여 장단점을 파악하고, 우리나라 낙농인 (특히 제주도)들에게 인식시켜 보다 낳은 경제적 이익을 주기 위한 목적으로 수행된 바 이 결과를 요약하면 다음과 같다. 1. 낙농사육경력은 38개 낙농가 중 기록된 농가가 21개 (45%)였는데, 이중 15년 미만경력이 3농가(7.9%), 15~19년 경력은 7농가 (18.4%), 20~25년의 경험 농가가 6개 농가 (15.8%)였고, 26년 이상 경력을 가진 농가수는 5농가 (13.2%)로 대체로 우리나라보다 경력기간의 길고 많은 경험을 갖고 있는 낙농부국이었다. 낙농가의 노동력 투입에 있어서 주인 자신이 직접 경영하고 있는 농가는 21농가 (55.3%)였으며, Sharemilker에 의존하여 운영하는 농가가 10농가 (26.3%), 그리고 가족노동력이 투입된 2농가 (3.5%), Manager 가 주로 주관하여 운영되는 3농가 (5.3%), 일하는 사람을 두고 있는 농가 18농가 (31.6%)였으며, Part time 인력을 쓰는 농가는 2농가 (3.5%)뿐이고 기타가 1농가 (1.8%)로 나타내고 있었다. 이러한 사항은 낙농농가 당 1.5 인에 해당됨으로 경제적 이익 향상을 위해서 임금투입이 아주 낮았다. 2. 사육기반인 방목지와 경작지를 분석하여 보면 사육규모별 (200, 300, 400두) 방목지는 각각 56, 90, 165.3ha로 평균 107.8ha이었고, 경작지도 각각 51, 78, 165ha로서 사육규모별 차이가 컸다(P<0.01). 이와 같은 결과는 낮은 비용으로 우유를 생산하고 우유제품 95%를 세계 각국으로 수출할 수 있는 기반이 되고 있음을 입증 할 수 있었다. 낙농가의 전반적인 기록여부사항은 응답농가 (38 농가) 중 10농가 (26.3%)가 computer, 벽기록장을 이용하는 농가수가 15농가(39.5%), 그리고 낙농수첩을 사용하고 있는 낙농가는 36농가(95%)로 가장 높았으며, 두 가지로 기록하고 있는 농가 수는 23농가(70%)로 높은 편이었다. 3. 한편, 환경면에 있어서 분뇨 처리 시설 분야는 큰 도시를 제외한, 공해를 인식하지 못할 정도로 깨끗하여 아직은 철저하지 않아서 공해처리는 문제화되지 않고 있었다. 그러므로, Pond system 이 26농가(68.4%)로 제일 많았으며, 다음에 매일 분을 제거하여 쌓아 놓아서 저장해 놓고 유기질 비료로서 이용하는 농가가 8농가(21.1%), 1 농가(2.6%)에서 Bunker system으로 저장되었고 기타의 방법으로 저장하는 것이 3농가(7.9%)로 대부분 유기질 비료가 부족하여 화학 비료를 많이 사용하고 있는 형편이며 한국의 30~40여년 전 환경 상태와 유사하였다. 4. 우유 착유 시설 조사에서는 Harringbone 시설이 33농가(86.9%)였고, 다음으로 Walkthrough 구조가 3농가(7.9%), Rotary system 과 기타 구조식이 각각 1개 농가(2.6%)로 세계 낙농 선진국으로 인정 할 수 있으나, 축사시설은 거의 없고 착유시설만 설치되어 있어서 기후환경의 이점을 최대로 살려 경제성 향상을 시도하고 있었다. 5. 착유일수와 두당, 년간 비유량에 관해서 착유일수는 평균 275일, 건유기간 약 87일로 New Zeal-and 의 평균 착유일수 228일 보다 약 47일정도 긴 결과를 보여주고 있다. 착유두수 당 우유 총생산량을 보면 년간 평균 3,990kg 이었고, 우유 건물량 (ms)은 약 319kg였다. 그리고 매일 두당 우유건물량 (ms)은 평균 1.2kg, 우유량은 15.5kg(건물 12.5%로 환산), 우유지방은 평균 4.83%로 외국의 수치 보다 상당히 높았고, 우유 단백질은 평균 3.57% 이었다. 6. 결론으로 Palmerstone North 지역의 낙농업은 뉴질랜드의 중심지로 목장운영의 경험과 경력 약 20년으로, 우리나라의 6~9년 보다 길고, 전체 호당 평균 사육두수는 약 355두로서, 우리나라 최근 호당 35두에 비하여 차이가 심했다. 목장에는 사육우사는 거의 없고 단지 충실한 착유실만 있을 뿐으로 대부분의 목장은 가축 노동력인 부부 두 사람 (1.5 인)에 의해서 착유가 실시되고 있으며, 특이한 것은 철저히 봄에만 분만 (93%) 을 유도하는 계절번식을 시도하여 착유기간은 240~280일로 겨올동안은 착유를 하지 않고, 당해년 그 무리의 비유량과 body score에 의해서 건유기가 결정되어 휴식기로 들어감으로서 우리나라와는 다방면(경영형태포함)에서 많은 차이점이 있었다. 그리고 젖소에는 전혀 농후사료를 급여하지 않고 완전히 방목을 위주로 사육되기 때문이며 착유량은 약 3,500kg로 우리나라의 절반이지만 집유시 우유량 보다 유지율에 따라서 환금됨으로 유지율이 4,5%로 상당히 높은 수준으로 개량하여 왔으며, 세계에서 가장 낮은 가격의 우유를 생산하는 낙농부국으로서 우리나라도 노동력 절감과 대규모 사육을 위한 실질적인 면은 물론 경영면에 더욱 치중하여야 할 것이다.

A Method for Determination of Nitrogen in Ruminant Feedstuffs and Products

  • A method for the determination of nitrogen in ruminant feedstuffs, products and excreta (e.g. milk and urine) using a spectrophotometer is developed, where samples processed for P determination are also used to determine N. Samples are digested with sulphuric acid and subsequently with hydrogen peroxide in Kjeldahl tubes. Digested solutions along with phenol and buffered alkaline hypochlorite reagents are incubated in a water bath at $37^{\circ}C$ for 30 min and presented in the spectrophotometer. The spectrophotometer set at 625 nm measures the concentration of N of each sample. Nitrogen in 261 of the samples was also determined by the classical Kjeldahl method in order to develop a relationship between N determined by the Kjeldahl method (Y) and the colorimetric method (X). The mean value of Y was as high as that of X (0.92 vs. 0.96; p>0.05). The colorimetric method predicted Kjeldahl N highly significantly (Y=0.985X-0.024, $R^2=0.993$, p<0.001; or more simply Y=0.974X, $R^2=0.993$, p<0.001). An analysis of regression found no difference (p>0.05; both t-test and F-test) between colorimetric (0.96% N) and adjusted (0.96% N) N. In comparison with the Kjeldahl method, the analytical capacity of N by colorimetric method increases greatly, where 200-300 determinations of N are possible in a working day. In addition, the system provides an opportunity to use not only the same digested solution for both N and P determination of a particular sample, but also uses the same spectrophotometer to assay both N and P. Therefore, the system may be attractive in situations where both elements of a sample are to be determined. In conclusion, the speed of N determination, low cost, efficient use of labour, time and reagents, fewer items of equipment, and the reduction of environmental pollution by reducing effluent and toxic elements are the advantages of this method of N determination.

  • Rhodococcus sp. 3-2 strain has been reported to degrade benzimidazole-based pesticides, such as benomyl and carbendazim. Therefore, this study aimed to optimize culture medium composition and culture conditions to achieve cost-effective and efficient large-scale production of the Rhodococcus sp. 3-2 strain. The study identified that the optimal media composition for mass culture comprised 0.5% glucose, 0.5% yeast extract, 0.15% NaCl, 0.5% K2HPO4, 0.5% sodium succinate, and 0.1% MgSO4. Additionally, a microbial agent was developed using a 1.5-ton fermenter, with skim milk (20%), monosodium glutamate (15%), and vitamin C (2%) as key components. The storage stability of the microbial agent has been confirmed, with advantages of low temperature conservation, which helps to sustain efficacy for at least six months. We also assessed the benomyl degradation activity of the microbial agent within field soil. The results revealed an over 90% degradation rate when the concentration of viable cells exceeded 2.65 × 106 CFU/g after a minimum of five weeks had elapsed. Based on these findings, Rhodococcus sp. 3-2 strain can be considered a cost-effective microbial agent with diverse agricultural applications.

상주 및 인근지역 단체급식소의 다량조리 실태 연구 -식단분석 및 다량조리 실태- (A Study on the Quantity Food Production Practices of Foodservice in Sangju and Near-by Region)

  • The purpose of this study was to investigate quantity food production practices in foodservices by analysing the menus of April, 1996, The questionnaire was developed and responded to by 96 dietitians in Sangju, Munkyung, Gumee, Kimchun, and Andong during November, 1996. The survey was performed by simple random samplings. The results were as follosw; 1. Hospitals and industry served food for thirty days and schools for twenty days. Kimchi was a select-menu for hospitals and one side dish for industry and schools. The type of menu was a single use menu which consisted of cooked rice, soups and three side dishes. 2. The most frequently used ingredients were green onions, rice, carrots, onions, Korean radish roots, pork, eggs, glutinous rice, and milk. Kimchis were served most frequently in all food services and cooked rices and soups were next. 3. The age of most of the respondents was 26 to 30.54.2% of subjects were juniou college graduates and 77.1% were single. Fifty seven point three percent of the dietitians lived with family relatives, or friends. 87.5% of the dietitians had been working for 1 to 5 years. 4. Most foodservices were self-operated. The number of meals served was determined by meal coupon counting in hospitals(37.5%), meal board counting in industry(29.2%), and attendance card counting in schools(41.1%) The cost of sales per meal was approximately 2,450 won in hospitals and was approximately 1,100 won in industry and schools. The average number of days per menucycle was 7.4 in hospitals. 10.3 in industry and 25.5 in schools. Hospitals, industry, and schools held about 118, 265 and 263 recipes respectively. The average number of dietitians was 2.6 in hospitals and 1.0 in industry and schools. Except for the number of recipes, the general practices of foodservices were significantly different(P<0.05). 5. In the general quantity food production, food and seasonings measuring was hardly done. the percentage of foodservices using chemical seasonings was higher in hospitals and industry than in schools. the most important concern was taste, Registered cooks were employed in 75% of schools but only 50.0% in hospitals and 20.8% in industry. Most of the dietitians respinded that their cooks skill was not bad. The education of unregistered cooks was performen once or two times a month in hospitals and industry, and in schools performed everyday. The problem when educating cooks was the lack of cooking skill of the dietitians in schools, and the lack of time in hospitals, and the negative attitude toward education in industry. The method for improving cooking in all foodservices was OJT, or the extension of education facilities and the development and dissemination of standard recipes. The frequency of throwing away leftovers was higher in hospitals. But in industry, the frequency of saving leftovers was higher. 6. Though all foodservices have standard recipes, the number that used them was low, Another problem is that standard recipes resulted in leftovers. The inconveniences of using standard recipes were the difficulty of applying standard recipes to various numbers of customers the complication of use, or facility insufficiency.

Study on the Development of the Optimum Feeding Regimen for Pigs Weaned at 21 Days of Age

  • This experiment was conducted to investigate the effect of various feeding regimens on growth performance, nutrient digestibilities, nitrogen retention, blood urea nitrogen (BUN) concentration and feed cost in young pigs weaned at 21 days of age. One hundred twenty crossbred pigs (Landrace${\times}$Large White${\times}$Duroc, average 6.8 kg BW), weaned at 21 days of age, were allotted to 5 treatments in a 5 replicates by a randomized completely block (RCB) design. Treatments were as follow: 1) 1P (1-4 weeks: CP 23% and lysine 1.60%), 2) 2P-I (1 week: CP 23% and lysine 1.60%, 2-4 weeks: CP 21% and lysine 1.45%), 3) 2P-II (1-2 weeks: CP 23% and lysine 1.60%, 3-4 weeks: CP 21% and lysine 1.45%), 4) 2P-III (1-3 weeks: CP 23% and lysine 1.60%, 4 week: CP 21% and lysine 1.45%), 5) 3P (1 week: CP 23% and lysine 1.60%, 2-3 weeks: CP 21% and lysine 1.45%, 4 week: CP 19% and lysine 1.30%). Three different diets were formulated and supplied according to phase feeding programs. Diet 1 contains 23% crude protein and 1.60% lysine, diet 2 contains 21% crude protein and 1.45% lysine and diet 3 contains 19% crude protein and 1.30 lysine, respectively. Although there was no significant difference in growth performances, there was a beneficial effect of 3 phase feeding. The ADG was higher in 3P treatment than other treatments and it was observed clearly in late period (3-4 weeks) than in early period. Also, with increase in age, growth rate of pigs in 3P treatment was higher than that in 1P treatment approximately 37% (p=0.1379). There were no significant differences among all treatments in nutrient digestibility. The concentration of BUN was higher in pigs were fed diet containing 21% crude protein and 1.45% lysine (eg, 2P-1 and 3P) than those supplied diet containing high nutrient value at 2 week. The lowest feed cost/kg weight gain of pigs showed in 3P among treatments (p<0.05) whereas, high feed cost/kg weight gain of pigs was calculated in 1P and 2P-II treatments compared with 2P-I and 2 P-II (p<0.05), because of high milk products were used in those diet.

Effects of varying nursery phase-feeding programs on growth performance of pigs during the nursery and subsequent grow-finish phases

  • The present study investigated the effects of varying durations of nursery diets differing in percentages of milk products on growth performance of pigs during the nursery phase (NP) and subsequent grow-finish phase (GFP) to find the feasibility of reducing the use of nursery diets containing costly milk products. A total of 204 21-d-old weanling female and castrated male pigs were subjected to one of three nursery phase feeding programs differing in durations on the NP 1 and 2 and GFP diets containing 20%, 7%, and 0% lacrosse and 35%, 8%, and 0% dried whey, respectively, in 6 pens (experimental units) for 33 d: HIGH (NP 1, 2 and 3 diets for 7, 14, and 12 d), MEDIUM (NP 2 and 3 for 14 and 19 d), and LOW (NP 2 and 3 and GFP 1 for 7, 14, and 12 d). Subsequently, 84 randomly selected pigs [14 pigs (replicates)/pen] were fed the GFP 1, 2 and 3 diets during d 54-96, 96-135, and 135-182 of age, respectively. The final body weight (BW) and average daily gain (ADG) of nursery pigs did not differ among the HIGH, MEDIUM, and LOW groups (14.8, 13.3, and 13.7 kg in BW and 273, 225, and 237 g in ADG, respectively). The average daily feed intake during the nursery phase was greater (p < 0.01) in the HIGH group than in the MEDIUM and LOW groups, whereas the gain:feed ratio did not differ across the treatments. The BW on d 182 and ADG during d 54-182 were greater in the HIGH and MEDIUM groups vs. the LOW group (110.0, 107.6, and 99.6 kg in BW, respectively; p < 0.01). The backfat thickness and carcass grade at slaughter on d 183 did not differ across the treatments. In conclusion, the MEDIUM program may be inferior to the commonly used HIGH program in supporting nursery pig growth.
