Effects of Genetic Variants of ${\kappa}$-casein and ${\beta}$-lactoglobulin and Heat Treatment of Milk on Cheese and Whey Compositions

  • Milk samples with different phenotype combination of $\{kappa}$-casein and ${\beta}$-lactoglobulin and different preheating temperatures of 30, 70, 75 and $80^{\circ}C$ were used for cheesemaking under laboratory conditions. For the 853 batches of cheese, mean composition was 59.64% total solids, 30.24% fat and 23.66% protein, and the whey contained 6.93% total solids, 0.30% fat and 0.87% protein. Least squares analysis of the data indicated that heating temperature of the milk and ${\kappa}$-CN/${\beta}$-LG phenotypes had significant effects on cheese and whey compositions. The total solids, fat and protein contents of cheese were negatively correlated with preheating temperatures of milk. Cheese from BB/BB phenotype milk had the highest and those from AA/AA phenotype milk had the lowest concentrations of total solids, fat and protein. Mean recoveries of milk components in the cheese were 53.71% of total solids, 87.15% of fat, and 80.32% of protein. For the 10 different types of milk, maximum recoveries of milk components in cheese occurred with preheating temperature of $70^{\circ}C$ or $75^{\circ}C$ and lowest recoveries occurred at $80^{\circ}C$. The whey averaged 6.94% total solids, 0.30% fat and 0.87% protein. Losses of milk components in the whey were lowest for milk preheated at $80^{\circ}C$ and for milk containing the BB/BB phenotype.

유 성분 분석을 통한 젖소 영양상태 및 개체관리에 관한 연구 (Study of nutritional status and management of lactating dairy COWS using analysed milk composition)

  • Milk constituents and somatic cell count (SCC) were analysed for 4,059 milk samples from 178 dairy farms from April to December in 1999. Correlations among each milk constituents, milk urea (MU) concentration and SCC in association with lactation stage, milk yield and parity, and balancing status of nutrients' supplies were analysed, and the results are summarized as follows; Averages of milk fat percent, total solids percent and milk yield were $3.72{\pm}0.91%$, $12.50{\pm}1.31%$ and $23.80{\pm}8.54kg$, respectively, whereas those were significantly lower during the summer season. In contrast, average of MU concentration was $0.0361{\pm}0.0006%$ which was significantly higher during the summer season. With milk yield, concentrations of fat, protein and SCC in milk decreased but concentrations of lactose and urea in milk and body condition score (BCS) were not altered. Concentrations of fat, protein, lactose, total solids, SNF, and urea in milk were significantly affected by stage of lactation ($P{\leq}0.0001$) but SCC was not changed. Parity of dairy cows had a significant effect on concentrations of fat ($P{\leq}0.02$), lactose ($P{\leq}0.0001$), total solids ($P{\leq}0.002$), and SNF ($P{\leq}0.0001$) in milk and milk yield ($P{\leq}0.0005$) but did not change concentrations of urea and protein in milk. Somatic cell count had significant positive correlationship with percentages of fat, protein and total solids ($P{\leq}0.0001$), respectively, but had negative correlationship with percentages of urea and lactose in milk and milk yield ($P{\leq}0.0001$). Milk urea concentration was negatively correlated with concentrations of protein, fat, total solids, and SNF in milk and milk yield ($P{\leq}0.0001$) and, according to regression analysis using milk urea concentration and SCC, following equation was obtained; $Y(MU)=3.688{\times}10^{-2}-4.04{\times}10^{-7}{\times}X(SCC{\times}1,000)(r^2=0.0038$, $P{\leq}0.0001$). We studied balance between protein and energy supplies to dairy cows in each farm based upon milk urea and protein concentrations, and results showed that 137 of total 178 farms fed cows unbalanced amounts of dietary protein and energy.

영아 전반기 영양공급방법에 따른 이유보충식의 섭취 양상 (Solid Foods Intake Pattern During the First 6 Months of Life)

  • The solids(supplementary food) consumption of 200 healthy infants aged from 4 to 6 months have been measured. Five groups were assigned to different feeding patterns. Breastfed group(BF, n=38), formula-fed group(FF, n=102) and mixed-fed group(MF, n=14) were fed breast milk, formula and mixed(breast mile+formula) from birth until 6 months of age respectively. Convert 1 group(C1F, n=14) and convert 2 group(C2F, n=32) were fed breast milk and mixed milk at 2 months of age respectively and were switched to formula thereafter. All infants received solids form 4 months of age. The energy intake from solids at 4 and 6 months averaged 59.1 and 110.3㎉/d among BF groups vs 151.9 and 239.3㎉/d among FF groups respectively. Intakes of protein, calcium and iron were 38-46$\%$, 34-44% and 25-37$\%$ higher in the FF than in the Bf group during the first 6 months. However, no significant differences were found in the intakes of energy and nutrient intakes from solids in all 4 groups excluding BF group(39$\%$). Although BF infant's nutrient intakes from solids were lower than other group's intakes, they intaked evenly solids from various food groups. As the age of infant had increased, the energy intake ratio from solids was cereals and dairy products was increased whereas energy intake ratio from meats, eggs, fruits and vegetables was decreased. TSC4, TSC6(the frequency score for the kinds of weaning food taken) showed no significant difference among 5 feeding groups but CIF-and C2F group's scores tended to be high. Consequently, these results suggest that BF group's solid intake pattern is more desirable and that Korean lactating Mother's dependence on commercial weaning food is too high.

Impact of different levels of lactose and total solids of the liquid diet on calf performance, health, and blood metabolites

  • Objective: This study aimed to evaluate the effect of feeding milk replacer (MR) with varying levels of lactose and the increased supply of total solids (from 750 to 960 g/d) on performance, blood metabolites, and health of Holstein male calves during the preweaning period. Methods: Forty newborn Holstein calves (10 per treatment) were blocked according to birth weight and date of birth and distributed in a randomized block design to different liquid diets: Whole milk powder (WMP) diluted to 125 g/L solids; MR with 48% lactose (48L), diluted to 125 g/L solids; MR with 53% lactose (53L), diluted to 125 g/L solids; 53L MR corrected to 160 g/L solids (16TS) by the inclusion of a solid corrector. Calves were individually housed in wood hutches, fed 6 L/d of the liquid diet, and had free water and starter concentrate access. The study lasted 56 days. Results: Liquid diet intake was higher for calves fed 16TS than for other treatments. Calves fed 16TS presented higher protein and fat intake, followed by those fed WMP and the 48L or 53L MRs. Lactose intake was higher for 16TS-fed calves, followed by 53L, 48L, and WMP-fed calves. Starter and total dry matter intake did not differ among liquid diets. The average daily gain was higher for 16TS than 48L-fed calves, with the other treatments being intermediary. The lowest feed efficiency was observed for calves fed 48L. No effects on health were observed, as well as on selected blood metabolites, except for albumin concentration, which was higher for calves fed 16TS and WMP. Conclusion: Higher total solids content (160 g/L) in MR increases nutrient intake and consequently improves the performance of dairy calves. Feeding MRs with levels of lactose up to 53% of the DM had no deleterious effect on the performance or health of the calves.

Quality and Amount of Morning and Evening Milk of the Bangladesh Baghabarighat Milk Shed Area Throughout the Year

  • The Baghabarighat Milk Shed Area (BMSA), in Bangladesh belonging to the Bangladesh Milk Producers Cooperative Union Limited (BMPCUL) was selected to study the qualitative and quantitative aspects of dairy milk and to establish a trend throughout the year (July 1995 to June 1990) of milk collected at morning and evening, and daily. The average fat, solids-not-fat (SNF) and total solid (TS) contents of the morning milk were 4.58, 7.75 and 12.33%, respectively, and evening milk contained 5.41, 7.81 and 13.23%. The values for the quality varied (p<0.01) throughout the year without a specific trend. Higher milk collection occured at morning (52.77%) than evening (47.24%), but total yield of fat from morning milk was lower (48.74%) than evening milk (51.26%) due to a lower fat value (4.58%). Yield of SNF (52.57% morning, 47.37% evening) followed the values of the amount of milk collected due to their similar value at morning (7.75) and evening (7.81). Overall, TS yield was 51 and 49% from morning and evening. There was not a significant (p>0.01) relationship between fat and TS values of morning milk with those of evening milk, but there was a correlation (p<0.01) between milk yield at morning and all other parameters for evening. Solids-not-fat value of morning milk was related with yield and SNF value of milk from evening, but not with fat and TS evening milk. It may be concluded that evening milk contains higher amounts of fat, SNF and TS, but yields were higher at morning, except fat. Milk collected at morning showed a relationship with all the parameters found at evening.

COMPARATIVE STUDY ON PANEER MAKING FROM BUFFALO AND COW MILK

  • The objective of this study is to compare the qualitative and quantitative properties of paneer prepared from buffalo and cow milk. Paneer from buffalo milk had higher total solids as compared to cow. Moreover significant differences were recorded in fat and protein contents among tested samples of milk, cheese and whey respectively. The results of the organoleptic evaluations showed that paneer made from cow milk was liked more as compared to buffalo.

Effects of Black Sugar Supplementation on Dry Matter Intake, Milk Yield, and Milk Composition in Holstein Dairy Cow

  • This study was conducted to investigate the effects of supplementing additional sucrose, in the form of black sugar (BS), into the diet of Holstein dairy cows on dry matter intake (DMI), milk yield, and milk composition. Eight Holstein dairy cows ($741{\pm}65.8kg$ body weight) were divided into two groups, including the control and BS groups. Animals in the control group were offered a total mixed ration (TMR) ad libitum, and the BS group was offered TMR with 300 g of BS/head/d. After two weeks of adaptation period, the animal performance, including DMI, milk yield and milk composition, was measured. Cows supplemented with BS appeared to consume more feed than that by the controls (i.e., 17.08 and 18.28 kg/d for the control and BS groups, respectively). However, there were no significant differences between treatments. Milk yield or milk composition, such as milk fat, milk protein, lactose, solids-non-fat, total solids and pH, did not differ between treatments. However, there was a significant difference (p<0.05) in the concentration of milk urea nitrogen (MUN). The MUN concentration of the BS group was approximately 15% lower than that of the control group (i.e., 18.75 vs. 16.05 mg/dL for the control and BS groups, respectively), which suggests improved nitrogen metabolism in the animals. The somatic cell count was numerically lower in the cows of the BS group compared to those in the control group. However, a significant difference was not noted due to the substantial amount of variation among cows. In terms of the trace mineral composition for milk, the concentration of Cu from BS animals was higher (p<0.05) than that of the control animals. In summary, supplementing the diets of dairy cows with BS marginally affected animal performance and improved nitrogen metabolism. The level of supplementation and other factors, such as animal variation were discussed.

시유의 보존기간 및 온도에 따른 일반 유성분 및 산가의 변화 (Changes of the goneral components and acid value in market milks according to the preserving periods and temperature)

  • This study was carried out to investigate the changes of physical and chemical properties according to the preserving periods and temperature in heat-treated market milks ($130^{\circ}C$, 2 sec). The market ilks were divided into 3 experimental groups, that is $4^{\circ}C$, $15^{\circ}C$ and $30^{\circ}C$ according to the preserving temperature during 7 days. There were analysed fat, protein, lactose, total solids, solids-not-fat, specific gravity and acid value of market milks in each experimental group. These observations indicated that heat-treated market milks ($130^{\circ}C$, 2 sec) may be acceptable physically and chemically after 7 days at $4^{\circ}C$. The results obtained were summarized as follows ; 1. Total microorganisms in market milks were found 12$\times$$10^1$ cells at 1st day Coliform and pathogenic bacteria were not detected. 2. Milk fats tended to decrease 3.69% to 3.48% according to the time lapsed in all experimental groups without concerning to the storage temperature. 3. Milk proteins were slowly decreased 3.18% to 3.13% according to the time lapsed without concerning to the storage temperature. 4. Milk lactose was slightly increased 4.41% to 4.55% in all experimental groups. 5. Specific gravity in market milks was 1.0316 to 1.0299, and showed no changes according to the preserving periods and temperature. 6. Total solids and solids-not-fat in market milks were slightly decreased 12.30 to 12.05 and 8.55 to 8.40. 7. Acid values were dramatically increased 0.1289 to 0.3116 at $30^{\circ}C$ storage group, while tended to be stable at $4^{\circ}C$ storage group for 7 days.

Effects of Replacement of Concentrate Mixture by Broccoli Byproducts on Lactating Performance in Dairy Cows

  • The objective of the present study was to determine the effects of feeding pelletized broccoli byproducts (PBB) on milk yield and milk composition in dairy cows. In Trial 1, an in vitro gas test determined the optimal replacement level of PBB in a concentrate mixture in a mixed substrate with Chinese wild ryegrass hay (50:50, w/w) at levels of 0, 10%, 20%, 30%, or 40% (dry matter basis). When the concentrate was replaced by PBB at a level of 20%, no adverse effects were found on the gas volume or its rate constant during ruminal fermentation. In trial 2, 24 lactating cows (days in milk = $170.4{\pm}35$; milk yield = $30{\pm}3kg/d$; body weight = $580{\pm}13kg$) were divided into 12 blocks based on day in milk and milk yield and randomly allocated to two dietary treatments: a basic diet with or without PBB replacing 20% of the concentrate mixture. The feeding trial lasted for 56 days; the first week allowed for adaptation to the diet. The milk composition was analyzed once a week. No significant difference in milk yield was observed between the two groups (23.5 vs 24.2 kg). A significant increase was found in milk fat content in the PBB group (p<0.05). Inclusion of PBB did not affect milk protein, lactose, total solids or solids-not-fat (p>0.05). These results indicated that PBB could be included in dairy cattle diets at a suitable level to replace concentrate mixture without any adverse effects on dairy performance.

Effect of Undegradable Dietary Protein Level and Plane of Nutrition on Lactation Performance in Crossbred Cattle

  • An experiment was conducted in order to assess the effect of level of RDP:UDP ratio and level of feeding concentrate on milk yield, milk composition and nutrient utilization in lactating crossbred cattle. Twenty four medium producing (-10 kg/d, 45 to 135 days postpartum) lactating crossbred cows were divided into four groups of six animals each in a 2${\times}$2 factorial completely randomized design. The cows in group 1 were fed concentrate mixture I containing 59:41 RDP:UDP ratio (low UDP) at normal plane (LUDP+NP), in group 2 were fed low UDP ration at 115% of NRC (1989) requirements (LUDP+HP), whereas cows in group 3 were fed concentrate mixture II containing 52:48 RDP:UDP ratio (high UDP) at normal plane (HUDP+NP) and in group 4 were fed high UDP ration at 115% of NRC (1989) requirements (HUDP+HP). Green jowar was fed ad libitum as the sole roughage to all the animals. The experimental feeding trial lasted for 105 days. The total dry matter intake (DMI), DMI/100 kg body weight, DMI/kg $W^{0.75}$, digestibilities of DM, OM, CP, CF, EE and NFE and intakes of TDN and DCP did not differ significantly among the different groups and also due to both UDP level and plane of nutrition and also due to their interaction. The total dry matter intake varied from 145 g in group 1 (LUDP +NP) to 152.57 g/kg $W^{0.75}$ in group 2 (LUDP+HP) diet. However, increase in milk yield with increased UDP level and also with increased plane of nutrition was observed consistently throughout the experimental period. The average milk yield was 7.66, 8.15, 8.64 and 9.35 kg in groups 1, 2, 3 and 4, respectively and there was no significant difference in milk yield among different groups of cows. The overall daily average milk yields in cows fed with low and high UDP diets were 7.91 and 8.99 kg, respectively and at normal and higher plane of feeding the milk yields were 8.15 and 8.75 kg/day, respectively. Thus, there was 13.65% increase in milk yield due to high UDP level and 7.36% due to higher plane of feeding. The daily 4% FCM yields were 9.20 kg for low UDP diet and 10.28 kg for high UDP diet, whereas it was 9.11 kg at normal plane of feeding and 10.37 kg at higher plane of feeding. Fat yields for the corresponding treatment groups were 0.37, 0.43, 0.41 and 0.48 kg, respectively. The 4% FCM yield and also fat yield did not differ significantly among different dietary treatments and also due to UDP level and plane of nutrition, however, 4% FCM yield was increased by 11.74% with high UDP level and 13.83% with higher plane of feeding. The values for total solids, fat, lactose, solids-not-fat and gross energy contents in milk differed significantly (p<0.05) among the different groups and were significantly (p<0.05) higher in milk of cows fed LUDP+HP diet followed by HUDP+HP diet. Total solids (14.65 and 13.83%), lactose (5.44 and 4.92%), solids-not-fat (9.44 and 8.83%) and gross energy (887 and 838 kcal/kg) of milk decreased significantly (p<0.05) with increased UDP level while total solids (13.84 and 14.64), fat (4.84 and 5.36%) and gross energy (832 and 894 kcal/kg) increased significantly (p<0.05) with increase in plane of feeding. Gross and net energetic efficiencies and also gross and net efficiencies of nitrogen utilization for milk production were not significantly different among different groups and also were not affected significantly due to either UDP levels or plane of feeding. Results of the present study suggest that, increasing UDP level from 41% to 48% of CP in concentrate mixture and also increasing plane of feeding from normal (100%) to 115% of NRC requirements maintain a consistently higher milk production.
