Study on the Mineral Contents of Commercial powdered infant formula (유아용 조제분유의 무기물 함량에 관한 연구)

  • This study was conducted to investigate mineral contents of commercial powdered infant formula for obtaining basic data on infant nutrition. 11 Commercial infant formula based on cow's milk were collected and the contents of macro minerals (calcium, phosphorous, sodium, potassium and magnesium) and trace minerals (iron, zinc and copper) were compared with Dietary Reference Intakes for Koreans (KDRIs). The overall mineral contents in 100 g and in 100 kcal of infant formula satisfied the recommended formula regulation and Codex. In infant formula during 0-5 monthly age, calcium, phosphorous, sodium, potassium, magnesium, zinc and copper could supply 233.1%, 273.5%, 156.7%, 142.0%, 150.8%, 209.3%, 171.1% of recommended daily mineral intakes, respectively. The content of iron in 0-5 monthly age formula supplied2842.6% of recommended daily iron intakes. In infant formula during 6-11 monthly age, calcium, phosphorous, potassium, magnesium, iron, zinc and copper satisfied their recommended daily intakes. However, sodium only supplied 76.6% of its recommended daily intake. Intake ratio between Ca/P, Ca/Mg, Ca/Fe, Na/K and Zn/cu in infant formula during 0-5 monthly age were 1.7±0.2, 11.0±2.4,64.9±10.0, 0.3±0.1, and 9.6±1.0, respectively. Intake ratio between Ca/P, Ca/Mg, Ca/Fe, Na/K and Zn/cu in infant formula during 6-11 monthly age were 1.7${\pm}$0.2, 12.9${\pm}$1.5, 80.1${\pm}$13.8, 0.3, and 9.4${\pm}$1.1,respectively. From this study, evaluation of mineral contents of commercial infant formula was established, which could strengthen the basic information on infant nutrition.

The relationship between the prevalence of anemia and dietary intake among adults according to household types based on data from the 7th (2016-2018) Korea National Health and Nutrition Examination Survey (국민건강영양조사 제7기 (2016-2018년)에서의 가구 유형에 따른 성인의 빈혈 유병율과 식이 섭취)

  • Purpose: In this study, data from the 7th Korea National Health and Nutrition Examination Survey (2016-2018) were used to examine the relationship between the prevalence of anemia and dietary intake among adults according to household types. Methods: Using data from a total of 10,646 subjects (4,428 men and 6,218 women), the general information, body measurements, results of biochemical examination, food and nutrient intake, and meal quality evaluation were analyzed according to the type of household. Results: The prevalence of anemia was higher in men belonging to single-person households (SPH) than in those from multi-person households (MPH), while anemia prevalence was higher among the women in the MPH than in the SPH. The men in SPH had a lower total food intake of nuts, vegetables, fruits, fish, and seaweed than the men in MPH, and consumed higher quantities of milk, oil, and processed foods. The women from SPH had a lower intake of seaweed and a higher intake of milk than those belonging to the MPH. In addition, the men in SPH had a lower iron intake and iron intake per 1,000kcal than the men in MPH, lower iron intake through plant-based foods, and a lower iron intake ratio compared to the reference nutrient intake. The total Korean Healthy Eating Index (KHEI) score was lower in both men and women in SPH than in those from the MPH. When analyzing the relationship between household type and anemia risk after correcting for the confusion variable, the risk of anemia in men in SPH increased compared to those belonging to the MPH. However, women showed no such significant correlation. There was no relationship between the total KHEI score and the risk of anemia by gender and household type. Conclusion: In conclusion, since anemia in men belonging to SPH is a matter of concern, it is essential to develop guidelines for anemia-related nutrition education for men living alone.

Characterization of Paenibacillus sp. MBT213 Isolated from Raw Milk and Its Ability to Convert Ginsenoside Rb1 into Ginsenoside Rd from Panax ginseng

  • This study was conducted to isolate and characterize Paenibacillus sp. MBT213 possessing ${\beta}$-glucosidase activity from raw milk, and examine the enzymatic capacity on the hydrolysis of a major ginsenoside ($Rb_1$). Strain MBT213 was found to have a high hydrolytic ability on ginsenoside $Rb_1$ by Esculin Iron Agar test. 16S rDNA analysis revealed that MBT213 was Paenibacillu sp. Crude enzyme of MBT213 strain exhibited high conversion capacity on ginsenoside $Rb_1$ into ginsenoside Rd proven by TLC and HPLC analyses. The API ZYM kit confirmed that Paenibacillu sp. MBT213 exerted higher ${\beta}$-glucosidase and ${\beta}$-galactosidase activity than other strains. Optimum pH and temperature for crude enzyme were found at 7.0 and $35^{\circ}C$ in hydrolysis of ginsenoside $Rb_1$. After 10 d of optimal reaction conditions for the crude enzyme, ginsenoside $Rb_1$ fully converted to ginsenoside Rd. Ginseng roots (20%) were fermented for 14 d, and analyzed by HPLC showed that amount of ginsenoside $Rb_1$ significantly decreased, while that of ginsenoside Rd was significantly increased. The study confirmed that the ${\beta}$-glucosidase produced by Paenibacillus sp. MBT213 can hydrolyze the major ginsenoside $Rb_1$ and convert to Rd during fermentation of the ginseng. The ${\beta}$-glucosidase activity of this novel Paenibacillus sp. MBT213 strain may be utilized in development of variety of health foods, dairy foods and pharmaceutical products.

Clinical Study on Prenatal care, and Dietary Intakes for Pregnant Women and new Mothers (임산부의 산전관리와 산욕기 영양실태에 관한 연구)

  • This study was projected to provide basic data on prenatal care for future direction in maternity and child care, and also to investigate the diet of women during pregnancy and the period directly afterwards in order to offer to mothers appropriate advice for the improvement of nutritional standards. A clinical study on prenatal care was based on 1054 delivery cases. A nutritional survey was performed on 174 mothers admitted to the department of obstetrics at St. Mary's Hospital during the period of March, 1975 to February, 1976. The results obtained are summarized as follows; I. Clinical study on prenatal care 1) The age distribution showed 59.4% of the mothers were between the ages of 25 to 29 years old. 2) The gestational period was highest between the 37th and 40th gestational weeks. 33.7% of the mothers were primigravidae and 31.8% of them primiparae. 3) 41.3% of the mothers had not received prenatal care or had only received it once before. 4) Induced deliveries were 61.8% and spontantaneous deliveries 38.2%. 61.9% of the mothers had received prenatal care, while those without prenatal care accounted for 61.6% of the total induced deliveries. 5) Low birth weights were 7.7% and 5.0% of the mothers had received prenatal care, while 11.5% had no prenatal care. 6) There were 1.13% of still births, 0.32% of the mothers had prenatal care and the remainder did not have prenatal care. 7) Of those receiving prenatal care, 2.1% showed in the $0{\sim}3$ Apgar score group, 6.3% in the $4{\sim}6$ Apgar score group, and 91.6% in the $7{\sim}10$ Apgar score group. Among the non-prenatally cared for group 5.0% of the newborns were in the $0{\sim}3$ Apgar score group, 9.7% were in $4{\sim}6$ Apgar score group and 85.3% were in the $7{\sim}10$ Apgar score group. 8) Obstetrical complications were developed in 11.86% of the pregnant women when they were hospitalized. Among the group receiving the prenatal care 8.1% of the mothers had obstetrical complications. In the group without prenatal care 17.16% of the mothers had obstetrical complications. The most common obstetrical complication was malpresentation. 9) The first prenatal care was received between the 37th and 40th gestationl weeks. II. Food intake during pregnancy The following are the results from the questionnaires of the mothers concerning diets during pregnancy; 1) Main meals and snacks In 32.2% of the cases, their main meals during the diet amounted to more than was usually eaten at other times. In 67.8% of the cases, their main meals during the diet were the same as that usually eaten. In 22.4% of the cases, snacks during the diet amounted to more than usually eaten at other times. In 77.6% of the cases, snacks during the diet were the same as usually eaten. 2) Itemized list The mothers made a special effort to include certain items in their diets, the following is a breakdown of those items; a. egg, meat, fish 33.3% b. fruit, vegetables 32.2%. c. milk, fruit juice 18.4% d. cake, bread 2.9% e. nothing special 13.2% 3) Milk 44.8% of the mothers had at least one cup of milk everyday. 33.4% of the mothers had at least one cup of milk on occasion. 15.5% of the mothers did not have any milk. 4) Vitamins 39.7% of the mothers had vitamins everyday. 24.7% of the mothers had vitamins occasionally. 35.6% of the mothers did not have any vitamins. 5) Anemic symptoms 9.2% of the mothers very often had anemic symptoms during pregnancy. 39.1% of the mothers often had anemic symptoms during pregnancy. 51.7% of the mothers did not have anemic symptoms at all. 6) Taboos on food 23% of the mothers recognized 'taboos' on food during pregnancy 27% of the mothers displayed on uncertainty about the 'taboos' on food during pregnancy 50% of the mothers displayed indifference toward the taboos. III. Nutritional survey on the new mothers diet. 1) The diets for new mothers can be divided into four categories, such as general diet, low sodium diet, soft diet and liquid diet. 2) Cooked rice and seaweed soup were the main foods for the new mothers as has been the traditional diet for Korean mothers. 3) The average diet contained 1,783g. And the average consumption of the basic food groups per capita per day was 1,265g for cereals and grains, 456g for meats and legumes, 58g for fruits and vegetables, 0g for milk and fish and 4g for fats and oils. 4) In addition to the 1,783g of food in the main diet there was also 142.8g of food taken as snacks. 5) The average daily consumption of calories and nutrients was 2,697 Kcal and 123.4g for proteins, 44.9g for fats, 718.2mg for calcium, 14mg for iron, 2,101.4 I.U. for vitamin A, 0.43mg for thiamine, 1.02mg for riboflavin, 15.88mg for niacin, 5.26mg for ascorbic acid. When these figures are compared with the recommended allowances for new mothers in Korea, the calories and nutrients taken in were satisfactory. But the intake of minerals and vitamins was below the recommended allowance.

A Study of Nutritional Intake, Eating Habit, Iron Status of Urban and Rural Middle School Girls (도시와 농촌 여중생의 영양섭취상태, 식습관 및 철영양상태 연구)

  • This study was designed to compare the nutritional intake and iron nutritional status between urban and rural middle school girls. Along with a questionnaire, blood samples were obtained from 311 middle school girls (urban 129 girls, rural 182 girls). Nutrient intakes were measured with a convenient method, and clinical symptoms relating anemia was investigated by 4-point Likert scale. For the nutrient intake, the total energy intake was 1722.2 kcal (82.0% of RDA) for the urban group and 1649.5 kcal (78.6% of RDA) for rural group. The rural group showed significantly lower level than the urban group in all nutrients except fat, carbohydrate and total energy intake. Regarding the food frequency, students from the rural group marked significantly lower intake of milk (p<0.00l), kimchi (p<0.05), fruit (p<0.05), tofu, bean (p<0.00l) than the urban group. For every clinical finding regarding anemia, the rural group marked higher value than the urban group but the difference was not significant. The hemoglobin concentration of urban group was 13.28 g/dL, and rural group showed 12.51 g/dL which was significantly lower than urban group (p<0.00l). The hematocrit rate was 37.82% for the urban group and 38.13% for the rural group and there was no significant difference between two groups. The red blood cell (RBC) count of the rural group was significantly lower than the urban group (p<0.00l). Evaluating with the iron deficiency standard which is less than 12 g/dL, the urban group was 6.2% and the rural group was 34.6% thus the deficiency rate was significantly higher in the rural group. This study showed that nutrient and iron status of the girls of rural group is not as good as the urban group. As middle school girls require high level of iron absorption due to blood loss which occurs during abrupt physical growth and menstruation, dietary counselling is required to enhance the iron status. When iron deficiency is serious, they need to take more positive action such as iron supplement in addition to food-iron fortification.

The Effect of Nutrition Education Program for Various Chronic Disease in Elderly Visiting Public Health Center (보건소 내원 노인들의 질병별 영양교육 효과에 관한 연구)

  • This study conducted to assess the effectiveness of nutrition education program for elderly females with various diseases. Forty subjects(hypertension ; 20, diabetes ; 12, hyperlipidemia ; 8) out of 56 completed the 7 weeks nutrition education program. The nutrition education program was based for healthy food habits and dietary guidelines for each specific disease. It also included practicing individualized menu planning and exercising program. Energy, calcium, iron, vitamin A and ash intakes significantly increased in the hypertension group. total sodium intake did not decrease, however sodium intake per kcal decreased significantly(p〈0.05). Elderly with diabetes did not show any changes in dietary intakes. Dietary protein, plant fat, ash, and sodium intakes were significantly elevated(p〈0.05), but cholesterol intakes significantly decreased(p〈0.05) in the hyperlipidemic group. Elderly with hypertension agreed strongly with changes of food habits such as increasing milk intake, and decreasing Kimchi, soup, pickles and salty food, and table salt intakes after nutrition education. Diabetic elderly showed significantly improved food habit scores in decreasing white rice intake, sugar intake and increasing sea-weed consumption, vegetable consumption and exercise. Hyperlipidemic elderly did not show much improvement in food habit scores except in biochemical indices. However, mean serum glucose and atherogenic index decreased in the diabetic and hyperlipidemic groups after education, respectively.

  • In order to investigate the dietary intakes and physical characteristics in college women smokers, interviews using questionnaires were done on 33 smokers and 42 nonsmokers residing in seoul area. General living habits, dietary habits, food consumption frequency and nutrient intake by quick estimation were investigated through direct interviews with subjects. Subjects height, weight and blood pressure were measured, and body fat percentage were statistically analyzed using Bio-electrical Impedence Fatness Analyzer(GIF-891). All data were statistically analyzed by SAS PC package program ; percentage or mean and standard error were examined for each item, and the significant difference was evaluated by chi-square test or Student's t-test at $\alpha$=0.05. In the analysis of taste and food preference, smokers consumed larger amount of alcohol and coffee than nonsmokers ; they also disliked sweet taste. The results of food consumption frequency data also showed that smokers consumed less fish, milk and fruits but consumed more instant foods than nonsmokers. As a result of anthropometric measurements, height, age, and 패요 fat percentage showed no difference, but there was a significant difference in weight, BMI, systolic blood pressure, and diastolic blood pressure. Energy intake in nonsmokers was 1640 ㎉/day(CHO : Pro : Fat=66.0 : 14.7 : 19.3), in smokers. Intakes of calcium, iron, vitamin C, vitamin A, vitamin B1, vitamin B2, and niacin in smokers were not significantly different from those of nonsmokers.

Meal pattern, Nutrition Knowledge and Food preference of Rural middle school students (농촌 중학생의 식사양식, 영양지식 및 식품기호도)

  • This study was undertaken to investigate meal pattern, nutrition knowledge and food preference of 438 rural middle school students living in ChunNam area. As far as nutrition knowledge is concerned, most subjects did not answer correctly on the items of basic five food groups, animal fat and vegetable oil, empty source of soft drink, nutrient requirement and water's role in energy metabolism. However they responded well on the item of iron deficiency and dietary source of Ca. Male students were significantly better in the answering the items of dietary source of energy and nutrient requirement than females, while female students were significantly better on the items of water's role in energy metabolism related to obesity. Generally the respondents did neither consume oil often nor consider consumption of salty food. Furthermore, only 38.6% of subjects drink milk daily in spite of understanding dietary source of Ca, which suggested that they should incorporate nutrition knowledge into dietary behavior. The preferred foods for most subjects were fruit, kimbab and ice cream. Contrastingly the food that they did not prefer was fermented vegetable probably due to strong flavor.

A Survey on Nutrition Intake of the Female Students in Seoul Area According to BMI (일부 서울지역 여대생의 체질량지수에 따른 영양섭취 실태조사)

  • The purpose of this study was to evaluate the nutrient and food intake status in underweight female college students living in Seoul. 126 underweight(BMI<20) and 74 normal weight (20$\leq$BMI<25) students were asked for their daily food intake and eating habits by using 3-day food records and questionnaire. We analyzed the amounts of the nutrient intakes and food groups as the subjects. The mean of height and weight were 162.1cm and 49.0kg in underweight and 160.6cm and 54.9kg in normal weight subjects. The mean energy, iron, and vitamin A intakes among the students were smaller than RDA for Koreans. The mean calcium(p<0.01), sodium(p<0.05), and vitamin B$_2$(p<0.05) intakes in underweight subjects were significantly higher than those in normal weight subjects. Total food intakes of underweight and normal weight students were 1235.8g and 1078.1g, respectively. The mean of the pulse group in the underweight was significantly higher than that in normal group(p<0.01) Frequently consumed food or dish items of the subjects were Kimchi, cooked rice, and milk. In the relation between BMI and dietary factors, the BMI was found to have a significant negative correlation with calcium intake(p<0.05), pulse intake(p<0.01) and eating habit score(p<0.01) Eating habit scores about quantity of food and lipid intake showed a significant difference between underweight and normal students.

Development of transgenic rice lines expressing the human lactoferrin gene

  • Lactoferrin is an 80-kDa iron-binding glycoprotein that is found in high concentrations in human milk. Human lactoferrin (hLF) has several beneficial biological activities including immune system modulation and antimicrobial activity. In the present study, we devolved a method of hLF expression through introducing the hLF gene construct into Oriza sativa cv. Nakdong using the Agrobacterium-mediated transformation system. The expression of the hLF gene under the control of the rice glutelin promoter was detected in the seeds of transgenic rice plants. Transformed rice plants were selected on media containing herbicide(DL-phosphinothricin) and the integration of hLF cDNA was confirmed by Southern blot analysis. The expression of the full length hLF protein from the grains of transgenic rice plants was verified by Western blot analysis. The lactoferrin expression levels in the transformed rice grains determined by enzyme-linked immunosorbant assay accounted for approximately 1.5% of total soluble protein. Taken together, these data indicate that rice grains expressing hLF can be directly incorporated into infant formula and baby food.
