  • In this study, we prepared methyl cellulose (MC) and hydroxypropylated methyl cellulose (HPMC) films with polyethylene glycol (PEG) or polyphosphates as elongation enhancing materials, and with lipid layers as moisture barrier materials. We then determined their physical properties and compared the data with target physical properties such as a tensile property of 13.0 MPa, elongation of 130%, and water vapor permeability of $3.47{\times}10^{-2}ng{\cdot}m/m^2{\cdot}s{\cdot}Pa$. The PEG and polyphosphates were required for enhancing elongation, while the coating method seemed better than the emulsion method when applying the lipid layers. With respect to elongation, the MC films were better than the HPMC films.

  • An antioxidant was isolated from pine needles. This compound was identified as 4-hydroxy-5-methyl-3[2H]-furanone on the basis of spectroscopic evidences and by the comparison with the synthetic one from the Maillard reaction of xylose and glycine. It scavenged 1,1-diphenyl-2-picrylhydrazyl free radicals more efficiently than 4-hydroxy-2,5-dimethyl-3[2H]-furanone and $3-hydroxy-2-methyl-{\gamma}-pyrone$ did. It exhibited inhibitory effects on the autoxidation of 3,4-dihydroxyphenylalanine and linolenic acid.

  • Functional additives such as methyl silicone, TBHQ and BHA/BHT have been evaluated for their effects on storage and frying stabilities of the vegetable salad oil. All test results strongly suggest that methyl silicone improved the frying stability and TBHQ improved the storage stability. BHA/BHT improved neither storage stability, nor frying stability of the vegetable saladoil. Based on the test results, it is recommended that methyl silicone in the range of $1.0{\pm}0.5ppm$ and TBHQ in the range of 200ppm be added to the vegetable salad oil for the improvement of frying and storage stabilities.

  • Methyl isocyanate may have a role in cancer etiology, although the link is unclear. There is evidence in the literature that it can induce cancer in animals but the carcinogenic potency is weak. Pheochromocytoma of adrenal medulla and acinar cell tumors of pancreas have been observed in methyl isocyanate exposed animals. Conversely, emerging data from population-based epidemiological studies are contradictory since there is no evidence of such cancers in methyl isocyanate exposed humans. Recently, we reported a high prevalence of breast and lung cancers in such a population in Bhopal. In vitro findings appearing in the latest scientific literature suggest that genomic instability is caused by methyl isocyanate analogs in lung, colon, kidney, ovary epithelial cells, and that hepatocytes may undergo oncogenic transformation, have obvious implications. The conflicting information prompted us to present this update over the last three decades on methyl isocyanate-induced cancers after an extensive literature search using PubMed. While the pertinent literature remains limited, with a scarcity of strong laboratory analyses and field-epidemiological investigations, our succinct review of animal and human epidemiological data including in vitro evidences, should hopefully provide more insight to researchers, toxicologists, and public health professionals concerned with validation of the carcinogenicity of methyl isocyanate in humans.

  • Methyl fructoside oleic acid polyester(MFPE), fructose-based sugar polyester, was synthesized by solvent-free, soap-free transesterification of methyl oleate with methyl fructoside(MF) as a sugar starting material in the presence of conventional potassium carbonate basic catalyst. Methyl fructoside was found to be an effective sugar starting material, because of its low softning point, high heat stability, high miscibility, and high reactivity than other sugars. Yield 98% of purified MFPE based on initial weight of MF was obtained at 1:5 of the molar ratio of methyl fructoside to methyl oleate, 2%(w/w) of potassium carbonate catalyst content, 20${\sim}$200mmHg of reduced pressure and $180^{\circ}C$ of reaction temperature. MFPE structure was confirmed by infrared and proton nuclear magnetic resonance spectroscopy. Physical properties of methyl of fructoside oleic acid polyester such as viscosity, HLB, solubility, color, refractive index, specific gravity, and density were similar to physical properties of sucrose polyesters(SPE) and vegetable oils. Then, it was elucidated that MFPE was sufficient to replace the SPE and conventional oils.

  • In order to investigate the effect of tannic acid and ${\alpha}$-tocopherol on methyl linoleate autoxidation and on inhibition activity of lipoxygenase in phospholipid, the rate of formation of methyl linoleate hydroperoxide was measured by HPLC. The reaction mixture contained methyl linoleate 70mM, radical initiator AMVN 0.7mM, tannic acid and ${\alpha}$-tocopherol 0.7mM, each, in a mixture of hexane/isopropanol(1 : 1, v/v). Under this reaction condition, tannic acid was good enough antioxidant. The tannic acid and ${\alpha}$-tocopherol for the inhibition activivity of lipoxygenase were measured at the reaction conditions: phospholipid $1{\mu}M$. tannic acid and ${\alpha}$-tocopherol were reacted as an inhibitor of lipoxygenase in phospholipid, especialy in phosphatidy lcholine.

  • The anticarcinogenic effects of allyl methyl trisulfide(AMT) and methyl propyl disulfide(MPD) were studied in a 28 weeks rat multi-organ carcinogenesis model. Tumor incidence rate was decreased by AMT or MPD treatment comparing with the positive control. AMT treatment significantly decreased the incidence of neoplastic and preneoplastic lesions in the kidney thyroid gland urinary bladder alimentary tract lung and Zymbal's gland. MPD also inhibited incidence of noplastic and preneoplastic lesions in the liver kidney urinary bladder alimentary tract lung and Zymbal's gland but increased that in the thyroid gland. GST-p positive foci in the liver were slightly decreased by AMT or MPD. There was no significant histopathological lesions in AMT or MPD treated group without pretreatment of carcinogens.

  • To elucidate chemical strvacture of Ramaria formosa(Fr.) Quel was extracted with methanol for 72 hours, and then filtered twice. The extractive compounds were analyzed by the Libaries Search method, using GC and GC-MS Spectrometry. As a result, the five different compounds were analyzed, such as (1) methyl-hexadecanoate, (2) methyl-9,12- octadecadienoate, (3) methyl-cis-9-octadecenoate, (4) methyl-octadecanoate, and (5) 4-hexyl-2,5-dihydro-2,5-dioxo-3-furanacetic acid. The large quantity of compound, 4-hexyl-2,5-dihydro-2,5-dioxo-3-furanacetic acid, is expected that through experiments on animals the compound will be a potential agent which can be developed as a health food to relieve constipation or a laxative medicine.
