대나무 숯과 대나무 잎의 급여가 육계의 생산성과 육질에 미치는 영향 (Effects of Bamboo Charcoal and Bamboo Leaf Supplementation on Performance and Meat Quality in Chickens)

  • 본 연구는 대나무 숯과 대나무 잎의 급여가 육계의 성장과 사료효율 및 육질에 미치는 영향을 조사하기 위해 30일간 각각 0.5%의 농도로 급여하였다. 시험결과, 대숯과 대잎 시험군에서 시험기간 중 사망률은 대조군에 비해 낮아진 반면, 출하 시 체중과 증체량은 대조군에 비해 유의성 있게 증가하였다. 또한 대조군에 비해 대숯과 대잎 시험군의 사료효율도 개선되었으며, 계육의 전단력은 대조군에 비해 유의성 있게 감소하였다. 대숯을 급여한 닭에서의 지방함량은 통계학적 차이는 없었으나 감소경향을 나타낸 반면, 대숯과 대잎을 급여한 닭에서의 불포화 지방산 비율은 증가경향을 나타내었다. 계육의 관능검사 결과, 대숯과 대잎 시험군의 선호도는 대조군에 비해 높게 나타났다. 혈액 및 혈청생화학 검사항목에서는 대조군과 시험군간에 유의성 있는 차이가 인정되지 않았다. 본 시험결과는 대나무 숯과 대나무 잎의 사료첨가 급여가 육계의 성장과 사료효율 및 육질을 개선시키는 것으로 나타났다. 본 연구결과는 사료첨가제로서 대나무 숯과 대나무 잎의 유용성과 개발가능성을 시사해 주고 있다.

Underlying mechanisms of phosphodiesterase 10A and glutamate-ammonia ligase genes that regulate inosine monophosphate deposition and thereby affect muscle tenderness in Jingyuan chickens

  • Objective: Inosine monophosphate (IMP) is a key factor that imparts of meat flavor. Differences in the IMP content in the muscles were evaluated to improve chicken meat quality. Methods: For this study, the IMP content was detected by high performance liquid chromatography. The gene expression profiles of Jingyuan chickens with different feeding patterns and different sexes were analyzed by RNA-sequencing (RNA-seq). Results: Breast muscle IMP content in free-range chickens was extremely significantly higher than that of caged chickens (p<0.01). Breast muscle IMP content in hens was also higher than that of cocks, but the difference was not significant. Correlation analysis showed that the breast muscle IMP content in caged hens and cocks was negatively correlated with the shear force, and the breast muscle IMP content in free-range hens was significantly negatively correlated with the shear force (p<0.05). The two key genes associated with IMP synthesis in chickens with different feeding patterns were glutamate-ammonia ligase (GLUL) and phosphodiesterase 10A (PDE10A). Bioinformatics analysis revealed that the GLUL and PDE10A genes are involved in glutamine biosynthesis and purine salvage pathways respectively. In addition, GLUL expression was positively correlated with the IMP content in caged and free-range chickens, and PDE10A expression was significantly positively correlated with the IMP content in caged and free-range chickens (p<0.05). Conclusion: These findings will facilitate the comprehension of the deposition of IMP in the muscles and thereby aid the process of selection and breeding of good quality local chickens.

Effects of onion extracts (Allium cepa) inclusion in diets on growth performance, carcass characteristics, and bone morphometric of broiler chickens

  • Objective: Animal feed companies and researchers are currently embarking on quests for feed additives that could combat the pathogens while promoting growth as well as maintaining quality products. The current study aimed to evaluate the effects of onion extracts on growth performance, carcass quality, and bone morphometrics of broiler chickens. Methods: A total number of 200 one-day-old unsexed Ross 308 broiler chicks were assigned to 5 treatment groups, replicated 4 times. Each replicate (pens) held 10 chickens in a completely randomized design. The experimental diets were then randomly allotted to the pens which act as experimental units. The isoenergetic and isonitrogenous diets were formulated by including onion extracts at 0, 5, 10, 15, or 25 g/kg in a complete broiler diet. Feed intake, and body weight, were recorded then used to calculate feed conversion ratio. At the end of the experiment (42 days), four chickens from each pen were randomly selected for slaughter for carcass, bone morphology and sensory evaluation. Results: Results showed that onion extract supplementation did not affect (p>0.05) growth performances and meat sensory evaluation. However, there was a significantly increased (p<0.05) meat shear force in groups receiving onion extracts dietary treatments. Furthermore, onion extracts improved (p<0.05) bone morphology of broiler chickens in terms of weight, diameter, calcium, and phosphorous contents. Conclusion: In conclusion, onion extracts can be safely included in a commercial broiler diet as a growth promoter without causing adverse effects on growth performance traits and carcass quality in chickens. Onion extract supplementation improved tibia bone growth and strength in broiler chickens.

Effects of Graded Levels of Dietary Saccharomyces cerevisiae on Growth Performance and Meat Quality in Broiler Chickens

  • An experiment was conducted to investigate the effects of various dietary levels of Saccharomyces cerevisiae (SC) on the growth performance and meat quality (i.e., tenderness and oxidative stability) of Ross broiler chickens. Two hundred and forty dayold broiler chicks were fed four experimental diets with graded levels of SC at 0.0, 0.3, 1.0 and 3.0%. Each treatment consisted of six cages with 10 chicks per cage. Feed and water were provided ad libitum throughout the experiment that lasted for 5 wk. Birds were switched from starter to finisher diets at 3 wk of age. The average BW gains of broiler chickens increased (linear p<0.05) during either 0-3 or 0-5 wk of age as dietary SC levels increased. A linear effect (p<0.05) of SC on feed intake during either 4-5 wk or 0-5 wk of ages was also monitored. The addition of SC to the control diet significantly lowered shear forces in raw breast, raw thigh, and boiled drumstick meats (linear p<0.05). Upon incubation, 2-thio-barbituric acid-reactive substances (TBARS) values increased gradually in breast and thigh meats while more dramatic increase was noted in skin samples. The TBARS values of either breast or thigh meats were not significantly affected (p>0.05) by dietary treatments up to 10 d of incubation. At 15 d of incubation, TBARS values of breast and thigh meats from all SC-treated groups were significantly lower (p<0.05) than those of the control. It appears that dietary SC could enhance growth performance of broiler chickens, and improve tenderness and oxidative stability of broiler meats.

재래닭의 경영 및 판매 실태에 관한 조사 연구 (A Research on Current Farm Management and Marketing Situation of Korean Native Chickens)

  • The purpose of this research was to get basic information for the development of Korean native chicken industry by reviewing the current native chicken farm management and marketing situation of native chicken products(meat and eggs). The research was carried on the basis of the farm field survey covering 210 native chicken feeders out of 9 different local areas, and the results were as follows ; 1. Average raising size of native chicken flocks of sample farms was 1,787 heads and about 50% of those farms raised less than 500 heads chickens for self-sufficiency or on the side. 2. Most farmers made the decision to start on feeding native chickens in small scale with small amount of capital without sound feeding program, and their decision was mainly influenced by recommendation of mass-media( 19.5%) and neighbors (17.2%). 3. The average income per farm earned by raising the native chickens was 13,719 Won, and income per head of chicken was 8,800 Won. 4. About 40% of feeders expressed that the poor marketing management and lack of capital were the bottleneck to native chicken farm management. 5. About 70% of feeders evaluated the prospect of native chicken industry positively and so, about 60% of feeders hoped to expand the raising size in the future. 6. Most farmers directry made a bargain with marketer including middleman and enduser in selling the chicken products because there was not established special marketing system for native chicken products. 7. The sales age of native broiler was about 16~20 weeks and average body weight of broiler was 1.5~2.0 kg. And farm recieved price was not decided on the basis of each body weight or meat quality but only number of heads. 8. The average first egg-laying age of chickens was about 165 days and average annual laying rate was only about 56%. 9. In order to develop the successful Korean native chicken industry, followings are recommended ; 1) Reducing the production costs and increasing the productivity of native chickens should be carried out through technological research and development for sound feeding program of native chickens and sufficient fund supply. 2) Orderly native chicken marketing and pricing system should be established to give good vision about native chickens to farmers and to delight the consumers. 3) The measures for product differentiation including meat quality and nutritional value of native chicken products against other improved chickens should be actively taken by feeders and government.

Quality Assessment of the Breast Meat from WoorimatdagTM and Broilers

  • The objective of this study was to compare the characteristics that define the quality of Woorimatdag$^{TM}$ (WM, a certified meat-type commercial Korea indigenous chicken breed) and a commercial broiler breed (Ross, CB). Two hundred WM and 200 CB chickens that were 1-d-old and mixed sex were obtained from a commercial hatchery and randomly assigned to floor pens (20 chickens per pen, $3.0{\times}2.0m$) and raised under the same environmental conditions. WM breast meat contained significantly higher crude protein and ash as well as lower crude fat than CB breast meat (p<0.05). WM breast meat had slightly higher alanine, histidine, isoleucine, and glycine as well as lower phenylalanine content than CB breast meat (p<0.05), and the WM breast meat had a low ratio of unsaturated to saturated fatty acid composition (p<0.05). However, arachidonic acid composition was higher in the WM than the CB breast meat. In addition, the inosin-5'-monophosphate content was also higher in the WM compared with the CB breast (p<0.05). The WM breast meat had higher total collagen content compared with CB breast meat. WM soup taste received higher scores with regard to sensory evaluation compared with CB soup (p<0.05). From these results, we conclude that higher amount of protein and flavor precursors and lower amount of fat in the breast meat of WM could be attractive by consumer when compared with CB.

Effects of Early Feed Restriction on Growth, Fat Accumulation and Meat Composition in Unsexed Broiler Chickens

  • The present study was conducted to evaluate the effect of early feed restriction on growth, fat accumulation and meat composition in unsexed broiler chickens. Five hundred 7-day old unsexed broiler chickens were distributed into ten treatment groups with 5 pens of 10 broilers each group. One group was fed ad libitum as the control group and other nine groups were fed 25% ad libitum for 3, 6 or 9 days, 50% ad libitum for 3, 6 or 9 days, and 75% ad libitum for 3, 6 or 9 days, respectively. Thereafter, they were fed ad libitum to 56 days of age. The present results showed that broilers showed compensatory growth when they were restrict-refed. Feed conversion ratio was significantly lower in broilers fed 25% ad libitum for 9 days (p<0.05). Triglyceride concentration of serum was significantly lower in restricted unsexed broilers (p <0.01), whereas cholesterol concentration was not significantly different. Abdominal fat was significantly lower in broilers fed 25% ad libitum for 9 days, 50% ad libitum for 3 days and 75% ad libitum for 6 or 9 days (p<0.05). Moisture and protein contents of meats were not significantly affected. Ash content of meat was significantly higher in restricted broilers. Fat content of meat was lower in broilers fed 25% ad libitum for 9 days, 75% ad libitum for 3 to 9 days. In conclusion, broilers showed compensatory growth when they were restrict-refed at an early age. In order to achieve the success of early feed restriction (namely reduce fat accumulation and improve feed conversion ratio with comparable body weight at market age), unsexed broilers should be fed at level of 25 ad libi=tum for 9 days starting at 7 days of age.

산삼 배양액 급여가 육계의 육질에 미치는 영향 연구 (The Effect of Oral Administration of Tissue Culture Medium Waste of Korean Wild Ginseng on Meat Quality of Broiler Chickens)

  • 본 연구에서는 산삼의 조직 배양 후 폐기되는 산삼 배양액을 육계에 음수를 통하여 다양한 농도로 급여한 후 계육의 일반 성분, 물리화학적인 성상 및 이화학적 성상 변화를 분석하여 산삼 배양액의 효능과 첨가제로서의 가능성을 규명하였다. 산삼 배양액을 급여한 육계 가슴육의 수분 함량, 조단백질과 조지방의 함량에 유의적인 차이는 보이지 않았지만 조회분의 함량은 산삼 배양액 32 mL/L 급여군이 다른 처리군에 비하여 유의적으로 증가하는 것을 볼 수 있었다. 또한, 산삼 배양액 급여군에서 육즙 손실, 조리 감량, 전단력과 저장성은 감소되는 경향을 보이나 유의적인 차이는 보이지 않았지만 산삼 배양액 급여군의 가슴육 pH는 유의성 있게 감소하였다. 이러한 결과는 산삼 배양액의 급여에 의해 육제품에서 미생물의 번식을 억제하고 보존이나 내구성을 강화시키거나, 육계의 골격 형성과 육질 내 삼투압이나 항상성 유지에 도움을 줄 것으로 사료된다.

Polymorphisms in the Perilipin Gene May Affect Carcass Traits of Chinese Meat-type Chickens

  • Improved meat quality and greater muscle yield are highly sought after in high-quality chicken breeding programs. Past studies indicated that polymorphisms of the Perilipin gene (PLIN1) are highly associated with adiposity in mammals and are potential molecular markers for improving meat quality and carcass traits in chickens. In the present study, we screened single nucleotide polymorphisms (SNPs) in all exons of the PLIN1 gene with a direct sequencing method in six populations with different genetic backgrounds (total 240 individuals). We evaluated the association between the polymorphisms and carcass and meat quality traits. We identified three SNPs, located on the 5' flanking region and exon 1 of PLIN1 on chromosome 10 (rs315831750, rs313726543, and rs80724063, respectively). Eight main haplotypes were constructed based on these SNPs. We calculated the allelic and genotypic frequencies, and genetic diversity parameters of the three SNPs. The polymorphism information content (PIC) ranged from 0.2768 to 0.3750, which reflected an intermediate genetic diversity for all chickens. The CC, CT, and TT genotypes influenced the percentage of breast muscle (PBM), percentage of leg muscle (PLM) and percentage of abdominal fat at rs315831750 (p<0.05). Diplotypes (haplotype pairs) affected the percentage of eviscerated weight (PEW) and PBM (p<0.05). Compared with chickens carrying other diplotypes, H3H7 had the greatest PEW and H2H2 had the greatest PBM, and those with diplotype H7H7 had the smallest PEW and PBM. We conclude that PLIN1 gene polymorphisms may affect broiler carcass and breast muscle yields, and diplotypes H3H7 and H2H2 could be positive molecular markers to enhance PEW and PBM in chickens.

감귤 부산물 급여가 냉장 중 토종 닭고기의 표면 색도, 지방산패도 및 선도에 미치는 영향 (Effects of Citrus Byproduct Diet on Meat Color, Rancidity and Freshness in Korean Native Chickens during Cold Storage)

  • 감귤 부산물 급여가 냉장 중 토종닭고기의 품질에 미치는 영향을 검토하였다. 실험에 이용한 토종닭고기(39주령, $1.30{\pm}0.5$ kg)는 감귤 부산물을 급여하지 않은 T0구, 17주령부터 39주령까지 감귤 부산물을 4% 급여한 T1구로 나누었다. 각각 가슴살과 다리살을 진공포장하고 $3^{\circ}C$에서 2주일간 냉장하면서 표면 색도, 지방산패도, 항산화력 및 선도 변화에 대하여 실험하였다. 감귤 부산물 급여구(T1구)는 T0구보다 냉장 중 표면 색도의 $L^*$ 값, $a^*$ 값, $b^*$ 값의 변화가 느리게 나타났다. T1구는 T0구보다 냉장 중 산가, 과산화물가, TBA 값의 상승 속도가 늦었으며 항산화력이 우수하였다. T1구는 T0구보다 냉장 중 휘발성 염기질소 함량 및 일반 세균수의 증가 현상이 느리게 나타났다. 결론적으로 감귤 부산물 급여에 의하여 냉장 중 토종닭고기의 표면 색도, 지방산패도, 선도의 변화가 억제되고 전자공여능 값이 높게 나타나서(p<0.05) 품질 유지에 좋은 효과가 있는 것을 확인할 수 있었다.
