Effects of Dietary Supplementation with Rosemary and α-Tocopherol Acetate on Performance and Meat Quality of Chicken Meat during Refrigerated Storage (로즈마리와 α-Tocopherol Acetate의 급여가 육계의 생산성 및 냉장 저장 중 계육의 품질에 미치는 영향)

  • The effects of rosemary and $\alpha$-tocopherol, added individually or in combination, on broiler performance, thiobarbituric acid reactive substance (TBARS), total plate count (TPC) and meat color of chicken thigh meat were investigated. Three hundred broiler chicks divided into five groups were fed a basal diet (control) or basal diet supplemented with 5 g rosemary/kg (T1), 10 g rosemary/kg (T2), 200 mg $\alpha$-tocopherol/kg (T3), or 5 g rosemary/kg + 200 mg $\alpha$-tocopherol/kg (T4) for 5 weeks. Following slaughter, chicken meat was stored at $4^{\circ}C$ for 10 days. All treatments did not influence the performance. Rosemary supplementation delayed lipid oxidation in thigh meat during refrigerated storage. T2 was significantly (p<0.05) more effective in delayed lipid oxidation compared to T1, but was inferior to T3. Samples containing a combination of antioxidant had lower TBARS values than those containing the individual antioxidants, indicating a synergistic effect. TPC was significantly increased (p<0.05) in thigh meat of all groups throughout the refrigerated storage. The T3 and control groups showed TPC counts that did not differ from each other during the entire storage period. However, rosemary supplementation was associated with bacterial counts that were significantly lower (p<0.05) than the control and $\alpha$-tocopherol groups at day 3 of storage and thereafter. For this period, T1 presented TPC counts that were significantly higher than the T2 group (p<0.05). At all storage times, the thigh meat of rosemary-fed chickens was redder than control (higher $a^*$), while no differences in $L^*$ and $b^*$ values were found. A synergistic effect was obtained from the combination of rosemary with $\alpha$-tocopherol, whereas individual use of the antioxidants significantly improved color stability compared to the control.

  • To investigate the differences in the quality characteristics between commercial Korean native chicken (KNC) and broiler (CB), nutritive and quality parameters of the two chicken species were determined. The KNC thigh muscle had a lower content of crude fat and higher crude ash than the CB thigh. In regards to the fatty acid composition, KNC breast muscle had a higher content of arachidonic acid (C20:4) than CB. The level of inosine was higher in the CB thigh muscle than KNC but there was little difference in other nucleotide compounds. The KNC breast had higher amounts of glycine, alanine, and proline than CB, which are closely related to high quality meat flavor. The sensory acceptance was not significantly different between the breast and thigh of KNC and CB. However, KNC had higher cohesiveness, chewiness and gumminess than CB, which are indicative of a unique texture property. Based on these results, commercial KNC may have superior nutritional quality, taste, and unique texture when compared with CB. Thus, the consumer preference for KNC may be partially explained by these distinctive quality characteristics.

  • The study was made to analyse the trend of food consumption in Korea from 1960 to 1970. Six kinds of statistical yearbooks in Korea was quoted for the basic data of this study. The results of this study are as follows: 1) The growth rate of populations in Korea from 1960 to 1970 was $2.0{\pm}0.4%$. 2) The production of foods in Korea was irregular by climate and natural phenomania. 3) There were the reverse trade phenomenia except vegetables, fruits and fishery products in export and import of food. 4) The monthly consumption expenditure per family in all city in Korea was \7,080 in 1963, and \29, 900 in 1970. 5) Food consumption in all expenditure was \3,840 in 1963, and \12,120 in 1970. 6) Percentage of food consumption of all expenditure was 54.2% in 1963, and 40.5% in 1970. 7) Cereal in food expenditure was \1,770 in 1963, and \5,060 in 1970. 8) By the growth of western style of life, there was a increase of western food consumption. 9) Engel index in Korea was 54.25 in 1963, and 40.46 in 1970. 10) We found slightly consumptional trend in plant origin food and highly trend in animal origin food. 11) Among the animal food consumption, chickens, canned meat, milk, eggs, and dried milk were highly consumed.

Toxin Gene Typing, DNA Fingerprinting, and Antibiogram of Clostridium perfringens Isolated from Livestock Products

  • Forty Clostridium perfringens isolates were obtained from twelve animal products, following the examination of eighty six beef, pork, broiler chicken and salami meat products, and eleven milk powder products. There were 21 isolates from salami stored at $25^{\circ}C$, 3 isolates from pork, 4 isolates from beef, 9 isolates from broiler chicken, and 3 isolates from milk powder. Only the cpa gene encoding a toxin among the 5 toxin genes tested (cpa, cpb, etx, iap, and cpe) was detected in all forty isolates, suggesting contamination with C. perfringens type A. DNA fingerprinting analysis using PCR of the tRNA intergenic spacer (tDNA-PCR) and the 16S-23S internal transcribed spacer (ITS-PCR), and randomly amplified polymorphic DNA (RAPD) analysis were attempted to differentiate the isolates. RAPD analysis was the most discriminating method among the three PCR analyses. Isolates from the same products tended to show similar RAPD patterns. Antimicrobial susceptibility tests showed that some isolates from broiler chickens had the same antibiogram with multiple resistance to streptomycin, colistin, and ciprofloxacin. Antibiograms were similar between isolates from the same livestock products, but differed considerably between the products.

  • Saccharomyces cerevisiae(SC)가 육계의 성장능력과 육질 개선효과가 있는지 알아보기 위하여 2회의 사양시험을 수행하였다. 실험1에서는 갓 부화한 160수의 수컷 병아리를 두 처리로 나눈 후에, 각각 0 % 와 3.0 %의 SC를 함유한 사료를 5주간 급여하였다. 실험2에서는 240수의 수컷 병아리를 4처리로 나눈 후, 각각 0, 0.3, 1.0 및 3.0 %의 SC를 역시 5주간 급여하였다. 실험1에서는 SC 급여구는 무급여구에 비하여 체중이 무거운 경향을 보였으나 유의성은 없었다 (P>0.05), 실험2에서는 SC 급여수준이 증가함에 따라 체중과 사료섭취량이 유의하게 증가하였다(linear P<0.05). 실험1에서 SC 첨가는 다리근육(drumstick)의 전단력을 유의하게 감소시켰으나, 삶은 다리근육 에서는 이러한 효과가 관찰되지 않았다. 실험2에서는 흉근과 대퇴근 및 다리근육 및 피부의 산화 안정성은 SC 첨가에 의하여 유의하게 개선되었다.

Campylobacteriosis and Control Strategies against Campylobacters in Poultry Farms

  • Campylobacteriosis is a significant foodborne illness caused by Campylobacter bacteria. It is one of the most common bacterial causes of gastroenteritis worldwide, with poultry being a major reservoir and source of infection in humans. In poultry farms, Campylobacters colonize the intestinal tract of chickens and contaminate meat during processing. Vaccines under development against Campylobacters in poultry showed partial or no protection against their cecal colonization. Therefore, this review will elaborate on campylobacteriosis and emphasize the control strategies and recent vaccine trials against Campylobacters in poultry farms. The epidemiology, diagnosis, and treatment of Campylobacter infection, along with specific mention of poultry Campylobacter contamination events in Malaysia, will also be discussed.

Effect of Reverse Osmosis-treated Deep Sea Water Supplementation on the Quality Characteristics of Chicken Meat (역삼투 처리한 해양 심층수의 급여가 닭고기의 품질 특성에 미치는 영향)

  • This study was carried out to investigate the effect of reverse osmosis (RO)-treated deep sea water (DSW) supplementation on the quality characteristics of chicken breast meat. For 28 days, one-day-old broiler chicks (Ross 308) were divided into two groups and supplemented with either water (control) or RO-treated DSW (diluted with deionized water at 1:20 [RO-treated DSW:deionized water] ratio). The control group was fed on a basal diet containing 0.21% salt. Five birds were slaughtered on each group and breast meat from carcasses was stored at $4^{\circ}C$ for 9 days. The proximate composition, fatty acid composition, cholesterol content, mineral content, pH value, water-holding capacity and Warner-Bratzler shear force value were not affected by RO-treated DSW supplementation. At 6 day of storage, lipid oxidation (2-thiobarbituric acid reactive substances) was significantly higher in RO-treated DSW group than in the control (P<0.05). With regard to meat color, CIE $L^*$ value was significantly lower in RO-treated DSW group than in the control after 6 day of storage (P<0.05), whereas CIE $a^*$ and $b^*$ values were not significantly different between two groups during storage. Consequently, RO-treated DSW supplementation led to a darker color and reduced the lipid oxidation stability in chicken meat during storage. Therefore, these results may indicate that RO-treated DSW can not be used as drinking water of chickens because it negatively affects the quality of chicken meat.

Effects of Dietary Selenium Sources on Performance and Selenium Retention in Broiler Chickens and Laying Hens (Selenium의 첨가가 육계 및 산란계의 생산성 및 축적에 미치는 효과)

  • Two experiments were conducted to investigate the effect of dietary selenium sources on performance and selenium retention in broiler chickens and laying hens. In experiment 1, the effects of dietary selenium sources and levels on the weight gain, feed intake, feed conversion, and selenium retention of meat in broiler chickens were investigated. for each growth phase, the basal diet was supplemented with 0 (control), 0.12 and 0.24 ppm Se from sodium selenite (SS) and 0.12, 0.24 and 0.60 ppm Se from selenium yeast(SY). Weight gain was significantly increased(P<0.05) in supplemental 0.24 and 0.60 ppm SY compared to the 0.24 ppm SS by diet during day 1 to 35, but feed intake and feed conversion were not affected by the source or the level of Se. Selenium concentrations of breast and leg muscle were significantly increased(P<0.05) in supplemental SS and SY compared to the control, and linearly increased(P<0.05) as dietary. Se level increased by SY, but there was no difference in supplemental 0.12 ppm SS compared to 0.24 ppm SS. In experiment 2, 12-week-experiment using Hy-Line laying hens(31 wk of age) was conducted to compare the effects of selenium sources and levels on egg production, egg weight, daily egg mass, feed intake, feed conversion, egg quality, and selenium retention of egg in laying hens. A corn-soybean meal basal diet was supplemented with 0 (control), 0.06 and 0.12 ppm Se from sodium selenite (SS) and 0.06, 0.12 and 0.30 ppm Se from selenium yeast(SY). Feed conversion was significantly improved(P<0.05) in supplemental 0.06 ppm SS compared to the control, but egg production, egg weight, daily egg mass, and feed intake were not affected by source and level of Se. Haugh unit was not affected by source or level of Se. Yolk color was significantly(P<0.05) higher in supplemental 0.3 ppm SY compared to the control and other supplement in week 12. Eggshell breaking strength was significantly(P<0.05) higher in supplemental 0.06 ppm SY(P<0.05). Thickness of eggshell was not affected by source or level of Se. Se concentrations of egg was significantly improved(P<0.05) in supplemental SS and SY compared to the control, and was significantly increased(P<0.05) as dietary Se level increased by SS and SY, especially SY more effective compared to the SS.

Effects of Dietary Organic Selenium Levels on Performance and Selenium Retention in Broiler Chickens and Laying Hens (유기태 셀레늄의 첨가가 육계 및 산란계의 생산성 및 셀레늄 축적에 미치는 영향)

  • Two experiments were conducted to investigate the effect of dietary organic selenium levels on performance and selenium retention in broiler chickens and laying hens. In experiment 1, the effects of dietary organic selenium levels on the weight gain, feed intake, feed conversion, and selenium retention of meat and liver in broiler chickens were investigated. For each growth phase, the basal diet was supplemented with 0 (control), 0.60, 1.20, 1.80 and 2.40 ppm Se from selenium yeast(SY). Weight gain, feed intake, and feed conversion were not affected by the selenium addition in diets. Breast muscle Se levels were linearly increased (P<0.05) as dietary Se level increased by SY. Selenium concentration of liver tissue was increased (P<0.05) in supplemental SY compared to the control, and was increased (P<0.05) in supplemental 1.20, 1.80 and 2.40 ppm SY compared to the 0.60 ppm SY. In Experiment 2, 12-week-experiment using Hy-Line laying hens (68 wk of age) was conducted to examine the effects of dietary organic selenium on egg Production, egg weight, daily egg mass, feed intake, feed conversion, egg quality, and selenium concentration of eggs. A corn-soybean meal basal diet was supplemented with 0 (control), 0.30, 0.60, 0.90 and 1.20 ppm Se from selenium yeast (SY). Egg Production was significantly improved(P<0.05) in supplemental 0.30 and 0.90 ppm SY compared to the control and 0.60 ppm SY during week 1 to 12, but daily egg mass, feed intake, and feed conversion showed no difference in supplemental SY and control. Haugh unit, yolk color and eggshell breaking strength showed no difference in supplemental SY and control. Eggshell thickess was significantly (P<0.05) higher in supplemental 0.60 and 1.20 ppm SY compared to the 0.90 ppm SY in week 9. Egg Se levels were linearly increased (P<0.05) as dietary Se level increased by SY.

The Quality Attributes of Chicken Meats Imported from Korea and Other Countries in Japanese Market (일본시장에 유통중인 한국산과 각국산 닭고기의 물리화학적 및 미생물학적 품질 비교)

  • This study was carried out to examine the physicochemical and microbiological characteristics of Korean and other countries chicken circulated in Tokyo, Japan. The breast meats of Korean, Japanese, and Chinese chickens and thigh meats of Korean, Japanese, Chinese, American, and Thai chicken were used. In the proximate analysis of breast meat, Korean chicken had the lowest crude protein and crude ash(P<0.01), but showed the highest content of moisture(P<0.001). TBA values of Japanese breast meat were higher than Korean and Chinese one. In thigh meat, crude fat of American one was significantly higher than the others(P<0.001), and had very high bacterial counts. Korean chicken thigh meats showed the lowest VBN values.
