The purpose of this study was to compare the anthropometry and nutrition knowledge, food behaviour and lifestyle of women college students with different obesity indexes. The subjects were 251 women college students who were randomly selected from Kunsan National University. The height, body weight, soft/lean mass, fat mass, percentage of body fat, and fat distribution were measured, and health-related lifestyle habits were evaluated based on questionnaires. The subjects were assigned to one of the following groups based on their Body Mass Index (BMI) : underweight, normal weight and overweight. The results were as follows. Their body weight, soft/lean mass, fat mass, percentage of body fat, and fat distribution were significantly higher in the overweight subjects when compared to the underweight or normal weight subjects. Standard of living, self-recognition of health status and duration of exercise were significantly correlated with their BMIs. Self-satisfaction with body weight decreased as the BMI increased. Most subjects had poor habits such as skipping meals and lack of exercises. The overweight and the underweight groups skipped meals more frequently than the normal weight group. There were no significant differences in the scores on the nutritional knowledge and the dietary behaviour of the subjects with different BMIs. Therefore, proper nutritional education on regular meals and intervention are required if women college students are to have normal weights and healthy lifestyles. The purpose of this study was to assess how the changes in the food services environment on patients satisfaction with the hospital food service. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The flow line and environment of the food services in the hospital were improved through remodeling, which included the replacement of all cooking utensils, ventilation facilities and material storages, the purchase of a combi steamer, and the change of meal carts and trays. After the remodeling, the hospital food service was improved so that it provided spoons at each meal, diversified the menu utilizing the combi steamer, served event meals three times a week as well as water boiled with burned rice in the morning twice a week. In addition, various types of tableware were used in the table settings to produce attractive visual effects. Among the 10 items included on the patient satisfaction questionnaire, ″satisfaction with offered menus″ (p < 0.01) showed significantly higher scores before the remodeling. ″cooking/seasoning of food″, ″amount of meals″ and ″taste of meals″ were not statistically significant, but showed increased satisfaction after the remodeling. However ″temperature of food″, ″cleanliness of clothes and features″ and ″satisfaction with meal times″ were not statistically significant, but showed decreased satisfaction after the remodeling. The purpose of this study was to investigate eating habits and dormitory foodservices' satisfaction in university students using dormitory foodservice in the Jeollabuk-do Iksan area. Self-administered questionnaires were completed by 195 students (86 male, 109 female). Many students (58.5%) ate less than two meals per day and spent around 30 min eating meals. The results show that snack and midnight meals were the main reasons (37.9%) for unhealthy eating habits. Main source of nutritional knowledge and information were TV and the Internet (58.5%), followed by friends and people (25.1%), nutrition books (10.3%), elective courses (4.6%), and newspapers and magazines (1.5%). Men had significantly higher satisfaction scores for nutrition, taste, diversity of menu, as well as hygiene of dormitory food court compared to women (p<0.05). Salty taste was the most important factor in evaluation of taste satisfaction, whereas sour taste was opposite. The reason for taste dissatisfaction in the dormitory food court was not salty enough, and it may be related with their eating habits. The results show that students need education for adequate knowledge and information about the relationship between health and nutrition.
Two Phytase-producing bacteria isolated from the fermented soybean and corn meals, Enterobacter cloacae and Bacillus lichenifomis, were used to investigate the degradation of phytic acid and changes of some nutrient contents in fermented soybean and corn meals. The pH in fermented soybean meal with E, cloacae was rapidly dropped after 48 hours, but the pH in fermented corn meal was declined gradually for 5 days. The degradation of phytic declined acid were optimized at $35^{\circ}C$.pH 8.0 for 5 days and at $30^{\circ}C$, pH 7.0 for 5 days fermented with E. cloacae and B. iichenifomis, respectively. Riboflavin and vitamin $B_{12}$ contents were greatly increased after the fermentation with these two bacteria, and also available lysine, methionine and tryptophan contents were greatly increased.

The study was designed to investigate the relationship between dietary intakes and the obesity of 400 students who were the third grade in middle school in some areas of Seoul. The survey conducted from March 3 to 13 , 1993. The results obtained were summarized as follows :The average height and weight of surveyed subject were similar to that of standard ( the third grade students in middle school in Seoul, 1991) . Compared to the standard weight/height ratio, subject who belonged to overweight and obese group were 16.4% of male students, 16.1% of female students respectively. Female subjects showed higher ratio than male subjects in skipping meals, frequency of snack per day and concern about a dieting . In case of subjects who belonged to weight /height ratio was high, their speed of dining was fast and they have more concern about a dieting. Compared to the amount of the nutritional intakes of RDA, calcium intakes of male and female subjects were deficient. Especially iron intakes of female subjects were deficient. In takes of Calorie (p<0.01) protein(p<0.05) and fat 9p<0.01) of obese group were higher those of non-obese group. Obese group showed good appetite and overeating also . Correlation analysis showed that obese group seemed to the closely associated with relative body weight of parents, family income, frequency of meals per day, frequency of meals per day, frequency of snack per day, speed of dining and overeating .
The objective of this study was to investigate the dietary behavior and preference of vegetable food and to provide preliminary data required for menu promotion for middle school students' proper diet habits for their health. A survey was conducted for one week(2007) in Kyounggi province(Ansan and Seoul). The result was as follows. Three times a day was the highest in the number of eating meals and boiled rice. In the preference of food items, the meat food was more preferred than the vegetable food. In case of vegetable preference, males were higher than females. Many students recognized one dish of vegetable food in their meals. 72.4% of students ate less than provided in the food service system. Also, 7% of students did not eat vegetable foods entirely. They have had 1/2 dish(35.2%) of Kimchi in their meals and only 10.6% of students didn't eat Kimchi at all. The reason that students ate vegetable provided was 'for eating rice'(47%). Also, the reasons that students do not eat vegetable provided were 'bad taste' and 'unfavorite vegetable'. The above results indicated that it was needed to understand the importance of vegetables and education about the nutrients of vegetables.

The purpose of this study is to examine the local farmers' perceptions toward the use of local food for school meals from the suppliers' perspectives. Data was collected from 12 school-meal management centers which provide the name list of local farmers. from the provided list, 167 people were selected, who were asked to answer the self-administerd questionnaires by post. 87 responses were returned, having shown the response rate was 50.1%. The data were analyzed by using SPSS 15.0 for descriptive analysis. The findings from this study are as follows: First, the local farmers has a positive attitude toward certified and supply methods for local food whereas price and selling quantity of local food were dissatisfying; Second, local farmers prefer to use public supplying chains such as school-meal support centers rather than private ones. Furthermore, they like to directly contact with a school in terms of supplying local food. To establish self-selling systems, computer programs like ERP should be adopted to effectively manage the production process of local food. On conclusion, implications and limitations were discussed.
This study investigated the nutrient contents, nutrient density. and food group intake patterns of elementary school lunch programs in Kesngju. Four hundred students from four elementary schools participated in this study. Menus served in 60 schools on a weekly basis during each season were analyzed. Parents regarded hygiene as the most important factor in their children's diet. but they showed little concern for the necessity of nutrition education in the school curriculum. Parents considered that the most significant benefit of their children eating school lunches was to reduce unbalanced diets. On the other hand. children considered to be able to be on intimate terms with their friends as the greatest benefit of the school lunch program. The contents and nutrient densities of the meals provided were higher than those calculated from the Korean RDA. However, the content and nutrient density of iron were lower than those calculated from the RDA for 10 to 12 year old girls. The content of sodium was very high. Therefore the nutritionists should consider the Iron and cut down the amount of sodium. The 91.7% of 1,200 meals served contained more than four food groups and the school lunch program provided a sufficient variety of foods. In conclusion. the quality of nutrition in meals served by school lunch programs was considered satisfactory overall.
This study was conducted to find the gender and age differences in dietary behaviors and food consumption pattern of Korean American adults living in western parts of USA. The structured survey forms and self-administered food frequency questionnaire were used to assess dietary behavior and nutrient intakes. It was found that younger subjects kept their meal time more irregularly and skipped breakfast more often than older subjects due to lack of time. There were significant age differences in skipping meals, kind of skipping meals, and the reasons for skipping meals. Young subjects consumed more American type food while older subjects consumed more traditional Korean food. Nutrient intakes of males' except for the elderly were significantly higher in energy, protein, Fe and P than those of females'. Vitamin A and vitamin C intake were significantly higher in females. Energy ratio of carbohydrate: protein: fat was 56.2 : 16.8 : 27.0. Females consumed more plant food as their dietary sources of protein, fat, Ca and Fe, compared to males. Ca intakes of participants' were below $75\%$ of RDA except for the youngest male and $30\~49$ aged male and females. Futhermore, Ca intake was below $70\%$ after age 50 in both genders. Effective nutrition education program targeting Korean Americans in the community should be developed and implemented to increase Ca consumption.
The purposes of this study were to : (a) investigate overall operating conditions of university residence hall foodservice, (b) compare them by the management systems. Questionnaires were hand delivered and mailed to 73 foodservice managers. A total of 56 were usable; resulting in 76.7% response rate. The survey was conducted between October, 1998 and May, 1999. Statistical data analysis was completed using the SAS/Win 6.12 for Descriptive Analysis, $x^2-test$. Sixty-four percent of the foodservice operations were 'self-operated'; 23% were 'contracted'; and 13% were 'rented'. Eighty-three percent of operations provided 'single menu'; forty-six percent of foodservice operations with 'partially self-service'; and forty-one percent with 'complete self-service'. Forty-four percent of overall foodservice operations provided 1,000-2,000 meals per day; thirty-one percent provided less than 1,000 meals per day, and twenty-four percent provided more than 2,000 meals per day. The highest meal price was 1,950 won and the lowest was 700 won with average of 1,295 won. The mean number of employees was 12.2; the number of working hours was 59.7 hours per week.
