This study was conducted among the university students to investigate the effects of working in an daytime and studying in an evening class on dietary behaviors and nutrient intakes. A 24-hour recall method was used along with food frequency questionnaires. The subjects were composed of three groups : 172 were in the daytime calss regular student group(RS), 178 were evening class students without a job(ESWOJ), and 140 were evening class students with a job(ESWJ). An average age of the ESWJ was 31 years old, which was 9 years older than the RS and 7 years older than the ESWOJ. The types of the residence were significantly different among the groups ; were seif-boarding 74% of the ESWJ stayed at home while 47% of the RS were self-boarding and 61% of the ESWOJ. The survey shows that while a great majority of the RS and ESWOJ has breakfast and supper at home, about 10% and 17% of the ESWJ ate breakfast and supper, respectively, at the cafeteria in their work place. The most frequently skipped meal was the breakfast in all groups. Approximately 9% of the ESWJ tended to skip the breakfast, while 27% of the RS and 33% of the ESWOJ did. It turns out that the mose common reason why ESWJ skipped meals was due to a lack of time. About 71% of the ESWJ ate out more than once a week compared to 57% and 62% of the RS and ESWOJ, respectively. The results show that the ESWJ tended to eat a variety of food s and eat less instant foods, but drink coffee more often compared to the other two groups. The results also show that in all groups, the intakes of energy, Ca, and vitamin A were lower than the Korean Recommended Daily Allowances(RDA). In addition to these nutrients, protein, vitamin B1, vitamin $B_2$, and niacin were also lower than the RDA in all make students, and Fe was lower than the RDA in all female students. Among the deficient nutrients, vitamin A showed the lowest % RDA : 48% in the male and 64% in the female students. The intakes of Ca, Fe, and niacin in the ESWJ were significantly greater than those in the RS and ESWOJ groups, and the vitamin C intake in the ESWJ was greater than that in the ESWOJ(p<0.01). In conclusion, university students in all three groups have a serious imbalance in the nutrient intakes, and the evening class students with a daytime job have unhealthy dietary behaviors in the light of high frequency of eating out and heavy coffee drinking, a rushed eating pattern, and therefore showing a strong need of proper nutritional education for them.
This study aims to identify the nutrition knowledge, attitude on dietary life and eating habits of 281 high school students in Bucheon area and investigate difference and correlation among the factors: details of nutrition knowledge, attitude on dietary life, dietary habit, meal manager and the Body mass index(BMI). Data were analyzed by descriptive analysis, $\chi^2$-test, t-test, Pearson's correlation coefficients and ANOVA test using SPSS window program. The results show that parents were the most influential group in dietary habits and the group of friends were followed. The nutrition knowledge score of female students was higher than the score of male students. There was a significant difference between nutrition knowledge and attitude on dietary life by meal manager. Especially, nutrition knowledge showed the highest difference when they answered that the meal manager was a mother, and the subject 'eating regular meals' was significant when the meal manager was his/her mother. According to the result of the difference by meal manager, respondents preferred eating snacks the most when father was in charge of meal preparing. This group also preferred eating out than the other groups. Moreover, there was a significant correlation between nutrition knowledge and attitude on dietary life.
The purpose of this study was to investigate the lift-style and eating behavior of stomach cancer patients in the Daegu and Kyungpook area, and to collect basic data for nutrition education designed to prevent stomach cancer in this community. The subjects of the study were 102 patients who were recently diagnosed as having stomach cancer at the Kyungpook National University Hospital. The control subjects were 105 persons who did not have any gastrointestinal disease, and included patients from the Department of Orthopedic Surgery and healthy volunteers. The survey, which covered the personal characteristics and eating behavior of the subjects, was conducted by individual interviews using questionnaires. It was found that the stomach cancer patients (case group) had experienced a significantly higher level of stress in their daily lives than the control group. A significantly higher proportion of the case group subjects recognized their personality as pessimistic, and had family histories of cancer, compared with the control group subjects. The cancer patients had higher preferences for salty and hot tasting foods, and tended to ingest meals faster without enough chewing, compared with the control subjects. The level of nutritional knowledge of the case group was lower than the control group, and there was a positive correlation between subjects' nutritional knowledge scores and nutritional attitude scores. Subjects' estimates of their food intake frequencies during the decade before the cancer was diagnosed revealed that the case group consumed significantly higher amounts of pickled fish, soybean paste soup and stew, cooked vegetables, beef and pork, charcoal broiled meat and alcohol, while consuming significantly lower amounts of green tea than the control group. In summary, the results of the study suggest that the stress of daily life, a family history of cancer, and a pessimistic personality might be the risk factors for the development of stomach cancer. Dietary factors which were suspected as risk factors for stomach cancer in the present study included strong preferences to salty and hot lasting foods, poor eating habits, and frequent consumption of pickled fish, soybean paste soup, cooked vegetables, beef and pork, charcoal broiled meat and alcohol. A high consumption of green tea seemed to be a protective factor against stomach cancer. The results of the study appear to provide useful data for nutritional education focussed on the prevention on stomach rancor in local residents.
The purpose of this study was to find the proper methods of school food service conducted from June 20th July 30th in 1996. The subjects of this study were 587 parents of students, 794 students and 359 school teachers at 508 middle and high schools in Seoul and Kyunggi area. And the result was as follow. A total of 48.3% of respondent answered they had breakfast regularly. The reasons why they had breakfast, were habits(34.4%) followed by hunger(28.2%), health(19.9%), parent's persuasion(17.5%). They reasons why they didn't have breakfast are, lacks of time(68.8%) followed by absence of appetite(20.5%), diet(4.5%). About the question the problem of eating habits the most of parents of students, chose an unbalanced diet(25.9%), followed by overeating of snacks(21.7%), voracious eating(18.0%), not eating meals(17.5%), eating little(10%) and overeating(6.8%). At the research of an unbalanced diet, the 63.3% of respondents said they eat evenly while the 36.7% said they had an unbalanced diet. From the research of correlativity between food service at elementary schools and eating habits, we knew that the experience of school food service had an effect on an unbalanced diet. And the students living in Seoul complained more than in Kyunggi. The question about the quality of food, 69.0% of respondents said they were not so bad. While 21.2% said not delicious at all just 9.8% of students said they were very satisfied with the taste. Interestingly, more middle school students both in Kyunggi and Seoul answered the food was delicious than high school students. About the question of the price, 49.5% of students thought appropriate(49.5%) while 44.3% said it was too high. Just 5.9% students answered cheap(5.9%). And students living in Kyunggi thought the price was high than students in Seoul. 62.9% of respondents think their refectories were clean while 22.8% think not clean. And 14.3% answered said dirty. Snack bars at school were managed by the contract with trusters(63.2%), while by the school itself(32.6%).
Housewives' perception on obesity related variables to their family members according to the composition of children in the family was explored. Ninety housewives responded to a questionnaire consisted of sociodemographic informations, body weight perception, eating behaviors perception, and physical activity level for herself as well as her family. They were categorized into three groups based on child composition of the family; boys only (BO), girls only (GO), and boys and girls (BG) families. Boys in BO showed higher value of height, weight, and WHR than girls in GO (p <.05), while no differences were noticed in BMI and the waist girth between the groups. Mothers of BO perceived boys were active while mother of GO did girls were inactive (p <.05). Girls in GO ate meals less regularly than boys in BO and girls in BG. In general, housewives' perception on body weight of family members was relied on BMI and waist girth. As mother's BMI increased, the boy's BMI in BO was also elevated (p <.05), but not in others. Mothers' perception on caloric intake and activity encouragement were not accounted for morphological characteristics. Results suggest that housewives perceived obesity related variables differently based on the composition of children of the family.
The effects of the mouth care using cool sterile normal saline on oral stomatitis were investigated in 59 patients on chemotherapy. The subjects were divided into two groups, one was experimental group(N=31) in which the subjects were provided mouth care 4 times a day (after meals, before bedtime)with cool normal saline, the other was the control group(N=28), The Oral Assessment Guide(OAG) which it includes eight items(voice, swallowing, lips, tongue, salivation, oral mucous membrane, gingiva & teeth) was used to assess oral status six times(once in the Prechernotherapy Period, and on the third, 5th, 7th, 10th & 14th day postchemotherapy). The means of the total scores at each time were analyzed by repeated ANOVA The results are as follows : 1. The incidence of stomatitis was higher in the control group than in experimental group. The incidence of third grade stomatitis characterized by bleeding, sore, infection & severe pain was 3.3% in the experimental group, and while 21.4% in the control group(p=0.01). 2. The number of stomatitis sites which were occurred in the experimental group were significantly lower than in the control group(p=0.046). 3. The grade of stomatitis(mean of total score) for patients in the control group was significantly higher than for patients in the experimental group (p=0.005). 4. In the control group, voice change increased in the period between the seventh and tenth day after chemotherapy (p=0.04). 5. In the control group, swallowing difficulty was mest severe in the period between seventh and tenth day(p=0.05), and decreased by the fourteenth day(p=0.01). 6. Changes in the lips gradually increased after chemotherapy in the control group(p=0.0025), while they were significantly lower in the experimental group(p=0.0002). 7. The increment of tongue changes started on the third day after chemotherapy reached a peak on the tenth day and decreased by the fourteenth day in both groups(p=0.0016). 8. Driness of the mouth reached a peak on the seventh day after chemotherapy in the control group (p=0.05). 9. The degree of oral mucositis was significantly higher in the control group than in the experimental group(p=0.02) . In the control group, the mucosal change started three days after chemotherapy and reached a peak on the tenth day(p=0.03). 10. Changes in the gingia were significantly higher in the control group(p=0.03). In control group, the degree of gingivitis reached a peak on the tenth day. In conclusion, meuth care with normal saline four times a day could reduce the incidence and grade of stomatitis. Stomatitis was shown to begin on the third day after chemetherapy, reach a peak on the tenth day and be reduced by fourteenth day.
This study investigated the effects of education program conducted through individual home visit by CHPs, which was developed ,by the operational re-search technique for families of dementia patients. (Yeo Shin Hong et at,1994) The study was conducted in the form of a primary experimental design with 43 people as subjects, including dementia patients and family member in several Myon areas of Chungcheong Namdo between June 10 and August 20, 1994. The data was collected by questionnaires through the home visit by the CHPs. The results of study are as follows. 1. There is no difference in the quality of life between before and after the education program. 2. Role stress 'before the education program' was significantly different than 'after the education program'. 3. There was no difference in the feeling of burden between before and after the education program. 4. There was a significant difference in the abnormal behaviors of patients between before and after the education program. 5. The knowledge of dementia by the patient's family increased significantly after the education program, compared to that of 'before the education program'. 6. There was a significant difference in the attitude of family members toward the education program on dementia between before and after the education program. 7. The results of analysis on the coefficient relationship of various variables showed that the age of patients and family members have a significant correlation with role stress(p=.01). 8. In the subjective evaluation of family members on changes in actual nursing actions and the improvement of knowledge and technique in terms of daily living, (including abnormal behavior of patients, adjustment of environment for patients, activity programs for patients, communication technique with patients, ensuring the safety of patients, clothing, meals and elimination, 60-65% of family members responded that their knowledge had increased. As for improvement in techniques for each item, the technique for communication with patients showed the greatest improvement while the action program method for patients showed the least change. As for the nursing service provided to patients, most respondents showed a positive change. The specific items for which more than 80% respondents answered positively were as follows : recognizing the demand of patients, getting patients to do simple house works, talking softly and gently, removing dangerous things, preparing comfortable clothes that are easy to put on and take off, and limiting water consumption at night. As a result of study, the following suggestions can be made. The purpose of the study was to examine the effect of an education program developed and applied for dementia patients and family members in the community. This needs to be compared with a similar study conducted in the urban setting. In addition, a community service program (ex : nursing hem and shelter) including the application of the education program should be developed and the study done to investigate its effect.
Fire fighters should eat their meal very fast in order to arrive in the emergency scene on time. The purpose of the study is to investigate the influence of eating speed on the health of the fire fighters. The subjects were fire fighters, National maritime police, soldiers, public officials, university students, and company employees. The fire fighters had the shortest eating time of 8 minutes 29 seconds, and eating speed of National maritime police was 8 minutes 33.17 seconds, and public officials had 12 minutes 49.33 seconds. Soldiers had 10 minutes 15 seconds, university students had 14 minutes 15 seconds, and company employees had 16 minutes 51 seconds in eating their meals. The previous studies said that eating speed had influenced on the metabolic syndrome and the survey on the American fire fighters showed that the fire fighters gained 7.7 pounds during the past 8 years. Through this study, it is necessary to implement the right eating habit that is able to slow down the eating speed in the Korean fire fighters. The Fire Academy should provide the right eating habit education program to the fire fighters.
This study is a qualitative analysis that conducted a focus group interview to analyze the experiences of daily life of the elderly living alone and their chronic diseases management, and to explore the meaning, nature, and difficulties associated with. The subjects of this study were elder who lives alone without cognitive impairment and over 65-year-old. There were total 31 people and divided into 5 groups and they had 60 minutes interview. By this study, there were four themes of 'difficulties of daily life', 'suffering from chronic diseases', 'fear of the future', 'acceptance of life'. In conclusion, the elderly living alone felt difficulty in daily life due to physical aging and chronic illnesses, and they felt that they were accepting life at the same time while feeling the fear of the future situation. Therefore, in order to improve the life satisfaction and life quality of elderly people living alone, it is necessary to provide institutional devices that enable daily life such as meals and laundry to be maintained and to develop of an intervention program in order to maintain physical health. In addition, an intervention program should be developed to reduce the fear of future uncertainty and positively accommodate the life.

This study was performed to investigate the effects of very low calorie diet (VLCD) using meal replacements that contain the wild grass extracts that are consisted of mainly Samul-tang ingredients on weight reduction and health promotion in the obese women (BMI$\geq$25 kg/$m^2$) for four weeks. Fifty six premenopausal women participated in this experiment. Each subject was either classified as part of the control group (C group, n=28) that consumed 3 regular meals a day or the meal replacement group (MR group, n=28) that consumed 1 regular meal and 2 meal replacements within 600 kcal/day. Anthropometric measurements, body composition, health related factors, and psychological factors were assessed before (the initial) and after (the 4$^{th}$ week) the study. Obesity was significantly decreased after the diet intervention. Anthropometric measurements such as weight, waist and hip circumference, and BMI and body composition such as body fat, and fat mass were significantly decreased in all groups after the diet intervention. Anthropometric measurements and body composition of the MR group were significantly decreased more than those of the C group. Serum total cholesterol was significantly decreased in the MR groups but not in the C group and serum triglyceride concentration was significantly decreased in all groups after the diet intervention. All the biochemical measurements were within normal ranges after the diet intervention. Psychological factors such as stress and depression were significantly decreased in two groups after the diet intervention. Therefore, VLCD using meal replacements is very effective for weight reduction in the obese premenopausal women.
