대구지역 학교급식 식단에 대한 고등학생의 기호도와 섭취율 (High School Students' Preferences and Food Intake on Menu Items Offered by School Foodservice in Daegu)

  • 본 연구의 목적은 고등학생들의 메뉴 기호도를 분석하고 학생들의 실제 섭취상태를 파악하여 그 결과를 학교급식 식단 계획 시 유용한 기초 자료로 이용함으로써 학교급식 운영의 질적인 향상을 도모하고 학생들의 올바른 식습관 형성과 영양섭취의 질을 높이는 데 있다. 본 연구의 결과를 요약하면 다음과 같다. 1) 대구지역 직영급식을 하는 16개 고등학교에서 제공하는 음식의 조리형태에 따른 빈도를 분석하면 국류가 가장 많았고, 다음으로는 밥류, 김치류가 비교적 자주 제공되었다. 2) 급식 메뉴에 대한 기호도를 살펴보면, 쌀밥의 기호도가 가장 높았다. 일품 요리류는 비빔밥과 볶음밥, 국 및 찌개류에서는 수제비만두국과 미역국, 그리고 무침류에서는 과일샐러드나 야채샐러드의 기호도가 높은 것으로 나타났다. 찜류 및 조림류에서도 갈비찜의 기호도가 가장 높게 나타났고 튀김 구이류의 기호도는 돈가스, 탕수육의 순으로 높게 나타났다. 볶음류와 찜류, 조림류, 튀김 구이류에서 육류를 재료로 한 음식에 대한 기호도가 야채를 재료로 한 음식보다 전체적으로 높은 선호도를 보였으며, 특히 남학생의 육류에 대한 기호도가 여학생보다 높았다. 3) 기호도와 세공빈도를 비교한 결과는 학생들의 음식에 대한 기호도와 실제로 학교에서 급식되는 메뉴의 제공빈도 사이에 유의적인 상관관계가 없는 것으로 조사되었다. 기호도와 섭취율을 비교한 결과 기호도와 섭취량 사이에는 유의적으로 상관관계가 있음을 나타내고 있다. 4) 고등학생의 영양소 섭취 함량 분석결과 단백질, 인, 철분, 아연, 비타민 A, 비타민 $B_1$, 비타민 $B_6$, 나이아신, 비타민 C, 비타민 E를 초과섭취하고 있었다. 반면 열량, 칼슘, 비타민 $B_2$, 엽산은 권장량을 충족시키지 못하는 것으로 나타났다. 칼슘의 권장량 대비 섭취율이 남자는 54.93%, 여자는 51.32%로 가장 취약한 섭취를 보였으며, 또한 철분은 월경을 경험하는 여학생들에게 특히 유의해야 하는 영양소임에도 불구하고 여학생의 섭취량이 권장량 대비 90.28%에 그쳐 청소년들의 영양증진을 위한 보다 적극적인 대책을 설정해야 할 것이다. 이상의 연구결과에서 학교급식식단 기호도와 섭취율 사이에 상관이 있음을 알 수 있었으며, 이는 학교급식의 메뉴선정에 있어 기호도가 매우 중요한 원인이 됨을 알 수 있다. 학교급식의 메뉴별 섭취율을 높이고 필요한 영양을 섭취하도록 하기 위해서는 식단 작성 시 기호도 조사를 통한 대체식품이용, 메뉴개선, 새로운 조리법 개발, 영양교육의 실시와 함께 배식량의 표준화가 필요할 것으로 사료된다. 특히 국과 찌개류는 우리 전통식단의 일부로 거의 고정적으로 제공되는 메뉴이기는 하지만 학생들의 기호도가 낮고, 이들 식품의 잔반이 환경오염에 미치는 영향과 식염함유량을 고려해서 식단형태를 재구성할 필요도 있다고 본다. 현재 학교급식을 제공받는 고등학생들의 영양소 섭취량 분석결과 과잉 또는 부족한 영양소가 있었고 특히 칼슘의 실제 섭취는 권장량의 53% 정도의 섭취율을 보여 우유급식에 대한 필요성을 강조하고 교육하는 등 칼슘섭취에 대한 대책을 강구하여야 할 것으로 사료된다.

충남지역 중학생의 채소 섭취실태와 식습관에 관한 연구 (A Study on Vegetable Intakes and Dietary Habits of Middle School Students in Chungnam)

  • The purpose of this study was to provide basic data for nutritional education for juveniles' desirable vegetable intake by analyzing their vegetable intake, dietary habit and nutrient intakes according to gender of middle school students in Chungnam. The average age of the subjects was 15.0, height was 162.5 cm, weight was 53.5 kg and their average BMI was $20.1kg/m^2$. The frequency of eating supper in girls was lower than that in boys. Many respondents answered that a meal-time was 10~20 minutes. Without gender difference, more than 90% respondents thought that vegetables were good for health. As for the preference of vegetable, subjects responded, "I am in the middle", "I like them", "I dislike them", "I like them very much", and "I dislike them very much" in order, without gender difference. The frequent eaten leaf vegetable was Chinese cabbage, the frequent eaten fruit vegetable was cucumber, and the frequent eaten root vegetable was radish. The favorite leaf vegetable was lettuce, the favorite fruit vegetable was corn, and the favorite root vegetable was sweet potato. The preference degrees of taro and ginger were very low. The reasons why they liked a vegetable were that it was delicious and they ate it at home often. In addition, the reason why they disliked vegetables was that they are untasty in flavor or texture and it showed that many students had a prejudice that vegetables were untasty. The intakes of plant protein, dietary fiber, ash and INQs of dietary fiber, calcium, vitamin C, folate, vitamin E in the group with high preference of vegetables were significantly higher than those of low preference group. The study results indicate that intake frequency and preference of root vegetables in juveniles are low and the major reasons of these results are taste and eating experience of vegetables. In addition, the intake amounts of dietary fiber and folate are poor in the subjects with low preference of vegetables. Therefore, families and schools should make efforts that juveniles can recognize the importance of vegetable intake and select various vegetables properly through the development of cooking methods and systematic nutrition education.

경기지역 남자 중학생과 학부모의 학교 아침급식 식단에 대한 유형별 선호도 (Middle School Boys' and Their Parents' Preference on Menu Types of School Breakfast in Gyeonggi Area)

  • The purpose of this study was to investigate middle school boys' and their parents' preference on menu types of school breakfast. School breakfast was served at a boys' middle school in Gyeonggi-do, Korea for 7 weeks. Ten types of convenient menus, including steamed rice, rice porridge, rice cake, bread, or cereal, were served to 200 students free of charge. After the service period ended, questionnaires were distributed to the students and their parents. Usable questionnaires were returned by 142 (71%) students and 124 (62%) parents. About two-thirds (66%) of the students and about half (51%) of the parents preferred convenient menus to traditional menus as school breakfast. The students were the most highly satisfied with the menu type including hot dog buns whereas the parents regarded these as neither appropriate nor inappropriate as school breakfast. Overall, the menu types including steamed rice such as Kimbap or rice balls were highly ranked in terms of the students' level of satisfaction as well as the parents' level of appropriateness evaluation. About 20% of the students and 50% of the parents expressed intention to eat or make their children eat school breakfast even if payment is required. Over two-thirds of both the students (70%) and parents (68%) responded that less than 1,500 won per meal would be the appropriate price of school breakfast. The results of this study show that convenient menus could be considered as alternatives to traditional menus in school breakfast service, although additional efforts are necessary to develop such menus to satisfy both the students and their parents.

한국 일부 대학생의 거주형태에 따른 가공식품의 선호도 및 섭취빈도 (Preference and the Frequency of Processed Food Intake according to the Type of Residence of College Students in Korea)

  • Objectives: The purpose of this study was to investigate the eating behavior toward processed foods among college students who live in different types of residence. Methods: This is a cross-sectional study targeting a total of 476 college students living at home with their family, living in a rental house with self-boarding, living in a lodging house, and living in a dormitory. Eating behaviors, including preference and the frequency of processed food intake were surveyed and compared according to the type of residence. Results: The rate of skipping a meal was significantly higher among students who reported self-boarding than those living in other types of residences. The main reason for skipping meals was that they got up late. In the entire study population, the main reason for consuming processed food was easy-to-cook (33.8%) and the primary consideration for choosing processed food was the price (54.0%). The processed food the most favored by college students was the processed noodles; those living at home with their family or living in a dormitory preferred milk products; those living in a rental house with self-boarding or in a lodging house preferred confectionery, retort pouch, convenience food, and canned/bottled food. The frequency of processed food intake was significantly higher in the students who reported self-boarding than those living in other types of residences (p < 0.001). Conclusions: Students' preference toward processed foods differed according to their type of residence. The frequency of processed food intake was significantly higher in students who reported self-boarding indicating that the type of residence of student is associated with their choices and consumption of processed foods.

울산지역 학령기 아동의 영양소 섭취 및 기호도 조사 (Nutritional Status and Food Preference of School Children in Ulsan)

  • This study was intended to provide basic information for nutrition education and meal planning by evaluating the nutritional status, food habits, and food preference of elementary school children with school lunch program and without school lunch program(lunch box). The subjects of this study consisted of 266 elementary school children aged from 10 to 12(136 male, 130 female) in Ulsan the area. The survey was conducted by questionnaires and data were analyzed by SPSS program. The average body weight was $38.4{\pm}6.9kg$ for boys and $36.8{\pm}7.4kg$ for girls and the average heights was $141.3{\pm}5.6cm$ for boys and $141.2{\pm}5.7cm$ for girls. These values were lower than that of the Korean reference. 56.0% of the subjects skip breakfast 1 to 2 times a week, 58.2% of the subjects had prejudice for special food, such as bean, anchovy, and pork. The food habit scores of the subjects was divided into poor(11.7%), fair(63.5%), and good(24.8%). The average score of girl's was significantly(p<150) higher than that of the boy's. Compare to 1/3 of RDA for children, the average intake of nutrients provided lower amounts of all nutrients. Therefore Calcium and vitamin A intakes were especially lower than the others. Therefore the importance of milk and green vegetables must be emphsized to them through nutrition education. Children preferred ssalbab to jabkogbab and liked beef-based soup, and baechu kimchi. There were significant differences in food habit scores with gender, parent's education, and exercise. The results of this study indicate that nutrition education and menu planning program should be applied to elementary school children who are served by the school lunch program.

고등학생의 학교급식 만족도와 메뉴 선호도 - 전북 익산시를 중심으로 - (School Food Service Satisfaction and Menu Preferences of High School Students - Focused on Iksan, Cheonbuk -)

  • The purpose of this study was to investigate school food service satisfaction and menu preferences of high school students in Iksan, Cheonbuk area. Self-administered questionnaires were completed by 692 high school students. Data was analyzed by SPSS 11.5 statistical software. Significant differences between genders were tested by the $X^2$ -test or t-test. The mean satisfaction score with school food service were 2.8 points out of 5 points. The satisfaction scores for menu (2.8 points) and food temperature (3.1 points) were low, but satisfaction with hygiene and facilities (2.7 points) and service (2.6 points) were lowest. The reason that high school students left food was 'the food taste is not good' (65.3%). The school food service areas needing improvement according to the subjects were food taste (39.3%), hygiene (24.3%). The mean score for menu preference was 3.7 points. The highest menu preference menu for the rice category was stirfried rice (bokeumbap), for the soup was meat soup, for the kimchi was Korean cabbage kimchi. Based on the results we made the following suggestions: To increase the satisfaction with school food service, changes in the school food service policies are needed at the government and school levels. Efforts should be made to improve the taste of school food. The school food service menu should be improved by taking into account the preferences of the users. There is also a need for the development of nutrition programs like nutrition consulting linking students and family, and nutrition camps that will encourage correct dietary habits.

혈액투석 환자 대상 영양교육과 상담이 짠맛 미각, 영양지식 및 식태도 변화에 미치는 효과 (Effectiveness of Nutrition Education and Counseling on the Salty Taste Assessment, Nutrition Knowledge and Dietary Attitude of Hemodialysis Patients)

  • The purpose of this study was to evaluate the effectiveness of nutrition education and counseling on the salty taste assessment, nutrition knowledge and dietary attitude of 21 hemodialysis patients. Five times of the nutrition education and three times of nutrition counseling were performed for a period of 5 months. Biochemical analysis revealed that creatinine was significantly high (p < 0.001), blood urea nitrogen and serum albumin were significantly low (p < 0.05, p < 0.01) and Na, K, Cl, K, P and uric acid were not significantly different. The distribution rate of unsalty taste preference were significantly high and the distribution rate of salty taste preference were significantly low after nutrition education and counseling (p < 0.001). Nutrition knowledge significantly improved following 5th month of education and counseling (p < 0.01). Particularly, the scores for questions related to sodium were improved. The dietary attitude was significantly improved during the counseling period (p < 0.05). There were improvements in responses to 'use food exchange list on diet' and 'habitually add salt or soy sauce before the meal'. According to these results, salty taste assessment, nutrition knowledge and dietary attitude were significantly improved by the hemodialysis diet therapy practices of hemodialysis patients. Therefore, we conclude that there was a need for low-salt diet education and nutrition counseling to help them recognize the taste of low-salt foods and strive towards a preference for less salty tasting foods and the consumption of a low-salt diet.

한국인 50대의 노인용 코하우징 공유공간과 공동활동에 대한 선호 - 서울과 지방도시 간 차이 비교를 중심으로 - (Preference of Common Spaces and Shared Activities in Senior Cohousing Community by Korean 50s - In Reference to Difference between Seoul and Other Cities -)

  • The aim of this paper is to find out different preference of common spaces and shared activities in senior cohousing community between regions in Korea: Seoul and other cities. Social survey was conducted nationwide and the respondents were 50s only, since they are the generation who will face to elderly housing subject within 10 years in turbulent Korean society. Collected data, about 1000, were analyzed by SPSS program using frequency, percentage, and Chi-square test. In summary, respondents mostly would like to move to senior cohousing on circumstance when they remain alone without big difference between regions. Loneliness and housekeeping were considered as the most difficult issues for the elderly to manage by themselves. Among common spaces, exercise room was the most preferred space to meeting room and kitchen. Exercise room was more preferred in Seoul than in other cities, on the contrary meeting room was evidently less preferred in other cities than in Seoul. Regarding shared activities, resident meeting, gardening, and common meal were revealed as less preferred activities than hobby exercise and tea meeting. As a conclusion, I would like to propose that a big common living room is better to be designed for meeting room cum dining and gathering room with flexibility in order to give residents chances to know each other more often. And since common space and shared activity show different preferences by regions, those are to be designed and planned reflecting region's different circumstance.

서울시내 어린이 집 교사의 식습관과 영양지식 (Dietary Habits and Nutrition Knowledge of the Teachers at Day-care Centers in Seoul)

  • A nutrition education program for teachers and caregivers of the preschool children can be most effective when it is based on a comprehensive needs assessment dealing with sociodemographic factors, dietary habits, and nutrition. The purpose of the present study was to investigate current dietary habits and nutrition knowledge of the teachers and caregivers of the day-care centers. Two hundred forty two teachers and caregivers were administered a questionnaire which was designed to ascertain informations on sociodemographic data, dietary habits and nutrition knowledge. Dietary habits of the teachers were found to be significantly different by sociodemographic variables; breakfast skipping/meal irregularities (age, p=0.011); frequency of snacking (education level p=0.031); preference for salty taste(age, p = 0.000, marital status p=0.038); preference for sweet tarte (age p=0.009); preference for vegetables (income level p=0.050); frequency of eating out (age p=0.028, marital status p=0.001); frequency of coffee drinking (age p=0.019). Daycare center teachers' nutrition knowledge level was found to be less than adequate expecially on nutrients that are liable to be deficient in young growing children and their food sources. Proportions of the teachers who answered correctly to the questions on foods rich in vitamin A, iron content of milk, bioavailability of calcium in plant foods were as low as 20.2%-54.5%. The most frequently used sources of nutrition information were mass media such as TV, radio, newspaper and magazines. Only 2.9% of the subjects reported that they obtain nutrition information from health professionals such as nutritionists/dietitians, physicians, and nurses. These findings are applicable at the planning and implementation stages of various nutrition programs for the improvement of dietary habits and nutrition knowledge of the teachers and caregivers of the daycare centers. Further studies are needed to investigate the effects of teachers' dietary of habits and nutrition knowledge on food habits of young growing children.

인천지역 고등학생들의 김치에 대한 인지 및 선호도에 관한 연구 (Research on Recognition and Preferences Related to Kimchi among High School Students in Incheon Area)

  • Purpose: This research was conducted to provide basic data on Kimchi consumption of high school students by determining their recognition and preferences related to Kimchi. Methods: Our survey was administered to 450 high school students in the Incheon area from September 1 to October 30, 2015. A total of 412 questionnaires were used for the final analysis. Results: Most students (42.6%) consumed Kimchi every meal (more than 3 meals/day), and only 3.6% did not consume Kimchi at all. The most common reason for consuming Kimchi was 'tasty' (46.4%). On the other hand, those who did not consume Kimchi cited 'preference for other side dishes' (50.0%). 'Home-made Kimchi' was the most common source of consumed Kimchi (63.0%). With respect to recognition of Kimchi, most cited terms were 'traditional' ($4.64{\pm}0.58$), followed by 'healthy' ($4.30{\pm}0.77$) and 'prefer home-made' ($3.88{\pm}0.93$) (p<0.001). The average preference for Kimchi was $3.71{\pm}1.07$. The most common reason for preferences was 'crisp texture' (37.6%). The most popular flavor was 'spicy' (33.6%), and the most popular fermentation level was 'appropriate' (55.6%). When preferences for Kimchi were further analyzed, 'baechu Kimchi' (4.18) was the most popular. Further, Kimchi is a popular ingredient for many dishes, and the most popular dish was 'stir-fried pork with Kimchi' (4.50). Conclusion: In the future, positive recognition of Kimchi consumption can be promoted through nutrition education and various advertisements. Furthermore, efforts should be made to establish the principles of traditional Korean food for students.
