제조방법에 따른 딸기잼의 관능적 품질 특성에 관한 연구 (Study on the Sensory Quality Characterization of Strawberry Jam by Cooking Method)

  • As the level of life improves, the eating habit is changing from rice meal to bread meal and at the time, eat more strawberry jam than before. We tried to study to select the good cooking method and the proper strawberry variety for the jam through the sensory evaluation We made four kinds jam of Bogyo-Joseoung and Ai-berry by different cooking methods, the result6s of the sensory evaluation are as follow: The jam of Ai-berry is better than that of Bogyo-Joseoung by the paired comparison test but the difference between those, if we add some lemon to the jam of Bogyo-Joseoung and Ai-berry, is very little. The multiple comparison test proves the sourness, if added some lemon and citric acid, become better and the color and viscosity, if added pectin, became better. The overall preference about jam, if pectin and citric acid were added together, was best. In addition, we evaluated the quality of jammed bread by multiple comparison test. The result is like this: The jam with lemon is very good in color, flavor, sourness and texture, but the jam with pectin and citric acid was the best in overall preference.

Dietary Habits of Smokers and Non-smokers in the Korean Health and Nutrition Survey

  • Differences in dietary habits between Korean smokers and non-smokers were investigated using information obtained from 7,370 adults, aged 20 years and older who participated in the 1998 Korean National Health and Nutrition Sulvey. Dietary habit data including: skipping of meals, meal regularity, meal volume, snacking habits, removing fatty portions before eating foods, and dietary supplement intake were collected using a structured questionnaire by interview. Individual smoking data was also collected by interview as part of the health behavior survey. A Chi-square test was used to test the association between the dietary habits and smoking. 66.9% of the men were smokers (daily current or occasional current), while only 6.7% of women smoked. On average, 34.7% of the subjects were smokers. Smokers were more likely than nonsmokers to engage in the following dietary habits considered unhealthy: skipping breakfast, meal irregularity, large dinners, small breakfasts, frequently eating out, and eating food without removing the fatty portion. Therefore, Korean smokers should be provided education to assist them in making healthy dietary choices such as: eating regular meals, small dinners, and removing fatty Portion of foods. The survey also revealed that a substantial percentage (about 20%) of the subjects were taking some kind of dietary supplement, regardless of smoking status. It is, therefore, alto necessary to inform the general public that a balanced diet is the ideal way to obtain nutrients for optimal health.

대전지역 급식학교 초등학생들의 식습관 조사 (Study on Food Habits of Elementary School Food service Children in Taejon)

  • To investigate the children's food habit, one thousand of children from eleven elementary school food service were randomly selected in Taejon. The survey was conducted by questionnaires and data were analyzed by SAS program. The results are summarized as follows. 1.The average height and weight for the 3th grader are 132.0cm and 29.4kg for boys. 131.2cm and 27.9kg for girls. In the case of the 6th grader the average height and weight are 147.1cm, 41.1kg for male, 148.6cm, 41.0kg for female, repectively. Those values are less than national averages. 2. The third grader eats breakfast more regularly than the sixth grader(p<0.001) and 51.5% of the children answer that they take foods for their health. The third grader has better eating habits that the six grader. This survey shows that the sixth grader eat more cereal, milk and vegetable and the third grader has less fruits than the sixth grader. 49.3% of the total children likes eating food at home, 36.6% eating outside and 14.1% school meal service. 25.8% of the children reply that they do not eat now foods during school meal service. 82.5% of the total children are willing to eat foods served from school meal service if a teacher explains about the information of foods.

강원지역 일부 고등학생들의 식습관에 따른 구강보건지식 수준 (Knowledge Level on Oral-Health of High-School Students according to Eating Habits in Some Regions of Gang-won Province)

  • 본 연구는 일부 강원지역 고등학생들의 식습관 실태 및 식습관에 따른 구강보건지식 수준에 대하여 조사한 결과 아래와 같다. 1. 학생들이 간식 섭취 결과, 간식을 하루에 한번 섭취하는 학생이 46.5%로 가장 많았으며, 학생들이 간식을 섭취하는 시기에 대해 살펴본 결과, 간식을 불규칙적으로 섭취하는 학생이 39.0%로 가장 많았다. 2. 학생들이 간식으로 섭취하는 음식에 대해 살펴본 결과, 간식으로 과자류를 많이 먹는 학생이 40.1%로 가장 많았으며, 성별(p<.001), 계열별(p<.05), 부모님 월수입별(p<.05), 한달 용돈별(p<.001)에 따라 유의한 차이가 있었다. 3. 학생들의 식습관에 대해 살펴본 결과, 10점 만점 중 전체 평균이 5.03으로, 학생들은 식습관이 그다지 좋지 않은 것으로 나타났다. 치아우식증에 영향을 주는 간식에 대해 학생들의 인식을 살펴본 결과, 치아우식증에 사탕과 초콜릿이 영향을 준다고 인식하는 학생이 49.2%로 가장 많았다. 학생들의 식습관 실태에 따라 구강보건지식에 대해 살펴본 결과 간식섭취 횟수별로는 간식을 3~4일에 한번 섭취하는 학생이 구강 보건지식이 가장 높았고, 일주일에 한번 이하 섭취하는 학생은 구강보건지식이 낮았으며, 간식섭취 횟수에 따라 유의미한 차이를 보였다(F=4.53, p<.05).

식사 구성안에 관한 학교 영양교육이 청소년의 식품군별 섭취 빈도에 미치는 영향 (Effects of School-based Nutrition Education for Korean Food Guide on Food Intake Frequency of Adolescents)

  • The purpose of this study was to examine the effect of nutrition education about the Korean food guide to middle school students on food intake measured by food frequency. Three hundred first graders were sampled from two coeducational middle schools located in the small city of Chungnam area, and divided into 167 (74 boys, 93 girls) education groups of one school and 133 (70 boys, 63 girls) non education groups of the other school. Nutrition education was given to the education group for a total of 16 hours and no education to the non education group during the same period. After education, average nutrition knowledge scores of education group increased from $6.40\pm2.17\;to\;6.81\pm1.56$ significantly especially boys with a high range of increase and girls no increase. Dietary habit scores improved significantly from $46.2\pm6.5\;to\;49.1\pm6.2$ in both boys and girls of education group. Of the knowledge and dietary habits, ability of choosing a balanced meal, biased eating to some food, and taking diverse foods at every meal improved significantly in education group. In non education group no significant increases of either nutrition knowledge scores and dietary habit scores were shown. In addition education group showed significant increases after education, in the intake frequencies of rice$\cdot$noodle$\cdot$loaf bread, kimchi, green and yellow vegetables, and soybean$\cdot$soybean curds by 0.27, 0.23, 0.40 and 0.32 servings per day, compared with non education group. These changes were greater in girls than in boys. According to these results, it can be concluded that nutrition education about the Korean food guide improved effectively not only student's nutrition knowledge and dietary habits, but also healthy food intake ability. It is necessary to prepare long-term and continuous school-based nutrition education programs for the students to get into a habit of healthy food intake.

장수벨트지역 장수인의 식생활 특성 (The Dietary Habits of the Nonagenarian Population in Longevity Belt in Korea)

  • The dietary habits and eating behaviors of nonagenarian subjects over 90 years old in Korean representative longevity belts of Damyang, Gokseong, Kurye, Sunchang were evaluated. The subjects of the study were 91 elderly people (26 males and 65 females) over 90 years old and their dietary habits, food preferences and meal patterns were collected by individual interview. The percentage of subjects, who answered 'very good' or 'good' for their health status, was $65.9\%$. In this study, $55\%$ of subjects were without chronic diseases, and there was no significance difference in gender. Many subjects had performed regular exercise and outdoor activity. The rate of eating together with their family was $79.1\%$. Most of subjects ($91.2\%$) had a regular mealtime consuming three meals a day, and they had good appetite and pleasure of eating. The higher preference of food group was fruits ($95.6\%$), legumes ($94.5\%$), mushrooms ($93.4\%$) and vegetables ($92.3\%$), but the amount of intakes is higher in vegetables than the others. Eating with family, regular exercise and self-rated good health are improved their nutrient intakes. Most frequently consumed meal pattern was rice plus soup and side dishes. The side dish consumed frequently was Namul (blanch and seasoned vegetables). From this study, the nonagenarian populations in longevity belt in Korea have good dietary habits such as regular mealtime, constant amount of meal and eat with pleasure. They are taking Korean traditional meal pattern, providing enriched antioxidant vegetable foods. Also, it can be concluded that the amount and quality of diet in the long-lived elderly are responsible for the Korean traditional family system.

경기도지역 어린이집과 유치원 급식의 소금함량 및 유아 식사준비자의 나트륨 섭취관련 식태도 조사 (A Survey on the Salt Content of Kindergarten Lunch Meals and Meal Providers' Dietary Attitude to Sodium Intake in Gyeonggi-do Area)

  • Dietary habit of excess sodium consumption is formed mainly by excessive salt intake from the younger age and this may lead to hypertension, stroke, and stomach cancer. This study was performed to estimate the salt content in kindergarten meals and provide basic data on meal providers' dietary attitude to sodium intake for nutrition education. We collected data on161 food items from 16 institutions in Gyeonggi-do and salt content was calculated from salinity and weight of individual food items. The average salt content from lunch meals was 2.2 g, which was about daily adequate intake of sodium for children aged 3 to 5 years old. Greatest contributor to the salt content in a meal was soup and stew (47.8%). The most salty dishes were sauces and kimchi followed by stir-fried food, deep-fried food, braised food, and grilled food. The salt content was higher in soup and stew despite of low salinity, due to the large quantity per serving. The salt contents of soups and kimchi were 40.6% and 14.3%, respectively of the total salt content in dish groups. Staff members and caregivers at home who prepared food for the child showed preference for one-dish rice meal, dried fish and salted mackerel, and broth when eating soup, stew, and noodles. Caregivers showed higher sodium index score and had higher preference for processed food such as Ramen, canned food, and ham compared with staff members (p < 0.05). These results suggested that monitoring salt content of kindergarten meals and nutrition education for those prepare meals for children are needed to lower sodium intake in childhood.

대구지역 주부들의 비만정도에 따른 식행동 특성과 영양섭취 실태 평가 (Dietary Behaviors and Status of Nutrient Intakes by the Obesity Levels of Housewives in Daegu)

  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of healthy weights at community level. Nutrient intakes of 128 housewives were assessed by 24 hour recall method. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Subjects were divided to under-weight, normal-weight, over-weight groups by body mass index (BMI). Most under-weight groups evaluated as their current body images were normal. $41\%$ of normal-weight groups judged as their current body images were obese. Energy and fat intakes of over-weight group were significantly higher than that of under-weight and normal weight groups (p<0.05). However, carbohydrate and protein intakes showed no significant differences among the three groups. It appeared that active attitude toward change in nutrition attitude of normal weight group was significantly higher than that of under-weight group (p<0.05). There were no significant differences of food habit score, nutrition knowledge, and obesity habit scores among the three groups. The frequency of eating-out showed significant difference among three groups (p<0.05). Food habit scores were positively related to health-concerned attitude (r=0.174), convenience-concerned attitude (r=0.229) and food enjoyed attitude (0.213) and negatively related to obesity habit score (r=-0.206). Also, positive correlation of body fat mass with frequency of eatingout (r=0.213), instant food (r=0.227) and amount of meal (r=0.187) existed (p<0.05). We concluded that nutrition education programs for housewives should include specific strategies to modify unsound food behaviors and inappropriate perception of body image for a healthy weight.

초등학생의 영양교육을 위한 식습관 및 영양지식 조사 (A Survey on Dietary Habit and Nutritional Knowledge for Elementary School Children's Nutritional Education)

  • The aim of this study is to survey the eating habits and nutritional knowledge of children in Pusan, with a view to uncovering problems and their underlying causes and cultivating desirable dietary habit and nutrition for children. Three hundred and fifty six elementary school students were asked questions about their eating habits and nutritional knowledge as well as general information about their personal characteristics. The results showed: 1. Only 53.5% of the subjects had breakfast every day. Seventy-six percent of the subjects had dinner every day. Only 40% of the children took meals and talked with family at both breakfast and dinner. Thus there was little opportunity for dietary guidance by parents. 2. About half of the subjects answered that their appetite decreased after eating snack foods between meals. A third of the subjects liked the baked goods as snacks. Because of their high sugar and fat content, they can damage children's health, resulting in child diabetes and tooth decay. For this reason, careful education is necessary to allow children to be able to select snack foods that are appropriate in kind and quantity. 3. About 85% of the subjects had an unbalanced diet. Therefore systematic nutrition education at school is necessary to instill in children the value of balanced diet. 4. Children preferred rice to other cereals as a staple food. They disliked kimchi, seasoned and blanched foods and salads as subsidiary foods. It is therefore necessary to teach children systematically the nutritional advantage of cereals and vegetables and to heighten their awareness of Korean food culture. 5. Children had a low level of nutritional knowledge. The knowledge of specific nutrients was lower than that of foods. In conclusion, systematical educational programs need to be developed at elementary school. These should include information about achieving a balanced diet, good eating habit, meal management and Korean dietary culture. Nutritional education at home must be emphasized.

전북 일부지역 남$\cdot$여 중학생의 영양지식, 식생활 태도, 식습관 비교 (A Study on Nutrition Knowledge, Dietary Attitude, Food Habit of Middle School Students in Chonbuk Area)

  • The purpose of this study was to investigate nutrition knowledge, dietary attitude and a food habits of middle school students. The study was carried out through questionnaire. The subjects were 431 middle school students (boys 298, girls 133) in Chonbuk area. In nutrition knowledge, there were no significant differences in total scores between boys and girls. However, the girls showed higher score in knowledge of weight control than boys did (p<0.05). In dietary attitude, there were significant differences in attitude of 'balanced meal (p<0.05)', 'sufficient protein intake (p<0.01)', 'food diversity (p<0.001)' and 'overeating(p<0.00)' between boys and girls. The boys showed better dietary attitudes than the girls did. In food habits, there were significant differences in the rate of skipping breakfast (p<0.05), the rates of skipping dinner (p<0.001), the frequency of snacks (p<0.05), the type of snacks (p<0.05) between boys and girls. The girls showed higher rates of skipping a meal and frequency of snacks than the boys did. It suggests that gender should be considered for an effective and practical nutrition education for middle school students to improve dietary attitudes and food habits.
