  • This study examined the effectiveness of two commonly used dietary assessment methods (the 24-hour recall and the food frequency questionnaire) in the epidemiological investigations of health-related habits and degenerative diseases. This cross sectional project in the Seoul area was conducted for the purpose of establishing cohort subjects and collecting reliable nutrient intake data for a further large-scale cross sectional study. The subjects were 91 volunteers from the Seoul area with a mean age of 53.5 \pm 9.6 for the males and 52.2 \pm 8.9 for the females. The subjects had a relatively high educational background, were from high socioeconomic levels, and were greatly concerned about healthrelated life styles. There was a significantly negative correlation between their smoking and their nutrient intake. Their drinking habits, their self-estimated health status and their concern or stress about being healthy did not have any influence on their nutrient intakes. Skipping meals was the most undesirable dietary habit influencing their nutrient intakes, and the next was their irregularity of eating meals. The subjects who liked legumes and fish had higher intakes of iron and niacin and those who liked milk and dairy products had higher intakes of calcium, vitamin \B_2 and fat. The subjects who considered themselves not to be healthy consumed higher amounts of fish and shell-fish, and those who considered themselves to be healthy consumed higher amounts of vegetables. The smokers consumed less fruits than non-smokers, but there was no correlation between their drinking and consumption of the food groups. There was no correlation between their food consumption frequency and their skipping meals or meal irregularity. There were positive correlations between their food likes and food consumption frequency for foods such as meat, milk and dairy products, seaweeds and fruits. Therefore, their smoking, skipping meals and meal irregularity appeared to greatly influence their nutrient intakes. Significant correlations were found between their health-related habits and their food group preferences and food frequencies. This implies that simple surveying methods using criteria such as smoking, skipping meals and meal irregularity, food group preferences and eating frequencies can be used as useful tools in the assessment of nutritional statuses.

  • Children are very sensitive to exposure to heavy metals such as mercury which can accumulate in the body. Exposure to even low concentrations of such metals is reported to be very harmful to health. An evaluation of the mercury content of meals in public elementary schools could provide information which could be used to reduce this level. Two public elementary schools were selected from 16 cities and provinces. The meals provided were analyzed in the third week of spring, summer, fall, and winter. The average mercury allowance per meal was calculated using the provisional tolerable weekly intake (PTWI) established by the government. The number of instances of excess content observed was compared by region based on the mercury allowance per meal, and the frequency of use of mercury-containing marine products that cause the excessive levels was identified. The results of analyzing a total of 575 menus revealed that the use of marine and processed marine products with a high mercury content was more in the coastal areas. The mercury content in school meals was also higher in coastal areas than in inland areas. Conversely, in inland areas, the frequency of intake of marine products and marine products with a high mercury content was low, and the amount of mercury intake in school meals was also correspondingly low. In conclusion, this study intended to provide information that could be used to make school meal menus safer. This data can be used to replace school meal menus with high mercury content in coastal areas with menus with low mercury content.

The mean age of mothers and family size were similar in two groups, but the frequency of mothers employed was higher in ICF than in NICF Most mothers in ICF worked as a manual- or skilled-laborer. (2) The mothers in ICF tended to have less positive attitude in sewing balanced meals to their families than those in NICF. The score of nutritional knowledge was lower in mothers in ICF than those in NICF. (3) The percentage of expense for purchasing staple foods to total expense of foods tended to be higher in ICF than in NICF. Engel's coefficient was higher, and the frequency and expense for eating out was lower in ICF than in NICF (4) The mothers in ICF did not try to use their time and energy efficiently for meal management. (5) The mothers in ICF were less active in sewing the pleasurable meals including the provision of various cooking methods, flavors, and temperatures, to their families, than those in NICF. The subject are students enrolled at 'H' university in Asan. There are 801 students who response for this research. We surveyed and analyzed the correlation between the life stress and eating habit of university students. It is analyzed that the objects suffered stress most by 'schooling' and 'job complication.' Surveying the general eating habit of university students, it is found that they do not eat meal regularly, i.e., 'average meals (40.9%)' and 'irregular meal(35.2%).' No significant difference was observed in the regularity of meals between sexes. When it comes to overeating or voracity, male students answered 'sometimes(77.6%)' or 'often(22.5%)', but female students answered 'sometimes(66.2%)' or 'often(28.2%)', which means that female students are more frequent in overeating or voracity. The frequency of eating snack is more than once a day 60.1% in female students and 47.3% in male students, which shows that the rate of female students is much higher than that of male students. Surveying the correlation between stress that male and female university students suffer and the regular meal, we found that both of them tend to eat meal irregularly if they are stressed. Comparing the stress for its factor, male students eat meal irregularly if they are stressed by 'schooling' and female students eat meal irregularly if they are stressed by 'figure.' Checking the correlation between stress and time spent for meal, it is found that while male students eat meal in a hurry when they are stressed by 'job affair', female students do so when they are stressed by 'home economy. Analyzing the correlation between frequency of snack and stress, both male and female tend to eat snack more frequently when they are stressed more. In general, males like the oily food more than male, but when students get stresses, females want to eat oily food than male. Analyzing the correlation between stress and preferential menu, males like green vegetables, sea food in the life get less stresses than others Females like a menu of meat get higher stress than others.

  • Purpose: The purpose of this study was to analyze the meal types by cooking methods provided at different meal provision places using the 2015 Korea National Health and Nutrition Examination Survey. Methods: A total of 42,441 meal data on adults from the 2015 Korea National Health and Nutrition Examination Survey were used for analysis. The data were analyzed by complex sample $x^2-test$ of independence and complex sample logistic regression analysis using SPSS 23.0 for Windows. Results: The meal provision place showing the highest frequency was home (60.2%), followed by commercial (32.5%) and institutional foodservices (7.3%). The meal types by cooking method most frequently consumed were rices (18.3%) and kimchis (16.6%). The results of the complex sample logistic regression analysis showed that breads & snacks, steamed or braised dishes, fried dishes, and fresh seasoned vegetables were more likely to be consumed at commercial or institutional foodservices than at home. In addition, noodles & dumplings were more likely to be consumed at commercial places, and Korean soups were consumed at institutional foodservices. Conclusion: From the results of this study, it is suggested to develop recipes for substitution of fried dishes and to develop low sodium recipes at commercial and institutional foodservices. In addition, education of consumers of commercial foodservice is needed to reduce consumption of fried dishes, salted seafoods, and pickled vegetables and encourage consumers to choose meals from institutional foodservice managed by dietitians.

  • The purposes of this study were to determine the price elasticities of foodcourt-styled university foodservice, and to identify the attributes that affect these price elasticities. Questionnaires were distributed to 700 students at the K University in Masan, from September 21-27, 2006. 478 questionnaires were ultimately included in the final analysis(response rate: 68.3%). For statistical analysis, SPSS(12.0) was used to conduct the descriptive analysis, t-test, and ANOVA. The results of this study were as follows. The average meal price for in-campus foodservice was \ 2,196 and the average meal price for an off-campus restaurant was \3,044. The university students recognized that the proper price for in-campus foodservice and an off-campus restaurant were, respectively, \2,127 and \ 2,884. The price elasticities for foodcourt-styled university foodservice were 4.20(Kko-Bul-Kko-Bul), 3.83(Il-Poom-Hyang), and 4.10(Ne-Mo-Baek_Ban). The factors that affected price elasticity included the frequency of visiting foodservice, foodservice satisfaction, price satisfaction, and customer's responses to increased meal prices. The recommended price strategy for foodcourt-styled university foodservice was to lower meal price, which would attract more students and increase the sales volume. Simultaneously, foodservice managers should attempt to improve and increase customer satisfaction and the customer's perceived value for meal price. Overall, price elasticity may prove helpful in predicting the customer's behaviors on price changes, and may provide useful basic data for foodservice managers when establishing price strategy.
