The purpose of this study was to investigate the housewives’ consumption pattern and preference of the Korean rice cake asa substitute for meal. The rate of housewives who had eaten rice cake as a substitute for meal were 75.30% and those who had not were 20.83%. Usually 62.03% of them ate rice cake for breakfast, and 34.21% did them within one time per a week. Reasons for eating rice cake for meal were investigated on ‘easy to eat(54.51%)’, ‘good taste (24.44%)’ and ‘healthy food(14.29%)’. The older housewives wanted healthy rice cake for meal and ate with tea and Kimchi(Dongchimi). The younger ones ate rice cake for meal with tea and milk. Thawing methods of frozen rice cake for meal were different between the older and the younger, respectively, steaming and using microwave. Kinds of rice cake as a substitute meal were Injeolmi(50.75%), Backsulgi(49.62%), Chaltteok (47.74%) and Yaksik(46.44).
This study evaluated the consumers' demands and points of improvement for restaurant meal replacement through importance-performance analysis by the restaurant meal replacement segment market using food involvement. The results were as follows. First, after segmenting the restaurant meal replacement market using food involvement, it was classified into three markets (multiple involvements, exploration-oriented, and product quality-oriented). Second, an analysis of the importance of restaurant meal replacement selection attributes revealed taste, sanitation, quality, freshness, price, saving time, texture, ingredients, preparation process, and quantity to be highly important. An analysis of the differences according to the market type revealed the multiple involvement type to be more important than other groups, considering the restaurant meal replacement selection attribute element. Third, an analysis of the importance-performance analysis of restaurant meal replacement selection attributes revealed that quantity and price as the selection attributes that needed to be improved first in all three markets. In addition, in the multiple involvement type, food additives appeared as a selection attribute requiring priority improvement, revealing the characteristics of a market that cares about diet and health.
Soybean meal (SBM) is a high-protein plant product commonly used as the primary protein source in pig diets. However, its price has been steadily rising, prompting us to search for cost-effective, high-yield protein sources. This experiment aimed to assess the effects of partial replacing SBM with 6% of palm kernel meal (PKM), lupin kernel (LK), rapeseed meal (RSM), and distillers dried grains solubles (DDGS) on the growth performance, nutrient digestibility, and fecal scoring in growing pigs. A total of 200 (Yorkshire × Duroc) growing pigs with an initial weight of 34.83 ± 1.38 kilograms were utilized in this research for 29 days. All pigs were randomly assigned to one of five dietary treatments based on their gender and initial body weight, Each treatment consisted of 10 replicates with 2 barrows and 2 gilts per pen. The dietary treatments were as follows: control (CON), a corn-SBM-based diet; and basal diet supplemented with 6% of different plant byproducts (PKM, LK, RSM, and DDGS) Adding 6% of RSM to the basal diet showed slightly higher daily gain (2.520 > 2.513) and there was no difference observed on the nutrient digestibilty and fecal score. Replacing soybean meal with different plant byproducts has no adverse effect on growth performance, nutrient digestibility, and fecal score.
Objectives : This study carried out the agreement of old people who visited senior citizens' centers in section area from January 5to 15, 2010. This study aimed to arrange basic data for the development in oral health and for the elderly oral health program, by surveying on regular level and food habit in the eating habits of the elderly. Methods : The regular level of dietary life, meal volume, meal time, kinds of meal preference, the appearance of snack intake, and kinds in snack preference were analyzed by using the statistical processing SPSS WIN 18 targeting totally 140 subjects, by preparing 1:1 questionnaire through direct interview. Results : The regular level of dietary life in the elderly was surveyed to be regular in 76.4% of the whole and to be irregular in 23.6%. As for the daily meal volume of the elderly, it was indicated to be 36.4% for 'eating proper volume' and to be 51.4% for 'eating a little.' As for the meal time of the elderly, it was indicated to be 52.1% for under 10 minutes and to be 25% for having a meal for 16~20 minutes. In the results of having surveyed on kinds of meal preference in the elderly, it was indicated to be 57.7% for having a meal 'centering on vegetables.' In the survey on snack intake of the elderly, it was indicated to be 62.1% for 'enjoying eating snack.' As for snack kinds of being preferred, 69.3% of the elderly were indicated to be the highest in 'fruits.' Conclusions : The elderly meals on a regular basis as needed by vegetarian diet, however showed thar eating a very short time. I consider it is necessary that study on connection between old people meal time, eating habits and oral physical condition.

Studies were conducted with intact White Leghorn roosters to determine the true metabolisable energy (TME) and the true amino acid availability (TAAA) in five dehulled and hulled soybean meals produced in China. 60 roosters, kept in individual cages, were fasted for 48 h and then tube-fed 50 g of one of experimental feedstuffs and their excreta was then collected for the subsequent 48 h period. Two separate collection periods were used with each meal being fed to 12 roosters. The birds were given a 15-day recovery period between collection periods. An additional 12 roosters were either fasted or fed a protein-free diet in order to estimate the extent of endogenous losses of energy and amino acids in excreta. The average values per bird for nitrogen loss, endogenous energy losses (EEL) and endogenous energy losses corrected to zero-nitrogen balance ($EEL_n$) were found to be 0.74 g, 47.0 kJ and 21.5 kJ, respectively. It was found that the TME and TAAA values of dehulled soybean meal were higher than those of hulled soybean meal. The TME and nitrogen-corrected TME metabolisable energy values of dehulled soybean meal were 10.58 and 10.74 MJ/kg, respectively, while the corresponding values for hulled soybean meal were 10.03 and 10.27 MJ/kg, respectively. The average indispensable and dispensable amino acid availability of dehulled soybean meal was 92.1 and 93.5%, compared with 89.3 and 91.4% for hulled soybean meal. Dehulled soybean meal would therefore appear to be superior to hulled soybean meal as a source of protein and energy for use in poultry rations.
The effect studied was that of the feeding of shrimp by-product meal, as a source of eicosapentaenoic and docosahexaenoic acid, on growth performance and fatty acid composition of adipose tissue in growing pigs kept on small holdings in Central Vietnam. Shrimp by-product meal was exchanged with ruminant meal so that the diets contained either 0, 10 or 20% shrimp byproduct meal in the dry matter. The diets were fed on 6 different small-holder farms. The farmers fed a base diet according to their personal choice, but were instructed as to the use of shrimp by-product and ruminant meal. The diets were fed to the pigs from 70 to 126 days of age. There were three animals per treatment group per farm. The diets without and with 20% shrimp by-product meal on average contained 0.01 and 0.14 g docosahexaenoic acid/MJ of metabolisable energy (ME). Due to the higher contents of ash and crude fiber, the shrimp by-product meal containing diets had lower energy densities than the control diets. Eicosapentaenoic acid was not detectable in adipose tissue; the content of docosahexaenoic acid was generally increased after consumption of shrimp by-product meal. In spite of the concurrent high intakes of ash and crude fiber, the feeding of shrimp by-product meal had a general stimulatory effect on growth performance of the growing pigs. The intake of docosahexaenoic acid or its content in adipose tissue was not related with average daily gain. It is suggested that shrimp by-product meal may contain an unknown growth enhancing factor.
This experiment was conducted to investigate the effect of feeding TMR with or without Yukmijihwangtang meal silage on the growth performance, meat yield and quality of Hanwoo steers. Sixteen male Hanwoo steers in the late fattening period were randomly assigned to a control diet and Yukmijihwangtang meal diet, with eight heads per treatment. The supplementation of Yukmijihwangtang meal silage did not affect the feed conversion rate, ribeye area, and meat yield index of cold carcass of Hanwoo. Fat thickness of Hanwoo s loin obtained from silage supplementation was significantly lower than that of non-supplemented. Total grade in meat yield of Hanwoo from silage supplementation were higher than that of non-supplemented control. The supplementation of Yukmijihwangtang meal silage to Hanwoo decreased the marbling score significantly, but did not affect fat color, firmness, and maturity. Total grade of meat quality of Hanwoo with Yukmijihwangtang meal supplementation was lower than that of non-supplemented control. In conclusion, Yukmijihwangtang meal could be used as partial substitution (10%) in TMR for fattening cattle. However, it is considered that Yukmijihwangtang meal can be a useful feed for the periods of growing or early fattening than that of late fattening since it improved meat yield but decreased meat quality grade of Hanwoo steers.
The purpose of this study was to compare the nutrient intake and foodservice satisfaction of homebound elderly had lunch at the local community centers by the difference of meal service charge. Two local community center with cons-regate meal service program located in Daegu and Gyongsan were selected; one with free of meal service charge (F), and the other with 500-1,000 won for meal service charge (K), According to the dietary assessment, energy and nutrient intakes of the 156 elderly subjects were as a whole under the Korean Recommended Dietary Allowance (RDA). Elderly or F service conte. showed higher $\%$ RDA for the selected nutrients and MAR (mean adequacy ratio) than those of K service center (p<0.001). Participants were satisfied with most of the congregation meal service from community conte. with different reasons such as 'tasty (K service center)' and 'free of charge (F service center)'. In conclusion, elderly had the lunch at the community center with free of meal service charge was poor nutrition status and lower socioeconomic level than the other type of community center in this area. Therefore, healthy menu for elderly should be developed and managed by professional dietitian, as well as its impact on health status of this group, and congregate meal service system might be extended to the homebound elderly of whole community with free of charge.
This study was designed to assess the effect of a meal service for home-staying urban elderly people with low-income on their protein nutrition status and serum lipids. One hundred and eighty three subjects, who had already completed the first nutritional survey were assigned to two groups : meal served(served) and non-meal served (non-served). A meal approximately containing one half of the RDA for energy, protein, calcium and iron was served as lunch everyday to served group. After 6 months of meal service, the second nutritional survey was done and changes of parameters were analyzed with paired t-test. Served females showed significantly increased intake of energy while non-served females showed significantly decreased intakes of energy, protein and fat after 6 months. Served males were observed with significantly higher intake of energy, fat, vitamin A, niacin and ascorbic acid, whereas intake of vitamin A was lower in non-served males. Arm circumference of both served and non-served females were significantly lowered after 6 months. Mean DBP of served males was significantly lower, while SBP of served females was significantly higher after 6 months of meal service. Serum total protein, serum albumin, serum cholesterol and LDL-cholesterol were significantly increased within normal range regardless of gender and meal service. But HDL-cholesterol was significantly higher in only served elderly subjects after 6 months. (Korean J Community Nutrition 1(2) : 228-238, 1996)
The purpose of this study was to investigate the diet of children under the government-funded meal support program. The 143 children (67 boys and 76 girls) participated in this study among $4^{th}-6^{th}$ elementary school students receiving free lunches during the summer vacation of 2007 and living in Gwanak-gu, Seoul, Korea. The subjects consisted of four groups supported by Meal Box Delivery (n = 26), Institutional Foodservice (n = 53), Restaurant Foodservice (n = 27), or Food Delivery (n = 37). A three-day 24-hour dietary recall and a self-administered survey were conducted. In addition, the children's heights and weights were measured. The average energy intake of the children was 1,400 kcal per day, much lower than the Estimated Energy Requirements of the pertinent age groups. The results also showed inadequate intake of all examined nutrients; of particular concern was the extremely low intake of calcium. On average, the children consumed eight dishes and 25 food items per day. The children supported by Meal Box Delivery consumed more various dishes and food items than the other groups. The percentage of children preferring their current meal support method was the highest in those supported by Meal Box Delivery and the lowest in those supported by Food Delivery. We requested 15 children among the 143 children participating in the survey to draw the scene of their lunch time. The drawings of the children supported by Institutional Foodservice showed more positive scenes than the other groups, especially in terms of human aspects. In conclusion, the overall diet of children under the government-funded meal support program was nutritionally inadequate, although the magnitude of the problems tended to differ by the meal support method. The results could be utilized as basic data for policy and programs regarding the government-funded meal support program for children from low-income families.
